Take on a mission

EASY TO FREEZE This recipe is perfect for batch cooking and freezing. Leave any leftovers to cool to room temperature before transferring to an airtight container and freezing for up to 3 months. Defrost overnight in the fridge before reheating until piping hot.

One pot creamy tomato and sausage pasta This is a real one-pot winner. Cooking the pasta in the sauce means all the flavour is absorbed and the starch from the pasta is released to thicken the sauce naturally. Serves 6 | Ready in 35 mins Faff factor | d

up with a wooden spoon, for 4-5 mins until golden brown. 2 Add the onion and mushrooms and cook for a further 3-4 mins until golden and softened. 3 Add the garlic and cook, stirring, for a further minute. Add the chopped tomatoes, chicken stock, tomato purée, crushed chillies (if using), penne and spinach. Season and stir everything together well. Cover with a lid then bring to a boil, reduce the heat to low and cook, stirring occasionally, for 10-12 mins until the pasta is cooked to your liking. 4 Once cooked, remove from the heat and stir through the crème fraîche. Taste and adjust seasoning, if you like. Divide between dishes and top with the grated cheese before serving.

Smoked mackerel, potato and kale frittata Finish the frittata under a grill to crisp up the kale to bring out the best taste. Smoked mackerel is a source of omega 3 and is a distinct flavour.

• ½tbsp olive oil (stock) • 500g pack lean beef steak mince • 2 onions, finely chopped • 1 pepper, cut into 1cm chunks • 1 pack Asda Mild & Delicate Courgettes, cut into 1cm chunks • 250g pack white mushrooms, roughly chopped • 4 cloves garlic • 1tbsp ground cumin • 1tbsp smoked paprika • 2tsp dried oregano • 1 - 1 ½tsp hot chilli powder, depending on your heat preference • 2tbsp tomato purée • 2 x 400g tins chopped tomatoes • 1 beef stock cube, dissolved in 500ml just boiled water • 400g tin red kidney beans in water, drained and rinsed • 400g tin black beans in water, drained and rinsed • 6 large baking potatoes (or use as many as the number of people you are serving)

Add the garlic, cumin, smoked paprika, oregano, chilli powder and tomato purée and cook for a further 2 mins. 3 Add the chopped tomatoes, stock, kidney beans and black beans and season well with salt and black pepper. and continue to simmer for 20-25 mins, until thickened and the flavour has intensified. Add up to 100ml of water if it gets too thick. 4 To make the microwave baked potatoes, prick the surface of them with a fork and place on a microwave-safe plate. Microwave on high for 8-10 mins, turning them over halfway through, until soft when inserted with a skewer. 5 To serve, split the potatoes open and serve with the chilli on top with any of the other toppings if you like. • 550g pack Asda Bolognese Beef Mince with tomato, onion and seasoning • 1 large carrot, grated • 2 cloves garlic, finely chopped • 400g tin chopped tomatoes with herbs • 1tbsp tomato purée • 480g jar Asda White Lasagne Sauce • 50g Asda Grated Parmesan • 12 lasagne sheets • mozzarella (optional) 1 Preheat the oven to 180°C/ 160°C fan/gas 4. Cook the beef mince according to

Bring to the boil, then reduce the heat and simmer for 8-10 mins, until the carrots are tender. 2 In a 20x25cm baking dish, spoon ¼ of the beef mince on the bottom, before spooning over some of the white sauce and finishing with a sprinkle of parmesan. Layer over 3 lasagne sheets, then repeat the layers 3 more times, finishing with a spoonful of white sauce, parmesan and torn mozzarella, if using. 3 Bake for 40-45 mins until golden and bubbling. cook the spinach. When the butternut is done, crush lightly with a fork and stir through drained spinach. 3 Roughly chop most of the basil, combine with the ricotta, milk and most of the hard cheese. Season with black pepper. In a 20x25cm baking dish, spoon ¼ of the butternut mix, top with some of the ricotta then layer over 3 lasagne sheets. Repeat the layers, finishing with ricotta, hard cheese and torn mozzarella, if using. 4 Reduce the oven to 180°C/ 160°C fan/gas 4 and bake, covered with foil for 40 mins. Remove foil and bake for 5 mins more until golden. Allow to stand for 10 mins, then serve with fresh basil.

Bake for 8-10 mins until crunchy. 4 Blitz the soup with a hand blender until creamy and season well. Spoon into bowls, scatter with the croutons and parsley to serve.

Axel says: “Sunday dinner is the most important meal of the week at home. My wife Emily, our kids Darcey and Alfie, Emily’s grandmother and I always share it, meaning there’s an impressive 92-year age range at the table! I grew up between Brunei and Malaysia and was taught to cook by my mum, Noor Aini, who still lives in Kuala Lumpur. I do most of the cooking at home and on Sundays I like to go all-out with a big Malaysian-inspired feast. I’ll get the music going in the kitchen (although I don’t get a look-in with the soundtrack – the kids have songs from Disney’s Encanto playing on repeat) and spend the afternoon preparing dinner at a chilled-out pace. Darcey is usually stood next to me helping where she can (she loves getting involved and is already great at chopping), while Alfie runs around, keeping Emily busy. We sit down at around 4pm to a mouthwatering feast – the curry is a reoccurring favourite. Because I’m a bit of a spice fiend, I serve it with a bowl of extra chopped chilli so we can all add as much as we like.”

“I usually wake up to the smell of bacon and the sound of mum downstairs” Meet sisters Grace and Amy Hodgkinson and their mum, Kalina Dunin-Brzezinska Grace says: “Although we’re in our twenties, when Amy and I go to visit our mum in the Cotswolds for the weekend, we revert to our teenage selves and never manage to make it out of bed before midday on the Sunday. Mum’s a great cook – she grew up in a Polish household with a big emphasis on food – and always makes us her American-style pancakes. She says they’re easy to keep warm in the oven until Amy and I eventually surface, and it suits us as we’ve loved them since we were kids! I usually wake up to the smell of bacon – which can be added as a topping – and the sound of mum bustling around downstairs. I’ll find her dancing around the kitchen as she cooks, wearing a frilly 1940s-style apron and her hair fixed up in a little crocodile clip. On the table is orange juice and coffee, a pot of blueberry compote, some fresh berries, candied pecans, a stack of crispy bacon and a bottle of maple syrup. When we’re sat down, mum will whip a casserole dish out of the oven, filled with a mountain of pancakes. As Amy and I slowly come to life, we’ll catch up on each other’s lives and generally put the world to rights. Fluffy blueberry pancakes

A firm favourite Sunday after Sunday, and oh so simple… Serves 4 | Ready in 50 mins Faff | V d or the candied pecans: F • 40g pecans • 1/2tbsp unsalted butter • 1tbsp muscovado sugar For the blueberry sauce: • 200g blueberries • 1tsp fresh lemon juice For the pancakes: • 150g self-raising flour • ½tsp bicarbonate of soda • 1tbsp caster sugar • 1 free-range egg • 250ml whole milk • 2tbsp unsalted butter, melted • 100g blueberries 1 First make the candied pecans. Toast the pecans in a non-stick frying pan on a low heat for 5-6 mins, stirring occasionally so they don’t burn. Stir in the butter and sugar, mix well and cook for another 1-2 mins until sticky. Tip on to a plate lined with baking paper and separate with a spatula. Set aside to cool then crumble with your hands. 2 To make the sauce, put the berries and lemon juice in a saucepan with 2tbsp water and bring to the boil. Turn down to a simmer and allow to bubble for 8-10 mins until thickened, stirring occasionally so the berries begin to break down. Transfer to a bowl and set aside. 3 Now for the pancakes: stir together the dry ingredients in a large bowl, then create a well in the centre. Whisk together the egg, milk and

1tbsp melted butter, then add to the well, whisking gradually until smooth and a dropping consistency. Stir in the blueberries. 4 Heat a non-stick frying pan until hot, then brush with some of the remaining butter. Add 2tbsp batter into the pan for each pancake. When bubbles start to appear on the surface after about 2 mins, carefully flip and cook for another 2 mins until golden. Transfer to a baking dish and keep warm in the oven, then continue with the rest of the batter to make 12 pancakes. 5 To serve, arrange the pancakes on a plate, topped with the blueberry sauce and nuts. Kalina’s tips: Making the pancakes • Make the pancake batter the night before, and keep in the fridge. • The first pancake is usually not so good, but it sets the pan and that first one can be eaten with lemon juice as a ‘cook’s treat’. Adding extras • Leftover nuts will store well in an airtight container for 5 days. • Leftover blueberry sauce will freeze well for up to 3 months. • Change the fruit of choice to keep it seasonal, which can be cheaper. • Change the nut of choice, eg try with candied walnuts. Transfer the chicken to a roasting tin and cook for 35-45 mins, or until cooked through and the juices run clear. Preheat the grill to high and after the chicken has finished cooking, place under the grill for 4-5 mins until golden. In the UK we throw away 20 million slices of bread each day, so try these nifty ways to use up past-their-best loaves: l To refresh stale bread, sprinkle slices with water, wrap together in foil and place in a 150°C oven for 5-10 minutes. Ta dah! Soft again. l For breadcrumbs, blitz stale bread in a food processor and stash in the freezer in zip-lock bags. Try mixing a handful with a splash of olive oil and grated cheese for a tasty mac ’n’ cheese topping. l Make croutons. Toss cubes of stale bread with a little olive oil and roast at 200°C for 10 minutes, or until golden. Combine with roasted squash and broccoli, cooked brown rice or spelt, chopped herbs and a pinch of chilli flakes. Season and dress with olive oil and lemon juice.

Try batch cooking one element of a meal then adding it to different dinners that week. Sliced chicken breasts fried with mixed peppers and spices could be used in burrito bowls, pasta dishes and fajitas, for instance. This means when you come to cook, the bulk of the prep has already been done. It’s especially great to do this with a meat recipe as it splits the cost of the protein (often the most expensive part of our weekly shop), over several days.

’ve been in the fish industry all my life. I started out working on fishing boats, landing white fish like haddock and cod, then came ashore for good just over 10 years ago to work the kilns here at Young’s in Fraserburgh. I took over from the previous master smoker, James, who passed on his knowledge to me back when I was a fresh-faced fisherman. He was incredibly skilled and had been managing the kilns for decades – it was his life’s work. Our kilns are like brick boxes used for smoking food. There’s a vent that brings in air to allow the fire to burn, and a fan at the top that helps draw that smoke through, while the salmon hangs inside. The smoke does two things to the meat: adds flavour and helps preserve it. I joke all the time that these kilns are magic, but they really are in lots of ways.

They’re quite unassuming-looking and, left to their own devices, wouldn’t do very much at all. But by tinkering with a few different elements, they perform a kind of sorcery. Working the kilns is a hands-on job. They’re manned 24 hours a day, all year round. It’s a constant negotiation to make sure the fish are getting exactly the right treatment – there are so many variables to consider, from the size of the salmon to the weather outside. Asda’s Ultimate Blackthorn Cured Smoked Salmon is our newest product. To create it, we broke down each stage of the smoked salmon production process – from the curing and maturation to the smoking and slicing – so we could take each one to the next level. The process starts with the fresh salmon that comes to us from Scottish farms. We’re careful about only working with suppliers with solid sustainability credentials. That’s important not only for the welfare of the fish but also the environment – not to mention the overall quality of the end result. First, it’s cured with Blackthorn Salt, which is made on the west coast of Scotland by trickling seawater through a huge thorn tower that sits on the shoreline. It’s evaporated by coastal

winds before the concentrated brine is gently heated to create chunky salt crystals. We pack that onto the fish by hand and leave it to cure it for 12 hours. After being rinsed, it has another 12 hours of maturation to dry it out before it arrives with me to be smoked in the kilns. We thought carefully about what woods to use in the kilns – different woods give different flavours – and after much experimentation we settled on alder, sweetgale and heather. This mixture is a nod to the salmon’s natural habitat, as they’re trees and shrubs that grow on the banks of Scottish salmon rivers. This salmon is smoked for around 30 hours – more than double the time we would normally smoke salmon for – because these woods are subtle. You get a deeper, richer flavour without overpowering the delicate fish with smokiness. It’s how I like my salmon, with a more intense but balanced flavour. It’s exactly the kind I like to serve on blinis as canapés for Christmas – it’s what you need to balance mild-tasting blinis and cream cheese. Christmas is always busy for salmon smokers, and we’ve been preparing since the start of September. Our peak week rolls around in the middle of December, when we dispatch half of our yearly volume. It’s hectic!

When I’m buying smoked salmon, I’m looking for fish that’s firm and has a bright orangey-pink colour. It should yield into a buttery kind of texture on the tongue when you eat it, too. That’s how you tell a great-quality piece of salmon apart. ●

Serves 20-24 | Ready in 1 hour 30 mins Faff | V EF d Spiced ginger cake • 450ml milk or plant-based milk • 21/2tsp white wine vinegar • 50g black treacle • 180g sunflower oil (or other neutral tasting oil) • 1 /2tsp salt • 1tsp vanilla extract • 400g self-raising flour • 310g soft dark brown sugar • 70g caster sugar • 11/2tbsp baking powder • 21/2tbsp ground ginger • 1tbsp ground cinnamon Buttercream • 375g butter or vegan butter (choose one that’s close to 80% fat, eg Flora unsalted or Violife), softened • 650g icing sugar • 1tbsp vanilla extract • 2-4tbsp of milk/plant-based milk • orange, green, red and blue Asda Natural Food Colouring For the ganache drip • 250g dark chocolate (chopped as small as possible) • 250ml double cream • Dr Oetker Extra Strong Black Food Colouring Gel Plus • Sprinkles of your choice • 1 pack of Cake Décor edible eyes • 1 x 154g pack Oreos (16 per pack) • Cake pop sticks or similar

1 Preheat the oven to 190°C/170°C fan/ gas 5. Grease the bases and sides of two deep 20cm cake tins, and then line the bases with a circle of greaseproof baking paper. 2 To make the ginger cake, add the milk and white wine vinegar to a large mixing bowl and whisk together. Add the treacle, oil, salt and vanilla extract, then whisk again until combined. 3 In a separate large bowl, combine all the dry ingredients. Add the wet ingredients to the dry, and whisk until just combined. Divide equally between the two prepared tins, and bake for around 30-35 mins, or until springy on top and a knife inserted into the centre comes out clean. Leave them in their tins for 5 mins before running a knife around the edges and turning out on to cooling racks. Peel off the greaseproof baking paper and leave to cool. 4 While the cake’s are cooling, make the buttercream. Add the butter and icing sugar to a large mixing bowl, then use an electric whisk to beat until pale and fluffy. Add the vanilla extract and milk to loosen to a spreadable consistency (you tend to need less milk – if any – if using plant-based butter), and whisk until well combined. Transfer about ¼ of the buttercream to a bowl and mix in half a tsp green food colouring. Spoon another ¼ into a separate bowl and add half a tsp blue food colouring and a drop of red to make it purple. Dye the remaining buttercream orange using half a tsp orange food colouring. This will result in a reasonably pastel colour. For a deeper colour, use gel food colouring (eg Dr Oetker Extra Strong Violet Food Colouring Gel). Don’t keep on adding liquid food colouring, as this will make the buttercream consistency too ‘sloppy’. 5 Once the cakes are completely cool, cut each horizontally in half so that you now have four cake layers. To

assemble, swipe a little orange buttercream on to your chosen serving plate/board, then place the first cake layer on top. Spread the purple buttercream in a layer on top, then place a second cake layer on top of that. Spread orange buttercream on top, followed by the third cake layer. Cover this with green buttercream and the final cake layer. Cover the tops and sides with the remaining orange buttercream, and smooth with a cake scraper/metal palette knife – run a metal scraper under hot water to help you get a smoother finish. Chill the cake at this stage if you can, but it will still be okay if you can’t. 6 To make the ganache, place the chopped chocolate into a heatproof bowl. Place the cream in a small pan and stir over medium heat until bubbles start to appear at the sides. Pour over all the chocolate and leave to sit for 2 mins, then stir until smooth and all the chocolate has melted. If any chocolate hasn’t melted, microwave this in 10-second bursts, stirring lots after each, or return the mixture briefly to the hob and stir constantly over a very low heat. Don’t let the chocolate get too hot! 7 Add black food colouring gel (see packaging for how much) to the ganache to colour, then leave to cool for 10-15 mins until it is a good dripping consistency – you need the icing to have some thickness so it holds the ‘drip’ shape. Use a spoon to cover the top of the cake in ganache and carefully push drips down the sides. 8 Scatter sprinkles around the base of the cake and slightly up the sides. Monster’s Lair Cake Transform a pair of shop-bought Asda Celebration Cakes into a magnificent monster cake, using minimal effort but with maximum impact! It’s impossible to go wrong with the monsters you create, and adults and kids alike will love getting involved to see what kind of shapes they can come up with. Serves 32 | Ready in 1 hour 40 mins Faff | V d • 2 x Asda Mega Chocolate Celebration Cake • 1 tub Betty Crocker Tempting Chocolate Icing • 1 pack of Cake Décor edible eyes For the monster meringues (If you don’t have time to make these from scratch, use shop-bought meringues and break these into monster shapes instead! You can paint them with food dyes mixed with a small amount of water) • 3 egg whites • 210g caster sugar • Dr Oetker Extra Strong Food Colouring Gel – green, yellow, orange 1 If you’re making the meringues, first line two baking trays with baking paper and preheat the oven to 110°C/90°C fan/ gas ¼ . Add the egg white to a clean and grease-free, large mixing bowl. Whisk on high speed until you have soft peaks, then add 1tbsp of sugar and whisk to stiff peaks. Continue adding a tbsp of sugar at a time, whisking for about

30 seconds to a minute after each addition. It’s important to add the sugar gradually so that it all dissolves. 2 When all the sugar has been incorporated and the meringue looks glossy and has stiff peaks, divide it between three different bowls. Add a drop of different food gel to each bowl and stir through so that you have three bowls of different-coloured meringue mixture: yellow, orange and green. If you want a brighter colour add another drop or two until you’re happy. 3. Put the mixture into different piping bags, and cut the tips to create openings. You can cut some small, and some larger, depending on what monster shapes you want to create. Experiment and create monster shapes in many different ways, but here are some starting ideas. To create worm shapes, squeeze the piping bag to make a round shape, then stop squeezing while pulling back, and squeeze again so that you create the ridge in between. Keep going until your worm is as long as you like, then pull upwards to create the antenna on the head of the worm. You can also pipe simple meringue kisses and make a pinching motion with your fingers to create arms or spikey monsters. You can also pipe snake-like shapes, or pipe in a swirling motion while moving upwards. Make sure you have some small/flatter meringues, as these work best between the cake layers. 4 Bake for 1 hour, or until the meringues are dry and lift cleanly off the baking paper. Note: very large meringues may need an extra half an hour. 5 Meanwhile, assemble the cake. Cut each Asda cake horizontally in half, so that you now have four cake layers. Two of the layers will be from the tops of the

cakes, so these will have a slight dome and already have icing and chocolate shavings on them. Scrape off the chocolate shavings (you can snack on these while you work!), but keep the icing. Spread a small amount of chocolate icing on to your chosen serving plate, then place a cake layer on top. Spread more icing over this layer – making sure you put extra on if it’s not one of the top layers that already has a lot more! Place another cake layer on top, and repeat until you have a stack of all four layers, with icing in between each. Just leave a tiny amount of icing for sticking on edible eyes later. The domed cake layers will create more of a space between the layers, and this is useful when decorating with monsters. 6 Once the meringues are baked and cool, arrange these in between the cake layers and peeking out, and some on top stacked on top of each other. Stick on the edible eyes as you go along placing the monsters on the cake, using a little leftover icing to attach. You can also add edible eyes to the icing in between the cake layers, to look like monsters peering out from the darkness. Each 80g portion contains Energy 1,331kJ 317kcal 16%

Makes 24 | Ready in 15 mins Faff factor Cut 6 Granny Smith apples into quarters. Remove the core and seeds from each quarter. Using a sharp knife, carefully cut a slice horizontally out of the skin side of each quarter to resemble a mouth shape as in the photos. Add 5 mini marshmallows to each to resemble teeth. Add 1tbsp runny honey to a bowl. Taking one Cake Decor Edible Eyes Sugar Shaped Decoration at a time (you will need 48 in total), dip the flat side into the honey and stick on to the top part of the apple as in the photos and serve. It’ll be love at first bite!

Fruity eyeballs

Melt 300g dark chocolate in a small heatproof bowl set over a small pan of barely simmering water, making sure the base of the bowl doesn’t touch the water. Stir until the chocolate is melted. Peel 7 bananas and halve widthways. Lay a sheet of greaseproof paper on a flat tray. Push a fork into the end of one of the banana halves and dip the banana into the chocolate, turning until the banana is coated. Lift out and let the excess chocolate drip off. Transfer to the greaseproof paper, remove the fork and stick a cocktail stick into the cut side of each one. Melt 100g white chocolate chips in the same way as above. Dot each banana with two Cake Decor Edible Eyes Sugar Shaped Decorations about two thirds of the way up the banana (you will need 28 eyes). Transfer the melted chocolate to a piping bag and drizzle over the bananas. Chill until firm (about 20 mins) and serve.

Makes 18 | Ready in 15 mins Faff factor Melt 100g white chocolate chips in a small heatproof bowl set over a small pan of barely simmering water, making sure the base of the bowl doesn’t touch the water. Stir until the chocolate is melted. Lay a 600g pack Asda Strawberries on a sheet of greaseproof paper. Transfer the melted chocolate to a piping bag or a sandwich bag (snipping a small hole in the corner of the bag) and drizzle over the strawberries. Dot each strawberry with two Cake Decor Edible Eyes Sugar Shaped Decorations (you will need about 36 in total). Make sure you leave the white chocolate to firm up before serving.

Try this ghoulish twist on a Mojito full of chunks of fruit, grapes and things that go bump in the night. Serves 1 | Ready in 10 mins

Haunted mulled gin

Seasonal pear meets the ghostly warmth of ginger, coriander and clove in this frightfully cosy autumnal sipper. Serves 1 | Ready in 10 mins Tip 25ml gin into the base of a mug or heatproof glass and set aside. Pour 100ml pear juice (fresh or from a can of pear halves in juice), 1 slice of lemon, 1 clove, 1 slice of root ginger, 3 coriander seeds and 1tsp honey into a saucepan and warm through until simmering. Strain into the prepared mug or glass to serve. Garnish with a piece of fresh or canned pear cut in half and placed largest side up with 2 cloves as eyes to make a screaming ghost. Drop into the mulled gin to serve.

Place 1 lime, chopped into chunks, and 1tsp granulated sugar in the bottom of a jug and, using a cocktail muddler or end of a wooden spoon, mix them all around, crushing the lime pieces lightly to release the lime juice and dissolve the sugar. Strain the mixture into a tall glass then add a small handful of mint leaves and 50ml white rum. Mix gently to lightly bruise the mint. Add a handful of ice, a few pieces of melon and grape (try the Asda Snowball Melon & Sable Grape mix) and then top up with sparkling water (around 150ml), to taste. Add a sprig of mint and 3-4 Asda Edible Eyes to garnish.

Trick ‘mockarita’

This drink is a trick and a treat – with flavours of sweet fruit, sour sherbet and a prickle of chilli heat, you won’t believe it’s alcohol free. Serves 1 | Ready in 10 mins Start by making the garnish. Put 1tsp sea salt, pinch ground coriander and 2 crushed lemon sherbet sweets on a plate and mix together. Brush a little honey on the rim of your tumbler and dip into the salt-sweet mix to coat. Set aside. Put 50ml tropical juice, 25ml lime juice, 1tsp honey, 1tsp cider vinegar, a slice of green chilli, a pinch of ground coriander and ¼tsp vanilla extract into a shaker with a large handful of ice. Shake well until the shaker feels really cold, then fine strain into the prepared glass along with some fresh ice cubes. Garnish with a slice of green chilli and serve.

Pumpkin-spiced Old Fashioned Summon those delicious and rich pumpkin spice flavours in this Halloween take on an Old Fashioned, complete with a peachy pumpkin. Serves 1 (with leftover syrup) | Ready in 15 mins Start by making the pumpkin spice syrup. Tip 100g soft brown dark sugar, 1 cinnamon stick, ½tsp ground ginger, 2 cloves, 1tsp ground allspice, ½tsp ground nutmeg and 100ml water in a small saucepan. Heat gently until simmering and the sugar has dissolved – be careful as the mixture can bubble up a little. Strain into a heatproof measuring jug and make it up with water to 200ml. Leave to cool. Use the tip of a knife to carve a spooky face out of the rounded side of 1 peach or apricot to look like a pumpkin lantern if you like, then set aside. To make the cocktail put 50ml of the spiced syrup into a cocktail shaker with 50ml bourbon, a few drops of angostura bitters and a handful of ice. Shake well then strain into an ice-filled tumbler. Add your fruit ‘pumpkin’ to serve.

Sit tall through the spine and relax the shoulders. Soften the forehead and jaw, dropping the tongue. Take a long breath in through the nose, slowly let it go through the mouth. Inhale again in the same way while thinking ‘I am’ and breathe out thinking ‘here now’. Repeat as you like; remind yourself that you are calm and in control in this present moment. VITAMIN D “At this time of year, taking vitamin D supplements is a really good idea,” says Asda nutritionist, Sophie Rose. “Unlike other vitamins, it can actually be made in the body, but only when our skin is exposed to sunlight.” Given the sun spends much of its time behind thick cloud in autumn and winter, we need some extra help. “You can boost vitamin D by eating foods like oily fish, eggs and fortified breakfast cereals or spreads, but it’s still recommended that all adults and children over five take a daily 10µg supplement between October and March.” Important for healthy bones and muscles, vitamin D also supports immune function and may even help regulate our mood.

CHECK YOUR DIET Certain foods can be beneficial for bedtime. Almonds and cherries contain melatonin*, which contributes to the reduction of time taken to fall asleep, while you should stay away from sugar, caffeine and alcohol in the evenings – all no-nos before bedtime.

LET THE LIGHT IN Sunlight helps regulate your body’s day and night cycles, so try and expose yourself to plenty of it in the daytime – and hopefully you’ll find it easier to slip off when night falls.

eeling the pinch? You’re not alone – nearly 90% of us reported an increase in our living costs earlier this year. But there are ways to manage your spending so you feel more in control – even when prices are rising. Identifying your ‘money dials’ – put simply, what you love spending your cash on – is a start. Money dials can help you determine the things that matter most to you in life and ensure your spending behaviour is in line with your true values.

The basics

A money dial is a spending habit that makes you feel happier, excited or more fulfilled. They’re called ‘dials’ because you can turn them up or down as your funds allow. Your dial depends on you – your passions, drives – not anyone else or what you think you should be spending on. ‘Each money dial is a value,’ says certified money coach Fanny Snaith (fannysnaith.com). ‘It’s about knowing yourself.’ Sometimes we become mismatched with our true values, so what’s important to us in life and how we spend are not aligned.

Why dials work

Money dials help you spend more ‘consciously’ – budgeting more for what you love and cutting back on what’s less important – basics such as food, bills or transport aside. They remove ‘guilt’ about ‘wasting money’ – you love fashion, your friend prefers saving for holidays – that’s OK, we’re all different. ‘If you treat what you value as a guilty pleasure it takes the shine off it,’ adds Snaith. Even with tight budgets, you know which ‘must-haves’ to prioritise. You feel happier as you’re living more authentically. You lose ‘false’ happiness habits, eg frittering money on takeaways, when home-cooked meals can be more nourishing and tastier. You stop ‘denying yourself’. ‘When people budget, they slash everything of pleasure,’ says Snaith. ‘You go into a place of “lack”, feel sorry for yourself and can end up blowing it all.’

Let’s try an example: let’s say Lucy’s money dial is ‘travel’. However, she needs to adjust her outgoings as her gas bill has shot up this month.

Dial up: To keep spending on travel, Lucy could: Swap regularly dining out for special meals she makes at home. Cut down on new clothes, reusing what she has or buying sale items. Consider downsizing, or renting out a spare room. Dial down: Lucy could make travel more affordable by: Looking into house or pet sitting, investigating ‘home swaps’ or staying with friends in far-flung places. Sticking to self-catering to keep costs down while she’s away. Trying camping or shared accommodation. Buying budget beach and travel gear rather than pricier branded goods.

THE MAIN MONEY DIALS

US author and money guru Ramit Sethi (iwillteachyoutoberich.com), who coined the concept, has identified 10 key money dials: CONVENIENCE Eating ready meals, grocery deliveries or taxis, are important: time is precious. TRAVEL Holidays or trips away are worth saving up for – a common dial says Sethi. HEALTH/FITNESS You cook meals from scratch with fresh, nutritious ingredients and your gym membership is a must. EXPERIENCES Doing things you’ll remember – like theatre trips, live concerts – lift you up more than material possessions. FREEDOM Work part-time or take six months out and sacrifice income for a simpler life. RELATIONSHIPS A night out with friends or your partner is worth every penny, or renting or buying a house close to family. GENEROSITY You love it when friends appreciate a birthday gift, and you give often to charities. LUXURY You love the finer things – silk sheets, or a bottle of Asda Extra Special wine. SELF-IMPROVEMENT Learning new things brings you joy, and new courses are a must. SOCIAL STATUS Designer labels or sports cars bring joy.

Think pink! It’s Breast Cancer Awareness Month – which means a chance to support our life-changing, boob-checking Tickled Pink campaign. Asda charity lead Jo Warner has the feels... INTERVIEW RACHAEL STILES PHOTOGRAPHS JO DENISON

What is Tickled Pink all about? It is a partnership between Asda and two breast cancer charities, CoppaFeel! and Breast Cancer Now. It was created in 1996, when a colleague lobbied the business to get behind supporting breast cancer as an issue. Back then, around 37,000 women a year were diagnosed with breast cancer. That has risen to 55,000 a year in 2022. We all need to be talking about it.

have millions of customers shopping with us each week, so we use our stores and our products for visibility and messaging – on our changing room mirrors, lingerie labels, period products, pharmacy bags and receipts. You may have seen Asda home delivery vans with ‘breast check’ messages. They’re disruptive and very pink. Watch out for our brand-new awareness campaign, The Real Self Checkout, in store during October.

What does Tickled Pink actually do? Through the generosity of our customers and colleagues we have raised £77m to date, and we want to raise £100m by 2026. We focus on awareness-raising, not just on breast cancer, but how everyone should get to know their boobs and pecs. If they notice something that’s unusual for them, they should see a GP as soon as possible. Our research has found that 30% of our customers have never checked themselves. But 40% do it regularly, so that’s positive. We

Why is this so close to your heart? I lead all of Asda’s charity partnerships – it’s the best job! But I also have had my own experience of breast cancer. My two sisters have had it too. We were all in our twenties – there’s a strong family history – so it is very important to me and I’ve seen first-hand the benefit of an early diagnosis. I get to work with an amazing team to come up with engaging, disruptive campaigns, so that more people know checking is something that should be part of their routine, and could save their life.

Creating our T-shirt slogans For this year’s Tickled Pink T-shirts, a panel of inspiring women living with breast cancer shared the meaningful, positive or empowering slogans that personally helped them through their breast cancer journey. One of them is Mikki, 30, who lives with incurable, secondary breast cancer. Her slogan ‘Grow through what you go through’ is shown on the previous page. Mikki says: “Despite the issues, I am very positive and hopeful and just try to make the most of life. With my health, travelling can be difficult, so I’m trying to stay in as many counties in the UK as possible, in as many types of accommodation (a converted bus is next on my list!) and have as many animal encounters as possible. What’s important to me is making memories and having fun with the people I love.”

How can people get involved? By getting to know the signs and symptoms of breast cancer, checking your chest regularly and encouraging friends and family to do the same. People are very much at the heart of what we do. Each issue, we’re sitting down with one of our special partners to have a well-deserved cuppa and a chat about how we work together to support our local communities.

Emma: Working with your team [at St Austell Food Bank] over the last few years has been great – until I started helping out, I wasn’t aware of the extent of the work that food banks do.

Andy: There’s actually been a decline in donations recently. We’re alright for the likes of tinned meat and veg, soup, pasta, beans and cereal, but we need tinned tomatoes, tinned fruit, custard, coffee and jam, and instant noodles that you only need to boil a kettle to make. And then there are the little treats, like crisps and chocolate – they can make all the difference.

Andy: There’s a lot more to it than dishing out food! We want to find out about the issues that cause people to need the food bank in the first place. The hope is that, if we do our jobs well, people won’t need to come back. Emma: I’ve noticed we’ve been a lot busier this year. The rising cost of living probably has something to do with it; more people are having to choose between feeding their family and putting the heating on. We’ve also been welcoming Ukrainian refugees. Andy: I recently looked at some stats, and between April and July this year we 94 | ASDA MAGAZINE | OCTOBER 2022

Emma: Wow, that’s a lot of people. Are donations keeping up with the demand?

Emma: So, Asda has a permanent collection point in the St Austell store – the trolley near the entrance – which customers drop donations into. How’s that going – have you collected much? Andy: Shoppers are always generous. In the first half of this year, we collected about three tonnes of food from that trolley. For sleepy little St Austell, with everything that’s going on with the cost of living, that’s pretty impressive.

We work out how we help each person – for instance, not everyone has access to a kitchen, so foods like pasta aren’t going to be any use. Then we’ll see if they’re eligible for any grants or other support, and I also connect them with

other local charities I work with. There’s the clothes bank, community bank and lots of different local groups, as well as organisations that help parents with support. When people come into the food bank, I might have chatted to them at, say, playgroup a couple of days before – and that familiarity can really help. That’s one of the reasons I love my job: getting to meet so many people. Andy: That’s what drew me into this role too. Being part of this team is wonderful – everyone is so committed. There are plenty of challenges, but going home knowing you’ve done something truly useful with your day is a great feeling.

It might seem early to be talking about Christmas, but we’ve actually been planning it for two or three years! Our food and drink range this year really is our best ever, with a host of new ideas to enjoy over the festive period.

At Christmas, we all want the very best quality – but at affordable prices. So this year we’ve invested hugely in our own brand range, so you don’t need to splurge to get great-quality food. The value on offer is truly incredible.

Bringing the wow factor One of the biggest food trends we’ve seen is for fun dishes that make a statement visually. Our Millionaire’s Edible Chocolate Bowl is a great example – it’s filled with salted caramel, toffee mousse, Belgian chocolate ganache, and edible chocolate spoons. There’s also our chocolatey Double Smash Reindeer cake, which you break through to reveal Jingle the reindeer, hiding more treats in his nose!

The ultimate Christmas feast We’ve got Christmas Day covered, whether you want traditional turkey or something different. Our own Carvery Selection Box is a winner: it includes a turkey breast joint, beef and gammon, slow cooked to make prep quick and easy. Another wow-factor Christmas centrepiece is our Extra Special Ultimate Tomahawk Wellington. The meat is wrapped in a shiitake mushroom duxelles, then a threecheese layer and all-butter pastry on top. We’re also proud to have more vegan and Free From options than ever. Our own-brand Vegan Turkey Crown is plant-based but has a wonderful texture and taste. It has an umami-laced vegan butter for basting, and there’s a crumb on top that crisps up like turkey skin.

Canapés on the quick There’s also a trend towards high quality ready-made food – so we expect our new Antipasti Platters to fly off the shelves. They’re full of great quality cured meats and cheeses. You rip off the lid and serve, so they’re great for easy entertaining. Our frozen Maple Pigs in Blankets are real winners too. Luxurious liqueurs Who doesn’t love a cream liqueur at Christmas? So now we’ve developed our own. The Extra Special Blonde Chocolate is outstanding – it’s made with double cream, Caribbean rum, Madagascan vanilla and caramel. It’s Christmas in a glass.

Food from the heart We’re equally proud of our puddings. Our new Extra Special Raspberry and Dark Chocolate Nougat is made by a small family business in Italy, using a 95-year-old recipe. And our Classic Panettone comes from Italy too – it features a live dough culture, maintained since 1964 – what flavours!

“A good piece of fish barely needs cooking at all” Our favourite Italian foodie, TV chef and presenter Gino D’Acampo has the last word on cooking fish – a staple of everyday Italian eating I love fish – it’s so quick and simple to cook and has always been a huge part of my diet. I’m from Napoli, on the south-west coast of Italy, so I grew up surrounded by fishermen and bustling seafood markets. You don’t have to travel to Italy for great-quality seafood, though; we have plenty in UK waters, from lobster and haddock caught off the coast of Scotland, to Cornish mackerel and mussels found off the south coast of England. But I don’t think we make the most of it, especially as it’s so affordable – and really good for you. People can be nervous about preparing fish, but I think fish is much easier to work with than meat or vegetables. In fact, a good piece of fish barely needs cooking at all. The

key is to not overdo it – it’s the only way you can go wrong. It takes less time than you might think to prep and cook a fillet of fish (30 seconds in a pan can be a lifetime for a piece of sea bass, for example) so you must be very careful. When pan-frying, pat down the skin with kitchen paper to dry it, and make sure the pan has heated up properly before adding the fillet skin-side-down to make a nice crisp skin. Watch the fish as it turns opaque all the way to the middle – then flip. Italian-style fish dishes are big on simplicity while delivering on bright, fresh flavour. I spent years perfecting these kinds of recipes – but most people don’t have the time to do the same, so I created my easy fish range for Asda. It makes this sometimes under-loved ingredient even more simple to prepare, so, no matter your experience of seafood, you’ll get great results at home, every time.
