Texas-Style Low and Slow Beef Brisket Ingredients 1 whole brisket, about 12 pounds 2 tablespoons olive oil Big Green Egg Classic Steakhouse Seasoning Equipment EGG Genius Butcher paper or heavy-duty aluminum foil convEGGtor Big Green Egg Hickory Chunks Method Set the EGG for indirect cooking with the EGG Genius and convEGGtor at 275°F/135°C using hickory chunks for smoke flavor. With a sharp knife trim out some of the fat that is in between the two muscles of the brisket so it will cook evenly. Trim any extreme fat from the top, but most of it should remain. Rub the brisket all over with the oil, then season it liberally on all of the exposed meat using Big Green Egg Classic Steakhouse Seasoning. Place the brisket in the EGG, fat side down, and cook for 6 hours. Flip to cook fat side up for another 2 hours. Lay out a

large double thick sheet of heavy-duty aluminum foil or Big Green Egg butcher paper. Lay the brisket on the foil or butcher paper fat side up and wrap. Return to the EGG and cook until the brisket reaches an internal temperature of 200°F deep in the thick part of the meat. This should take another 3 to 4 hours but be sure to check the temperature. When the brisket reaches to the internal temperature of 200°F/93°C place it in an empty ice chest and let it rest for at least 15 minutes and up to 4 hours. Take the brisket out of the foil and place it on a cutting board. Reserve the juices. Trim away all of the excess fat. Slice the brisket through both muscles across the grain and about 3/8” thick. With a spoon remove as much fat as possible from the juices, then drizzle over the top of the sliced brisket. Now it is ready to serve!

The Perfect Holiday Turkey A turkey roasted on the Big Green Egg is a simple, yet elegant center piece for your holiday meal. Ingredients 1 turkey, cleaned Big Green Egg rub of your choice 1 whole onion cut in half 1 stalk celery 2 cups chicken broth, wine or water Method Set the EGG up for indirect cooking with the convEGGtor at 350°F/163°C. Use a handful of pecan chips for a light, smoky flavor and to provide a deep brown color to the turkey. Spread the Big Green Egg seasoning generously over the outside of the bird. Load the bird onto a Vertical Poultry Roaster or Rib and Roasting Rack, then place into a drip pan. Add the onion and celery to the drip pan. Fill the pan with chicken broth, wine, or water. Cook for 15 minutes per pound until the turkey has reached a safe minimum internal temperature of 165°F/74°C throughout the product. Reserve the drippings from the drip pan to make gravy.

Rack of Lamb with Roasted Veggies Ingredients 6-8 rib lamb rack, frenched Big Green Egg Classic Steakhouse Seasoning Olive oil Seasonal vegetables to roast Set the EGG for indirect cooking with the convEGGtor at 225°F/107°C with one chunk of cherry or hickory smoking wood. Method Remove the silver skin and trim excess fat from the lamb rack (you can leave the fat cap on or remove it – this is personal preference. If you leave it on, score the fat with a sharp knife). Cover the bones with foil. Smear the lamb with olive oil and generously rub with seasoning.

Bottle Opener: $9.95

Add a disposable drip pan to the convEGGtor. Add the lamb and cook until the internal temperature hits 140°F/60°C. Remove from the EGG and rest under tented foil for 15 minutes. While the lamb rests, carefully remove the convEGGtor to set the EGG for direct cooking. Open the vents to increase the EGG temperature to 550°F/288°C. Sear the outside of the lamb; re-season if necessary. To serve, cut the lamb between the ribs. Roasted Vegetables Cut seasonal vegetables in 1 inch pieces. Rub with olive oil and your favorite seasonings. Grill for 2-3 minutes per side until tender.
