Memphis has no shortage of amazing growers and farmers, so this month, 4Memphis is celebrating farmers market-inspired dishes from our favorite local eateries!

Honey Pecan & Goat Cheese Stuffed Tomatoes Itta Bena

4 large tomatoes 4 oz goat cheese 3 Tbl panko bread crumbs 1/4 c pecan pieces 2 tsp fresh chopped chives

2 Tbl olive oil 2 Tbl honey Kosher salt and cracked black pepper to taste

Preheat oven to 400째. Cut a thin slice off the top of each tomato, and scoop out the pulp. Combine goat cheese, pecans, bread crumbs, chives, oil, salt and pepper in a bowl and mix well. Stuff each tomato with cheese mixture, and bake 6 to 8 minutes. Drizzle each tomato with honey and serve with fresh salad greens.
