Caesar Salad Ingredients: 1 large head romaine lettuce, torn into bite size pieces 1 cup extra virgin olive oil 2 large cloves garlic, peeled 1 teaspoon Worcestershire sauce 1 teaspoon dry mustard 2 tablespoons freshly squeezed lemon juice 1 teaspoon freshly ground black pepper 1 teaspoon coarse salt 1/2 cup grated Parmesan cheese 1/4 cup shaved or shredded Parmesan cheese Directions: Crush the garlic cloves & salt into a paste in a large salad bowl. Add the Worcestershire sauce, dry mustard, lemon juice & pepper. Whisk in the remaining oil until thoroughly combined. Add the grated Parmesan cheese & whisk again until combined. Add the shredded lettuce & toss thoroughly. Top with shaved or shredded Parmesan cheese. Serve. Serves 4-6 You can serve this with croutons if you like; just sprinkle on the top just prior to serving to preserve the crunch.

Pristine Foods is one of Chilliwack’s newest farms, specializing in growing produce for local residents. They believe all produce should be fresh and tasty, and work hard to make this true. Most of their produce is picked and sold in less than 24 hours. They also use as few sprays as they can, and for many of their vegetables, they don’t use any sprays at all. Owner Jacko Kardux says on their 2 acre farm they like to grow varieties you don’t find or are difficult to find in stores, like purple beans which has a striking purple hue and a great flavour! They also grow purple carrots, golden beets and seedless pumpkins. Spray free produce items are: carrots, baby carrots, broccoli & beet greens. They carry baby beets, baby onions, cauliflower and zucchini.. even blueberries and strawberries. “We grow spray free Romaine lettuce, that is so fresh and crisp.. a very beautiful lettuce that is great for any Caesar Salad “ says Kardux. Still looking for local produce vendors, especially homegrown veggies & fruit. We will offer the Backyard Table again this year if there is interest (up to 3 people who have fresh garden products can pay $6 each to share a 10'x10' stall space for their extra veggies, for a maximum of 3 markets per grower. 1-2 days notice is required. Vendors are welcome to join any time during the summer and Junior vendors are also welcome.
