I’m a believer! I’m 33 and still leave something out for Santa. Granted it’s no longer a mince pie and milk, more a bottle of Newcastle Brown Ale and a Mars bar (as his tastes have somewhat ‘matured’ over the years) Sarah Thom but I’m a sucker for festive traditions. Asda Editor For me, Christmas isn’t about perfecting the crispiest roast potato or how many presents are stacked under the tree. The true magic lies in the anticipation. The sleepless night, the early morning. No matter how old you are, nothing beats the prospect of a visit from Santa and waking up on Christmas Day to the realisation that you aren’t on the naughty list. Christmas is magical. The thought of the big day and spending time with those I love the most is what keeps me going through the gloomy winter months. If you embrace the magic of Christmas, it truly is the gift that keeps on giving. After all, Christmas isn’t just a day, it’s a frame of mind.

● Don’t worry if the cakes ‘shrink’ or fall a little as they cool – this is completely normal. ● You don’t need to grease the tins – as the sponge cools, it will pull away from the sides. ● Use waffle or sugar ice cream cones for the trees. Avoid the wafer type as these will soften and collapse. ● Make the sponge and buttercream in any flavours you like, but remember, more vanilla extract will darken the sponge so you’ll lose the snowy-white effect.

FOR THE CAKE ● 275g plain flour ● 2tsp baking powder ● ½tsp bicarbonate of soda ● 375g caster sugar ● 275g Lurpak Unsalted Butter, softened ● 300ml soured cream, at room temperature ● 1tsp vanilla extract ● 8 large eggs, whites only TO DECORATE ● 625g icing sugar, sifted, plus extra to dust ● 315g Lurpak Unsalted Butter, softened ● 1tsp Dr. Oetker Natural American Peppermint Extract ● 15ml tube Dr. Oetker Extra Strong Green

● 1tsp vanilla extract ● Pack Asda 6 Dipped

Waffle Cones YOU WILL ALSO NEED ● Disposable piping bags ● Small star nozzle ● Cake stand or board 1 Preheat the oven to 180C/ 160C Fan/Gas 4. Line the bases of 4 x 18cm round sandwich tins with baking paper (do not grease). 2 Sift the flour, baking powder and bicarb into a large bowl and stir in 275g of the caster sugar. 3 In a separate bowl, beat the butter with an electric whisk until smooth. Add

½ the soured cream and the vanilla extract, then beat again until smooth. Stir through the remaining soured cream. Set aside. 4 Clean and dry the beaters thoroughly. Then, in a third bowl, whisk the egg whites to soft peaks. Turn the whisk to low. Add the remaining caster sugar a little at a time while continuing to whisk. Beat to firm peaks. 5 Add the soured cream mixture to the bowl with the dry ingredients then mix together. Gently fold through the egg whites, a few tbsp at a time, until no streaks of white remain. 6 Divide the mixture evenly

between the 4 tins, then smooth and level the tops. 7 Bake for 20-25 mins, until the cakes spring back when lightly pressed in the centre. Cool for 20 mins in the tins before turning out to cool completely on wire racks. 8 To decorate, put the icing sugar and butter into a large bowl. Beat together into a smooth buttercream. 9 Put ⅓ of the buttercream in a separate bowl. Stir in the peppermint extract and food colour until you get a uniform green shade. 10 Stir the vanilla extract into the white buttercream. 11 Put about ½ of the green buttercream and about ⅓ of the white buttercream into separate piping bags (no nozzles required). Cut 1cm off the tip of each bag. 12 Put the bottom cake on the cake stand. Pipe a large ring of white buttercream on top, near to the edge of the cake. Next, pipe a ring of the green buttercream directly inside the white one. Continue to pipe, alternating white and green, until the top of the cake is completely covered. 13 Pipe more buttercream rings on a second cake, this time starting with green on the outside. Carefully lift it onto the first cake. Repeat with the third cake, starting with white buttercream. Add it to the stack then top with the fourth cake. 14 Cover the top and sides of the cake with the rest of the white buttercream, smoothing with a scraper or palette knife. Chill the cake in the fridge for 15 mins. 15 For the Christmas trees, trim 2-3cm from the base of a few of the waffle cones

4 STEPS TO THE PERFECT DECORATION

Use two colours of buttercream icing to create the striped filling, then pipe green ‘kisses’ onto the cones to transform them into wintry tree decorations…

1 Pipe alternating rings of buttercream filling between each layer to create the striped effect when you slice the cake.

2 Smooth the buttercream coating with a scraper. Hold it in place with one hand and slowly spin the stand with the other.

3 Can you ‘kiss’ with confidence? Practise on a sheet of baking paper. Pipe a little icing, then pull away the nozzle to form a point. with a sharp breadknife, so they vary in height. 16 Slice 2 different-sized cones in half lengthways. Position the halves against the side of the cake, with the wider ends sitting on the cake stand. Push the cut sides into the buttercream to secure in place.

4 When you’re certain you can pipe neat, even rows of kisses, start to decorate the cone trees with the green buttercream.

17 Fit a piping bag with the star nozzle; fill with the rest of the green buttercream. 18 Starting with the halved cones on the side of the cake, pipe on ‘kisses’ of the green buttercream. Work your way up from the wide base to the tip. Arrange a cluster of 3 different-sized

Pour a 75cl bottle Riesling into a large, deep pan with 2 oranges, sliced, 1 lemon, sliced, 2 cinnamon sticks, 6 whole cloves, 1 vanilla pod, split lengthways, and

1 Line 8 small ramekins with clingfilm. Line with overlapping slices of the smoked salmon – let the ends overhang the rim. 2 Put the soft cheese, salmon flakes, lemon zest, ½ the dill and the spring onions into a bowl. Season with black pepper and mix into a coarse paste. 3 Fill the ramekins with the cream cheese mixture, pushing down gently with the back of a spoon; fold the smoked salmon ends in over the filling. Cover with clingfilm and chill for at least 2 hrs or overnight.

4 Just before you serve the parcels, mix together the lemon juice, tomatoes, cucumber, oil, wine vinegar and remaining chopped dill in a bowl, for the dressing. 5 Remove the clingfilm covers; turn each parcel out onto a plate and spoon the dressing around it. Top with the prawns, season with pepper and garnish with dill. Serve with slices of the sourdough, toasted, and lemon wedges, to squeeze. Energy

Calculate the cooking time

Roasting the perfect turkey is all about the timing… ● For turkey crowns, allow 60mins/kg of thawed weight. So a 2.75kg crown needs about 2 hrs 45 mins in an oven preheated to 190C/170C Fan/Gas 5. ● For a whole turkey, allow 20 mins/kg of thawed weight, plus 90 mins. So a 6.25kg bird needs 3 hrs 35 mins in an oven preheated to 190C/170C Fan/Gas 5. ● For a pre-stuffed, oven-ready turkey, follow the pack instructions.

Your bird is thawed, you’ve calculated the cooking time and prepped it ready to roast. Here’s how to cook it…

Check the cooking process with a meat thermometer. For the best results, stick it into the centre of the thickest part of the bird – usually the top of the thigh or the breast. If it reads 75C or above, it’s done. If the temperature is still below 75C, roast for another 15 mins, then check again. Repeat until the correct temperature is reached.

Alternatively…

Another way to test is to pierce the thickest part of the turkey (see above) with a skewer. If it’s cooked through, the juices will run clear. If they look pink, return to the oven for another 15 mins then check again.

After roasting to prep a whole frozen turkey

Move the bird from the freezer to the fridge to thaw 48 hrs before cooking. Then, 1 hr before cooking, take it out of the fridge. Remove any packaging and ties on the legs. Pat dry with kitchen roll, rub with oil and fill the cavity with stuffing (optional). Put the turkey into a roasting tin, pack the flavouring ingredients around it and cover both the bird and the tin in foil.

Your turkey will need to rest for 30 mins to 1 hr before carving, to help the meat retain its juiciness and tender texture, so make sure you factor this into your timing. Remove the bird from the oven, then cover with fresh foil and clean tea towels to keep in the heat.

1 Start by removing the legs and thighs. Cut through the skin that connects them to the breast then slice off the meat. Take out the wishbone to make it easier to cut the breasts. 2 Next, cut off the breasts, one at a time. Run the blade of your knife down the side of the breastbone, then cut down and underneath the meat to detach it in one piece. 3 Slice up the breast meat on a board and serve.

A last-minute turkey panic doesn’t mean Christmas is cancelled – we’ve got all the tips, fixes and hacks you need to turn a festive nightmare into a dream dinner! How do I know if my turkey is thawed? Test the thicker parts of the bird by poking with a fork. The flesh should be soft and flexible, with no ice crystals in the cavity. If it is still frozen, submerge it in cold tap water for 30 mins, then check again. Change the water every 30 mins. My turkey is too big to fit in the oven. Don’t panic! Remove the legs and thighs – these can be cooked separately, or stored in the fridge to cook on Boxing Day.

The turkey skin is golden brown, but the meat in the middle isn’t cooked. If your turkey is visibly undercooked inside or has failed a meat thermometer or skewer test (see p34 for details), cover the bird with foil to prevent the skin browning too much, then return it to the oven until it’s cooked through. My turkey is overcooked and looks a bit dry No problem. Carve the turkey (see above) and put the sliced meat back in the roasting tin

to soak up any leftover cooking juices. Serve drizzled with gravy. I don’t have enough oven space for the bird and all the trimmings. As the turkey needs to be rested after roasting, then carved, you’ll have up to about 1 hr 15 mins to cook all those tasty accompaniments. Just make sure the bird is well covered in fresh foil and clean tea towels and it should retain its heat for about 1 hr. Then serve it all with piping-hot gravy.

Make perfect gravy

Food editor Gregor McMaster shows you how to create a rich chicken gravy to serve alongside the bird this Christmas SERVES 4 READY IN 1 HR 30 MINS PRICE PER SERVING 90p

1 For 500ml gravy*, chop 2 carrots and 2 celery sticks; halve 2 onions. Toss in a roasting tin with 2 sprigs rosemary, 2 sprigs thyme, 1tbsp rapeseed oil and 1tbsp black peppercorns.

2 Preheat the oven to 220C/200C Fan/ Gas 7. Top the veg with 500g chicken wings then roast for 40-45 mins until golden. Reserve 3tbsp fat from the tin (add an extra splash of oil if needed).

3 Tip the contents of the tray into a pan with a 450g pack Extra Special Roast Chicken Stock and 300ml boiling water. Boil, cover then simmer for 20 mins, skimming off any foam.

4 Remove the wings and reserve for another recipe –try Chicken & Rice Soup (see ASDA.GL/chickensoup). Strain the stock through a sieve; squeeze out the juices with a spoon. Discard the pulp.

5 Pour the reserved fat into a clean, dry pan, add 3tbsp plain flour, then whisk together. Cook on medium for 2 mins, whisking continuously, until it forms a thick, smooth paste.

1 Fry 2 cloves garlic, chopped, in 1tbsp rapeseed oil for 2 mins. Add 80g walnuts, roughly chopped, 100g fresh breadcrumbs and ½tbsp thyme leaves. Fry for 5 mins, stirring regularly, until golden brown. Set aside. 2 In a separate pan, cook 1 shallot, chopped, in 1tsp rapeseed oil on low for 10 mins, to soften. Add 50ml dry white wine (optional) and 1 reduced-salt veg stock cube made up to 250ml. Simmer for 10 mins, then take off the heat. 3 Cook 300g spaghetti

according to the pack instructions. Add 180g baby spinach for the final 1 min, then drain and return to the pan. 4 Crumble 75g Extra Special Butlers Farmhouse Blue Cheese. Chilli, lemon & chicken pasta

A cheesy, salad-topped pasta with a hit of spice

● 500g pack fresh fusilli ● 6 cloves garlic, chopped ● 1tsp chilli flakes ● 1tbsp rapeseed oil ● 300g leftover cooked

chicken, shredded

● Zest and juice 1 lemon ● 75g Parmesan shavings ● ½ x 25g pack flat-leaf

parsley, finely chopped

● 20g wild rocket ● 1 pack vine-ripened

cherry tomatoes, halved

1 Cook the fusilli according to the pack instructions. Drain, reserving 50ml of the water, then return the pasta and water to the pan.

2 Meanwhile, gently fry the garlic and chilli in the oil until they start to sizzle. Add the chicken and fry for 5-8 mins until piping hot. Remove the pan from the heat then mix in the lemon zest and juice. 3 Add to the pasta pan with the Parmesan, parsley and a grind of black pepper. Mix together for 1-2 mins. 4 Divide between 4 pasta bowls and top with the rocket and tomatoes.

Cooking with the Asda team today has been brilliant fun. I can’t believe how much spinach we added to the dish – piles of it, only to see it wilt away to nothing in seconds flat. I also learnt from Gregor, the food editor, that if you use a smaller knife to cut and chop, you have much more control and it’s safer. Mum liked that tip!

Heat the oil in a pan over a medium setting. Add the onions and fry for 10 mins. Add the garlic and ginger; fry for 2 mins. Add the peppercorns, bay leaf, cloves, cardamom pods and cinnamon stick. Fry for 2 mins. Add the chilli and curry powders, turmeric, ground coriander and cumin. Add the tomatoes and 250ml water to the pan; cover and cook for 10 mins. Add the chicken and peppers, stir together, cover and cook for 20 mins. Mix together all the ingredients for the salsa. When the sauce thickens and the chicken is cooked, through, remove the cloves, cardamom, cinnamon stick, bay leaf and peppercorns. Stir through the fenugreek, spinach and chilli (if using); cook until the spinach wilts. Divide the rice and curry between 4 plates. Serve with the salsa, lemon wedges and the yogurt sprinkled with a pinch of chilli powder.

or many people, Christmas can be the loneliest time of the year. According to the charity Age UK, more than half a million older people across the country expect to feel lonely during the festive season*. Likewise, Samaritans report that, on Christmas Day, about a third of the people contacting their helpline call because of feelings of isolation**. In the UK, around 2.2 million people aged over 75 live alone†, so loneliness is inevitable for some. But the good news is, there’s also a whole host of brilliant local groups and organisations that work to combat this problem through a range of services and activities. The Asda Foundation, which awards grants to good causes, is proud to support many of these, with the help of Asda Community Champions – colleagues who raise funds and volunteer for schemes in their local area. ‘I grew up in Boston, Lincolnshire, so supporting the local community is a cause very close to my heart,’ says Stephen Bromby, 46. He has been a colleague at Asda Boston for 24 years and a Community Champion for eight years. ‘We’ve been working with the Crossroads Lunch Club, held every Tuesday at our local church hall, since January 2019,’ Stephen says. ‘The aim is to encourage people in the community who might feel lonely or isolated to come and enjoy a home-cooked lunch and a chat. ‘At Asda Boston, we helped the group to apply for a grant of £1,000

‘I RECENTLY LOST A BATTLE WITH BANANA BREAD’

What do you have for breakfast? If I’m at home and not working, I’ll make poached eggs with smashed avocado and a cup of tea. If I have less time, I love a slice of peanut butter on toast. And last thing at night? I try not to eat close to bedtime because I’ve learnt that if I have too much cheese late in the evenings – which I often do – I’ll hallucinate with terrible dreams! What’s always in your fridge? I always seem to be within arm’s reach of a pot of houmous. Do you have a signature dish? I love to cook for my friends and family. I make a really good Thai red curry, if I do say so myself. Any spectacular cooking disasters? I recently lost a battle with banana bread. I was in a bit of a low mood so did some comfort baking to try to cheer myself up – but I burnt it. Who are your dream dinner guests? Bradley Cooper, because, well... why not? a nut roast. Going out for Sunday lunch is one of my favourite things to do in winter. Getting cosy with a bottle of red and a board game in the pub is the best. What’s the worst thing you’ve tasted? I really dislike fennel or anything liquorice tasting. It’s actually the only thing on this earth I really don’t want to eat. I think it stems from a sambuca-related evening... What’s your failproof hangover cure? I wish I could say something healthy. To be honest, going back to bed for at least an hour followed by a Sunday roast should do it! Who will be cooking the Christmas dinner in your house this year? My mum and her three sisters are Christmas Day legends. We all get together and between them they cater for about 20 of us. They run a tight ship, with my Aunty Robbins as captain of the Christmas lunch. What’s the best part of the meal? For me, it’s the honey-roasted vegetables and stuffing. And the worst part?
