the quest

If the poet T.S. Eliot were alive today, I’d probably invite him over for Chef Joseph’s Pink Peppercorn Crusted Pork Tenderloin drizzled with Saporoso Condimento and tell him my tale... Chef Joseph is an inventive American chef of ScotchIrish and Choctaw ancestry who lends his culinary expertise to our table. Eliot, on the other hand, was a Nobel Prize winner who wasn’t known for his cooking or eating, but he did pen the line that pretty much sums up our Avanti Savoia adventure to date: “If you aren’t in over your head, you’ll never know how tall you are.” Eliot was right, and I think he’d appreciate the fearless leap we took into the world of importing. I know he’d thoroughly enjoy the meal. During the 15 years that my mentor, guide, and friend Vito De Carolis and I spent traveling the world together on business, we absorbed a wealth of information about fine foods (as well as the actual foods and plenty of wine to wash it all down!). We quickly figured out that the best products came from the smaller, more selective and particular producers. And we eventually decided that it would be phenomenally fun and continually fascinating to bring our “Best of the Best” finds, as Vito says, to discriminating palates in the U.S. That’s where the “over your head” parts come in. Sure, Vito knew Italy and I knew business and we both loved good food, but beyond that we were rookie explorers forging new territory with little

more than enthusiasm, creativity, and an adventurous spirit. Along the way, we met Chef Joseph, enlisted the help of my business-savvy son Ben, and relied on a supportive team of family and friends to taste and review samples, stock shelves, pack boxes, and scour the globe for the “Best of the Best” to deliver directly to your door. In only a few years, we’ve figured out that we’re actually pretty tall when it comes to our collective ability to discover hidden culinary gems produced in out-of-the-way places. But we’ve also realized that feeling a bit over our heads at times is actually a good thing. It keeps us hungry for knowledge and new tastes. It keeps us driven to do our best. And best of all, it reminds us every day that there are always new treasures out there for us to discover. So take some time to peruse our latest discoveries while we set off on our next expedition to uncover something new. And this Spring, while you’re creating your own amazing dishes to serve any distinguished poet or other guest who dines at your table, consider putting yourself in over your head doing something you love. It can be scary at first, but based on my experience, it’s definitely worth the risk and the rewards can be oh, so sweet.

Directions In a large pot, bring 1.5 gallons of water to a boil, salt the water, add the pasta, and bring back to a boil. Lower the heat and cook the pasta until it is “al dente”, 10 to 12 minutes. Stir occasionally with a wooden spoon. Coarsely crush the peppercorns with a wooden mortar and pestle. In a large bowl, mix the garlic, parsley, crushed Black Peppercorns and Marcinase extra virgin olive oil. Once the pasta is cooked, drain it and put it in the bowl with the garlic sauce. DIRECTIONS Soak the raisins for one to two hours in the white wine vinegar “ASI” delle Langhe – Tradizionale” Clean the carrots , then cut them in quarters lengthwise. Add the anchovies to the extra virgin olive oil “Marcinase” in a sauce pan and cook until they form a sauce, at the most five minutes. Add the carrots to the anchovy’s sauce and lightly brown for a few minutes, then add the water and cook until the carrots are soft. In a large pot bring 1.5 gallons of water to a boil, salt the water, add the pasta, and bring back to a boil. Lower the heat and cook the pasta until is it “al dente”, 13 to 15 minutes, stir occasionally with a wooden spoon. While the pasta cooks, add the soaked raisins, the vinegar and oregano to the carrots and continue to cook at low temperature. After the pasta has finished cooking, drain and place in a frying pan, with the carrots, add the grated Parmesan cheese and black pepper. Stir well on low temperature for one minute and serve.

DIRECTIONS In a large soup pan, brown meat in batches and set aside. Add chopped peppers, onions and garlic to hot grease and cook 4 or 5 minutes. Add Masa or flour and cook over a low heat for another five minutes, stirring often — it will stick! Add beer, chopped Jalapenos, and tomatoes; bring to a simmer, and stir in the browned meat. Continue simmering and add the rest of the ingredients. Cook at a low simmer for two hours and stir from time to time. Do not let the chili stick or scorch. Taste for seasoning and serve with crackers, chopped onions and grated longhorn cheddar cheese. If desired serve a pot of pinto beans on the side but never add beans to Texas Chili. Texans are fanatics about their chili (which is as it should be). Exotic and easy to make, this recipe is sure to become a favorite! Tear two slices of white bread into small pieces and place into a bowl with ⅔ cup of water. Put one cup of blanched almonds and one large clove of garlic (mashed) into a food processor and blend well. Add the soaked bread and blend.
