Beet Lemonade + Burrata Beet Lemonade Makes 1 pitcher Ingredients: 1 cup sugar 1 ¼ cups water 1 cup lemon juice ¾ cup beet juice* ½ cup water (more to taste) Ice Fresh basil leaves (optional) Directions: Prepare simple syrup: in saucepan, heat sugar and water over medium heat, stirring frequently, until sugar has dissolved. Cool to room temperature. In a pitcher, combine simple syrup, lemon juice, beet juice and water. Stir to combine. Add additional water to taste. Serve over ice. Garnish with basil leaves, if desired. * Look for beet juice at natural food stores. If using a juicer at home, 2-3 beets will yield 3/4 cup juice.
