What does a typical day look like for you?

Where did you get the idea for creating your business?

“My day begins with an exercise routine of Pilates, Yoga, the treadmill, and green tea. Then I’m off to a client’s home where I spend the day formulating a household manual that has the necessary maintenance procedures, schedules, standards, and protocol for training the staff.”

“Twenty-five years ago, shortly after graduating with a degree in Spanish & Linguistics, I thought about applying my education to a business.

Recognizing a need for good household help I started a domestic agency primarily representing Hispanic women.

Realizing that many of my applicants needed training to become more successful, I created educational materials in both Spanish and English, started holding seminars offering hands on instruction, all to help them become more professional. Now, my focus is creating personalized household manuals and implementing training on site.”

What’s your favorite part about your job?

“My work is most gratifying when I see my client happy and excited that their home looks clean, is organized, and they recognize that their staff understands what to do to keep it that way. My clients expect their world to run well, I help them translate that to their homes. A home that is organized, where the staff anticipates needs, becomes a sanctuary for my client’s offering a peace of mind from their busy lives. This is what thrills me.”

What have you accomplished in your career that is most gratifying?

“Many of the women I have placed as housekeepers or nannies have developed skills to become real professionals earning significant income to

buy their first home, send their children to college and create their American dream. I know what education and training can do to empower women.

Educators in Cameroon approached me about a specialized school for women to give them a career so they would not be subjected to human trafficking. I jumped in enthusiastically. This past November, we celebrated the first graduating class of Help Out, The Professional Housekeeper School. That is most gratifying thing I have done in my career!”

Are your services available for specific events such as dinner parties?

“In the past, clients have requested my presence for important meetings and events where they wanted to be assured the staff handled things properly. I have trained the staff and created perfect tables selecting the most appropriate china, silver, and glassware for many well known personalities.”

What are a few steps you recommend in preparing staff for a large event in the home?

“Preparing a staff means first sitting down and discussing the way you envision the event from start to finish and assigning specific tasks to each staff member. An event is like a play where everyone has a role and must do their part effectively to make it a success!”

How can in-home staff assist/ support catering staff?

“Usually in-home staff is there to greet the guests, take their coat, perhaps a gift, offer a drink, indicate the location of the powder room and direct them to the event. They usually maintain the powder rooms throughout and may also assist with the overall cleanup.”

When guests are staying on the property, are there any additional efforts the host and staff should consider to ensure the most welcoming, smooth, and carefree stay?

You offer training in formal and informal table setting and serving – what’s the most important element or first element to consider when preparing a table?

“The host and staff should create a five-star hotel environment for their guests.

First change the linens and towels just before guests arrive, ensure the guest has clean robes and there are toiletries available, fill the mini-bar or fridge, and provide fresh fruit in a bowl. The staff can inform the guests how to use the phone, television, and air conditioning unit but a specific manual created for the guest suites in your home would be a most welcome addition. Finally, the staff should maintain the room daily and ask the guest periodically throughout the day if there is anything that the guest might need. Specific guest needs such as food or product allergies should be discussed along with wants such as a particular beverage is a great way to enhance their experience.”

“The most important aspect to any formal or informal table setting is that you make the table inviting and beautiful and ensure serving runs smoothly.

A dinner party needs a plan.

You begin with your guest list by inviting people that will make for an interesting evening and then determine the service personnel needed for that event.

Then decide on your menu and create a table setting choosing colors, china, glassware, and table accessories to match your theme and food choices. If you are doing a formal dinner party, have enough trained help so that everyone is served in a timely manner. Be always vigilant of your guests to see if they need more water, wine or something else to make their experience pleasurable.”

What’s in your handbag?

“My handbag always has my business cards, wallet, make-up bag, sun glasses, keys, and iPad mini and a must have is hand lotion, sunscreen and a Kind Bar (preferably dark chocolate cherry cashew).”

What do you do in your free time?

“Free time means sitting in our backyard surrounded by newspapers, books, and magazines enjoying a pot of green tea under an umbrella.

My husband always knows where to find me.”

Do you prefer family style or plated dinner parties?

“My preference is always plated dinner parties because I love setting more formal tables, and surprising my guests with the presentation of various courses.

Guests also like and appreciate being served.”

What’s your favorite dinner recipe?

“Being from Madrid, my favorite dinners involve tapas, paella, and a good tempranillo.”

What services are you most recognized for?

“The services that are most requested by my clients are personalized household management manuals, staff training, and my organizational skills.”

What are your top three household tips?

1. “Organize every drawer, cabinet, closet and room first and then create a deep vs. light cleaning schedule.”

2. “Along with other specialized cleaning products, it is always good to keep handy baking soda, hydrogen peroxide, vinegar and lemon to clean, sanitize, disinfect and deodorize.”

3. “Daily attention to detail and on the spot maintenance can help you keep any home looking perfect at all times.”

What is the number one reason why people need your service?

“Every home is different and every homeowner unique in their choice of service and standards. A staff member cannot fully grasp how to do things exactly to a client’s liking without clear instructions.

With a manual that provides detailed guidelines followed by training to those specifics you will have a staff and a home that runs efficiently.

My client’s have busy lives and want to retreat to their homes to relax in a beautiful environment, my expertise is to create this sanctuary.”

FINCH & FOR K The ladies at SBLS are everywhere. From food to fashion, we are constantly trying to broaden our palettes and style. While on our continuing journey, we were searching the web and kept seeing the most amazing milkshakes ever from Finch and Fork. We brought it upon ourselves to make a dire and delicious trip to the Canary Hotel to see what all the buzz is about.

Finch and Fork evolved from the Coast restaurant in 2013, focusing on a modern American bar and grill feel. Don’t be fooled by the traditional description, Finch and Fork is anything but. Using local ingredients straight from Santa Barbara farmer’s markets, you can taste the freshness from the cocktails to the scallops.

We sat, we drank, we ate, and we quietly moaned while we waited for dessert. Here are our recommendations for your next trip.

For drinks: Blackberry Cooler - This is a great light drink perfect for summer. We love anything with herbs in it. Day Spa - Another perfect summer cocktail, this is definitely a new favorite for me. It is made with aloe so you basically are drinking a spa, win-win.

Padaro Punch - A light but satisfying girls’ night cocktail. The punch serves four but I could easily have drank the whole thing by

myself. My better judgement told me not to while writing this article, but it probably would have made this funnier.

Our main courses were excellent. Sea scallops and rainbow trout. Each was prepared in a way we had never seen before, but each flavor combination had us scraping the plate for the last bite.

And finally, the reason we were originally intrigued, the dessert menu - specifically the “Barrel of Monkeys” milkshake.

Beautifully presented, it was almost a shame to ruin them as we scarfed it down. It’s like a banana creme pie with bits of graham cracker. I know we might give a lot of work out tips and promote healthy eating, but every once in a while, it’s okay to splurge.

This milkshake is worth an extra 20 minutes at the gym. Trust us.

We sat down with Chef James, the master chef and curator of our favorite indulgence, and asked him some hard questions.

We always hear chefs hate cooking outside of the restaurant, is that true with you?

Chef: I cook very simple at home. I like to get creative with simple ingredients, especially ramen noodles, I love ramen.

Even at dinner parties, I love home cooking.

Meat and potatoes remind me of home.

It is so great to meet the man behind the milkshake, what inspired you to be a chef?

Chef: I grew up in the business, my father was a chef in Ohio. I saw all aspects of the restaurant industry, you get a better inspiration than going to a food culinary aspect. You get to see the end result with the guests, their reactions to your dish make it that much better.

Do you have anything strange in your fridge?

Chef: I have A LOT of condiments. Like 3-4 types of each, I love adding different and ethnic flavors to my dishes. McConnell’s frozen yogurt is also always in my fridge.

You’ve been all over the nation, what makes Santa Barbara different from the places you’ve worked before?

You’ve tasted dishes from all over. If you could pick a few things to eat for the rest of your life, what would they be?

Chef: The farmer’s markets. I love going to them, there are so many vendors, so much more to it than produce. You really get to see what Santa Barbara is all about. There is also a great comrodery and community of chefs here since it is a smaller region. I love seeing regulars in the restaurant.
