Dear travellers

Last month was an eventful month for all of us at Air Malta. In April we were honoured to host Pope Francis on one of our aircraft after a two-day pastoral visit to the Maltese Islands. It was indeed a pleasure for us to host him, other dignitaries and various members of the local and international press, on our special Air Malta flight back to Rome.

May boasts fantastic warm sunny weather and little rain in Malta. The waters are just about warm enough for swimming, and spring flowers are in full bloom. It’s a great time to get out and about, perhaps the ideal sightseeing month! In this month’s issue, we are taking you off the beaten track to discover the rural charms of Mqabba. It’s a typical old-charm laid-back village in the south of Malta where you can get a real taste of traditional Maltese life. The village is famous for its two brilliant and rival firework factories that have even earned international recognition. Archaeological remains, caves and catacombs may also be found around the area.

We also hosted 40 children on an educational flight to Sicily and back. The children, who come from challenging backgrounds and residing at various Church residences of Fondazzjoni Sebħ and St Patrick’s Home, were flown on a 75-minute flight that included a flyby of Mount Etna where they could view its snow-clad slopes.

Elsewhere, we are off to the beautiful harbour city of Birgu, one of my personal favourites when showing off the islands to friends and family! It’s not to be missed during any visit to Malta.

We also celebrated our return to Spain’s capital, Madrid after 10 years and held our 45th anniversary of our first flight to Vienna.

We are also back with our regular features such as Portrait of an Artist, this time featuring renowned sculptor Mario Agius, don’t miss his exhibition, and check out our events listing for other things to catch during May. Finally, there are plenty of fantastic interviews to keep you interested until you get to your final destination. Christine Cassar caught up with award-winning writer Ramona Depares, and Lyndsey Grima discovered all about “Dolly”, these are just for starters!

You can read more about these news items from page 66. Our fully-fledged Summer 2022 schedule is now up and running. This will see Air Malta operating up to 125 return flights per week into and out of Malta and it is very welcoming to see multiple countries across Europe starting to make travel easier for customers through the removal of the previously required Passenger Locator Forms (PLFs). Air Malta still remains a firm advocate for standard Europe-wide travel requirements that will apply across all European member states including one standard COVID country colour-coded list.

Of course, it wouldn’t be Bizzilla without plenty of food-filled pages. BRIDGE TO BIRGU

CHURCH OF OUR LADY OF VICTORY

THE GARDJOLA

Birgu is the neighbouring city to Senglea and one of the Three Cities. You can take a shortcut to Birgu from Senglea by crossing the bridge. You can find this bridge not far from the border of the two cities.

Originally built in 1580 to commemorate Malta’s defence of the Ottoman siege of 1565, this church was destroyed in the Second World War. It was rebuilt in the 1960s and boasts amazing artwork and an impressive dome. You can find a memorial dedicated to those who lost their lives in the Second World War and a beautiful wooden statue of the Virgin Mary which is encased in silver.

A beautiful garden situated in the northern tip of Senglea. It was planned in 1551. You can get a beautiful panoramic view of Valletta, Marsa, the Grand Harbour and Fort St Angelo from here. The guard tower called “IlGardjola” is located within the garden and has various symbols engraved on it. You might find this popular landmark in many brochures in Malta.

ST PHILIP'S CHURCH

This statue was erected as a thanksgiving to the Virgin Mary for protecting the people of Senglea from a devastating plague that hit the island in 1813.

Originally built by the Knights of Malta in 1554, the Maċina was used for the hoisting and lowering of masts onto ships. It has been recently renovated and is the perfect spot for you to enjoy a wonderful meal after exploring Senglea.

First built in the 15th century and rebuilt in 1561, this church was damaged in World War Two. It has subsequently been repaired and is a popular venue for weddings and boasts a beautiful domed ceiling with amazing paintings.

It is worth visiting the museum even just to have a look at this unique decimal watch. The Gollcher collection also contains an impressive collection of silverware. One of the artefacts purposely brought out from the collection during the tour was a small Maltese silver card tray. The guests had the opportunity to examine it at close range while the museum host explained that during the Regency period there was a particular etiquette to follow. If a lady wished to visit a friend or an acquaintance, it would have been essential to present one’s card on arrival. These personal cards would be placed on a small card tray such as the one at Palazzo Falson, with raised edges to avoid any cards from falling off. The doorman would take the tray to the lady or gentleman of the house to notify who wishes to visit and whether they would receive the guest or come up with a polite excuse. It was not unusual to prominently display cards from notable visitors on your silver tray to impress those calling on you! Although not part of the museum’s collection, the highlight of the tour was the display of surviving costumes and accessories of the period. The guests were delighted to see the refinement of these wearable items such as fans, parasols, reticules, undergarments and jewellery. The fun part was when guests could try on a bonnet or two from the selection on display. Many selfies were taken in memory of this special tour at the museum that will be cherished for years to come. All guests were treated to a Regency style high tea at the museum café, Gustaf café. While enjoying their tea, the guests also had the opportunity to try out some Regency games like Graces and Spillikins period on the open roof terrace that offers spectacular views of Malta from the highest point in Mdina.

Meagre (or gurbell) is a fantastic fish that is thankfully one local to Maltese shores. Its fleshy, delicate, white meat is appetising on any plate, and we love it grilled, fried, steamed or battered! However, the meagre is often overlooked by other fish, though not in Chef Terence Paul Saliba's mouthwatering recipe here, where it takes centre stage.

50g butter

15g white wine

1kg nut brown butter

150g of peeled garlic

15g cream

Basil leaves, to garnish

200g double cream

275g butter, diced

100g crispy garlic

Salt to taste

Lemon juice to taste

100g creamed black garlic

Salt to taste

16g Tzarsky Kaluga caviar

METHOD FOR THE GARLIC PURÉE Slice the garlic as thinly as possible. Start building the purée by melting the butter in a pan, add the sliced garlic and a pinch of salt. Then sweat the garlic until slightly translucent and add the cream. Cook down the garlic in the cream until the garlic is very soft and falling apart. Finally, blend and and store in a squeezable bottle. Keep the purée warm. METHOD FOR THE BUTTER SAUCE Measure out the white wine and cream in a little saucepan and bring to a simmer. Be sure to keep the mixture at around 60ºC, emulsify the butter by adding dices of butter slowly and constantly whisking. Set aside in a warm place and keep the temperature at a constant. TO FINISH AND PLATE First, heat the butter to 52ºC and make sure the temperature stays constant. At the restaurant we do this by using a water bath. Next, place the fish into the butter and cook for 15-20 minutes until warm inside. Once cooked garnish the fish with small dots of black garlic purée and evenly sprinkle garlic chips on top, and keep warm. Then create a blob of garlic purée and swipe the purée in an circular motion. Place the fish to the top left of the smoked garlic purée. Fold the caviar through the butter sauce and pour into the gap made by the smoked garlic purée. Finally, garnish with seasonal flowers and serve. 61

In April 1977, Air Malta operated a Douglas DC-9 aircraft with flight number KM132 for the first time to the Austrian capital. Over the years the route has grown substantially, and Malta’s national airline currently connects Vienna with up to seven times per week. SMOKING

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.

TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

NON-TRANSMITTING PORTABLE ELECTRONIC DEVICES (PEDS)

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.

LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?

CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … Your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
