WELCOME Bring on 2021 – and let’s start the new year brimming with purpose, optimism and good intentions! One thing I hope we extend from 2020 is kindness to others and to ourselves. Challenging as the past year was, it also gave us a chance to take stock and make the most of where we were, what we had and who we were with. Many of us did more cooking, took up hobbies and made a sanctuary of our home, using hints, hacks and tips to make life easier and happier. There’s plenty more of that in this issue, plus great new products for 2021 – at prices that show some kindness to your purse, too! Trying Veganuary? Sesame tofu & veg noodle bowl

Warm up a cold January day with noodles in a beautiful broth, with tasty plant-based beefless strips, fresh veg and fried tofu in a tahini coating SERVES 4 READY IN 30 MINS

1 Drain ½ x 396g pack Cauldron Original Tofu. Pat dry with kitchen roll, cut into 2cm cubes and toss in 3tbsp tahini. Sprinkle over 2tbsp sesame seeds and stir gently to coat. 2 Add the tofu to a frying pan with 1tbsp rapeseed oil. Cook over a medium-high

heat for 3-5 mins until golden and crisp, tossing occasionally, before setting aside. 3 Make up 2 reduced-salt vegan stock cubes to 1.5L with boiling water. Add the stock to a large pan with 3tbsp reduced-salt soy sauce and a 5cm piece

fresh ginger, finely grated. Bring to the boil. 4 Add a 115g pack Extra Special Shiitake Mushrooms to the pan, cutting any large ones in half, and cook for 3 mins. 5 Add 600g cooked vegan noodles (thick udon work well), 180g Plant Based Meat-Free Beef Style Strips, thinly sliced, and 2 pak choi, halved lengthways, to the pan. Cook for 2-3 mins, stirring occasionally to separate the noodles.

6 Divide the contents of the pan evenly between 4 soup bowls. 7 Top with the sesame tofu, 1 large carrot, peeled into ribbons, 4 radishes, thinly sliced, 2 spring onions, shredded, 1 red chilli, sliced, and a sprinkling of salad cress. Serve immediately. Energy

Love a kebab b? Middle Eastern and Mexican flavours combine in this vegan version starring jumbo mushrooms marinated in spices SERVES 4 READY IN 30 MINS, PLUS MARINATING

1 Preheat the oven to 200C/180C Fan/Gas 6. Line a large baking tray with baking paper. 2 For the burger, heat 3tbsp rapeseed oil in a large frying pan on a medium-high setting. Add 1 red onion, chopped, 3 cloves garlic, crushed, 2 x 400g tins Asda Black Beans in Water, drained and rinsed, 2tbsp reduced-salt soy sauce, 1tsp smoked paprika, 1tsp ground cumin and 1tsp ground coriander. Cook for 5-6 mins until the onion softens and the beans are beginning to break down. 3 Transfer to a food processor. Blitz into a rough paste with 60g fresh vegan breadcrumbs, 1tsp chipotle paste, 30g chopped coriander and

the zest and juice ½ lime. 4 Shape into 4 patties, put onto the lined baking tray and bake for 15 mins. 5 Toss 1 sliced red onion in the juice ½ lime. Set aside to pickle for 15 mins or until bright pink in colour, then drain well, discarding the liquid. 6 For the shoestring ‘fries’, cut 2 large baking potatoes into matchsticks. Toss in a mixture of 1tbsp cornflour and 1tsp Cajun seasoning. Spread out on a baking tray, drizzle over 1tsp rapeseed oil and bake for 25-30 mins, tossing occasionally, until crisp and golden. 7 Mix ½tsp chipotle paste with 3tbsp vegan mayonnaise. 8 Cook 8 rashers Plant Based Meat-Free Bacon Style Rashers according

to the pack instructions until crisp. 9 Split 4 vegan sesame seed burger buns in half, then toast cut-side down in a hot griddle pan until char lines appear. 10 Divide the chipotle mayo, burgers, 4 slices vegan cheese alternative, cooked ‘bacon’, 1 large tomato, sliced, 2tbsp Extra Special Jalapeño Chilli Jam, pickled red onion and ½ x 85g pack watercress, between the 4 bun bases. 11 Sandwich together with the bun tops, then serve the bean burgers with the shoestring fries on the side.

1 Blend 4 cloves garlic, crushed, 1 onion, chopped, 2 red chillies, chopped, 1tbsp chipotle chilli paste, 3tbsp Aspall Classic White Wine Vinegar, 1tsp ground cumin, 1tsp dried oregano and 200ml pineapple juice until smooth. 2 Toss through 8 Grower’s Selection Jumbo Mushrooms, halved, and 1 large red onion, quartered, with the layers separated. Set aside to marinate for at least 2 hrs, or ideally overnight. 3 Preheat the grill on high. Cover a large baking tray with foil and lightly grease with a little rapeseed oil. 4 Thread the mushrooms and red onion onto 2 long skewers, pushing tightly

together. (If using wood or bamboo skewers, pre-soak in water for 30 mins so they don’t burn.) Arrange on the baking tray and drizzle with 1tbsp rapeseed oil. 5 Put the tray on the second-top shelf of the oven under the grill and cook for 20 mins, turning occasionally, until charred. Remove from the oven, drain off any juices and allow to rest for 5 mins. 6 With a large fork, push the grilled mushrooms and onions onto the skewer, packing them down tightly. 7 With a sharp, serrated knife, carve off strips of mushroom and onion from the sides. Take care as the skewer may be hot.

8 Grill 4 vegan chapattis until slightly charred, then spread with 200g Asda Jalapeño Houmous. 9 Toss together 1 Little Gem lettuce, shredded, ½ cucumber, chopped, 50g pickled jalapeños, drained, 200g pickled red cabbage, drained and 50g whole unsalted almonds, roughly chopped. Take your curry up a notch with juicy mango SERVES 4 READY IN 40 MINS PRICE PER SERVING £1.94 1 Chop 600g boneless chicken thighs into chunks. Put in a pan with 1tbsp rapeseed oil and fry for 15 mins until cooked through. Shred and set aside. 2 Add 1 large onion, chopped, to the same pan. Cook for 5 mins. Quick-&-easy flatbread pizzas

‘Everyone loves to make pizza, and these flatbread versions are really easy. You can choose your own toppings, or add a sprinkling of herbs to the dough for extra authenticity. Quick, simple and filling’ SERVES 4 READY IN 45 MINS ● 350g plain flour, plus

1 Line 2 baking trays with baking paper. 2 To make the flatbreads, sift the flour into a large mixing bowl and season with freshly ground black pepper. Create a well in the middle of the flour and add 2tbsp of the olive oil, then start to add 150ml warm water a little at a time, mixing well until you have a dough that’s thick but not too sticky. 3 Knead the dough on a floured work surface for 1 min or until smooth, then transfer to a clean bowl lightly greased with oil. Cover and leave to rest for 10 mins. 4 For the pizza sauce, heat the remaining olive oil. Add the garlic and

cook very gently for 1 min, taking care not to burn it. Add the tin of tomatoes, then heat through for 3-4 mins. Using a potato masher, gently squash the tomatoes – you don’t want to make the sauce totally smooth, so just start to break them up a bit. 5 Leave to simmer on a gentle heat for 10 mins until the mixture reduces down to a sauce that is thick enough to spread over your flatbreads. 6 Preheat the oven to 220C/200C Fan/Gas 7. Divide the dough into 4 balls and roll each one out to create a thin pizza base. Put them on the lined baking trays and cook in the hot oven for 2 mins. 7 Remove the trays from the oven and turn the flatbreads over. Spread with the tomato sauce, sprinkle over the grated mozzarella, then top with the sliced veggies and olives. 8 Pop the pizzas back in the oven for 7-8 mins until the cheese melts, then serve. ‘If you don’t have time for the perfect slow-cooked lamb jalfrezi, here is a little twist on the recipe – a quick and simple sauce with spicy lamb meatballs’ SERVES 4 READY IN 55 MINS ● 2tbsp vegetable oil ● 1 large onion, chopped ● 3 cloves garlic ● 2tsp cumin seeds ● 2tsp coriander seeds ● ½tsp crushed dried

Cook over a medium heat for 10 mins. 4 Meanwhile, tear the bread into pieces, soak in the milk, then give it a mush-up with a fork. Chop the remaining garlic; mix with the bread, lamb, ginger and remaining garam masala. Divide and shape into 12 meatballs. 5 Fry the meatballs in the

remaining oil until lightly browned. Add the green peppers and cook for 1 min. 6 Blend the tomato mixture to a smooth sauce, adding up to 100ml water to loosen, if needed. 7 Drain any excess fat from the meatballs, then add to the tomato sauce, along with the peppers. Cook for 3-4 mins until everything is heated through. 8 Garnish with the chopped coriander to serve. Energy

1 Grease a 20cm round springform tin and line with baking paper. 2 In a processor, whizz the biscuits to crumbs. Put in a bowl and mix in the melted spread. Transfer to the tin and press evenly into the base and sides. Leave to chill. 3 Put 2 sheets of the gelatine in a bowl of cold water. Soak for

hazelnuts with 15g of the sugar until roughly broken down, but not too much as they will become oily. 3 Put the egg whites in a clean, dry bowl and beat with an electric whisk until thickened and stiff peaks form. Keep whisking on a high speed and add the rest of the sugar, 1tbsp at a time, until the peaks look glossy. Whisk in the cornflour and vinegar, then gently fold through ½ the hazelnuts. 4 Divide the meringue mixture between the 3 circles, spreading evenly inside the outlines. Add 60g of the cooled melted chocolate; drizzle evenly over the meringues, then swirl through to marble. 5 Bake the meringues for 1 hr or until cooked; to test,

try to peel off the baking paper – it should come away from the meringue easily. Turn off the heat and leave to cool in the oven. 6 To make the filling, whip the mascarpone until thick and creamy. Add the yogurt and whip again. 7 Layer each meringue with generous amounts of the mascarpone mixture, then stack, with the largest meringue on the bottom and the smallest on top. Drizzle with the remaining melted chocolate, then decorate with a sprinkling of chocolate curls, the raspberries, mint sprigs and remaining hazelnuts.

Take off the heat, add the gelatine, stir to combine, then stir in the lime juice. of water. Melt the gelatine, stirring, then leave to cool slightly. Stir in a spoonful of the soft cheese mixture then fold the gelatine mixture into the rest of the soft cheese. 8 Transfer to the tin, smooth over and chill for 1 hr or until slightly set. Pour over the passion fruit jelly and chill for at least 4 hrs, preferably overnight, to allow to set completely. 9 Sprinkle with the lime zest to serve.

Crispy breadcrumbed auberrgine slices topped with a smooth Japanese-style curry sauce SERVES 4 READY IN 1 HR 10 MINS

● 1 onion, roughly chopped ● 1 large carrot, roughly chopped ● 3 cloves garlic, finely chopped ● 1½tbsp curry powder ● 2 aubergines ● 1 egg, beaten ● 250g long-grain rice ● 2 spring onions, sliced

STORE CUPBOARD ● 2tbsp rapeseed oil ● 1tbsp plain flour ● 1 reduced-salt vegetable stock cube, made up to 700ml ● 1tbsp clear honey ● 1½tbsp soy sauce ● 100g breadcrumbs

1 Preheat the oven to 200C/180C Fan/Gas 6. Line a large baking tray (or 2 smaller trays) with foil. 2 For the katsu sauce, sweat the onion and carrot in a pan with 1tbsp of the rapeseed oil on a low heat for 6 mins until the onions are translucent. 3 Add the garlic, curry powder and ½ of the flour with a splash of the stock. Cook gently for 1 min before gradually stirring in the rest of the stock, the honey and soy. Simmer for 20 mins. 4 Meanwhile, slice the aubergines lengthwise into 6 slices each. Press into the remaining flour, then coat in the egg and finally the breadcrumbs. 5 Arrange on the baking tray and drizzle with the remaining oil. Cook in the oven for 15 mins, turning the slices over halfway through. 6 Meanwhile, cook the rice according to the packet instructions. 7 Blend the katsu sauce until smooth. Serve the aubergine topped with the katsu sauce and spring onions, with the rice, extra sauce and onions on the side. Energy

1 Boil the sweet potatoes in a pan of water for 10 mins or until tender. Drain. 2 Heat the oil in a large nonstick frying pan. Add the onion and cook for 5 mins until starting to soften. Add the crushed garlic and cook for 3 mins. Remove from the heat. 3 Mash the potatoes with the butter. For the first in this new series, our food editor Gregor McMaster talks us through Pasta fagioli – his go-to meal to make on a budget… ‘I learned how to make this when I worked in an Italian restaurant during my uni days. It’s a brilliantly adaptable dish – feel free to substitute in leftovers or veg that need to be used up. It’s tasty, comforting and super-affordable!’

1 Fry 1 onion, chopped, in 2tbsp olive oil. 2 Add 1 large carrot, peeled and chopped. Cook for 5 mins, adding 3 cloves garlic, chopped, for the last 1 min. 3 Make up 1 reduced-salt vegetable stock cube with 700ml water. – baguettes are tastiest eaten on the same day, but sourdough loaves may last you a week or more.  Cover bread or store in an airtight container to help keep it fresher for longer.  Loaf still fresh but more bread than you’ll eat before the use-by date? Freeze the excess in slices, then take out as many as you need at a time. Bread will keep for up to 6 months in a freezer.

Chill out by churning up a rich ice cream. Toasty caramelised breadcrumbs add flavour and texture, while tart raspberry ripples cut through the creamy sweetness.

Add texture to a treacle & pecan tart

Leftover sourdough blitzed into crumbs soaks up the syrup, giving the filling a lovely fluffy texture that complements the crunchy pecans.

SPRINKLE a dry loaf with water then heat briefly in a warm oven – this should help to bring it back to life. TOAST slightly dry sliced bread to help revive it, then spread with fave toppings. Or add fillings and fry or grill for a toasted sarnie. CREATE CROUTONS for soups and salads. Cut into cubes, drizzle with oil and bake until golden. Bread that has an open, bubbly texture, such as sourdough or ciabatta, is ideal, as it gives a lovely crispy result. SAUCE UP SUNDAY LUNCH with creamy, oniony bread sauce – just the job for excess plain white bread. Perfect with roast chicken. WHIZZ INTO CRUMBS and use to top bakes, coat fish or chicken, or add to a meatball or stuffing mixture. This is a great way to use up a flavoured or herb bread, such as focaccia, as it adds an extra zing to a dish. USE THE CRUSTS, TOO by toasting the end crusts of a loaf and dipping into soup for a hearty lunch. Seeded or granary breads are best for extra malty flavour. WHIP UP A DESSERT using sliced white bread, brioche or even sweet croissants to create a comforting, custardy bread and butter pudding.

Put the turkey mince, spring onions, garlic, sun-dried tomatoes, breadcrumbs and half the parsley in a bowl. Mix together with your hands. Divide into 16 pieces and roll each one into a ball. I TRIED... GOING SUGAR FREE January is the perfect time to rethink your relationship with the sweet stuff. Here, health writer Natalie Ticehurst looks at the benefits

D

eep down, we all know that we should probably consume less sugar. After all, eating more than 30g daily of the ‘free’ sugars added to food or drinks, or found in such products as honey, syrup or fruit juice, can increase the risk of diabetes, obesity and heart disease*. Even artificial sweeteners, such as those found in ‘diet’ drinks, can have damaging effects. ‘Unlike sugar, these sweeteners aren’t digested, but they may affect the balance of gut bacteria and

lead to glucose intolerance and obesity**,’ says Dr Louise Wiseman, a medical writer and former GP. Skincare expert Dija Ayodele adds: ‘Sugar has links with inflammation† so, if you’re prone to flare-ups, it may worsen them. Glycation also occurs: sugar attaches itself to collagen in your skin, making it brittle and possibly weakening the skin’s barrier function. Breakage can show up as wrinkles, fine lines or a loss of elasticity.’ Quitting sugar may seem like a no-brainer – but it

can be a tricky habit to break. ‘If you deprive yourself of something, you’ll find you think about it more often††,’ says Dr Louise. ‘Sugar also releases the feel-good hormone dopamine, so as sugar levels drop, we slump and need more to regain the feeling‡. However, once you start to eliminate sugar, cravings should reduce‡‡ as brain receptors regulate and your taste buds adapt§.’ Here’s what happened when Natalie put her theory to the test…

MY SUGAR-FREE FORTNIGHT ‘This will be a doddle, I thought – I don’t really have a sweet tooth. However, as wellness expert Simone Thomas inspects my food diaries, eyebrows are raised at my lattes (my oat milk of choice is sweetened), pasta sauces and salad dressings: all laden with sugar! ‘On day one, I gaze longingly at some biscuits, but settle on a few Medjoul

dates as a compromise. Biscuits they’re definitely not, but I get an energy hit. ‘By day three, the urge to stick my head in a bag of pick-and-mix has passed, as have the headaches that are a common withdrawal symptom. Then, work stress

leaves me feeling flat, and I reach for a diet fizzy drink… Sadly off-limits! How would you sum up the athleisure trend? You know those leggings that are nice enough for the gym and for brunch, but also comfortable enough to spend copious hours watching Netflix in? ‘Imran allways does his job b with a smile on his face – he’s a real credit to the team’

Imran Rashid Davji, HR Administrator, Asda Britannia House Head Office – awarded an MBE Imran was honoured with the award for his speedy recruitment of 25,000 extra colleagues during the first wave of the pandemic in Spring 2020. Although new to his role, he was soon able to see where support was most needed. ‘We had to be able to serve more customers but protect our vulnerable colleagues, too, allowing them to shield where necessary,’ he says. He went the extra mile to create around 50 positions in each of our stores across

the country. He also made sure each new recruit had the time and training they required to get off to a great start, including online instruction where needed. And the best thing? Many of the colleagues he took on during this time of crisis are now permanent. Samantha Hayton, Asda HR Operations Manager praised Imran’s tireless work ethic and quick thinking. ‘Imran is fully deserving of this fantastic award, and always does his job with a smile on his face,’ she says. ‘He’s a pleasure to work with and a real credit to the team.’

Serving Queen We’re so proud of our colleagues’ tireless work throughout the Covid-19 pandemic. But don’t just take our word for it! Eight of our stars made the Queen’s Birthday Honours list… Faisal Tuddy, Asda House Superintendent Pharmacist (Ethics and Compliance) – awarded a British Empire Medal Local pharmacies played a crucial role during the Covid-19 crisis, and Faisal’s determination to keep all 254 Asda Pharmacies open meant our most vulnerable customers received essential medication. Up to 10,000 prescriptions were delivered each week and Faisal also devised a UK-first contact-free ‘call and collect’ service. Customers could call from the car park, and a colleague in PPE would drop their medication into their car boot. ‘I’m so proud of this honour but really, it’s for my team,’ says Faisal. ‘They went above and beyond to look after our patients when they needed us the most.’

Itt was also about keeping a sense of normality. We followed social distancing guidelines for th he egg deliveries and it was so lovely to se ee the smiles on the faces of the children.’

The different awards given include: Member of the British Empire, (MBE) – for community service or outstanding achievement. British Empire Medal (BEM) – for the highest levels of community service. ‘I love the challenge of pushing myself’ TV presenter AJ Odudu, 32, is from Blackburn and lives in London. Here, she talks body confidence, the power of resilience and how running helps her feel good…

How was filming Don’t Rock The Boat during the strange coronavirus times last year? I had been quarantining by myself, and for months I didn’t see family or friends. So it was overwhelming to suddenly be with a film crew of 70 people, travelling from the south of England to the north of Scotland. We formed our own bubble and had Covid tests every week. Everyone craves human interaction, so I enjoyed being back filming. Who has most inspired confidence in you? My mum. She is bold and brave and knows 82 | ASDA MAGAZINE

Running It always clears my head in the morning and sets me up for the day. Podcasts I love The Receipts Podcast because no topics are off limits. The Power Hour podcast makes me want to go get ’em! Rest I recently took a few days off for some R&R after a solid month of working. I looked after ‘me’ and spent an amazing time reading. Communication Keeping in contact with friends and family – it brings positive vibes to your life. Work I feel very fortunate to love my job. I get to travel to amazing places and meet incredible people.

Even in my darkest moments, such as during the lockdowns last year, I’d instantly feel better doing star jumps! I love skipping, boxercise and running, which is probably my main daily mental health ‘hack’. It gets the endorphins going and is a great way to keep fit.

AJ, it seems you’re never off TV! When work is busy, what’s your biggest stress? I’m not a person who stresses. I’m very positive in general – I always try to see the good in things. I think it’s really important to be resilient in life. I just feel incredibly lucky to have been busy and working during what has been a tough time for many people.
