o, don’t worry, you’re not in the wrong section. This is a wine article, I promise, not a riveting documentary on melaninrich fowl. Growing up in Florence, Italy, I had the privilege of being introduced to local wines at a young age. Luckily for me, the local wine of Florence is Chianti! Still one of my favorite wines to drink to this day, especially with a good pasta and homemade sauce. This being said, I started doing a little more research on the origins of a peculiar symbol on a lot of Chianti bottles: the Black Rooster. The original Chianti was defined in 1716 by the Medici family and included the area around Gaiole, Greve, Radda and Castellina. The borders were extended and redrawn in 1932 to stretch to the north of Florence, south to Castelnuovo Berardenga, west to Tavarnelle Val di Pesa, and east to the Chianti Mountains. There are now 8 sub-zones: Classico, Colli Aretini, Colli Fiorentino, Colline Pisano, Colli Senesi, Montalbano, Montespertoli, and Rufina. But here is the interesting story that I am constantly in search of: the legend of the rooster! Gallo Nero which in Italian means black rooster, is the symbol for the region’s Chianti Classico producers association, and you will find it on the necks of the bottles from this region. Its origins

Apple Cake

1/2 cup margarine, softened 1 cup plus 2 Tbsp. sugar, divided 2 eggs 1/2 tsp vanilla 2 cups flour 1 tsp baking soda 1/2 tsp salt 2 Tbsp. buttermilk 1 cup grated apples 1 cup chopped nuts 1 tsp cinnamon

3 Tbsp. margarine, softened 1 cup sugar 1 egg 1 tsp vanilla 1 cup flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1/2 tsp nutmeg 3 cups diced apples 1/3 cup chopped nuts

Cream the margarine and 1 cup sugar until light and fluffy. Add eggs and beat well. Stir in the vanilla. Combine the flour, baking soda and salt and add to the creamed mixture. Add buttermilk, apples and nuts. Bake in a 9x5 inch loaf pan at 350Ëš for 60-65 minutes or until a toothpick comes out clean. Makes 1 loaf.

Cream margarine and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking soda, salt and nutmeg and add this to the creamed mixture. Stir in the apples and nuts. Pour into an 8 inch greased baking pan. Bake at 350Ëš for 35-45 minutes or until a toothpick comes out with just a few crumbs. Serve warm with ice cream or whipping cream. Serves 9.

Easy Caramel Apples 2 packages of caramels ( 14 ounce bags) 3 Tbsp. milk chocolate chips 3 Tbsp. water 1 tsp vanilla 8 craft or popsicle sticks 8 tart apples Melt all ingredients, except the apples, either on the stove top or in the microwave until smooth. Insert the sticks in the apples and dip into the mixture. If desired, press chopped nuts or mini M&Ms on the apples. Place on waxed paper and allow to set.

The Best Thing I Ever Ate T

he Food Network has been running this show called The Best Thing I Ever Ate for the last few months and it got me thinking, what’s the best thing I ever ate? Well, for you dear reader, I’ve put a little thought into this question. Over the last 15 years, my beloved and I have enjoyed haute cuisine from some of the finest chefs in the world: Todd English, Emeril Lagassse and Charlie Trotter, among a long list of others. Along the way, we’ve sampled food from restaurants with countless Michelin stars, AAA Diamonds and James Beard Awards. But when we start to list the “Best We’ve Ever Eaten”, the list gets really short. At Charlie Trotter’s in Chicago, we enjoyed a seven course tasting menu, with sommelier paired wines. Dinner for two cost somewhere between a car payment and a mortgage payment. But two years later, we don’t remember anything on the menu. On a pre-Katrina trip to New Orleans, we ate at Brennan’s in the Vieux Carré, Emeril’s namesake restaurant in the warehouse district and the legendary Commander’s Palace. We slurped fresh oysters at The Pearl (my all-time favorite seafood bar) and sampled the fare from several other outstanding restaurants. But the meal that really stands out from that trip? A seafood

muffaletta from a little shack on the north rim of Lake Ponchatrain. The building was half restaurant, half open-air market. The sandwich cost less than 10 bucks and was more than enough for the two of us. Without question, the best sandwich I have ever had. Neither of us can remember the name of the place, and we paid cash, so the credit card receipts offer no help. I wish I had a name or GPS coordinates or something to give you better directions, but all I can do is tell you to drive across the bridge from NOLA, and head east towards Mississippi, stop at every place you see on the right hand side of the road. It will be worth the effort. Here in Sioux Falls we each have a few meals that stand out in our minds; the lobster ravioli at Carino’s, the bisque at the old Theo’s or one of many nights when the company of friends made the meal better than any recipe could. When I asked my beloved about her best, she didn’t hesitate; “The seafood lasagna from Café 334.” But it was a one-time seafood special from Chef Kristina Kuehn. I had it too, and it was outstanding. We suspect that it was a “clean out the freezer” dish, but it came together like Beethoven’s Fifth, a dream meal that may never be recreated.

After Tina moved her culinary talents to K at 8th and Railroad, she created a braised lamb dish last fall that made me declare “if I’m ever on death row, I want two of these!â€? Another meal near the top of my list? Not the spiny lobster right out of the sea on St. Thomas or truffles in the south of France. I found something really good in‌ Des Moines, Iowa. That’s right. Des Moines. At a place called Skips on the south side. There I had a slow-braised pork shank that was incredible. Now to be fair, this was last summer, so I have no idea if they still serve it, but if not, beg, plead and grovel for them to make one for you. As I recall, this was a reasonably priced meal, probably less than $20 for the plate. But as my wife and I discussed our lists, it came down to one meal that we both agreed on. The “Best Thing We Have Eatenâ€? was a simple lunch, following a morning snorkel in Puerto Morelos, a little fishing village between the hectic tourist towns of Cancun and Playa Del Carmen. In a little thatched-roof shack, right on the beach. The menu, through the broken English of the waiter was simple; fish or chicken, beer or Coke. I have a simple rule, if I can smell salt water; I want seafood, so we ordered two beers and two fish. As our beer arrived, a beautiful Mexican lady (we estimate her age to be somewhere around 150) who spoke no English, came from the back to prepare our meal. As the fresh-off-the-boat yellow tail snapper cooked on the grill, she quickly whipped up salsa and guacamole to go with fresh

tortilla chips. That fish‌ well-seasoned, perfectly cooked and ridiculously fresh sits at the top of the list. Since our Spanish begins and ends at “Dos cervezas, por favorâ€? we couldn’t understand how much they said it cost, but they seemed very grateful for a soggy twenty. I left another ten as tip. So that’s it. My list of the best I’ve eaten has as more dives than divas, more everyday places than “once in a lifetimeâ€? meals. The foodie stuff is great, but all of the foods that topped the list above are simple, have inexpensive ingredients, and are cooked with love. And that passion is the ingredient that separates the really good cooks from the rest. Do yourself a favor, eat something good today.

admit it, I am a recovering skin care and cosmetics junkie. If the TV ad promised a product that would make me radiant, beautiful and happy: I needed it. My bathroom cabinet was full of eye creams, lotions, makeup, masks and zit cream. While the promises were often empty, so was the idea that these products were good for my skin. Many skin care products actually expose us to harmful chemicals each day. Being green means being aware of how the products we use affect the environment and our health, from packaging to ingredients. With cooler weather approaching, why not rethink our skin care now? Delicate skin needs protection; not just from the South Dakota winter, but also from many of the products we use. While navigating the beauty aisle or cosmetics counter, don’t be fooled by pretty packaging. I used to be sold by shiny boxes and brand names. But pricier and prettier don’t necessarily mean a better or healthier product. This seems obvious, but it’s easy to get caught up in the presentation. Don’t forget that boxes, bottles, tubes and jars can clog landfills. Try to look for companies that use recycled materials – it should state that ld_etc_botox.qxd:Layout 1

right on the box. Don’t be fooled by official looking claims: Natural, Organic, or Contains Botanicals. They may contain only tiny amounts of such ingredients and be full of chemicals. Also watch for Fragrance Free, which may only mean that fragrance was used to mask another scent. You may need a magnifying glass to read the teeny-tiny print, but ALWAYS look at the ingredients. What you’ll find often looks like another language. Luckily, there are online resources to help interpret. The Environmental Working Group offers the Shoppers Guide to Safe Cosmetics at ewg.org under “Health Tips”. Also check out gorgeouslygreen.com/cheatsheet for a list of ingredients to avoid. Both lists are printable, so keep them in your purse for moments when you are tempted to make a beauty buy. Unfortunately, many ingredients are not regulated. Many products may contain petrochemicals (derived from petroleum), mercury, lead, parabens, phthalates (often called simply “fragrance,” many of which are banned in the European Union

To help pick healthier brands and expose harmful ingredients, the Environmental Working Group created the Skin Deep Safety Database online at cosmeticsdatabase.com. It rates products 0 – 10 (10 having the most sketchy chemicals). See how your products rate. I was surprised and saddened to see how many of my favorites fared. I did my research and restocked my cabinet. I use Desert Essence Thoroughly Clean Face Wash which is rated a 2 by the Skin Deep Database. I also like Dr. Hauschka’s Rose Day Cream, because the company uses sustainable farming techniques to create plant-based products. Juice Beauty Soothing Serum, which uses organic ingredients, balances my skin tone while moisturizing. These are just a few of the options out there at local health markets or online. Try making just one item in your skin regimen healthier and you’ll be on the right track. Another option: make your own. Better yet, get your friends together for a pampering spa party. Ultimately try to simplify your routine to use less products, packaging and chemicals; and you’ll end up spending less, creating less waste and having peace of mind that you are making healthier choices. From the north front corner, we entered through a geometric arch and slowed through a hallway of hosta, the old gate framed in the near distance. The thicket of large, lush leaves, wider than dinner plates, connotes the tropics right here in Sioux Falls (it is “South� Dakota). Hosta ‘Piedmont Gold’ and ‘August Moon’ are gold; ‘Blue Cadet’ and sieboldiana ‘Elegans’ are glaucous blue; and ‘Frances Williams’ and ‘Gold Standard’ are variegated. In late summer ‘Royal Standard’ and ‘Honeybells’ perfume the walkway with white trumpet shaped flowers. A brief travelogue accompanied Kay’s identification of plants for they often visit nurseries when on the road. Even Lyle, Kay said, will veer off their route for a nursery. Foamflower, delphinium and ‘Brise d’Anjou’ Jacob’s ladder are a few from Iowa and Nebraska nurseries. Foliage is obviously on their minds when they shop, witnessed by the extensive array of colorful leaf forms and textures. A patchwork quilt of leaves spread over the base of a hawthorn tree and included coral-bells, Sedum ‘Bertram Anderson’, Heucherella ‘Stoplight’, dwarf goatsbeard, and small gold leaf spirea. An archway covered with the Clematis ‘General Sikorsky’ takes us around the south front corner. It displays flaring purple flowers

in mid summer. A row of mature perennial forget-me-nots, Brunnera ‘Jack Frost’, lines the south walkway, the result of dividing one large, old plant. Their bold clumps prove they love this spot, before a mirror that also reflects tall pink Phlox ‘Laura’, the ‘Karl Foerster’ grass, and a little cherub. As we moved out of the hawthorn shade, sturdy clumps of tall perennials emerged like veronica and balloon flower. Exceptional Echinacea hybrid ‘Pink Double Delight’ has survived one winter and Delphinium ‘Millennium Stars’ is a recent favorite, but it was the towering lilies that lorded it over all the others. Eyes scanned upward to eight feet while jaws dropped. Individual sheared evergreen boxwoods anchor the beds. ‘Little Gem’ has survived the winters best, while ‘Green Velvet’ received substantial winter burn. Rosa ‘Nearly Wild’ and glossy black chokeberry concluded this stretch, and then it was on to the next garden. Three times Kay and Lyle have moved out the margin of the onetime sunniest garden as the honey locust tree cast an ever-widening shadow. Now an eastern exposure grows daylilies and a coral bell collection with mostly squat purple forms: ‘Purple Petticoats, ‘Velvet Knight’, ‘Chocolate Ruffles’, and ‘Obsidian’. Purple leaves are their darkest, Kay said, when they get some direct sunlight, and

here, with strong morning sun, they glow like polished mahogany. At the back of this garden grows a row of dusky ‘Diablo’ ninebark shrubs fronted by false turtleheads. They will display pink reptilian flower heads against the purple leaves in late summer. Water flow has been manipulated in a couple of ways. To direct a small river of rainwater that sometimes flows from uphill neighbors, Lyle edged one bed with a low brick gutter. In the other situation, a buried pipe drains the house gutters to an area of water-wicking Astilbe chinensis ‘Pumila’, which has spread admirably into a significant patch of groundcover. The wooden raised bed for vegetables occupies the sunniest spot in the back yard. Attached bins for soil and compost become the potting and dividing area. It’s at waist height, easy on the back. When the Kranzlers were asked to pick a favorite season, all four made the list. “Right now,” Kay said, “And spring is exciting with all the new foliage, but we also look forward to winter so we can relax and go through garden books for next year’s ideas.” Lyle likes fall best and added, “But then you have to think of what comes next.” After visiting with the Kranzlers, I kept thinking of the significance of the mirror in the garden, that it is more than a reflector of plants, sky and light. To me, that shiny flat plane seemed a symbol of how gardens reflect the spirit of their gardeners, and that it is important to show the world that we are such people.

ust like adults, children experience the full range of human emotions – from joy to sadness, anger and fear. But what should a parent do when these emotions seem out of balance? When the sadness seems to crowd the joy out of a child’s life? Depression is a commonly diagnosed behavioral health condition in children and teens. About 2 percent of children under age 12 experience depression, while an estimated 4 to 8 percent of adolescents become seriously depressed. Adolescent depression affects more girls than boys. “Depression in children looks like isolation and withdrawal,” said Dr. Beverly Gunderson, child psychologist with Avera University Psychiatry Associates. “Children may lack enjoyment in things they’ve enjoyed before or lack spontaneity. They may have more crying episodes than usual, or more anger and aggression.” Physical symptoms like stomach ache, headache or intestinal difficulties may occur. They may say they are too ill to go to school. Ridicule, bullying or teasing can cause depression in children. “They don’t have sufficient skills to withstand the pressure this creates. They don’t have the coping skills to work through it,

and are afraid to tell for fear of retribution. They don’t want to be a snitch,” Dr. Gunderson said. Family issues, like the death of a significant member of the family, divorce, moving or serious illness may affect children to the point of depression. “A lot of things impact kids that we don’t even think about. A change might have significance to a child that an adult does not realize,” Dr. Gunderson said. Normal sadness in response to the events of life is to be expected. “It’s the overreaction or continued reaction to that event that needs to be dealt with.” Children with depression often can’t make decisions. “They don’t know where to start. Life is overwhelming, so they do a lot of nothing. People look at them as lazy or not caring, but they are so overwhelmed they don’t have the ability to make decisions about normal, everyday life.” Self harm can occur, especially in adolescents who become depressed, often not because they want to end their lives, but because they want the pain to go away, Dr. Gunderson said. A national trend is abuse of over-the-counter medications. “These youth don’t know what to do with their sense of hopelessness and helplessness, or just plain feeling overwhelmed.”

“Parents tend to want to make everything right for their children. They want them to avoid the problems they had. They want to fix the problem, when sometimes the child just wants someone to listen.� If parents start to notice withdrawal, a good first step is to try to get their child or teen engaged and involved in family life, Dr. Gunderson advises. “Have some family fun. Run errands together. Spend positive time with them to draw them into a comfort level where they can learn to communicate.� Have a sit-down meal at least once a day as a family, where you can communicate positively with each other rather than focusing on the problems of the day. “Each person has his or her own set of emotions and make up. One thing parents should not do is minimize their child’s thoughts and feelings, or judge them,� Dr. Gunderson said. Parents first and foremost should be open to listening. “Parents tend to want to make everything right for their children. They want them to avoid the problems they had. They want to fix the problem, when sometimes the child just wants

someone to listen.� Children and adolescents who can’t seem to get past depression on their own or with the help of family may need professional help, by seeking out a school counselor, youth leader, mentor or medical professional. Medication and/ or inpatient or outpatient treatment may be a necessary intervention. “Medication can be part of it, but there are many other strategies to work through the child’s emotions and thoughts,� Dr. Gunderson said. Elements include cognitive, behavioral and expressive therapy, as well as family therapy to try to increase communication and understanding among family members. “Depression that begins in childhood does not have to last a lifetime,� Dr. Gunderson said. he month of September brings the beginning of beautiful, colorful leaves. As they start to fall off the trees, why not try having some fun with these natural beauties? Aside from adding them to mulch, fall leaves can be a great way to entertain your entire family this season. You and your kids can get creative with the fallen leaves and also get in some quality time together. Make a scarecrow with some old clothes and a straw hat. Find a broom handle, some safety pins, old boots, a brown paper bag or burlap sack, some poster paints and a bunch of autumn leaves. Stick the broom handle into the ground or a container filled with dirt. Cut a hole in the pants where you want the broom handle to support the scarecrow and slide them on. Have your children fill the legs with leaves. Stuff the ends of the pant legs into the boots, and add a shirt. Safety-pin the shirt to the pants and stuff it with more leaves. Pin gloves to the ends of the shirt sleeves and stuff them with leaves as well. For the head, fill the brown paper bag or burlap sack with leaves and form a round shape. Tuck the end into the shirt and safety-pin to secure. Use poster paint to make a face, as this will most likely last longer in various weather conditions. Secure the hat and — presto! — you’ve got a scarecrow! Go on a leaf hunt with your kids. Take a magnifying glass along and let them peak through it to see the structure and

veins in the leaves. A tree identification guide will also help to teach your kids about the different classifications and names of the trees in your area. Collect some fall leaves of different kinds and save them for creative projects. Teach your child about colors and shapes by separating them into piles according to the colors and shapes of the leaves. Make a fall wreath from leaves. Buy a plain wreath or wreath base from the nearby craft store and hot-glue dozens of leaves to it. Be careful with the hot glue when children are helping. Overlap the leaves to completely cover any exposed base and add a few pine cones or seed pods for an added touch. Hang on your door or window for a lovely home-made decoration your children will be proud of. Decorate with leaves. Attach single leaves to a straw or skewer and arrange in a vase that brings out the colors of the leaves you have chosen. A bouquet of colorful leaves can add some flavor to your living room or kitchen and will make a great activity for you and your children to enjoy together. Or, find a decorative basket and have your children fill it with their favorite leaves. This will make an instant centerpiece for fall. String some leaves and other dĂŠcor together to create a beautiful fall streamer for a seasonal touch to your curtain rod or banister. Run it along your family photos or wrap it around a

centerpiece as well. You could also have your children pick out leaves with long stems for a leaf chain. Snip the stems from the base of one leaf and use a toothpick to make two holes, one at the top and the other at the bottom. Insert one of the leaf stems through both holes, pinning them together. Repeat until you have a chain of leaves. Another fun activity is to find some leaves with bumpy patterns and sit your kids down with some crayons and white paper. Place the leaf on a flat surface with the veins facing upwards. Cover it with the paper. Unwrap the crayons from their paper and have your children color with the crayons sideways on top of the leaf. When finished, the shape of the leaf and veins will make your kids want to keep coloring and discovering new patterns. And, do you remember doing this as a kid? Put the leaves between two sheets of waxed paper, and shave off some crayon filings and iron on a low setting. This will

create instant decorations, bookmarks, fall gifts, etc. Have your kids explore and choose some extra special leaves to save for family birthdays or other special occasions. Slip one colorful leaf into a card and surprise them when they receive it. Use the colored leaf patterns or wax paper leaves as a home-made card for added personalization. Press your favorite leaves between the pages of a big book like an encyclopedia and let it be. After a while the leaf will look quite different and will be entertaining to your kids. If all else fails, play. Find a softer spot in your yard and rake the fallen leaves into a heaping pile — then let your kids go wild! Do be prepared to clean up the mess again after they are all tired out. In fact, you might want to join in on the action so make sure to create a big enough pile of leaves for all to enjoy and have some foliage fun!

f you’re searching out methods online or working in teams to solve problems, you may have a job in the business world, or perhaps you’re fortunate to be involved in a classroom that incorporates engaging ways to apply what’s being taught; adding another level of investigation that encourages making personal discoveries. Dr. Joy Lind, an Assistant Mathetics Professor at the University of Sioux Falls, finds her experience on the field gives real-life applications to what students process on paper. In her second year at USF, she’s hoping to bridge understanding and keep lessons practical – which adds to the likelihood that students suceeed and perhaps even relax for an upcoming exam.

I’ve had students who put off a math class, and one told me his interests in theater, thinking perhaps a “D” would be a likely grade for my class. I began to encourage this student by understanding his gifts and sharing a broad base of applied math. One example I give is how maintaining an efficient postal route or road map is a lesson in graph theory. Later, motivation increased in his pursuits, and especially the level of effort and time he put towards math. When the students graduate at USF, they are able to shake all of their professors’ hands, but with him, I got a big hug. It’s a blessing to hear someone who has rejected it for whatever reason tell you they’ve appreciated what you’ve taught them.

First of all, I find the students are very hard-working and I’m surrounded by colleagues that promote a positive environment for learning. But I also look to others who teach mathematics or use it to solve problems at work, and I get ideas. For example, at the National Math Conference, a speaker correlated dance and art to mathematics. I did additional research to form a “Mathematics of Style” interim class exploring areas of nature, music and the arts that intersect with math.

How are you encouraged by others in this field?

For me, I want to bring the energy in there, because I know the students have stayed up later and need a boost. Most mornings I’ve been awake three hours before them, starting early with exercise and a healthy breakfast. Then there’s the goal of getting to bed by nine.

With smaller class sizes at USF, I’ve been able to develop rapport with the students, and I know how they’re doing. I encourage them when they’re struggling to bring me questions outside of class, and then I can re-teach a lesson in a new way. I find my students are receptive to meeting oneon-one. This makes for a valuable use of energy when they’re able to leave that study time with confidence, knowing they can complete the assignment.

ur new Golden Retriever puppy has turned our house upside down! What happened to the quiet cup of coffee in the morning, what happened to my Sunday afternoon nap and where in the heck did my socks go? Puppies are busy, fun and on the move almost constantly. There are lots of opinions on how to raise the perfect puppy. I have spent 23 years giving advice on preventing problems, still there is more information out there. Numerous books, videos and even television superstars of Canine Behavior are available for our consumption. There is a lot of good advice mixed with controversial opinions. The faster you can get the puppy housetrained the better. There are many different methods, but I have a few good tips to help keep your sanity and get the job done. You first must be very consistent. The routine needs to fit your lifestyle. If you are a “late night” person, you do not want to train the puppy to get up at 5 a.m. for the rest of its life. Keep the puppy awake as long as you can, do not let it nap just before you want to go to bed and make sure they potty before you go to bed. Use a kennel box as their room in your house. This keeps your puppy safe from chewing on dangerous or inappropriate items while you sleep or are at work. It also helps speed the house training. A puppy may piddle on your bed, but they do not routinely want to piddle on theirs. It can also provide you an

hour or two of quiet sanity. Whenever your puppy eats, drinks or wakes up from a nap, they will usually need to go outside. It is better to just take them out than to wait for the puppy to give you a sign. I like to go out the same door, ask the same question and go to the same part of the yard. If your puppy is slow to learn, get a very tasty treat to give every time they potty as a reward. Do not use this treat except for when they potty outside. It is important that your puppy understands that you are the boss, the alpha, the person in charge. That cute little fuzz ball spends most of its time and play, trying to figure out where it fits in the social structure of your home. They are more than happy to run the house if you let them. They are a perfect piece of clay but we need to spend time and energy molding them into that perfect companion. There are many ways to establish who is the “alpha” or the boss. Not one single method is the best for all breeds, but consistency is important. I also think that getting several different opinions is important. Some of the most famous methods may not work for your new friend. It is important that your new pet is around a lot of different people, noise and places. The more you socialize the pet, the easier it will be to take them in the future. A puppy class is a great way to help with this. Now, where did my shoe go?
