We’ve had loads of fun putting together our Easter issue. This time of year is great for bringing families together for walks, meals and Easter eggs. And, as we can’t guarantee it won’t rain, we’ve weatherproofed our offering with ways to bring the fun indoors with brilliant baking ideas, toys and crafts for kids. If you’ve got little ones, get them working hard to earn their chocolate treats with a good egg hunt – like ours on page 28. I’m a firm believer in making the eggs really tricky to find, which means my nephews can get fit and play detectives at the same time. I make a checklist of clues and keep sending the boys back to search while my sister and I put our feet up! This issue is packed with over 40 recipes to provide inspiration this Easter. We’ve paid attention to cost, ease and time to ensure all our recipes are simple, delicious and won’t break the bank. Have an Eggcellent Easter!

Put a 90g bag baby leaf salad in a large bowl. Add 10 halved cherry tomatoes, 50g croutons and 200g chopped cooked chicken, and toss. Crumble in 2 rashers cooked, cooled bacon and mix to combine. Mix together 3tbsp oil, 2tbsp cider vinegar, a crushed garlic clove, 1tbsp honey and 1tsp mustard. Season and drizzle over the salad. Serves 2

Chicken stir-fry

Chicken & herb risotto

Heat 2tbsp oil in a frying pan or wok over a medium heat. Add 200g chopped cooked chicken and reheat for 2 minutes. Add a 340g pack Asda Oriental Bean Stir-Fry Mix with Edamame Beans and Peppers and 495g fresh egg noodles. Cook for 2-3 minutes, stirring all the time. Add a 230g pack Asda Black Bean Stir-Fry Sauce and cook, tossing gently, for a further minute, until piping hot. Serve with soy sauce. Serves 2

Heat 25g butter in a pan and cook a crushed garlic clove, chopped onion and sliced stick of celery for 3-4 minutes. Add 300g Arborio rice, 200g chopped mushrooms and 200g chopped cooked chicken. Make up 1.2 litres vegetable stock and keep warm. Add 2 ladlefuls to the rice and simmer. Once absorbed, add a ladleful at a time until the rice is tender, about 20-25 minutes. Top with parsley. Serve with Parmesan and bread. Serves 2

who produces them EGGS There’s something really nice about looking out to a feathered flock of happy hens roaming around our fields, says Robin Thompson, the Managing Director of Bridge House Farm Ltd in Long Buckby, Northamptonshire. The family-run farm supplies free-range eggs to Asda through Noble Foods. ‘We have 30,000 free-range laying hens who go in and out of the sheds via pop-holes, and they’re free to wander and forage on the surrounding grass and fields during daylight hours,’ Robin says. GreaT qualiTies of free-ranGe eGGs Robin ensures that his free-range hens are healthy, happy and fed a wholesome diet mainly consisting of grains. The result is delicious-tasting, high quality Asda Free Range Eggs with excellent shell consistency and rich golden yolks. They’re

eGG ProDuCTion The nesting areas can hold up to 120 birds. ‘Once eggs are laid, we collect them from a belt that runs underneath and outside the building,’ Robin says. Each week the farm supplies around 170,000 free-range eggs to Noble Foods. The eggs are then sent to a packing centre, destined for Asda stores. enjoy your eGGs aT home Eggs are very versatile. ‘I like to eat mine poached on toasted breakfast muffins,’ says Robin. A simple way to test that your egg is fresh is to put it in water: generally, if it sinks then it’s fresh – if it floats then it’s not. And for maximum freshness, store eggs in their box, in the fridge.

In season How to make the most of the tastiest produce available in store this month at Asda

Spotlight on BANANAS To stop bananas from going black, store them at room temperature in their own fruit bowl. We love them for breakfast – try them mashed on toast or whizzed into a smoothie – and they make tasty desserts when baked (see right).

Curly kale makes a nice change to cabbage. Just trim away the tough outer stalks, wash the leaves, then chop or shred them. Put in a pan with 1cm water and simmer for 5 minutes until wilted. Drain, then mix in a knob of butter and some black pepper.

The easiest way to prepare chives is to snip them with scissors. ♦ Use whole or chopped in salads and sandwiches instead of onions for a more subtle flavour. ♦ Sprinkle them in omelettes and scrambled eggs. ♦ Stir chopped chives into soft cheese for an easy dip. ♦ Add chives to cheese sauce or mashed potatoes for a mild onion taste.

♦ Halve, deseed and grate a cucumber. Squeeze out any excess water. ♦ Place in a bowl and stir in some Greek yogurt, chopped mint leaves and a little lemon juice, crushed garlic and salt and pepper. ♦ Serve with crudités.

Cucumber & feta salad ♦ Toast a handful of pecan nuts, then toss together with some cucumber ribbons (see right) and crumbled feta in a large bowl. ♦ Make a dressing of 3 parts oil to 1 part vinegar. Shake well and dress the salad just before serving.

Cut a cucumber in half and remove the seeds with a teaspoon. Use a vegetable peeler to make long thin strips or slice thinly with a knife.

Crunchy cucumber & radish coleslaw ♦ Halve, deseed and cut a cucumber into matchstick-size pieces. ♦ Toss with some grated carrot, sliced radishes and a little mayonnaise. ♦ Season to taste and serve as a side dish.

Chocolate banoffee pie A lovely chocolate cookie crust holds this wickedly indulgent dessert 250g Oreo cookies 175g unsalted butter 150g caster sugar 300ml double cream 4 bananas, sliced 25g dark chocolate, grated or shaved

❶ Grease a 24cm loosebased cake tin and line the base with baking paper. Crush the biscuits in a processor to make crumbs or put them in

a freezer bag and crush with a rolling pin. Melt 75g butter and mix with the crumbs. Put into the tin, covering the sides and base evenly and pressing firmly with the back of a spoon. Chill for at least 30 minutes. ❷ Heat the sugar with 100ml cold water, stirring gently, until the sugar has completely dissolved. Stop stirring and simmer until the mixture is a caramel colour. You can

shake the pan gently as it caramelises but don’t stir or it will crystalise. ❸ Immediately remove from the heat and add 100g butter, a small pinch of salt and 115ml of the double cream. Stir until evenly mixed, then return to a very gentle heat and stir constantly until the mixture is smooth. ❹ Pour three-quarters of the caramel over the base. Cool.

❺ Peel and slice the bananas and put on top of the caramel.

❻ Whip the rest of the cream

until it just starts to thicken and hold it’s shape. Fold in the rest of the caramel to make a rippled effect. ❼ Spread the cream over the bananas and decorate with chocolate shavings. high

Chocolate caramel mousse If you prefer a darker chocolate mousse, use 250g of dark chocolate and leave out the milk chocolate 397g can Carnation Caramel 125g Asda Dark Chocolate (50% cocoa solids), in squares 125g Asda Milk Chocolate, in squares 4 large free-range eggs, separated 4tbsp black coffee 2 level tbsp caster sugar Whitworths Chopped Hazelnuts, to serve

❶ preheat the oven to 180c/160c Fan/gas 4. line a 12-hole bun tray with cupcake cases (not fairy cake or muffin cases). sift the flour and baking powder into a bowl. add 125g of the butter, the caster sugar and eggs. ❷ Beat with a wooden spoon until mixed. scrape the sides of the bowl down with a spatula, then beat the cake mixture for another minute. ❸ divide the mixture between the paper cases. Bake for 18-20 minutes or until the tops spring back when lightly pressed. cool on a wire rack. ❹ make the buttercream by beating the remaining 100g butter in a bowl until soft. stir in the icing sugar, a spoonful at a time. add the vanilla extract and milk, then beat until creamy. set aside some buttercream for the ears and spread the rest on the cakes. ❺ make bunny ears and whiskers (see right). ❻ position the ears on the cupcakes, then stick on jelly beans for eyes and smarties for noses. cut the mini marsmallows in half to make the mouth, place on the cakes, then add the whiskers. juices have evaporated. Add the spinach and cook until it wilts. Stir in the nutmeg and season with pepper. Divide the vegetable mixture between the ramekins. Make a shallow hole in the veg with the back of a spoon. Break an egg into each hole and sprinkle the cheese on top.

Asparagus & Cheddar strata A strata is a layered casserole dish made with bread, eggs and cheese – it makes a great brunch because you can prepare it in the evening and reheat the next day

15g butter, plus extra for greasing 2 x 125g packs Asda Extra Special Asparagus Tips 1 leek, white and pale green part only, sliced finely 160g bag baby spinach 175g bread or bread rolls, a day or two old 4 large free-range eggs 600ml semi-skimmed milk 2tsp Dijon mustard 125g extra mature Cheddar, grated Grease a large ovenproof dish with a little butter. Trim the tough ends off the asparagus. Add the tips to a pan of boiling water and simmer for 2 minutes. Drain, then cut in half. Leave on kitchen paper to absorb any moisture. Melt the butter in a pan and add the leek. Stir to coat, then cover and cook over a very low heat for 10 minutes until soft. Add the spinach and stir until it wilts. Remove from the heat and add the asparagus. Cut the bread into 2cm cubes and put two-thirds of it in the base of the dish. Put the vegetables on top, then top with the rest of the bread. Lightly beat the eggs with the milk and mustard. Season with pepper. Pour over the bread, then press the bread lightly into the liquid. Refrigerate for at least 30 minutes (or overnight) to let the bread soak. To serve, preheat the oven to 180C/160C Fan/Gas 4. Sprinkle the Cheddar over the strata. Fantastic fish There are so many ways to enjoy fish – these recipes are perfect for Good Friday or any day of the year

Plaice with herby mushroom stuffing Skinning the fillets is simple but not essential. If you want to take the easy option, buy the plaice from a fish counter in store and ask the fishmonger to skin it for you 1tbsp olive oil, plus extra for greasing 2 shallots, finely chopped 15g butter 250g chestnut mushrooms, finely chopped 1tbsp finely chopped fresh thyme (leaves only) 1tbsp chopped fresh curly parsley 3 x 250g packs plaice fillets or 6 x 125-150g plaice fillets from the fish counter Roasted new potatoes, salad and lemon wedges, to serve

❶ preheat the oven to

180c/160c/gas 4. grease a shallow ovenproof dish with a little oil. ❷ Fry the shallots in the oil and butter until soft. Add the mushrooms and cook until they shrink and the juices start to run out. continue to cook, stirring often, until all the juices have evaporated. ❸ Tip into a bowl. Add the herbs and season well. cool. ❹ if you want to skin the fish, place a fillet on a board, skin side down, with the tail end towards you. Hold the tail end with one hand and with a

fillet knife in the other hand (or sharp knife if you don’t have one). insert the knife at a slight angle and carefully cut between the skin and flesh. ❺ divide the stuffing into 6 portions. put a portion on the skinned (or skin side) of each fillet and fold over twice. put in the dish and brush with oil. ❻ cook in the oven for 18-20 minutes, or until the fish flakes easily. serve with the potatoes, salad and lemon wedges. Salmon with treacle glaze The fennel seeds give salmon a lovely, mild aniseed flavour but take care not to use too many as they can be overpowering 3tbsp Lyles Black Treacle 5tbsp lemon juice 2 level tbsp Asda Coarse Grain French mustard 1 whole side of salmon, about 950g ½ level tsp Schwartz Fennel Seeds 2 spring onions, trimmed and cut into shreds, to serve

❶ mix together the treacle, lemon juice and mustard and put in a shallow dish, large enough to hold the salmon. put the salmon in the dish, skin-side up, making sure all the flesh is coated, and leave in the fridge for 1-2 hours. ❷ preheat the oven to 180c/160c/gas 4. line a large roasting tin with foil. remove the fish from the marinade and put in the tin, skin-side down. ❸ lightly crush the fennel seeds in a pestle and mortar or put them in a bowl and crush with the end of a rolling pin. sprinkle over the fish and season with salt and pepper. ❹ cook in the oven for 25-30 minutes or until the flesh flakes easily. ❺ sprinkle the spring onions on top before serving. Trout with fennel Bulbs of fennel give a lovely fresh flavour – perfect teamed with trout Olive oil, for greasing 2 large or 3 small fennel bulbs 2 shallots, finely chopped 1 garlic clove, finely chopped 1tbsp chopped fresh flat-leaf parsley, plus extra for serving 1tbsp chopped fresh thyme (leaves only) 150ml dry white wine 25g butter 4 trout fillets 250g baby plum tomatoes 25g pine nuts grated zest of 1 unwaxed lemon Lemon wedges, to serve

❶ preheat the oven to 220c/ 200c Fan/gas 7. grease a shallow ovenproof dish with oil. Trim the fronds (the feather-like leaves) from the fennel and reserve. Trim off the roots and stems and any damaged outer layers (you will need about 350g trimmed weight). ❷ Thinly slice the fennel and put in the dish with the shallots, garlic, herbs and wine. cut the butter into small pieces and scatter on top. season. ❸ Take a sheet of baking paper and run it under a cold

tap. shake off any excess water, scrunch it up and lay over the fennel, so it covers it but stays inside the dish. ❹ cook in the oven for 20 minutes, moving the fennel about in the dish halfway through. remove the paper, stir again, and return to the oven, uncovered, for 5-10 minutes or until tender. ❺ reduce the oven to 190c/ 170c Fan/gas 5. put the trout on top and brush lightly with oil. Add the baby plum tomatoes. cook for another

12-15 minutes or until the trout flakes easily. ❻ put the pine nuts in a dry frying pan and toss over a medium heat until they start to turn golden. chop the reserved fronds. ❼ scatter the toasted pine nuts, chopped fennel fronds and lemon zest over the trout fillets. serve the dish with the lemon wedges.

foil round the edges of the tin.

❸ cook in the oven for 3 hours 30 minutes. remove the foil and cook, uncovered, for another 20 minutes. ❹ Transfer the lamb to a serving platter and cover loosely with foil. leave to rest for 15 minutes before carving. ❺ meanwhile, make the gravy. skim the fat from the roasting juices, then pour into a measuring jug. make up to

300ml if necessary and transfer to a pan. dissolve the stock cube in 300ml hot water and add to the pan with the redcurrant jelly. stir until the jelly melts. mix the cornflour with 3tbsp cold water and stir into the pan. Peaches or nectarines in raspberry & orange sauce This fruity, refreshing dessert makes a lovely light follow-on to a rich roast dinner 6 peaches or nectarines (they must be ripe) 75g apricot jam 50g granulated sugar 100ml freshly squeezed orange juice 350g pack frozen raspberries, thawed

❶ preheat the oven to 180c/ 160c Fan/gas 4. make a cut all the way round the peaches or nectarines, following the natural groove and cutting right through to the stone. Twist the two halves in opposite directions to separate them. ease out the stones using a small, sharp knife. ❷ put the fruit cut-side up in an ovenproof dish. put the jam, sugar, orange juice and 400ml water in a small pan and stir until the sugar has dissolved and the jam has melted. pour over the fruit and cook in the oven for 20-25 minutes, basting the fruit with the juices often. ❸ To make the sauce, carefully measure 300ml of the fruit cooking juices into a jug and then put in a blender or processor with the raspberries. Blitz until puréed (or use a hand-held blender to do this). push the mixture through a sieve to remove the seeds. ❹ leave the peaches to cool in the rest of the juices. When cold, gently lift them out and peel off the skin. put some raspberry sauce on six plates, top with two peach halves and pour over more sauce.

Bake for 12 minutes. cool. ❼ Brush the lolly sticks with the green food colouring and leave to dry. or simply leave them white. ❽ roll out the yellow coloured icing and cut out stars. stick on top of the biscuits using the reserved buttercream. ❾ press jellied sweets into the centre of each daffodil and score lines on the petals with the back of a knife. stick the daffodils into the cake. These sweet buns marked with a cross are traditionally eaten on Good Friday. They’re very satisfying to make at home, but you need to allow enough time for the yeast dough to rise. So if you want them for breakfast on Good Friday, make them the day before. Or turn over for freshly made Asda Hot Cross Buns you can buy in store.

1 Grease a baking tray. Sift together the flour, mixed spice, cinnamon and a pinch of salt. Stir in the yeast, sugar and mixed dried fruit. Heat the milk and butter together in a pan until the butter melts and the mixture is lukewarm. Test with your finger – if it’s hot it will destroy the yeast. Add the egg and the milk mixture to the flour and mix to form a dough.

2 Knead for 10 minutes. Put the dough in a greased bowl, cover with greased clingfilm and leave in a warm place until doubled in size. Turn out onto a floured surface and push out the air. Cut into 20 pieces and shape into rolls. Place on the tray in a circular pattern (they’ll stick together while baking). Cover with greased clingfilm and leave to double in size.

Preheat the oven to 220C/200C Fan/Gas 7. For the crosses, mix the flour with the oil, icing sugar and 4tbsp water to make a paste. Put it in a piping bag or use a freezer bag with the corner snipped off. Pipe paste crosses on the top of the buns. Bake for 15 minutes or until brown – if you tap the base of the bun round, it will sound hollow when cooked.

While the buns are cooking, heat the sugar and milk for the glaze in a small pan until dissolved and then simmer for 2-3 minutes until sticky. To make them shiny, brush the glaze on the top of the buns as soon as they come out of the oven. Eat warm or leave to cool on a wire rack. You can split and toast them when they’re cold, if you prefer.

HOW CAN I FIX MY SPLIT ENDS? Over-brushing and regular use of heat styling tools can make hair break. Strengthen your hair with a moisturising shampoo and weekly conditioning mask. Try Herbal Essences Beautiful Ends Split End Protection Shampoo, £2* (400ml). You can also improve the look of split ends by applying a repair conditioner and serum.
