“Whenever the pressure of our complex city life thins my blood and numbs my brain, I seek relief in the trail; and when I hear the coyote wailing to the yellow dawn, my cares fall from me - I am happy.” - Hamlin Garland (1860-1940), American novelist

n June 5, America’s trail enthusiasts celebrated National Trails Day 2010. More than 1,500 events like trail maintenance, biking, hiking, horseback riding, running and bird watching took place throughout the country. This year, the celebratory theme was “Find Your Happy Place.” Everyone’s “happy place” was defined as a favorite outdoor spot to find peace and quiet and just feel good – sans cars, cell phones and iPods. of the Santa Fe Trail, as the first pioneer to reach Santa Fe, N.M., via the trail.

Lucky for Americans, their “happy place” choices are vast. Because of the National Trails System Act of 1968, a network of trails that offer scenic views, a flavor of history and plentiful opportunities for recreational activities have been set aside throughout the country.

• Thousands of people crossed the Santa Fe, from the military to emigrants – in stagecoaches, on foot and on horses. Many traveled the trail west to Colorado in search of gold.

Three national trails intercept areas of Colorado: Santa Fe, Old Spanish and Continental Divide trails.

THE SANTA FE TRAIL The Santa Fe Trail extends almost 1,200 miles across five states: New Mexico, Colorado, Oklahoma, Kansas and Missouri.

A Gateway for Commerce In 1821, the Santa Fe Trail became a commercial highway that ran from Missouri to New Mexico. Also, from 1821 until 1846 (the year the Mexican-American War began), the trail was used as an international commercial highway that provided trade between Mexico and America. However, Spain had control of New Mexico in those days and fiercely guarded its borders. But that changed after the Mexican Revolution of 1821. Mexico’s revolt against the Spaniards was successful in allowing travel throughout New Mexico, and trade on the trail flourished When the Mexican-American War ended in 1848, the Santa Fe Trail became a national road that connected the United States to its new southwest territories, such as New Mexico. • William Becknell from Missouri is touted as the “father”

• During the Civil War, a major battle was fought at Glorieta Pass, N.M., on the Santa Fe Trail. Union soldiers were victorious in holding on to the Southwest and the valuable supply trail after they set fire to a Confederate supply train.

Traveling The Santa Fe Trail Today In Colorado, the Santa Fe Trail extends a little east of Lamar to Trinidad. Besides the incredible views along the trail, there are a myriad of historic sites, from Lamar’s Kit Carson Museum and his home to the Santa Fe Trail Museum in Trinidad. Museum visitors can learn about famous and infamous trail travelers like Bat Masterson, Billy the Kid and Mother Jones. • In La Junta, Colo., there’s the Koshare Indian Museum and Kiva and Bent’s Old Fort, where Native Americans and mountain trappers traded goods and took a break and relaxed – the Wild West version of the truck stop. • One of the most scenic stops is the Sierra Vista Overlook, just 13 miles south of La Junta on Highway 350. A short walk up the bluff features beautiful views of the Rocky Mountains, the Spanish Peaks and the prairies.

had been officially condemned by the government.

• The trail offers a variety of wildlife and activities: fishing, camping, biking and hiking. John Martin Reservoir is nearby – it’s the largest body of water in southeastern Colorado. Visitors swim, camp, fish and water ski.

The Old Spanish Trail has been noted as the most arduous for mule caravans. Covering 2,700 miles, mules swam and dragged their handlers through dozens of river crossings; they crossed dunes in Colorado, Arizona, New Mexico, Utah, Nevada and California; and they skirted the Grand Canyon and trekked over the cruel desert of Death Valley.

OLD SPANISH TRAIL In 1993, then Colorado Sen. Ben Nighthorse Campbell and Rep. Scott McInnis introduced a bill authorizing a study of the Old Spanish Trail as a preliminary step to include it in the National Trail System. Senators from New Mexico, Utah and California jumped on board to keep the legislation at the forefront of government business. After a scrupulous study of the significance of the trail’s history, Campbell introduced Senate Bill 1946 in 2002 to include the trail in the system. The bill passed unanimously.

Connecting to the Coast In 1829, Antonio Armijo, a merchant from Santa Fe, N.M., blazed a new path from Santa Fe to Los Angeles, opening up trade opportunities between California and inland areas and inland areas and foreign markets – because of coastal seaports. With the new trail, annual visits between New Mexico and California took place, mainly for trade. Still, some migrated to California in the 1830s, in search of gold and prosperity. Others used the path to raid California “ranchos” and take part in human trafficking. Many of the residents along the trail “captured” Native Americans as slaves, even though the practice

A year after Armijo’s iconic journey, two other mountain men carved another path of the Old Spanish Trail. William Wolfskill and George Yount followed a route along the Colorado River to Needles and up the Mojave River to Cajon Pass. Some on the trail ventured as far north as Salt Lake City and followed what became the North Branch of the trail, which led to Grand Junction, Colo.

LIBERTY HTS. Wednesday 8AM - 1PM

All of the varied routes came together in southern Utah and again at the Mojave River. The North Branch extends from San Luis, Colo., to Crestone to Gunnison and all the way to Grand Junction. The main route of the Old Spanish trail in Colorado runs from Durango to Moab, Utah. In 1848, as other routes opened up between New Mexico and California, the early settlers no longer used the Old Spanish Trail. Much later, interest in the trail was rejuvenated; and, in 1987, it became part of the National Trails System.

the trail by automobile is the best option. Besides rivers, canyons and national parks, artifacts and a bundle of trail information along the way make the Old Spanish Trail worth the trip.

Five years later, modern-day mountain man and attorney Jim Wolf walked the Divide from the Canadian border to Rogers Pass, Mont. He published a guidebook to that section of the trail and formed the Continental Divide Trail Society in the late 70s. In November 1978, the committee of the National Trails System designated the Divide trail as a National Scenic Trail.

The North Branch of the trail winds through the Great Sand Dunes National Park in Colorado and across the Continental Divide and the Gunnison National Forest.

SPEAKING OF … THE CONTINENTAL DIVIDE No one was packing a mule along the Continental Divide Trail in the days of the Wild West, but many early discoverers and Native Americans crossed over the Divide. Native Americans deemed it the “road to buffalo,” according to writings by Lewis (of Lewis and Clark). The pioneers of the actual trail started a quest in 1960 to create a trail near the Continental Divide of the Rocky Mountains – a trail that would offer spectacular wide-angle views and a “challenging stretch of country”

able for use today, but much of it is in need of repair and rerouting for environmental purposes. • In Colorado, the Continental Divide Trail includes 800 miles (209 miles are not completed, as of January 2009). The CDT winds through the wilderness areas of south San Juan, Weminuche and La Garita, which is about 70 miles of the trail at 11,000 feet above sea level.

• The Continental Divide Trail transverses five states: Montana, Idaho, Wyoming, Colorado and New Mexico.

The CDT also includes the Collegiate Peaks near Leadville and Grays Peak, the highest point on the trail. The CDT covers a portion of Rocky Mountain National Park and the valleys and glacial lakes of the Mount Zirkel wilderness area. The trail also encompasses the cities of Silverthorne, Copper

• The CDT is a remote backcountry trail for hiking, horseback riding, mountain biking, cross-country skiing, snowshoeing, fishing, hunting and viewing wildlife. The area offers more extreme outdoor experiences for sports zealots. • In 1995, the Continental Divide Trail Alliance was established as a nonprofit organization for the completion, maintenance and protection of the CDT.

Mountain and Twin Lakes and borders Aspen. • The CDT is the most challenging of all trails included in the National Trails System.

MORE A bipartisan bill (HR 4671) has been introduced this year to create a new category of trails: National Discovery Trail. The American Discovery Trail, the first coast-to-coast nonmotorized trail, will add another first as a National Discovery Trail under the National Trails System, if the legislation passes. Just one more “happy place.”

Probably not. So what happens then?

It’s true. We really love our dogs. We walk with them, talk with them, sleep with them, snuggle them, sneak them treats from the table and hold ice cream cones for them to lick at sidewalk cafes. They are with us everywhere we go, even in the car. After all, what could be more soothing during a long boring drive or a battle with savage traffic than a wet sloppy lick on the ear from the one who loves you more than anything else in the world?

Heatstroke occurs when body temperature exceeds 104 degrees and the dog’s thermoregulatory mechanism is overwhelmed. A core body temperature of 107 degrees is considered lethal as cells are damaged and internal organs shut down.

Unfortunately, we sometimes allow our affection to overcome our common sense. Like when the temperature gets high. Everything is super cool as long as the car is moving and the airconditioner is blowing like a contained hurricane. Heat may shimmer on the road but we are sitting pretty. Until we reach our destination, that is. Then we have a dilemma. Can we take our best friend with us into the store, restaurant, gym or where ever else we need to go?

hen you mention the state of Colorado anywhere in the country you conjure up some pretty standard images. Tall white peaks, clear blue skies, beautiful scenery, beautiful people – just to name a few. When the temperature outside is 80 degrees, the inside of a car will reach 123 degrees in just 60 minutes. “Cracking” the windows has little or no effect in cooling the inside air.

Average elapsed time and temperature rise: 10 minutes ~ 19 degrees, 20 minutes ~ 29 degrees, 30 minutes ~ 34 degrees, 60 minutes ~ 43 degrees, 1 to 2 hours ~ 45-50 degrees. What can the dog do about this? NOTHING! He must simply wait and pant and pant and pant and hope that you will return before he passes out, suffers brain damage and dies. Wow! If we really love our dogs, let’s act like it. Sometimes we have to say no to that eager little face just to keep him safe. Now that is really loving our dogs.

One reason a virus returns is because it is not fully healed and the immune system is not fully functioning before a person catches another virus. A person may take alternatives supplements that assist in boosting the immune system. Those supplements may work at speeding up the process of healing and then the person begins feeling better. The symptoms may disappear and the person stops taking the supplements. The virus is not healed and actually returns to the muscle tissue in the body. For some it stays in the lower lobes of the lungs. When that person comes in contact with another virus, it activates the old virus, making it worse and may take longer to heal. This occurs because the old virus transmutes and also with sinus infections, many people do not allow their sinuses to drain fully. Specifically with sinus infections, the sinuses are connected to conscious emotions and it is connected to an “I don’t care” attitude, which is connected to the liver and gallbladder. Before a sinus infection begins, the liver and gallbladder heat up. Before they heat up, the liver and gallbladder become stagnated. That heat backs up into the head creating a sinus infection. Chinese herbs can also as-

sist this issue along with Tai Yi. The liver and gallbladder are connected to different emotions. Everything occurs in the body emotionally and mentally before it manifests in the physical body. Many people hold irritation and anger in the liver and gallbladder, which heats those organs up.

In addition, when one is treating a sinus infection, traditionally or alternatively, that person needs to evaluate his or her nutrition. GMO (genetically modified foods) foods impact the lymphatic system and preservatives in foods preserve the viruses. Any foods with mucus should also be avoided at the time of any virus. Just as the body is preparing to show symptoms of the virus, the virus in the body sends a strong signal to the brain for that person to eat something that feeds the virus.

The Tai Yi treatment that can assist with this is Heated Head of Disruption. Heated Head of Disruption is for those who are currently feeling a sinus infection. The liver and gallbladder are overheating during the sinus infection, so this treatment needs to be completed DURING the infection. In most other exercises, Tai Yi should not be offered during a person’s illness, but this one is different. The person may also benefit from deeply inhaling mint oil as well.

When your financial obligations get too big... Morse & Associates, LLC is here to help.

Along with the herbs, the person working on what caused the overheating of the liver and gallbladder, and the treatment, the person can experience fewer issues with sinus infections and may find that sinus infections have disappeared.

Clinton would go on to become New York’s longest-serving governor, as well as the longest-serving governor in the United States, holding the post until 1795. • On July 8, 1853, Commodore Matthew Perry, representing the U.S. government, sails into Tokyo Bay, Japan. The Japanese accepted letters from President Millard Fillmore, making the United States the first Western nation in two centuries to establish relations with Japan. • On July 10, 1887, a dam breaks in Zug, Switzerland, killing 70 people. The resulting wall of water was so powerful that rescue boats launched to assist people caught up in the sudden flood were ineffective as they capsized in the roiling waters. • On July 11, 1922, the Hollywood Bowl, one of the world’s largest natural amphitheaters, opens. Its stage was a wooden

platform with a canvas top and audiences sat on moveable benches set on the hillsides of the surrounding canyon. In 1926, a group of Los Angeles architects built the Hollywood Bowl’s first shell. • On July 5, 1946, French designer Louis Reard unveils a daring two-piece swimsuit at a swimming pool in Paris. Reard dubbed the suit the “bikini,” inspired by a newsmaking U.S. atomic bomb test that took place off the Bikini Atoll in the Pacific Ocean earlier that week. • On July 7, 1962, “The Stripper,” by David Rose, becomes the No. 1 pop hit in America. When a Los Angeles disc jockey heard the piece, he thought it was so funny that he played it almost continuously during his program one day. Soon “The Stripper” was a national hit, and well on its way to becoming a permanent piece of American pop culture. • On July 6, 1976, in Annapolis, Md., the United States Naval Academy admits women for the first time in its history with the induction of 81 female midshipmen. SPRING GARDENS Spring sprung and the wildflowers are out! Spring is also the time for homeowners to put on their put on their scruff clothes and get outside to put some color in their yards! There are several types of flowers that thrive in our Colorado climate. Gladiolus are a popular springplanted corm (much like a bulb). They come in nearly every color you can imagine. In the Spring, after the danger of frost, plant the corms 3 inches deep and 6 inches. You may cut the flowers as long as you leave the leaves so that the corm can receive the nutrients it needs. The corms do need to be dug up and stored in a frost-free location over winter. Dahlias are a tuberous root that also come in a wide range of colors and sizes. Because of their height, Dahlias require a support stake put into the ground 12 inches deep and 6 inches behind the root at the time of planting. They don't tolerate frost. The Dahlia flower size can be increased by removing all of the flower buds from the other branches. After the plant dies down, dig up the tuberous root, shake of the dirt and pack it away in sawdust in a cool dry place. Canna flowers bloom in ivory, yellow, scarlet, salmon, rose and orange. Foliage can be green, bronze or variegated. Canna plants thrive in contaners, planting beds and also ponds and water gardens. Plant the rhizomes 6 inches deep and 18 inches apart in late spring and after the danger of frost has passed. After frost kills the foliage in fall, dig and store the roots over winter, much the same as dahlias.

Lilies are available in several types and colors ranging from white to deep red. Some Lilies do not survive Colorado's winters although they are a perennial. Plant the lilies to a depth three times the height of the bulb. The first year, test the hardiness of your lillies by digging up half of the rhizomes (bulb-like base) and pack them in sawdust (perlite or vermiculite may be used) and store them in a frost-free location during the winter. Replant the stored lilies in the spring. The plants remaining in the garden should be heavily mulched to avoid winter kill.

Begonias range in color from white, yellow and orange to deep red. Flowers are usually double and bloom for a long period. Plant the tuberous begonia roots 4 inches deep in a partially-shaded area. Tuberous begonias do best in soil with moist organic matter. Again, these should be dug up after growing season, packed in sawdust and stored in frost-free conditions for replanting in the spring.

Allium flowers are very ornamental and showy and is a member of the onion family. They vary in height, and flowers can range from two to ten inches in diameter. Dwarf species thrive in rock gardens, and taller species enhance larger gardens. Allium flowers are ball-shaped and consist of many tiny florets in hues of white, yellow and blue. These bulbs make great cut flowers that last for a long period of time; flower heads can also be left to dry on the plant and later cut for dried arrangements. Alliums do not need to be dug from the ground after frost! But be sure to mulch the bulbs well to ensure winter survival.

$25 OFF FAST TWITCH, SLOW TWITCH... WHICH ONE ARE YOU? By: Susan Iverson

D

o you know if you have fast twitch or slow twitch muscle fibers? Genetically speaking, you probably have a combination of both, but most individuals will have a preponderance of one or the other. This often explains why some individuals excel at a particular sport while others do not. Consider this: 1. Do you have any friends who seem to be able to exercise for long periods of time without visible fatigue? 2. Have you ever watched a basketball game where one player is able to jump higher and gather in more rebounds than another? 3. Why can some individuals sprint down a football field in no time flat while others cannot? 4. What allows some individuals the ability to lift enormous amounts of weight, and in very short periods of time, without much effort? Some variances can be attributed to physical training and nutrition, but a greater percentage of performance differences

are due to the types of muscle fibers each individual has - fast twitch or slow. SLOW TWITCH FIBERS: Slow twitch fibers (Type I) are not very strong but they do have a high metabolic capacity for endurance. There is a longer “time-to-peak” tension in slow twitch muscle fibers than there is in fast twitch fibers. Slow twitch muscle fibers can do their thing over and over again without much fatigue. They are very resistant to cellular demands and have a greater ability to use oxygen to its fullest. Persons with a higher proportion of slow twitch muscle fibers typically become endurance athletes. Such persons learn to love running and jogging because they are good at.

FAST TWITCH FIBERS: Fast twitch muscle fibers (Type II), on the other hand, are like tiny gunpowder factories ready to explode on demand. These powerful fibers can contract at blazing speeds and power, but they fatigue very quickly. Fast twitch muscle fibers enable a basketball player to propel high up in the air, a football player to throw the ball across a field, or a boxer to extend their arm with tremendous force. These are powerful and forceful activities unsustainable for long periods of time. Actions made possible by fast twitch muscle fiber predominance.

ecovery from my simultaneous Stroke Emergency C-section required learning many new things. The more physical and obvious things were walking and talking. The more subtle and less apparent things were reading people through social cues, and not letting everything that came into my brain out of my mouth. You see there was no screening center left in my judgment-side of the Left brain. It was as though I were an infant re-learning everything in fast forward. Repeating things I heard other people saying just to practice speech built the necessary pathways to my language center. Then reading social cues from others response to what I just spoke was a whole other. Perhaps the most difficult and yet necessary lesson I had to learn was ‘how to receive’…and not just receive, but to receive graciously. Imagine, if you will having everything you used to make life work stripped away in one full stroke . No more career as a psychotherapist; no more home, or health, or husband or even hair for that matter! All that was left was me, my two and half year old daughter, a new born infant and a very caring church body. My mom was also there having a muscle fiber from fast to slow or slow to fast? Muscle biopsies confirm that the distribution of fiber type is genetic, however, performance capability of both types can be enhanced with exercise. It comes back to the theory of habitual use. “Use it or lose it.” If you perform endurance activities, you can increase the concentration of energy producing enzymes needed for endurance, but you cannot change the genetic make-up from fast twitch to slow. Likewise, if you lift weights on a regular basis, strength will improve on all levels, but the genetic distribution of fibers will stay the same. The key with exercise is variety! Well-rounded exercise programs should include activities that train both types of muscle fibers. Fast and slow! Sprint Intervals Train fast-twitch fibers Spinning Train both fast and slow fibers

EXERCISE AND MUSCLE FIBER DISTRIBUTION The big question is can exercise change

Many brought food, and flowers, and offered to care for my children to give my mom a break. Others offered their skills, talents and abilities to support me. A hairstylist cut my hair once it started to come in; a handyman helped me rid my porch of baby squirrels that had built a nest under the deck. One woman came faithfully every week to clean my bathrooms and wash my Kitchen floor. When it came to sell my home, a realtor listed it for free so that all of the proceeds would come to me. My eyes fill with tears at the love that was demonstrated by this community, because all I could was say thank you with no way to ever repay such generosity of soul. Having to be completely debilitated is the hard way to learn to graciously receive. When someone offers to help, let them--even if you can do it yourself. You are robbing them of an opportunity to gain grace--it is better to give after all! Don’t wait. Allow other to serve you. That’s what we’re all here for…and remember to say “Thank you”!

y house backs up to 83, and I often wake up on weekends to the thunder of Harleys and the buzz of “crotch rockets”. Last Sunday, I was heading up 83 to go home and the skies opened. It started pouring. When I reached about 7,000 feet the rain turned to a hard hail. I was actually worried about my car as the pellets bounced off and headed up into the air.

1728 Lake Woodmoor Drive (behind People’s Bank in the Woodmor Center)

As I crested the hill right before Hodgen, I started seeing cars and pickup trucks pulled over. Some of the people that I were behind started pulling over as well. I could not figure out why. My only thought was to get my car into the garage before it got damaged. As I passed 105, I noticed that all of these vehicles had one or more motorcycles in front of them. The people were pulling over to provide shelter to motorcyclists. All I could say was, “Oh my God!” I would never have thought to do that. When I reached County Line Road, I pulled over and offered haven to all of the bikers who were stopped

11

there. There were too many to fit in my car, so they had all the kids climb in. I looked in my rear view mirror, and there were about 20 motorcycles on the other side of the road. It probably would have taken six or seven Good Sumaritans to fit them all. Right in front of my car was a bald man without a helmet. The hail was bouncing off of his head, and I could tell that he was in pain. However, there was nothing more I could do. He said that it was more important to shelter the kids (even though they had helmets.) I learned an incredible lesson last Sunday. I have never driven a motorcycle and it never dawned on me that these sudden storms can be painful for them. Now that I have ‘seen the light’, I will do this anytime I see motorcyclists in trouble, whether it be hail or a flat tire in freezing weather. Thank you to everyone who stopped along 83 to help a biker last Sunday, you taught me a very valuable lesson.

hen Jim Joyce said “safe”; when Walt Coleman called it an incomplete pass on a snowy day in foxboro; when the Yankees lost four in a row in ’04; when the U.S. didn’t get the goal; and when Scott Norwood missed wide right, our mothers reminded us, in our fits of rage, that it’s “just a game”.

IN THE BEGINNING… In 2004, the youth of Monument sat around all summer watching television. They spent their autumn afterschool kicking dirt, and their spring indoors, indulging themselves in old video games. Then, something spectacular happened. In December of 2005, after a year of reckless recruiting, a new sport dawned upon our community - Lacrosse. Officially made a Club at that time, the Ranger Lacrosse Club was on the brink of popularity, though it only had about 25 participants. But what started with a couple dozen, and two teams, would evolve greatly.

Bike Accident Dog Bites Pedestrian Accidents Wrongful Death

Mike McKinley, founder of the club, had his struggles turning the relatively unknown sport into a local staple. “That’s one of the problems you have running a club,” he says, “getting the word out”. He cites handing out flyers, but admits, “Those only get ditched”. He relied heavily on word-of-mouth campaigns and got some help from his son, Blake, who enlisted his friends to participate.

Starting with 7th and 8th graders, McKinley found himself turning down several kids due to size and age issues. This didn’t sit well. He soon enacted the club, including an all-star cast for his Board of Directors that would consist of Lacrosse guru Jeff Cole, and Lewis-Palmer Lacrosse coaches Sean Denmeade and Nancy Fritzsche. “We wanted to feed the program” says McKinley, in reference to the high schools newly formed teams. This led to a 6th grade team. That led to a 5th, and a 4th. From 2005 to 2006, the

12

program doubled in young athletes, and continues to grow, now hosting nearly 150 kids.

THE GREAT UNKNOWN Many people don’t know the sport of Lacrosse. So here are some starting points. The sport is physical. It is fast. It is fun. It is year round. It is unique. It is impulsive. At the start of a half you can feel the wrath of a sport on the rise. Mckinley states there is “an art to it”, and he may very well be right. Unlike most sports, there is a sense of community in Lacrosse, with professional teams helping support the growth of the sport in any way possible. It’s a tight-nip group; an exclusive club, but anyone is welcome. The most important aspect may very well be the growth of our children. Girl’s teams are now running from 4th to 8th grade, with Boy’s teams from 2nd to 8th. McKinley, now former president of the club, still coaches teams, and declares that coaching is more like an “adventure in child rearing”. He states that it’s “opened the door to a lot of kids who couldn’t, or wouldn’t, play other sports”. Bottom line, it sounds like a growing up thing. It’s something for kids to do. They learn from some of the communities most respected parents, about discipline, respect, competition, and good sportsmanship. It’s a good reminder that sometimes sports are about more than winning. They’re about self discovery and accomplishment. They’re about success, and dealing with our failures. They’re about inspiration and commendation. It’s a reminder that sports help us grow, as human beings, and as a society; and that they’re certainly more than “just a game”. If you’re expecting a check from the government for a Medicare rebate (for the Part D drug coverage gap), you don’t have to do anything to get that check. Scammers are out there now trying to convince seniors that a “fee is required to sign up. If you have Call Forwarding on your phone, scammers could hijack your phone. Someone will call you, pretend to be a phone repairman and ask you to press *72 (or 72#) and a certain phone number so your line can be checked. week, depending on the degree of ripeness. For full succulence, bring them to room temperature and then enjoy both the flavor and aroma. Avoid picking peaches that are extremely small, hard, soft or have wrinkled skin at the stem end. Peaches that have a green background are picked in an unripe stage and will not ripen well.

TAKE A PEACH TO THE BEACH

If you’re fortunate enough to have more peaches than you can eat, you can freeze them for future use. Peel and slice the fruit and mix with one tablespoon each of lemon juice and sugar. Place them into a sealable storage bags and freeze for future use.

S

ummer brings with it an abundance of fruits, like peaches, that reach their peak of juicy perfection in the heat of July. Peaches are rich in antioxidants that help to maintain a great complexion. Antioxidants are substances that protect the body by eliminating free radicals, which cause cell damage and can contribute to aging. The sun brings out free radicals in the skin and antioxidants protect skin cells by counteracting freeradical activity -- so take a peach to the beach! Peaches are a good source of fiber and vitamin A and C. Fresh, high-quality peaches are sweet tasting and low in calories, as well as saturated fat, cholesterol and sodium, and high in vitamin C, dietary fiber, vitamin A, niacin and potassium. Since one medium peach is only about 37 calories, they’re also an excellent snack or guilt-free dessert. There are more than 200 varieties of peaches, which are sometimes referred to as “stone” fruit due to their pits. Cling or clingstone peaches have a pit to which the flesh “clings.” Freestone peaches have a pit from which the flesh is easily pulled away, with a juicy, soft flesh that is easily separated from the pit. There is no taste difference between freestone and clingstone peaches. Some popular types of white peaches are the Sugar May, Scarlet Pearl, Southern Pearl and White Lady. The key differences between white and yellow peaches are their appearance and taste. The white peach has a pearl, pink-blushed skin, white flesh and pink seed. White peaches are less acidic, resulting in a delicately sweet, juicy flavor containing essences of honey and vanilla finishing with a clean sweetness. White peaches are best eaten out of hand, as like most peaches they don’t improve with cooking. The best way to choose a peach, whether white or yellow, is by the feel and smell of the fruit, not the color. Look for peaches that are somewhat firm yet yield lightly to pressure when applied. When you can smell the sweetness of a peach, then you know that fruit is ready to eat. Peaches are sensitive and should be handled with care and stored in a single layer, as they bruise easily. If unripe, store them in a paper bag. If ripe, they may be stored in the refrigerator for a

Peaches are available throughout the year. California supplies the product from May to October, peaking in July. Washington peaches are available from July to September, while Chile supplies it the rest of the year.

• These “Persian apples” actually had their beginning in China, but were developed in Persia and went from there to Europe and then to America with the colonists. • The nectarine and the peach are so similar that there is only one gene that separates the two to make them distinct. The nectarine has one recessive gene -- the one with the fuzz. • “You’re a real peach” originated from the tradition of giving a peach to your beloved friends. • Most peaches are cultivated by grafting different combinations of rootstocks onto scions. The recipe for Peaches and Cream Pops is a cool way to enjoy this fantastic fruit on a hot summer day.

Puree 1/3 cup of the peaches in a blender or food processor until smooth. Using a small bowl, mix together the peach puree, yogurt, honey and remaining 1/2 cup of peaches. Spoon the peach mixture into 4 ice cream-pop molds and insert the handle. Freeze for at least 4 hours. Makes 4 servings. *** Angela Shelf Medearis is an award-winning children’s author, culinary historian and the author of six cookbooks. “The grande dame of Southern Cooking” is how Chef Joe Randall described Edna Lewis and a more fitting tribute does not exist. Edna Lewis passed away on Monday, the 13th of February, 2006 at 89 years of age. She died in her sleep, in her home in Georgia. The granddaughter of a former slave, she was born in Freetown, Virginia. In her 30’s, she left the South for New York. Ms. Lewis’ cooking and her cookbooks changed how the world viewed Southern cooking, no longer hokey but elegant. Chef Randall saId she altered “the way people outside of the South perceive Southern cooking.” Her first cookbook was written, by longhand, when she was sidelined by a broken leg. Craig Claiborne said of The Taste of Country Cooking that it “may well be the most entertaining regional cookbook in America.” James Beard said “Edna Lewis makes me want to go right into the kitchen and start cooking.” And M.F.K. Fisher wrote: “This book is fresh and pure, the way clean air can be, and water from a deep spring.” Her second book, In Pursuit of Flavor, urged us to “make food taste the way you remember it.” Edna Lewis’ last book, The Gift of Southern Cooking, was written with Alabama born chef, Scott Peacock, Ms. Lewis’ friend and caretaker. Their association--he is a young, white, gay chef and she an older, widowed AfricanAmerican-- earned them the nickname The Odd Couple of Southern Couple. Though at times controversial--Ms. Lewis’ family waged an unsuccessful legal battle to move her to Virginia-their relationship garnered both them and their recipes publicity. The recipient of the James Beard Foundation’s first Living Legend Award, Edna Lewis was an

American Institution and her gift to all of us, her passion for Southern cooking, is her legacy. I would like to pass on one of her fabulous recipes from her last book - “The Gift of Southern Cooking”. CORN PUDDING 4 ears corn, husked and stripped of silk 1/3 cup granulated sugar 1 tsp salt 1 tbs all-purpose flour 2 eggs, beaten 1 cup milk 1 cup heavy cream 3 tbs unsalted butter, melted 1/2 tsp freshly grated nutmeg Preheat oven to 350 degrees F. Cut the corn from the cob, slicing from the top of the ear downward. Put the cut corn into a mixing bowl, sprinkle in the sugar, salt, and flour, and mix well. Mix the beaten eggs, milk, and cream together, and pour while stirring into the corn. Blend in the melted butter and nutmeg, and spoon into a buttered 6-cup casserole. Set the casserole into a pan of hot water, and bake for 35-40 minutes, until golden brown and just set. Test for doneness by inserting the blade of a knife into the center of the casserole. As soon as it comes out clean, the pudding is done. Do not overcook.

As you enjoy this wonderful southern delicacy, remember Ms. Edna.

New DVD Releases for Week of July 5, 2010 PICKS OF THE WEEK “Last Chance to See” (Unrated) -- In 1990, writer Douglas Adams (“Monty Python’s Flying Circus,” “Doctor Who,” “The Hitchhiker’s Guide to The Galaxy”) and zoologist Mark Carwardine traveled the far-flung reaches of the planet in search of rare animal species on the verge of extinction. The result was the best-selling book and BBC radio series, “Last Chance to See.”

Now, 20 years later, legendary television presenter/comedian/author and close friend of late Douglas Adams, Stephen Fry retraces the author’s footsteps along with Carwardine to see if any of the species have survived. The result is a brilliant, entertaining and thoughtprovoking six-hour television series. What makes “Last Chance to See” such a joy to watch is that it eschews the run-of-the-mill heavy-handed messages about saving the environment and is more of a celebration of our planet’s diversity. And it does so many times with the aid of humor. My favorite episode involves the kakapo, a rare, flightless, five-pound parrot. In one scene, an extremely randy kakapo (dubbed Sirocco) mounts Carwardine’s shoulders and begins to ravish the back of the man’s head with the furious, libidinous gusto usually seen only in Japanese stag films. Yeah. You won’t see THAT on Animal Planet. “Steamboat Bill, Jr.” Ultimate 2-Disc Edition (Unrated) -- For the past decade, Kino

International have carved out a niche for themselves as the Criterion Collection of silent and Golden Age films. This release of the Buster Keaton classic “Steamboat Bill, Jr.” only enhances their reputation for highquality digital remastering and outstanding special features. “Steamboat Bill, Jr.” is the 1928 follow-up to the legendary Buster Keaton epic “The General.” Both films are considered among his finest work. In “Steamboat Bill,” Keaton plays the college puddin’ son of a Mississippi steamboat captain who has come back to help his pop, who is in the middle of a fierce rivalry with another captain. Trouble abounds as Keaton is not only inept at the job, but also is in love with the daughter of his father’s rival. The climax of the film involves a cyclone and some of the most amazing slapstick stuntwork you’ll ever see on film, as Keaton runs through the town and buildings literally collapse around -- and on top of him. There were two versions of the film made, and this two-disc set features both the theatri-

16

cal release and the alternative version featuring different takes and angles. Also included is a documentary on the making of the film, a montage of the best moments of Keaton’s career and vintage recordings of the folk song “Steamboat Bill.”

f you’re in one of the early waves of baby boomers, you may know some retirees who are now enjoying a wide variety of activities — possibly even including a new career. And you, too, may now have some choices about how to spend your time. Should you stay at your current job? Should you retire altogether and travel or pursue hobbies? Or should you “retireâ€? and then start a new job, do some consulting or even open your own business? While you may have choices on how to draw an income, you’ll also have some key issues to consider. For starters, think about how your earnings might affect one source of retirement income: Social Security. As an early wave baby boomer, your “full retirement age,â€? from a Social Security standpoint, will be around 66. If you are younger than full retirement age during all of 2010, you will lose $1 from your benefits for each $2 you earn above $14,160. But if you reach your full retirement age during 2010, you’ll lose $1 from your beneďŹ ts for each $3 you earn above $37,680 until the month you reach that age. (Keep in mind that these figures are for 2010 only; for changes in 2011 and succeeding years, you’ll want to check with the Social Security Administration.) Once you reach full retirement age, you can keep all your benefits, no matter how much you earn.

“normal retirement years. You’ll also want to contribute as much as possible to your IRA, 401(k) or other employer-sponsored retirement plan. During these years, with your children grown and your mortgage possibly paid, you may have more investable income available — so take advantage of the opportunity. You’ll also need to carefully review your portfolio to help ensure your investment mix is appropriate for your needs. To stay ahead of inflation, you’ll still need to invest for growth, but since you’re not that far from retirement, you’ll also want to control risk and volatility as much as possible. Furthermore, you’re at the time of life when you may want to consider consolidating your investment and retirement accounts. If you have an IRA here, a 401(k) there and another account someplace else, you have a lot of paperwork to keep track of, both during the year and, especially, at tax time. But even more importantly, with all your accounts scattered, you might not be following one central, unifying investment approach — an approach that could help make it easier for you to pursue your long-term goals, including a comfortable retirement. By consolidating your accounts with one company, you can save time and possibly reduce administrative fees — while your accounts can work in harmony on your behalf. This may be a good time to consult with a professional financial advisor — someone who can help you make those choices that can help provide you with the freedom to spend this next phase of your life doing as you please. After all, you’ve earned it. This article was written by Edward Jones for use by your local Edward Jones Financial Advisor. For additional information, contact:

T

he middle class is being hit the hardest when it comes to losing medical insurance. According to the Huffington Post, the number is up to 12.9 million people. Those with higher incomes have a better chance of affording insurance premiums, and those with lower incomes qualify for more help programs. If you lost your job between Sept. 1, 2008 and May 31, 2010, you might qualify for 15-month reduced-fee federal COBRA coverage. If you recently lost your COBRA, look into Health Insurance Portability and Accountability Act coverage, a government insurance continuation program. It covers preexisting conditions, but it’s expensive. Consider other avenues to find coverage that might be less costly:

EVENT PLANNING

• If you’re sure you’ll land a job in the coming months, look into short-term policies. • Take any part-time job that comes with insurance. You’ll still have time to look for another job, but will be covered in the meanwhile. • Look at your professional associations. Many of them have umbrella policies for anyone in the group. If you don’t have a professional affiliation, consider joining something. While the market isn’t back up to speed, it might be worthwhile to become a real-estate agent, if only for the Limited Medical insurance through The National Association of Realtors. • Call your state’s insurance department and ask what help is available, especially if you have children. Most states have some type of coverage for children 18 and under. • Think about going back to school and signing up for campus medical insurance. You’ll likely only have to go part time, but check the details. Some schools offer a basic level of care for a low semester fee, while others offer full insurance through major insurers.

• Get different coverage for everyone in your family. If the kids can be covered by the state, and you’re going to school, that only leaves your spouse who needs coverage. • If you’re married and your spouse is working, look into getting covered by that plan. • Consider getting a catastrophic policy with a high deductible. You’ll save money but will pay for all your care until you reach the deductible each calendar year. • If you’re self-employed and need cheaper insurance, look at National Association for the Self-Employed (www.nase. org) or the Small Business Service Bureau (www.sbsb. com) for group rates.
