s heart disease is the leading cause of death for Canadian men and women, heart health month deserves special attention from us all. Heart disease is often preventable. Some of the risk factors we can control include hypertension, cholesterol intake, diabetes, being overweight, excessive alcohol consumption, physical inactivity, smoking and stress. Avoiding these things that negatively impact our bodies can go a long way to help prevent heart disease before it occurs. You may have a risk of heart disease in your family tree or you may be suffering from the following symptoms: chest pain or angina, which can be described as a discomfort; heaviness, pressure, aching, burning, fullness, squeezing or painful feeling in your chest. It can be mistaken for indigestion or heartburn. Angina may also be felt in the shoulders, arms, neck, throat, jaw or back. It is important to see your doctor so that you can receive a correct diagnosis and prompt treatment. Other symptoms of heart disease may include shortness of breath, irregular heartbeat, dizziness or weakness, nausea or unwarranted sweating. There are genetic predispositions to heart disease such as age, gender, family history and ethnicity, but in general, heart disease can be prevented by simply adhering to a regular exercise schedule and proper nutrition including dietary supplementation. ebruary is heart health month and, of course, marks the arrival of Valentine’s Day – like it or not! A healthy heart in life, love and cholesterol levels is about as good as it gets. This month, take the time to ensure your ticker is well taken care of. This issue of Vista is packed full of information on heart health, natural ways to lower your blood pressure, and the whole foods that will keep your body running like a well-loved machine. Keep in mind your love of the environment, too, as you bypass the paper cards and heart-shaped boxes this Valentine’s Day in favour of some eco-friendly options that show both your beloved and your planet that you care. Our cover story this month with accomplished CTV News anchor Sandie Rinaldo is a story of both triumph and heartbreak. Within an almost entirely male dominion, Rinaldo broke moulds and transgressed boundaries in her early career, going on to establish herself as one of Canada’s most recognized and trusted news broadcasters. Yet her award-winning career is overshadowed by the devastating loss of her husband at age 60 to the cancer that gets so little helpful press: lung cancer. As Sandie notes, there is a stigma surrounding lung cancer as most people associate it with smoking. But not all those afflicted are smokers and, in the end, nobody deserves to have cancer. The high fatality rate of lung cancer means it is up to the surviving families to advocate for patient support, medical advancement and a cure for this deadly disease. magine trying to squeeze dishwashing liquid through a bottle head that has become caked and blocked with solidified soap. You have to press harder to get any out, and when it does, it shoots out erratically. This phenomenon occurs every day in people with high blood pressure, or hypertension. With this common condition, the heart muscle contracts too forcefully and sends blood driving through the body with excess strength. Clogged arteries can create additional resistance, which causes damage to the inner layers of the arteries. The ensuing “wear and tear” promotes the plaque buildup that leads to heart disease. People with high blood pressure are more than twice as likely to have a heart attack compared to people with normal blood pressure. Hypertension also strains and eventually weakens the heart, while very high blood pressure can cause blood vessels to burst in the brain, causing a stroke. Causes of High Blood Pressure The following factors contribute to high blood pressure. Some of them are within our control while others are not, so it is up to us to take care of ourselves as best as we can. • Age (blood pressure generally increases with age)

• • • • • • •

A poor diet Magnesium deficiency Too much alcohol Lack of exercise Obesity Stress Health conditions like kidney disease or thyroid dysfunction (both more common in women than men) • Pregnancy • Birth control pills • Certain drugs, including amphetamines (stimulants), diet pills and some cold and allergy pills What Does the BP Test Mean A blood pressure reading has two parts, systolic pressure (the top number) and diastolic pressure (the bottom number). The higher systolic reading represents the pressure just after your heart beats (i.e., when your heart contracts and pushes blood out into arteries). The lower diastolic reading is the pressure while your heart is at rest, refilling with blood between beats. The ideal adult blood pressure reading is less than

The Sodium-Potassium-Magnesium Connection There is much focus on the connection between salt and elevated blood pressure. Abundant emphasis has also been put on salt reduction as part of blood pressure management. However, instead of doctors recommending to their patients to reduce salt consumption, their energy would be better spent encouraging patients to increase the amounts of potassium and magnesium in the diet. How to Make Healthy Salt Add 3 parts NuSalt or Morton’s Salt Substitute to regular table salt. We need sodium to modulate muscle and nerve function and to regulate our fluid balance and blood pressure. In northern countries like Canada and in the northern United States, the main source of iodine in the diet is from iodized salts. When we tell people to avoid all salt, we get a corresponding rise in cases of low thyroid function, because the thyroid needs iodine (the reason iodine was added to salt was to improve the function of the thyroid). The key to optimal heart health is to balance salt with potassium and magnesium. Most Canadians ingest twice as much sodium as potassium. Some of us consume up to 20 grams of sodium a day! But the body needs five times as much potassium as sodium. Potassium supplements would not be necessary if we simply ate more vegetables (seven to 10 half-cup servings to be exact). Most vegetables contain 50 times more potassium than sodium. For example, check out the ratio of potassium to sodium in the following fruits and vegetables: • Apples, 90:1 • Bananas, 440:1 • Carrots, 75:1 • Oranges, 260:1 • Potatoes, 110:1 Omega-3 Lowers High Blood Pressure Fish oils rich in omega-3 fatty acids are well known for their hearthealthy effects. Containing the fatty acids EPA and DHA, fish oils are vital for the heart. Calamari oil, an alternative to fish oil, comes from South American calamari (squid) that are sustainably harvested and an eco-friendly source of omega-3 fatty acids with more DHA than fish oil. Calamari oil is more stable than traditional fish oils, making it less prone to rancidity. Also, calamari oil does not cause the fish aftertaste or unpleasant “repeating” that is common with fish oil supplements. DHA is superior for lowering high blood pressure and it is more potent at supporting circulation. DHA is also the key to raising “good” HDL cholesterol. Also, DHA, not EPA, has been found to support your brain and is the best fatty acid for eye health. If you care about the environment, calamari oil is your best choice as it comes from deep

water, spawns quickly, multiplies fast and because of this calamari does not have the same issues with heavy metals like mercury that fish do. CoQ10: Your Heart’s Best Friend A meta-analysis of human clinical trials using Coenzyme Q10 (CoQ10) for high blood pressure was led by Professor Frank Rosenfeldt, the Director of the Cardiac Surgical Research Unit at Alfred Hospital in Melbourne, Australia. His team reviewed all published trials of CoQ10 for hypertension and assessed overall efficacy, consistency of therapeutic action, and side-effect incidence. The meta-analysis evaluated 12 clinical trials involving 362 patients comprising three randomized controlled trials, one cross-over study, and eight open-label studies. The research group concluded that coenzyme Q10 has the potential in hypertensive patients to lower systolic blood pressure by up to 17 mm Hg and diastolic blood pressure by up to 10 mmHg without significant side effects. Magnesium Regulates the Heart Magnesium has a significant effect on lowering high blood pressure. Japanese researchers have finally clarified inconsistent results from other investigations of magnesium and blood pressure. Some results had indicated that magnesium lowered high blood pressure whereas other research did not. Japanese research following individuals over an eight-week period showed that blood pressure was significantly lower while taking magnesium. Plus, the higher the blood pressure, the larger the decrease seen in those supplementing with magnesium. Researchers believe magnesium acts to relax blood vessels, an effect proven to help lower blood pressure. When blood vessels are constricted – not relaxed – the heart works harder to pump blood through the body, causing blood pressure to increase. Women should be particularly interested in magnesium supplementation if they have high blood pressure. Often, traditional blood pressure medications do not work as well for women, but magnesium supplementation works fabulously in women to normalize high blood pressure. High blood pressure medications can cause erectile dysfunction in men. With this in mind, men should be employing natural remedies to reduce high blood pressure as well. Not All Magnesium Supplements are Created Equal Magnesium supplements are available in numerous salt forms, as well as bound to amino acids. The absorption rate and tolerability varies greatly between different magnesium supplements. Many are poorly tolerated at therapeutic doses due to this mineral’s laxative effect. The most efficient way to supplement with magnesium is by combining it with amino acids. Magnesium joined to the amino acid glycine (magnesium bis-glycinate) is the best form because it’s best absorbed and is also able to cross the blood brain barrier. Lowering high blood pressure is simple using key nutrients like Coenzyme Q10, magnesium bisglycinate, and calamari DHA. Walk 30 minutes per day. De-stress your life, and eat more potassium-rich foods. And have a happy, healthy heart!

s I was preparing to write this, I received a phone call about a close friend of mine, Sue. She was at the ER preparing to go into the emergency Cardiac Cath Lab. Sue had been at my house just the previous evening with a few friends having a celebratory dinner. She went home and had a heart attack, but mistook the symptoms for indigestion. She stayed up all night chewing antacids and then had her daughter drive her to the ER in the morning. Sue is lucky to be alive. She did everything wrong. Had it been a major vessel that was blocked, she might have not made it through the night. As it is, her muscle damage is more extensive than it would be if she had not waited so long to be treated.

Prevention: Nutrition What should you do differently? Let us begin with prevention, starting with nutrition. I hope that, unlike Sue, you are following a heart healthy diet, featuring fish rather than beef and pork, fresh foods, lots of fresh vegetables and fruits, and whole grains and legumes rather than refined and processed fast foods. I hope you cook with olive oil rather than omega-6 vegetable oils. The olive oil and the fish omega-3s actually balance inflammation and the formation of dangerous clots like the one that blocked my friend’s circulation.

Omega-3s for Heart Health Next, I hope you are taking a heart-protecting dose of omega-3s from fish or marine sources. There is now a scoring method used by researchers and some forward-thinking doctors to evaluate the level of EPA and DHA, the fish omega-3s in your cells. The test is called the Omega-3 Index. The score is a number between 0 and 13 or 14. Most people who are not big fish eaters and who do not take supplemental omega-3s will score somewhere in the range of two to four. People at that level are at even odds for a fatal heart attack.

Achieving an eight or better on the test, which is my goal for everyone I communicate with, is marvelously protective. If you are an eight, compared to your friends down at four or below, your risk of having that fatal heart attack is 90 percent less! That is a huge reduction in risk. The big question is, how much EPA and DHA do you need to reach an eight or higher? An adult requires 1000 to 2000 mg of EPA and DHA (the total of the two) daily, and it will take about four months to lift your level. If you take 4000 mg daily, you’ll get there in half the time, but you must stay loyal to the daily dose. Vitamin D For Your Ticker It’s also important to make sure your vitamin D level is where it should be. You want to have a level of 75 nmol/L, which will likely require 4000 IU daily of vitamin D3. Get your level tested and then aim for that 75 score. Studies have shown that, compared to people deficient in the sunshine vitamin, those who have adequate vitamin D levels are half as likely to have either a fatal heart attack or a major cardiac event. The Final Word Finally, and perhaps most important, never ignore chest pain. Call for help at the first symptom. You cannot afford to lose even a moment when your life hangs in the balance. My friend Sue may have been lucky with her relatively minor incident, but for others, a moment’s indecision can make all the difference.

id you make any New Year’s Resolutions for 2013? How is it going so far – any hiccups in your plans? Having second thoughts? For fun, let’s take a look at some interesting statistics: Approximately 40 to 45 percent of American adults make one or more resolutions each year. Most popular resolutions include weight loss, more exercise and

quitting smoking, followed by better money management and/or debt reduction. About 75 percent of people maintain their resolutions past the first week. After one month, that drops to 64 percent, and after six months only 46 percent of people are still sticking to their resolutions. By the six-month mark, most people who make resolutions will have abandoned their goals.

As you look at the day ahead, envision yourself enjoying your interactions and your activities, making powerful, easy choices that support achieving your goals. Using your beautiful, creative mind in all its power and glory, it won’t be long before you are living the life of your dreams and sharing how well you did it with everyone around you! Finally, always remember that January 1st is not the only day you’re allowed to commit to change. Make every day of this year a new opportunity for growth and improvement. ver the past 50 years, conventional farming practices have changed dramatically. What was once an industry run by the small, medium and large family farmers is now more frequently owned by “big business.” Giant agribusinesses are not involved only in national farming; they also have a strong controlling interest in the distribution, processing, storage and retail aspect of farm products nationwide. The result is that milk in a single carton can contain the milk of hundreds of cows. The same can be said of a frozen hamburger patty. The huge mix of animals in most North American ground beef plants has played a crucial role in spreading E. coli. Eric Schlosser wrote in Fast Food Nation, “A single fast food hamburger now contains meat from dozens or even hundreds of different cattle.” Having huge conglomerates behind our nation’s food supply is

said to be problematic on many levels, from the destruction of land due to changing farming practices to the deterioration of our quality of food. However, there is a parallel food industry option available with a completely different ideology – and that is the organic food industry. Certified organic designations abide by stringent rules and regulations determined in Canada by federal legislation. The Canadian Organic Standard is the only certification system to receive the broad approval of both the EU and USA and is recognized as their equivalent. Contrary to conventional farming, organic production is designed to accomplish the following: • Ensure the respectful use of air, water and soil, minimizing agricultural pollution. • Provide humane living conditions for livestock to ensure their

health and well-being. • Protect the long-term health of the soil by minimizing erosion and soil degradation and encouraging soil bioactivity. • Recycle materials and resources whenever possible and reduce the use of non-renewable resources. Organic farming production does not allow the use of synthetic pesticides, synthetic fertilizers, sewage sludge, genetically modified organisms, ionizing radiation or the use of growth hormones for animals that produce meat, poultry, eggs or dairy products. Organic farming is sustainable farming. It is designed to protect the soil and land while allowing for the production of food that contains the highest levels of nutrition. One of the repercussions of mainstream farming practices is the profound depletion of the soil’s vital nutrients due to the overuse of the land as well as the aggressive utilization of chemical pesticides and fertilizers. Over the past ten years, the demand for organically grown food has risen exponentially. What was once an option available only to the elite is now readily available at your local grocer. Many independent retailers dedicate their entire store to the sale of organics. “There was a glass ceiling, and just a handful of women were able to crash through it. We had to prove that we could not only be better than our largely male competitors, but also work harder. I think generally that’s what women of that era did. When I was assigned the position of full-time anchor for Canada AM in 1980, it coincided with my first pregnancy. At a time when women were not shown to be pregnant on camera, it was quite novel. I joked about how the cameras had to keep pulling back as I got larger and larger. I think it amused everyone around the station. Luckily, the director of news and public affairs at the time, who eventually became vice president of news, was Don Cameron, and he was a huge proponent of advancing women in broadcasting. He was very progressive and that made it easier for those of us who were trying to make our way in the industry and also have a family at the same time.”

Three Kids and a Career

“Ultimately, I came back to work six weeks after my first baby was born, and that was largely my own doing. The maternity leave wasn’t as liberal as it is today, but I felt I had to go back because I wanted to show that I was serious about what I was doing. There were compromises and certainly accommodations made. I was able to take many of my meetings from home, for example. “And I had a wonderful husband. I could not have done it without my husband. He was very proud of me and encouraged me to follow my dreams and passions at work. He just made it easy for me. I knew when I walked out the door that the children would have a loving par-

ent at home, and it made it that much easier. Also, the hours I worked were not nine-to-five, so I was able to be a very present mother. To a large extent it really worked out well for us.”

From Broadway to Broadcasting

“I got my foot in the door with CTV by answering the phones. Then I worked my way up in a behind-the-scenes capacity, and it was about five years before I was on the air. But if you go back to when I was a young girl, I had visions of Broadway! I appeared on CBC teen variety shows for a number of years, and I was quite serious about pursuing a career in dance. Before going to university, I told my parents I wanted to see if I could break into Broadway. They agreed to it, albeit it with a promise extracted from me that I would come back and get my university degree. I realized very soon after attempting to make my way in New York that I was a small fish in a very big ocean. But all the while, my parents always watched CBS Evening News with Walter Cronkite and I grew up with a voracious appetite for news. I had concurrent interests, and at some point they merged. I realized I would never be a professional dancer... but it’s something that I’ve continued to do at home, in my living room!”

“We see ourselves as the national newscast of record at midday. We try to hit the top stories of the day within the two-hour framework. We usually do interviews, talk-backs, quick hits with key individuals who are front and centre in a particular news story, and we also go to our reporters for updates. It’s very fast-paced but I have the luxury of going into greater detail with some of the stories because it’s a two-hour show. In addition, I have a ‘straight-talk’ panel on each show that takes a different approach to the top news stories of the day. Our panelists bring to the table their own opinions and personalities, and as a result we have quite a lively discussion.”

“Our mandate has always been to get the news out there as quickly as we can. Social media has made us even sharper and is a tool that we constantly enlist. If someone turns on the national news at 11 pm, they’re going to see what they’ve been seeing for many years. he ceiling was made of reinforced glass when the young Sandie Rinaldo was fighting her way into the male-dominated field of broadcast journalism. As the first woman in Canada to splinter that barrier and become a full-time national news anchor with Canada AM in 1980, Rinaldo went on to become weekend anchor of CTV National News a full 28 years ago. Nowadays, she also hosts CTV News Channel’s midday broadcast Direct, and is a contributing reporter and co-host of W5. At 63, her award-winning career has no end in sight. But life has dealt Rinaldo some terrible blows. In 2005, she lost her beloved husband to lung cancer. Devastated by the loss, she became an advocate for lung cancer awareness and support. She remains very close with her three daughters and is thrilled to be expecting her first grandchild soon. Rinaldo spoke with Vista Magazine about her passion for news, her lifelong love of dance, and the importance of family above all else.

Navigating Negative News

“The many negative stories do affect me, particularly when there’s human suffering involved. But I have an opportunity to read, digest and assimilate the information before I go on air. In many ways, newscasters are like doctors who have to give people bad news. We become accustomed to it. But we’re human, and obviously we are affected by difficult stories. When there are stories concerning young children, they touch a chord and are hard to report on. However, we have time to get used to what we’re reporting on so by the time go to air, we can be objective. As soon as I walk out of the newsroom door each day, I try to shut that door. Otherwise, it would be difficult; it would bring you down all the time. And there’s too much to be happy about.”

Paying It Forward

“Lung Cancer Canada no longer exists in its original form, so I’m no longer involved. But I’ve become involved on an occasional basis with Gilda’s Club, and when organizations ask me to speak, I often will. I’m doing a fashion show with Wellspring, which is an organization in Toronto that provides support to families and individuals who have gone through or are going through cancer. My children and I also raised money to build a quiet room for families at the hospital in memory of my husband. For me, it’s always been about paying it forward. If, in some way, by creating this room, we’ve made it easier for other families who get the devastating news – to be together, to talk and share and plan what comes next – then we’ve done something good. I would encourage other people to do the same.”

Because of my years of dancing I know what it’s like to have a body that’s in good shape. After reaching a certain vintage, there is some muscle memory, but I’m realistic enough to know that I’m never going to be in the kind of shape I was in when I was younger. I do my best at this point to ensure I’m in the best shape I can be for my age.”

“In my dreams, I stick to a strict dietary regimen. On January 1st and on my birthday, I say from now on I will eat plenty of fruits and vegetables and stay away from fat and fried foods and desserts. But I cannot live up to those new year’s resolutions. I’m not a big meat eater; only now and then will I have a craving for a really fine steak frites, and then have it – but I regret it afterwards! I eat a lot of salmon and shrimp; I love big salads, turkey. I try to eat the best I can. I usually don’t have a chance to eat breakfast before work – which is a no-no, I know that – so I’ll pack a huge bag full of yogurt and fruit and eat at my desk in the morning, and people find it most amusing to see what I have for breakfast that day. I also take a multivitamin and calcium with magnesium, plus vitamin D, because we don’t get enough sunshine in my part of the world!”

“I think the lack of media attention and fundraising for lung cancer is largely because there’s a stigma attached to this disease. The perception is that individuals with lung cancer were smokers, which may or may not be true, and it’s an unfair stigma. That’s one of the things that Lung Cancer Canada has been fighting against. People don’t deserve to get cancer: they get it, and it should be dealt with. But the other issue, unfortunately, is that lung cancer is a deadly cancer and the percentage of people who die from it is far greater than those who die from other cancers like breast or colon cancer, which can often be diagnosed through early detection. Lung cancer is one of those ugly cancers for which the cure rate is not as high. As a result, there aren’t enough firstperson accounts or survivors to advocate for it. It’s up to the families that are left behind to be advocates.”

R

uby Red Grapefruit and Avocado Salad is deliciously versatile. You can have it for breakfast, lunch or dinner. This unique concoction makes a wonderful companion to seafood, chicken, quinoa or wild rice. The Ruby Red Grapefruit and Avocado Salad is refreshing, crunchy, smooth, sweet and tangy. Best of all, this dish is alkaline forming and comes with a special bonus: it’s excellent for heart health! Avocados have a number of splendid characteristics that make them a wise choice for athletes. One avocado contains 1166mg of potassium and 18mg of sodium, providing an excellent 64:1 ratio in favour of potassium. Due to their high percentage of fat (77 percent), avocados provide reliable sources of vitamin K and E and EFAs, all of which reduce inflammation. Avocados also boast an extremely low glycemic index (GI-4), which means they’re ideal for stabilizing blood sugar. Try blending them into a pre-workout or night-time shake. Avocados are native to Central Mexico. They are a fruit that grows on trees like apples or pears. Avocados are an extremely good source of fibre. One avocado contains about 15 grams of soluble (25 percent) and insoluble (75 percent) dietary fibre, which is equivalent to about three large baked potatoes. The grapefruit is actually classified as a berry (hesperidium). Grapefruits at maturity are bright yellow with a thick peel with white, pale yellow, pink or red flesh. Unlike avocados, ruby red grapefruits contain virtually no fat. Their primary source of energy is low glycemic carbohydrates (15g per grapefruit), but these little gems are mostly water. Grapefruits are an excellent source of many nutrients, antioxidants and phytochemicals that contribute to a healthy diet. Grapefruits are a good source of vitamin C and bioflavanoids. They contain the fibre pectin, and the pink and red hues contain the beneficial antioxidant lycopene.

Ruby Red Grapefruit and Avocado Salad

Serves 4 2 ripe avocados 1 ruby red grapefruit ¼ cup red onion ½ cup goat feta cheese (optional) ½ cup raw pumpkin seeds (or other nuts and seeds)

Using a large knife, carefully peel grapefruits, making sure to remove all of the white pith. Working over a large bowl to catch any juice, cut along the side of each membrane to release the segments. Cut

grapefruit segments into half-inch cubes, remove seeds and place in a mixing bowl. Cut avocados in small pieces the same size as the grapefruit. Add avocado to grapefruit. Finely chop red onion and place in mixing bowl with avocado and grapefruit. Add crumbled goat feta cheese and pumpkin seeds to the bowl and gently stir until the ingredients are thoroughly mixed. Place mixture on a plate or in a bowl and top with Spicy Avocado Dressing.

Spicy Avocado Dressing 1 part (½ cup-125 ml) extra virgin olive oil 1 part (½ cup-125 ml) juice from freshly squeezed lemon 1 whole avocado 4 cloves of crushed garlic 1 tsp. (or more) crushed red chili peppers 1 Tablespoon unpasteurized honey ½ tsp. sea salt (optional) Add all ingredients to blender; blend until mixture is smooth and creamy. Makes approximately 1 cup (250 ml) of dressing. Serving suggestions: Serve with Ahi tuna, seared scallops, garlic prawns, raw shrimp, salmon, crabmeat or chicken breast. For vegetarian meal, use to top wild rice or quinoa and omit goat feta cheese.

n part three of this four-part series, I presented and reviewed my standard daily diet. Keep in mind that I’m training for and competing in the Hawaiian Natural Muscle Bodybuilding Championships on June 8th, 2013, in Nanakuli, which is located on the west side of Oahu. So hang loose Brah, the best is yet to come! My standard daily diet is by no means conventional. My acronym for D.I.E.T. is Discipline In Energy Transfer. For the love of health, not money, fame or glory, I devote a ton of discipline to the process of transferring clean energy into my body without violating it. To do otherwise (which, based on simple observation, is the standard norm) is simply illogical. My diet is designed to meet the prime directive of biological supply and demand, which is why I don’t eat French fries covered in gravy or drink soda pop. I used to as a naïve and ignorant kid, but I am no longer either of those things. To sustain life, one must come to terms with what life is and how to sustain it. That’s my obligation as a free-thinking sovereign being. Although the whole food I consume tastes delicious, culinary pleasure is secondary to my objective of sustainability. If I followed the Canada Food Guide as advocated, that objective would be impossible to achieve. I did not learn how to eat for the prevention of obesity and chronic disease in the compulsory public education system. In that system of mind engineering, subjects like math and science have evolved over time since I graduated from high school in 1975; however, when it comes to nutrition science, the system today remains just as dark and backwards as it was for me in my time. The corruption is plainly visible in the food being dispensed to our children in school cafeterias. Public schools do not teach our children to avoid eating sugar or refined acid-forming food. How could they? How can you teach a young mind not to eat what is harmful, and then serve it to them for lunch? After many decades in the real world, I can say without question or doubt that human health is a billion times more important than memorizing irrelevant, non-essential data over and above knowledge that stimulates, motivates and educates us to live and stay well. The intelligent management of self is infinitely more important and relevant to life than learning how to become an obedient wage slave. Don’t kid yourself. How you start is exactly how you’ll finish. You’re not where you are right now by accident. As of this writing, I’m in my third of four training mesocycles. My last workout was yesterday morning. I trained for back strength. After a good warm-up, I performed five sets of barbell bent-over rowing, for a target repetition range of 12 reps per set. The weight was medium but the intensity was high. Lots of sweat equity there. Barbell rows

were followed by three tri-sets of hammer shrugs, front close-grip pulldowns and seated cable rowing. Repetition range was 15 to 20 per set. After some serious core training, I skipped with a leather rope for three, three-minute intervals; then performed a complete body stretch on the floor.

Competition Diet Plan – 100 Days Out

In competitive bodybuilding, timing is everything. The whole idea is to show up on contest day with extremely thin skin, very low body fat, and as much muscle as possible, spread evenly and symmetrically across your entire body. If you have that, then the next challenge relates to how well you present it on stage. Posing on stage is where the rubber hits the road. What you see is what you get! Beginning March 1st, 2013, I officially begin dieting for the show. My “100 days diet” goes something like this:

Day 100 to 70 (30 days)

• Regular daily workout (warm-up, weights, core, cardio, stretch) • Increase evening walk to 30 minutes (from 20) • Cut out starchy carbs like yams or brown rice normally eaten with evening meal • No whole grains or flour of any kind (muffins, bread, pasta) • Alcohol: 1-2 days per week only (micro-brewed ale or mead)

Day 69 to 39 (30 days)

• Regular daily workout • Cut out carbs normally taken after post-workout shake • No red meat, all animal protein <20 percent fat (turkey, white fish, tuna sashimi) • Increase protein intake by 20 percent (up to 300g daily) • Alcohol: 1 day per week only (micro-brewed ale or mead) • Practice mandatory poses for 15 minutes

Day 38 to 15 (23 days) • • • • •

Regular daily workout No dairy No alcohol Cut out all natural salad dressing oil Stairs at night with high knees for 30 minutes at a medium pace • Practice mandatory poses and posing routine for 30 minutes

Yikes! • 8 to 10 small meals throughout the day of tuna sashimi, white fish mixed with egg whites and turkey meat (eat as much as I want). • Protein shakes (100g of whey protein isolate/2 Tbsp hemp seed oil/water only) • Fresh lemon juice and spices acceptable • Increase exercise volume: increase reps (20-25) and sets (5-10) • Wind sprints: 6 x 30 seconds (on treadmill during winter months) • Practice mandatory poses and posing routine for 30 minutes

Here’s a very important tip: during this time, I increase my intake of pantothenic acid (vitamin B5) from 2g a day to 10g, taken in four divided doses of 2500mg on an empty stomach between meals. I use the powder form and mix it in water. In research and clinical application with his obese patients, Dr. LH Leung proved that lipid catabolism (lipolysis) is significantly enhanced when B5 is taken in such large quantities during a low-carb diet that creates ketosis. Leung found that adding 10 grams of B5 to a calorie-restricted modified diet eliminates hunger, physical weakness, and cravings and prevents the formation of ketone bodies without any side effects. The ability to burn fat stores efficiently when dieting decreases over time and leads to the depletion of glycogen stores. In my case, that’s exactly what I want: complete depletion of glycogen. However, as the body continues to oxidize fat for fuel, ketone bodies begin to appear in the bloodstream and urine. Over time, the ability to metabolize stored fat weakens and most people start to feel hungry and show symptoms of weakness, dizziness and sweating. As the mechanism of fat burning, forced through a voluntary calorie deficit, begins to fail, ketone bodies will appear. Dr. Leung believes that the presence of ketone bodies reflects a deficiency of pantothenic acid which is an essential micronutrient. B5 is water-soluble like vitamin C and as safe. This is why it’s best to take it in smaller divided doses throughout the day. It keeps the blood saturated constantly. B5 is called the anti-stress vitamin for a reason.

Day 4 to 2 (three days)

• Light to medium -intensity full body daily workouts • Begin carb-loading on the night of day four and continue for the next three days with manna bread, figs, dates, yams, brown rice and whole grain pasta • Eat small meals with small portion of low-fat protein • Protein shakes (low protein, high carb, no oil) • Practice mandatory poses and posing routine for 30 minutes

Muscle Primer Mix

Mix 50ml glycerol with 12 oz of water, 4 oz of red wine and one serving of a high-performance creatine/high-glycemic carbohydrate powder mix. That equates to about 5g of creatine and maybe 20g of high-glycemic carbs. You can substitute pure glycerol with what cyclists and marathon runners use during long rides. They squeeze glycerol out from a small tube right into their mouths. It comes out as a gel and is mixed with dextrin, which is a high-glycemic carb derived from wheat or corn.

Day 1 (Contest Day)

I take the muscle primer mix at night before the morning of the show, and once again just before pumping up back-stage for the pre-judging on the day of the event. I find this liquid potion really helps make me look more muscular and vascular, as it helps drive water and fluid into my veins and arteries, causing them to swell up around and on the surface of my skin. It has the same effect on my muscle cells and also helps keep my energy level up. I sip on water constantly, and do reduce it a bit just prior to the show, but I don’t cut it down to the point of exhaustion or near-fatal dehydration. So that’s it. ur society loves to celebrate Valentine’s Day each February 14th, but while the occasion has a very long history dating back hundreds of years, the scale of the celebration today is largely thanks (or no thanks) to marketers. Here are some quick consumption-related facts about Valentine’s Day: • Approximately a billion valentines are sent each year globally, making the day the second largest card-sending holiday of the year behind Christmas. • 25 percent of all seasonal cards annually are valentines. • Over 36 million heart-shaped boxes of chocolate are sold each year. • Valentine’s Day is the top holiday for fresh flower purchases, with red roses being most popular. • Ten percent of engagements happen on Valentine’s Day. • Over 60 percent of people planned to buy at least one valentine last year, according to the American Greetings Corporation. • Valentine’s Day is big business and has the potential to have substantial impact on the environment. For example, the one billion cards laid end to end would stretch around the world five times! That’s a lot of trees.

Valentine’s Day Gifts with the Planet in Mind

If Valentine’s Day is an important day for you or the one you love, then you can also show a bit of extra love for the environment by carefully considering what you buy. Here are some ideas: • Cards made from recycled or tree-free paper (this will be indicated on the card). • Consider sending an e-card instead of a paper card, using one

of the many quality services available. • Give fair trade and/or organic chocolate. • Choose organic and/or locally grown flowers. • Make a donation to an environmental organization on behalf of your loved one. • If you wish to give jewellery, consider pre-owned or purchasing from jewellers who are certified to be sourcing precious metals and gemstones in an ecologically and socially responsible manner. Or consider something really offbeat like a wooden ring – they look amazing. • Buy your loved one a gift certificate for holistic therapies like massage, naturopathy or a health spa. • Arrange dinner at a local restaurant specializing in organic or locally grown food. Eating locally cuts down on food miles. • Perhaps make dinner yourself using locally grown ingredients, accompanied by a nice organic wine. Set the mood with earthfriendly candles. The effort you put in will be sure to impress! • Book a retreat in a wildlife reserve, park or natural area. Your business will help support the running of such establishments. • Give natural perfumes and fragrances. Popular mainstream fragrances are chemical cocktails. demonstrating that, “constitutional entrenchment of environmental rights and responsibilities contributes to stronger laws, increased enforcement, an enhanced role for citizens, and improved environmental performance.” Although the idea of a constitutional right to a healthy environment is gaining support, it does have its detractors, including some government and industry insiders in Canada. The Canadian Association of Petroleum Producers argues such a law would harm our economy, and some government representatives claim it would hinder tar sands and other industrial development. Boyd doesn’t buy it. He notes that constitutional rights must be balanced against competing rights. For example, free speech comes with restrictions against pornography, hate literature, false advertising and so on. Evidence from countries with environmental rights, such as Norway, also shows the shakiness of the economic argument. “Rather than trumping economic activity,” Boyd writes, “the right to a healthy environment would compel, or at least increase the likelihood of, sustainable development.” And, even though there is still much to be done in Argentina’s Matanza-Riachuelo River Basin, people there are already enjoying significantly improved living conditions, including a stronger local economy. Getting the right to a healthy environment enshrined in Canada’s Constitution won’t be easy. We’re headed in the opposite direction, with environmental protections and laws being rolled back or gutted, mostly in the name of keeping us tied to a resource-extraction economy. And despite our country’s abundant water, many people, especially in First Nations communities, don’t have access to clean drinking water. It’s time to address Canada’s dismal and worsening environmental record. If all of us — “Canadians of all ages, all backgrounds, all provinces and territories, and all political persuasions” — work together, we can make it happen.

ublic health worker Beatriz Mendoza was living near the Riachuelo River in Buenos Aires, Argentina, when she started losing feeling in her fingers and toes. Her neighbours were also experiencing health issues — including skin rashes, cancers and birth defects — clearly linked to pollution in the heavily industrialized area. The Matanza-Riachuelo basin is one of the most contaminated waterways in Latin America. In 2004, Mendoza and other residents sued the national, provincial and municipal governments and 44 corporations. And they won. Environmental lawyer David R. Boyd describes the case in his book, The Right to a Healthy Environment: Revitalizing Canada’s Constitution. He writes that the lawsuit led Argentina’s government to establish a new river basin authority and put in place clean-up, restoration and regional environmental health plans. The government has since increased the number of environmental inspectors in the region from three to 250, and created 139 sampling points for monitoring water, air and soil quality. Three new water treatment plants have been built, providing clean water to millions of people; 11 sewage-treatment plants have been built or expanded, also serving millions; 169 garbage dumps have been closed; and 484 polluting industrial facilities have been shut down. As Boyd points out, this was possible because Argentina’s constitution recognizes “the right to a healthy environment and the citizens’ power to defend their rights through the judicial system.” It’s a right that people in more than 100 countries worldwide enjoy. Canadians are not among them. Our Charter of Rights and Freedoms gives us freedom of expression, equal protection from discrimination and the right to life, liberty and security of the person. But one fundamental right is notably absent — to live in an environment conducive to health and well-being, with clean air, water and soil and biological diversity. As Boyd writes, “In a country where Nature is an integral element of our national identity, and in an era where scientific evidence establishes our basic dependence on a healthy environment, it is striking that our constitution makes no reference to it.” Along with David Boyd and Ecojustice, the David Suzuki Foundation is working to change that. Boyd’s book helped launch the initiative, and the Foundation is hosting a telephone town hall with him on Sunday, February 3, 2013, from 4 pm to 5 pm Pacific Time (7 pm to 8 pm Eastern). It’s free, but space is limited. You can register until January 27. Boyd makes a convincing case for the necessity of such constitutional protection. He points to evidence from more than 100 nations
