“Chris and I both love the rustic and homey feeling of a fall getaway in the mountains. We really wanted to capture that for our guests on our wedding day. The way everything worked out – well we couldn’t have been happier. We took a chance with an outdoor ceremony in October, but lucky for us, we experienced clear blue skies and temperatures of almost 20° celsius. Chris and I wrote our own vows, which was one of my favorite parts of the day. Promising things in front of our family and friends is a moment both of us will cherish forever. It sounds cliché, but we had to take a moment to appreciate what a once-in-a-lifetime experience this was going to be to have all our loved ones in the same room. It was humbling, hilarious, and downright magical!”

Adriana and Ryan met on a unexpected night out with their friends! A Mrs. Claus costume, whiskey and Ryan’s birthday were all involved, and apparently the perfect love potion for these two! Their connection was instant and in a few short days they were inseparatable. On a normal Thursday night, Ryan surprised Adriana with a homemade dinner and gave her an album of all their memories, photos and letters together. By the last page, Ryan was on one knee, and Adriana said “Yes!” The two planned a mountain-chic wedding on August 31st for friends and family to celebrate their marriage!

The Theme: Adriana and Ryan wanted their wedding to be both elegant yet
down to earth, glamorous yet humble in a way that connected everyone to the natural beauty surrounding them. They blended chic details, such as the bridesmaid’s dresses in the gold and champagne color palette with the rustic influence of the Rockies found in the wildflowers, gilded pinecones and wood farm tables.
The Dress: “I was fortunate to get to travel around many parts of Canada and
the United States in search for the perfect dress, with very patient friends and family members. After trying on over 75 different dresses, I found the one. I wanted a dress that was unique with a little bit of whimsy but also felt elegant enough for this special occasion. I had admired Claire Pettibone’s designs, but it was actually my mom who pulled my dress for me to try on. It was a really special day when I found it as both my mom and dad were there with me. The dress was mostly silk with gold flowers and leaves embroidered both on the front and on the back. I accessorized it with gold and pearl jewelry, a cathedral length veil and gold flats.”

The Flowers: When it came to blooms, Adriana and
Ryan wanted to keep the floral organic, soft and local to the Jasper area. Ornamental kale was the focus of all the bouquets and arrangements and accented by caramel garden roses, scabisoa pods, eryngium, Queen Anne’s lace, larkspur, small pinecones, seeded eucalyptus, armatured with curly willow and pieces of greenery sprayed antique gold. Adriana trusted the talented Courtney Mayhew, at the Jasper Park Lodge to make her vision come together, and she did a fabulous job doing so! Along with our families and friends, we put a lot of time into DIY touches that were sprinkled throughout. We designed our wedding arch to look like a church window. I learned calligraphy so I could hand address our invitations, escort cards and place cards. The string trio, lead by Ryan’s brother, played Pachelbel’s Cannon as we walked down the aisle -- a song Ryan & his siblings performed as children. We also designed all of our own stationary, spent many afternoons spray painting tiny gold animals, making mercury glass candle holders and best of all, making and tasting different wedding favor possibilities - s’mores popcorn was the eventual winner. The vision was to represent us and that day the result was absolutely perfect. Planning the wedding was a delight only surpassed by the day itself.”

The Food: Adriana and Ryan still rave about the food.
Their menu created a memorable experience for all of their guests! For cocktail hour, they served a variety of canapés inspired by the Canadian Rockies and the West Coast, like air-dried Bison, beef carpaccio and scotch-infused smoked Salmon. For dinner, guests were offered a choice of roast Alberta prime rib with horseradish potato puree and Yorkshire pudding, or Haida Gwaii sablefish, with tomato risotto and Kalamata olive vinaigrette. Adriana’s favorite part was the Sablefish - yum! For a late night snack, they had a Pierogi bar, which was a big hit and was a nod to Ryan’s Ukrainian and Adriana’s Polish heritage.
The Sweets: Guests enjoyed maple créme brûlée with
white chocolate biscotti and rosemary sorbet, along with the three-tier coconut wedding cake!
Mr. and Mrs. Moment: “I don’t think we expected the ceremony to be as special and memorable as it was. I wanted it to last forever. Nothing could beat seeing each other for the first time, proclaiming our love and saying the vows we wrote to each other while being in one of our favorite places surrounded by loved ones. I wish I could relive those moments every day.”

Advice for RMB Brides: “Stay organized but also go with the flow! Being organized, sticking to a timeline and avoiding procrastination during the entire wedding planning process made for a virtually stress free experience. There were definitely surprises that came up along the way (both good and bad) and we had plenty of time to deal with them. We planned to have everything done a week before the wedding and we actually managed to do it! In the days leading up, instead of running around like crazy, we were able to spend time together getting excited for the big day! I also think it is very important to go with the flow and embrace all the craziness coming your way, especially in the mountains.� Three Words: Joy! Romance! Fun!

Allissa & Aron brackendale
Allissa and Aron began dating at the beginning of 2012, although their memories together went back to dissecting sheep eyeballs in grade 8 science class. It wasn’t until two years after high school, that they reconnected as more than friends and began the adventure of dating! From wandering the streets of Rome to living a month in rural Jamaica, and all the memories in-between, Aron knew Allissa was his perfect match. He proposed to her at one of their favorite spots, Village Books & Coffee House. He hid a special book on the shelves, hollowed out with the ring in it and their close friend, Marie, nearby to capture the moment in photos. Allissa was completely surprised when Aron pulled the book from the shelf and got down on one knee, she of course said “yes”! The two planned a June 6th West Coast woodsland wedding complete with friends, family and each other.

The Theme: Aron and Allissa designed a “west coast
woodsland wedding,” complete with a locally-inspired menu, lush greenery and wood accents. They chose a color palette of burgundy and white, though they let the natural greenery of the location and decor take center stage!
The Dress: “I had a very specific idea of what I wanted
when I began to dress shop. I am not a very formal person by nature and wanted something understated that was relaxed but still reflected the occasion. Disappointed by what other stores had to offer, I was able to find everything I was looking for when I stepped in to Merly Bayona’s custom bridal shop, Ellebay. It’s sweetheart neckline, convertible sleeves, and loose skirt that tucked in at the waist were perfection. I paired the dress with a bolero designed by a talented and lovely friend of mine, which made my vision complete.”

The Flowers: Aron’s Grandmother owned a floral shop in the Philippines and kindly offered to create the couple’s wedding day arrangements! Aron and Allissa wanted to feature soft, white floral and local greenery that complemented the location, and she did a marvelous job!
“The extra planning that went into coordinating a “wedding weekend” was worth the opportunity to share the time with friends and family. It was incredible to be able to help people settle into their cabins and then sit and share stories around the campfire the evening before while friends and family from both sides mingling and laughing with each other. It afforded us a little bit of extra time after the wedding as well by being able to share brunch with them before everyone packed up to go home.”
The Favorite Detail:
The couple chose not to have a “first dance” - they wanted a more relaxed reception. Aron and his groomsmen ended up surprising Allissa with a choreographed lip sync to Maroon 5’s “Sugar.”

The Food: When Aron and Allissa were deciding on a
reception meal, they really wanted it to reflect the area they grew up in, which resulted in a west coast inspired menu, catered on site by the Cheakamus Centre Culinary Team. With an emphasis on locally sourced ingredients, the menu included maple-cured salmon, glazed roasted vegetables, and vegetarian lasagna. Yum!
The Sweets: “We decided early on to go with mini donuts
from one of our favorite spots in Steveston, BC. It took a little bit of co-ordinating to get them up to Squamish the day of, but it was worth it! We loved being able to share one of our favorite treats with everyone.”
Mr. and Mrs. Moment: “I think our most exciting
moment of the day was after the ceremony. Turning to face a crowd of smiling, teary eyed loved ones, has a way of tugging at your heart-strings, especially because we knew that each and every one of them was there to support us in that moment.”

Although both from the Northwest, Karley and Marcus met in Newport Beach, California where they were next-door neighbors. Even though it started as a friendship, looking back, they knew it was love at first sight and that they had found “The One” within the first couple months of dating. Marcus surprised Karley by proposing at sunset on her family’s lake property on Loon Lake, Washington in August 2014. Family and close friends were able to be there to celebrate and well-wish the couple on their new journey! With strong ties to Idaho and the region, the couple couldn’t think of a better place to become a family than a June 6th wedding at Dover Barn.

The Theme: Karley and Marcus’ picturesque wedding had a chic and rustic romance feel. A peach and ivory color palette set the mood for the romantic celebration.
The Dress: The bride’s exquisite Galia Lahav dress was
the perfect complement to the rustic charm of the big day. Karley absolutely fell in love with the backless design and the delicate lace.
The Flowers: “Marcus’ mom, Roxie, and her best friend
grew and arranged ALL of the flowers for our wedding! They are incredibly talented and used an array of peach, pink, and ivory flowers placed all over the barn. The alter was a beautiful grouping of wine barrels and wheelbarrows full of gorgeous fresh flowers. We completely trusted Roxie to embody what we envisioned and she did not disappoint. My bouquet was comprised of peach roses with ivory and subtle greenery and my bridesmaids had baby’s breath bouquets.”

The Food: “For cocktail hour, we had wine, beer, and
peach bellinis along with a beautiful local cheese spread, snow pea bruschetta, and smoked salmon cucumber rolls. For dinner, we served Shepherd’s pie (classic and vegan option), rolls with herbed butter, strawberry spinach goat cheese salad, and old fashioned baked beans. We used Feast Catering out of Spokane and everyone raved about the food.”

cupcakes and made the couple a small special cake to share.

Meredith and Cameron celebrated their love for each other on June 20, with an adventurous wedding at 320 Guest Ranch in Big Sky. Their love story began at the University of Montana but would develop across the world. They spent the next five years traveling together, rafting rivers, hiking mountains, and skiing powder. In August of 2014, they spent a weekend car camping and canoeing on Earthquake Lake, Montana. After canoeing for a while, Cam suggested they set up the camera and take a picture together. After setting up a self timer, he ran back and before Meredith knew it he was down on one knee! They celebrated on the lake shore by sipping their favorite whiskey and enjoying the beautiful place that would forever have a special place in their hearts.Their wedding day was a true refection of their love they have for each other and the travels they shared together!

The Theme: Meredith and Cameron’s wedding theme was
adventure with a touch of vintage flare. These two world travelers wanted their wedding weekend to reflect their love of adventure. They also included meaningful family heirlooms to give their day even more meaning. A vintage couch that belonged to Meredith’s grandmother that passed away; a treasured possession that not only her father grew up on but she and her cousins as well. She wore her mother’s veil and wrapped pearls around her bouquet that were worn by both her grandmother and mom on their wedding days. Cameron’s wedding band, tie clip, and cuff links all belonged to his grandfather. Their small, heartfelt details created the sentimental vintage feel they wanted their guests to experience.
The Dress: “Oh the dress! It was one of my favorite parts of
the whole planning process. I found it in Missoula from the ever so wonderful Velvet Bride. Lauren Snyder, the owner of Velvet Bride, has created a bridal shop and experience that makes picking out ‘The Dress’ pressure free and so fun! The dress was a Rosa Clara, from her 2015 Soft Collection.My mom and three cousins, who were Maidens of Honor in the wedding, joined me. It felt weightless on me, I could move comfortably in it, and it was not strapless, a few of my most haves.”

The Flowers: “I knew for the flowers I wanted a
pop of color, since a lot of everything else was more neutral. I am not afraid of color! I have always loved poppies so that is where I drew my inspiration. I didn’t need all them to be poppies, just poppy like, and oh yeah, peonies, there had to be peonies. My other main desire was greenery, that’s how I wanted to pull in the green of our color scheme to the decorations. The superb talents of Kirkham & Company achieved my every wish and beyond!” “The rocks we used for our place cards were my absolute favorite detail. We decided early on we wanted to have this, I thought it was a neat way to incorporate Cameron’s interest in rocks and our love for rivers and the outdoors. We collected the rocks in the fall before the wedding, it felt so special going to the river and selecting the perfect rocks with my hubby to be.The talents of Cast Calligraphy would write the guest’s name on them and they would be placed at each person’s seat.”

They chose John Denver’s “Take Me Home Country Roads” for their first dance. It became their song while they were traveling in Laos, at a karaoke bar in the town of Phonsavon. After observing quite a few locals singing their hearts out, they decided it was their turn. Along with a few fellow travelers they met while on the road, they selected “Take Me Home Country Roads”. It was one of the few songs in English and much to their surprise their new European friends knew the song as well! Ever since then, it has had a sentimental value to it, beyond its wonderful words.
The First Dance:
Mr. and Mrs. Moment: Meredith’s Uncle,
Phil Gardner, officiated the ceremony for them. He has always been a role model in her life and they thought there was no one better to marry them. He asked for inspiration to write the ceremony, Cameron and Meredith wrote love letters to each other that they shared with him. Their ceremony was candid and sincere, loving and heartfelt; more than they could have expected. They read their vows, said “I do” and then to end the ceremony, her Uncle sang Greg Brown’s “Hey Baby Hey” bringing both Meredith and Cameron to tears. It was an intimate and personal way to seal their marriage.
The Sweets: “We chose to do an assortment
of desserts.We had one small lemon cake with lemon frosting.There were mini cupcakes to match the cake, as well as mini chocolate cupcakes with peanut butter frosting.We had homemade Oreos, Montana-shaped sugar cookies, brown butter crispy treats (Cameron and I have a bit of an obsession with crispy treats), and meringues.The sugary talents of Ashley Todd, owner of In A Pinch Bakery, crafted these beautiful and tasty treats!”

Advice for RMB Brides: “Truly think about what is important to you, not what is tradition or what is expected. It’s so easy to get lost in the ‘supposed to’. I wanted every bit possible of the wedding to have meaning to Cameron and I. I didn’t want to have something a part of it just because it was supposed to be. It needed to be sentimental. So I urge future brides to think about the things that bring meaning to who you are as a person, who your soon to be husband is as a person, and who you are together. Also, I suggest you choose your vendors wisely, they play such a huge role in your day and when they rock, it makes your day rock! I had some seriously kick-butt vendors that felt like part of my family.” Three Words: Intimate, Sentimental, Natural

Alison and DeWitt met through shared friends at party in a private home in Dallas. They ran into each other a few times over the next couple years – but did not go out on a date until DeWitt moved back to Dallas from Colorado. DeWitt proposed in San Antonio almost two years later! As a couple, Alison and DeWitt love to travel and experience new places together, so why not celebrate their sense of adventure with a destination wedding in Santa Fe! On August 30th, with close friends and family by their side, the two were married and celebrated the night away!

The Theme: Alison and DeWitt didn’t have a
specific theme, but rather wanted an intimate weekend filled with family and close friends! They used a color palette of whites, pastel pinks and touches of green for their New Mexico fiesta!
The Dress: The bride’s gorgeous gown was
purchased from Neiman Marcus Bridal. Alison had found a picture of a dress online that she fell in love with, so the original dress was tailored extensively to replicate the dress she envisioned!
“I love big blooms such as orchids, peonies and roses, and I wanted just a pop of succulents. Marisa’s Millefiori did a wonderful job executing my vision while using flowers that were in season and could be sourced locally. The feel was very authentic to Santa Fe.”

“I loved our welcome boxes created by Felicia, our wedding planner. I thought they added a Santa Fe flair to welcome guests to a fun destination. Felicia included paper flowers, piñon toffee, and Milagros as swell as Santa Fe travel postcards, pre-addressed with our home address, for guests to send notes. We received several on our first anniversary!”
The Favorite Detail:
The Food: “I love a seated, multi-course, dinner so that was important to us. We wanted to choose dishes that represented the cuisine of the Southwest, so we tried to add touches like piñon nuts to a salad or steamed red chili pork tamales next to filet mignon and salmon. It was as colorful as it was delicious!”
The Sweets: Alison and DeWitt had a
lemon bride’s cake with butter cream icing, and a 3-dimensional chocolate groom’s cake in the shape of a Vespa. At the rehearsal dinner, they served cheesecake, which is DeWitt’s favorite sweet treat!

Eva and John’s marriage is the result of a couple of scheming friends who set them up to meet during trivia night at a bar in San Francisco.There’s a long list of things that could have been responsible for the two’s initial spark, but for sure, it wasn’t their trivia knowledge! That night led to a first date, and the rest was history! John proposed to Eva on June 20th, 2014 during a hike to Lands End in San Francisco, and the two decided to tie the knot with a destination wedding one year on the date of their proposal!

The Dress: Eva wore a stunning Monique Lhuillier gown,
accented with a full A-line skirt with Chantilly lace layered under blush tulle and a sweetheart neckline.
When it came to flowers, Eva chose to incorporate all her favorite blooms into the wedding day! A combination of peonies, anemones, dahlias and ranunculus in soft pastels were used to create the gorgeous floral design.

Another best was the surprises; the maid of honor hired singers as part of her speech to sing a song from Eva’s favorite musical Wicked and one of John’s groomsmen entertained the crowd with his rendition of Ice Ice Baby.” “Sam Cooke’s, That’s Where It’s At. John’s mother grew up in the hey-day of Motown and was good enough to pass along her love of classic R&B to her son. That song is one of John’s favorites and the quiet comfort it conveys is the perfect description of the love we share.”

Lodge in Deer Valley presented the perfect opportunity for a surprise—a post-ceremony lift ride for all our guests to a mountain top cocktail hour. We walked down the aisle and jumped on the lift, much to the surprise of our guests (especially those with a fear of heights!) who were then directed to follow. It also had an unexpected plus—the 10 minute ride to the top was the perfect way for us to quietly enjoy each other’s company, right after our vows, and before the whirlwind of the reception began!”

Three Words: Perfect, Fun and Beautiful The Honeymoon: “The only thing that could rival our amazing wedding day was our incredible honeymoon! We traveled to South Africa, and it was just amazing. After 30 hours of travel, we arrived at the Ngala Tented Camp, near Krueger National Park, for 5 days of safari. We spent half the time on game drives, spotting lions, leopards, giraffes, buffalo, and elephants, and spent the other half getting some much needed relaxing in! After our safari, we spent another 5 days in and around Cape Town, which culminated with a shark-diving trip, getting up-close-and-personal with some giant great whites! It’s an incredible country with amazing hospitality— each stop held special honeymoon surprises, which kept the celebration going!”

Caroline and Will met at summer camp their junior year of high school. The two reconnected at a camp reunion the following year, and while attending the same college became close friends. Soon after, Will confessed that he had feelings for Caroline and the two have been together ever since! Fast-forward eight years to the proposal - Will planned a island hopping adventure around Seattle for the day. They started at Whidbey Island, followed by lunch at Deception Bridge and ended the day at San Juan Island where at sunset, Will popped the question! The two planned a romantic ranch wedding for June 20th that was full of love and Wyoming details.

The Dress: Caroline’s dress was made of cotton and
featured lovely lace details. The moment she put on her dress, she suddenly felt happiness, as that was the dress that defined her. On wedding day, guests couldn’t stop talking about the dress and telling her how beautiful it was!
The Flowers: “Wildflowers. These flowers have
always been my favorite and lift my spirit every time I see them in the mountains or fields. They were also a perfect blend with the mountains in the background and our natural wedding atmosphere.”
The Food: The couple served organic chicken, wild elk steak, mashed potatoes, Lebanese rice, spring salad and grilled asparagus. They were inspired to use a bit of a farm to table approach despite the challenge of a small town. They connected with a farmer to supply pastureraised chickens and brought elk hunted in the wild.

Three Words: Magical.The day of our wedding was absolutely gorgeous and beyond our expectations. We got to say “I do” in front of the mountains in sunny, warm weather with grass that was super green from all the rains that month. Nostalgic. It was surreal for Will to marry the woman of his dreams on the ranch, exactly how he envisioned when growing up there. Earthy. From the ceremony to decorations to the reception, we made sure that the things we incorporated were nature-related, reusable, and eco-friendly. Our ranch setting and the nature surrounding it had a widely open feel and we loved celebrating our marriage outdoors.”

Matt and Rachel met by chance when they both happened to take a spur-ofthe-moment dog walk on a secluded beach in Nanaimo on Vancouver Island. A mutual friend who called him “The Most Eligible Bachelor in Nanaimo� formally introduced Matt to Rachel later that evening. The two discovered how well their three dogs got along and knew it was fated to be. They soon moved their little family to a new home in Whistler. Shortly after Rachel’s birthday, she and Matt took a winter afternoon quad ride with the dogs up Rainbow Mountain, where Matt proposed overlooking the Whistler-Blackcomb Ski Resort. The two made it official on June 1st with an intimate celebration that included loved ones atop of the same mountain where they got engaged, overlooking Beverly Lake!

The Theme: “Simple, No-fuss, No-muss! It was
a compromise between our desire to elope and our parents’ longing to see us get married. We wanted it to really suit our style, personality and our love of adventure. So why not take a helicopter to the top of a glacier?! Due to weather conditions, we weren’t able to land on the glacier itself, but the beautiful little mountain lake that they took us to was BREATHTAKING. We got a little wet and a little chilly, but we wouldn’t have changed a thing.”
Rachel found her stunning gown at her first shop! She was looking for simple, elegant and comfortable and loved her final selection. As fate would have it, the bridal shop owner was also the mother of the good mutual friend who introduced Rachel and Matt in the first place!

“I actually spent hours out in the woods searching for moss, lichen and flowers for my bouquet and Matt’s boutonnière. I wanted to pay tribute to the beauty of the Whistler Mountains, which Matt and I both love so much.”

Matt and Rachel celebrated with a small group of friends and family at Nita Lake Lodge. They indulged in a three-course dinner, followed by crème brûlée - Rachel’s favorite!

Corrie and Noah met through a mutual friend and their connection was instant and remarkable. As they got to know each other, they tried for as long as possible to keep things casual, but both were drawn to each other in a way neither of them had experienced before - it was a love of a lifetime! After an enchanting year of dating, Noah popped the question in his parents antique sheep wagon in their backyard! While dating, Corrie would come over and the two would sneak away to the wagon, so one visit while chatting together, Noah spontaneously proposed! The Theme: Corrie and Noah’s wedding was quintessential rustic Wyoming.
The Flowers: Corrie’s mother is a floral design artist in Dallas, so she built and designed the bride’s bouquet and the boutonnières out of dried flowers and succulents!
The Dress: Corrie found her perfect dress online at Modcloth. “It took me all of 30 minutes to pick it out. I just saw it, liked it, and bought it. When it came in the mail, it fit perfectly and no alterations were needed. Everything just came together. I ended up wearing the headpiece my mother wore when she was a bride.” The Favorite Detail: “The simplicity of it all.
We kept things very minimal and casual. There was very little planning and everything just sort of fell together in the same magical way our relationship did.”
The Celebration Dinner: The newlywed’s celebrated with
immediate family at Bella’s Bistro in Saratoga. Bella’s is one of Noah and Corrie’s favorite places to eat, with it’s incredible food, intimate atmosphere and great staff, it was an easy choice!

makes around 25 teaspoon sized truffles 8 ounces good tasting dark chocolate, no darker than 55% 4 ounces full fat coconut milk, canned cocoa powder for dusting Chop the chocolate and place in a medium size heat proof bowl. Bring the coconut milk to a simmer on the stove, and pour over the dark chocolate in the bowl. Whisk slowly to combine and melt the chocolate until smooth. Let cool, uncovered, on the counter for 1 hour. Cover with plastic wrap and place in the refrigerator to chill for another 2 hours. Remove from the refrigerator, once chilled, and scoop out a teaspoon’s worth of chocolate truffle. Roll into balls with your hands and place on a plate. Once they have all been rolled, dust with (or roll them in) cocoa powder. Store in an airtight container, either at room temperature or in the refrigerator.
butternut risotto with asparagus & toasted pine nuts makes 2 servings
risotto 1 tbsp olive oil 1/2 yellow onion, finely chopped 3/4 butternut squash puree 2 cups low sodium vegetable broth 1/2 cup brown rice, short grain salt (to taste) to serve 1 bunch fresh asparagus nob of refined coconut oil 1 clove of garlic salt & pepper 2 tablespoons raw pine nuts sage oil 1 tbsp fresh sage, minced 1 tbsp olive oil
Combine the minced sage and olive oil in a small dish and set aside. Begin by heating a pot on the stove to medium/low heat. Add the olive oil and onion, and sauté until the onion is cooked (about 3 minutes). Add the squash puree, vegetable broth, brown rice, and 1/4 teaspoon of salt. Bring to a boil, reduce to a simmer, and cover. Let cook for 20 minutes (this helps the rice plump up). Uncover after 20 minutes, and let the pot continue to simmer (increasing the heat if needed) until the liquid has reduced - stirring every 5 minutes - until the risotto is nice and thick (about another 20 minutes). Taste and add additional salt towards the end of the cooking if needed.
While the risotto is cooking, heat a dry skillet over medium/low and toast the pine nuts. It should only take a minute or two, and make sure to shake the pan to flip the nuts over during the toasting so that they don’t burn. Once toasted, transfer the nuts to a small plate on the counter and set aside. Place the skillet back on the stove over medium/low, and add a nob of refined coconut oil. Add the fresh asparagus to the pan and toss to coat in the oil. Mince the clove of garlic and sprinkle over the asparagus, along with a few good pinches of salt and pepper. Toss the asparagus with tongs a few times throughout cooking, until tender enough to pierce with a fork (about 5 minutes). Divide the risotto between two plates, top with the sautéed asparagus and toasted pine nuts. Drizzle on a bit of the sage oil, and serve with a glass of Chardonnay.
