Haggis bobotie Bobotie is regarded as the national dish of South Africa. It is traditionally made with leftovers from the Sunday roast and can be enjoyed hot or cold. In this version, I have simply swapped the minced lamb for haggis. Don’t be put off by the long and, at times, rather strange ingredient list, it all works out in the end and is a great dish for feeding a crowd. Serves 4 25g butter 1 large onion, chopped 454g traditional haggis 2 cloves garlic, crushed 2cm fresh root ginger, peeled and grated 2 teaspoons garam masala 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon medium curry powder ½ teaspoon turmeric 2 cloves 1 teaspoon dried mixed herbs 50g dried apricots, chopped 50g sultanas 50g flaked almonds 3 tablespoons mango chutney 4 tablespoons chopped parsley
