THE TV CHEF SERVES UP A NEW RANGE OF DISHES AND PRODUCTS INSPIRED FROM HIS CHILDHOOD IN SOUTHERN ITALY, USING THE MOST AUTHENTIC INGREDIENTS Inspired by his upbringing in Naples, Gino D’Acampo has rustled up a delectable range of prepared meals and store cupboard staples, including products inspired by all corners of Italy. Ahead of its launch in store and online on 6 September, we took a minute to ask the chef about food, family and his top leftover tips.

Who taught you how to cook? My grandfather. I remember like it was yesterday. He showed me how to make gnocchi. The best advice he gave me was to never overcomplicate Italian food. How would you describe your new range? It’s traditional, it’s modern and I’ve not taken any shortcuts. I went all over Italy to ﬁnd the best ingredients, to ﬁnd the best people with the best

products. With my range, it’s going to be like sitting in the Italian Riviera and eating a pizza or a plate of pasta!

Kids love to make mess so you should encourage them to do it and be creative. You can always clean up mess later.

Where do you get your meal inspo from? I travel a lot, especially to Italy, so I get inspiration from eating out there and cooking with Italian chefs. But my biggest inspiration is my children. I know a recipe has worked when they’re happy.

What are your store cupboard essentials?s? That’s easy: pasta. I always have two types in my cupboard. Everyone should also have tinned chopped tomatoes, as they make the best Italian sauce, and a bottle of extra virgin olive oil.

What’s the easiest meal to make with kids? Something like a pizza.

If you weren’t a chef, what would you be? A dentist. When I was

Drain; set aside. 2 Meanwhile, preheat the grill to medium. 3 Melt the butter in a pan, add the flour and cook over a medium heat, stirring, for

1-2 mins until toasty smelling. Stir in the mustard powder. 4 Reduce the heat to low and add the milk, a splash at a time, whisking until smooth. Season with black pepper. Cook for 2-3mins, until slightly thickened. 5 Stir through half of the Red Fox cheese and all of the Parmesan. Stir until completely melted. 6 Add the pasta to the pan and sprinkle over half of the thyme leaves, stirring to coat. 7 Add the torn mozzarella into the pan, gently stirring until combined. Tip into a 22cm x 26cm baking dish. Scatter over the rest of the Red Fox. 8 Cook under the preheated grill for 8-12 mins, until bubbling and golden brown. Garnish with the rest of the thyme and leave to sit for 5 mins before serving. Energy

I love adding mini wraps into my meal plan for dinner dishes. Use them for tacos, quesadillas, enchiladas, or why not try these simple beef burritos? All you do is brown some mince, then add onion, garlic, sweetcorn, pepper and chilli. Warm the wraps and fill with the mince mix, a spoonful of tomato salsa and lettuce. Yum!

Go for great-value, versatile lean mince to use as your protein in a variety of dishes. Choose mince that is lower in fat – it’s delicious in pasta dishes, curries and burgers. If I have any other meat in the trolley, I’ll opt for plant-based alternatives. The textures and flavours are so great, you don’t feel like you’re missing the real deal!

When planning meals, opt for ones that can be frozen, so you can implement what I call a ‘freezer cycle’. After cooking, freeze two of the servings in single-serve containers and after a few weeks you’ll have a variety of dishes to grab, which should prevent meal boredom.

Learn how to build flavour with simple store-ccupboard staples. One of my favo ourites is peanut butter, which iss a great addition to botth sweett and d savoury dishes. A spoon nful in a curry adds a nutty crreaminess or add it to your porridge and frozen berries at breakfast.
