Who is Giulia Vicini, the nineteen- year-old winner of the "sustainability" award at the Pizza World Championship?

In the thirtieth anniversary edition of the World Pizza Championship, there was a lot of talk about sustainability and sustainable pizza: this is a recurring theme which might seem to be trendy, or a question of marketing but which could open up a "necessary" path in this sector. We have seen the seed sprout with the winner of the “Pizza of Change” Special Prize: Giulia Vicini, 19 years old, attends a Specialized Technical Institute of Chemistry by day with the aim of taking a degree in chemical engineering and from 5 pm in the evening she puts her long blond hair in a hat and works on doughs and toppings in her restaurant "Giuly Pizza" in Castelli Calepio (Bg). When she is not studying or working, she runs off to Trentino to work as a volunteer on an organic farm.
