Sleep Evangelist, Arianna Huffington

hether New Yorkers want to admit it or not, we are in the middle of a global sleep crisis according to Arianna Huffington in her latest book The Sleep Revolution published by Penguin Random House. I am sure many of us would agree that we could use a little extra shuteye, but honestly who has the luxury to sleep when there is so much to do and so little time? Take Mrs. Huffington for example, a renowned author, Co-Founder and Editor-in-Chief of the Huffington Post, named by Forbes Magazine

as the 12th Most Influential Woman in Media and the 52nd Most Powerful Woman in the World, surely she didn’t accomplish these feats by sleeping on the job? You are right, she did not. However, in 2007 she was so exhausted and sleep deprived that she fell unconscious in her home office breaking her cheek bone and cutting her eye. This was her wakeup call, and in fact the inspiration for both her book and her new outlook on life as a selfproclaimed sleep evangelist. We had the privilege of interviewing Arianna and learning about her childhood, her successes and failures, and of course what advice she has for those of us who live in the city that never sleeps!

Tell us how you began early in your career. What motivated you to succeed,and were there any pivotal turning points that led you to where you are today? First, my mother. She did everything to make sure I was educated. She sold everything she had to provide for us: I remember her selling her last pair of little gold earrings to get me through school. And when I happened to see a photo of Cambridge University in a magazine, and for some reason felt that I wanted to go there, everybody laughed at me - except my mother. Once I was at Cambridge, joining the Cambridge Union debate society helped me overcome a lifelong fear of public speaking, not to mention my crushing insecurity about my thick Greek accent for which I was teased mercilessly. Becoming president was the start of many things - including my first book, as it was a Union debate that brought me to the attention of Reg Davis-Poynter, the British publisher who offered me a contract and set me on the path to becoming a writer. That led to another key turning point in my life. My second book was rejected by 37 publishers. I remember running out of money and walking, depressed, down St James Street in London and seeing a Barclays Bank. I walked in and I asked to speak to the manager and asked him for a loan. Even though I did not have any assets, the banker – whose name was Ian Bell gave me a loan. It changed my life, because it meant I could keep things together for a further 13 rejections until I finally got an acceptance. So, very often, the difference between success and failure is perseverance. It is a case of how long we can keep going until success happens and getting up one more time than we fall down. You have authored 15 books, which is your favorite and why? As of right now, my favorite is the latest book, The Sleep Revolution, because we are living through such an incredible time - a golden age of sleep science that is revealing all the ways in which sleep plays a vital role in our decision making, emotional intelligence, cognitive function, and creativity. What part of the creative process that is writing is your favorite? One of my favorite parts happens long before I begin writing – you might call it the gathering materials stage. For example, as I went around the world talking about my previous book Thrive, I found that the subject people wanted to discuss most—by far—was sleep: how difficult it is to get enough, how there are simply not enough hours in the day, how tough it is to wind down, how hard it is to fall asleep and stay asleep, even when we set aside enough time. And since my own transformation into a sleep evangelist, everywhere I go, someone will pull me aside and, often in hushed and conspiratorial tones, confess, “I am just not getting enough sleep. I’m exhausted all the time.” So I decided I wanted to take a fuller look at the subject because it is clear that if we are going to truly thrive, we must begin with sleep. What effect, if any, do you feel that social media has had on journalism as an art form? Has it tarnished it by allowing anyone with internet access to post something, or has it provided an evolved canvas for creativity? Social media, and digital media more broadly, has had a

transformative effect on journalism and on our ability to make connections on a global level. It has absolutely provided a new canvas for creativity, and allowed voices that once would’ve gone unheard have a chance to join the conversation, and maybe even a chance to change the world. And what we have seen is a convergence. The never-very-useful division between “old media” and “new media” has become increasingly blurred, as traditional outlets adopt the tools of digital journalists - including speed, transparency and engagement while new media adopt the best practices of traditional journalism, including accuracy and fairness. What was your inspiration for your latest book The Sleep Revolution? It started with my own painful wakeup call. On the morning of April 6, 2007, I was lying on the floor of my home office in a pool of blood. On my way down, my head had hit the corner of my desk, cutting my eye and breaking my cheekbone. I had collapsed from exhaustion and lack of sleep. In the wake of my collapse, I found myself going from doctor to doctor, from brain MRI to CAT scan to echocardiogram, to find out if there was any underlying medical problem beyond exhaustion. There was not, but doctors’ waiting rooms, it turns out, were good places for me to ask myself a lot of questions about the kind of life I was living. Explain what you mean by “worldwide sleep crisis” and the theory behind it. According to a recent Gallup poll, 40 percent of all American adults are sleep-deprived, clocking significantly less than the recommended minimum seven hours of sleep per night. The crisis is global. In 2011, 32 percent of people surveyed in the United Kingdom said they had averaged less than seven hours of sleep a night in the previous six months. By 2014 that number had rocketed up to 60 percent. In 2013, more than a third of Germans and two-thirds of Japanese surveyed said they do not get sufficient sleep on weeknights. In fact, the Japanese have a term, inemuri, which roughly translates as “to be asleep while present”—that is, to be so exhausted that you fall asleep in the middle of a meeting. This has been praised as a sign of dedication and hard work—but it is actually another symptom of the sleep crisis we are finally confronting. Can you share any secrets for those who suffer from insomnia or the like? When I am really having trouble sleeping, or wake up with thoughts crowding my mind, I’ve found meditation to be a great remedy. And if you don’t meditate, there are many great guided meditation recordings, as well as some soothing music and other relaxing audio guides. Those who want to explore herbal sleep aids—and especially those who want to wean themselves off sleeping pills—have many options to consider. Valerian root, for example, is a natural sedative whose use dates back to ancient Greece, where Hippocrates prescribed it in the fourth century BC. In recent years, its effectiveness has been supported by research. The lesson here is that it is important to experiment. And the mere fact that you’re taking any deliberate action to improve your sleep means that you likely will. JUNE 2016 | NEW YORK LIFESTYLES MAGAZINE | 17


What advice would you give to people who live in “the city that never sleeps”? Slogans like that just feed into our collective delusion that burnout is the necessary price we must pay for accomplishment and success. Recent scientific findings make it clear that this couldn’t be less true. So my advice is to shake ourselves out of this delusion by making sleep a priority. We need to reclaim the special realm of sleep because of the unique way it allows us to connect with a deeper part of ourselves. Many New Yorkers put sleep on the back burner, some even reference the saying “I’ll sleep when I die” but what are the effects of sleep deprivation on our society and culture as a whole? The bottom line? When we are not well rested, we are not as healthy. Lack of sleep is often the culprit behind anxiety, stress, depression, and a myriad of health problems. It is linked with increased risks of diabetes, heart attack, stroke, cancer, obesity, and Alzheimer’s disease. And as we go deeper under the hood, sleep becomes even more vital, playing a major role in brain maintenance. While we sleep, the brain is able to get rid of toxins, including proteins that are associated with Alzheimer’s disease. Which is to say, if we do not allow the brain time to do this crucial work, the cost can be high.

in fact one of her favorite sayings, which embodied the philosophy of her life, was “Don’t miss the moment.” While I had the sense every time I looked at my watch that it was later than I thought, she lived in a world where there were no impersonal encounters, where a trip to the farmer’s market happily filled half a day, where there was always enough time for wonder at how lovely the rosemary looked next to the lavender. In fact, going through the market with her was like walking through the Louvre with an art connoisseur except that you could touch and smell those still life pictures. Tell us what your typical day is like outside of work. My day really begins the night before, with a good night’s sleep – which, for me, means 7 to 8 hours. However, a big part of my morning ritual is about what I do not do: when I wake up, I don’t start the day by looking at my smartphone. Instead, once I am awake, I take a minute to breathe deeply, be grateful, and set my intention for the day. At the end of the day, I treat my transition to sleep as a sacrosanct ritual. Before bed, I take a hot bath with epsom salts and a candle flickering nearby. Sometimes I have a cup of chamomile or lavender tea if I want something warm and comforting before going to bed. And I have a specific time at night when I regularly turn off my devices—and gently escort them out of my bedroom.

Many people consider you their role model, and for good reason. Who is/was your role model and why?

What is your favorite part of NYC, what do you feel separates it from other cities?

My mother. She had a gift for finding beauty in the moment. And

I love that it is one of the world’s great walking cities. One of my

favorite phrases is solvitur ambulando—“It is solved by walking.” It refers to the fourth-century-BC Greek philosopher Diogenes’s response to the question of whether motion is real. WATER PARKS The two water parks are Raging Waters and Ocean Oasis. Raging Waters is the larger of the two parks and is mostly focused on children’s activities. It is managed by Will B. Morey. Ocean Oasis is a water park and beach club. It has a cozier more intimate atmosphere. Raging Waters Raging Waters will keep the kids active all day with so many opportunities for fun and memories that will keep you coming back every year. There are two kids play areas including KidTastrophe and Shipwreck Shoals. The three level activity area boasts fun for the whole family with cargo nets, climbing ropes, water guns, water sprays and slides in these interactive children’s play areas. The River Adventure is an over 1,000 foot tube ride down a river ride with waterfalls, seating alcoves around every twist and turn and they even serve root beer floats at the float up bar named Dee’s Dock. One feature that a parent will enjoy is that all rides are rated like ski slopes with green dots (easy), blue square (moderate), and black diamonds (expert). Since the Morey family makes “Safety 1st” the utmost mantra these ratings translate to: steady cruising and little spash (green dot), to a little more speed and a little more white water (blue dot), to hold on we’re going torpedo speed down the fastest water slide there is and making the biggest splash we can!!!! Black diamonds if you dare! There are a number of additional rides too. The Speed Slides are 40 feet of high-speed, twisting double dipped slides. The Fountain Pool is a sit and relax pool with bubbles and geysers. There are also serpentine slides, rocket raft run rides, and

don’t forget the Sky Pond Journey where riders slide in tubes into four different elevated pools as they journey to the final SPLASH! Ocean Oasis and Beach Club Ocean Oasis and Beach Club is the more intimate of the two water parks because it has private cabanas that are set apart from waterslides and play areas. Ocean Oasis features a Cliff Dive slide where you drop 5 stories in 3 seconds on a speed body slide. Wipeout is a six lane racer slide where you can go head to head against family down the slopes to a wet finish. Shotgun Falls is a two flume body slide that drops you 6 feet into a 9 foot deep pool filled with 75,000 gallons of water. On Sidewinders you ride head first on a mat and drop 40 feet on two high speed twisted double dipped slides. Ocean Oasis also has an interactive children’s play area named Bonsai Beach which is loaded with water jets, climbing ropes and slides for the little ones so that they will keep occupied and smiling all day long. Water Lilies Swim Up Bar, The Puddle, Endless River and a 100,000 gallon activity pool filled with many interactive activities are more relaxing rides. RESTAURANTS Morey’s has three restaurants. Walter “Wally” Jurusz is Morey’s Piers executive chef and oversees Jumbo’s Restaurant, Breakfast in the Sky, catering and many of the concession stands located throughout the piers. Betsy Garr is the Surfside Pier chef and oversees Joe’s Fish Co. and Stubborn Bros. Beach Bar and Grille.


The restaurants on the boardwalk serve everything from fresh seafood caught daily from the Atlantic Ocean to Mexican to California Cuisine. Joe’s Fish Co. is a classic seafood house managed by Jordan Morey serving a variety of oysters, clams, signature crab cakes and grilled local fish. Joe’s Fish Co. recently expanded with a new second floor bar that has fantastic views of the boardwalk. With great seafood and great views it’s a must stop during your relaxing family vacation. If sandwiches are what you are craving then head on over to Stubborn Brothers Beach Bar & Grille managed by Kyle Morey where you can get the traditional roast beef sandwich or turkey club wrap or try something different like their Rivalry Reuben which is made with turkey breast instead of corned beef. Fried Green Tomatoes with sirancha sauce and Cuban Dusted Fried Calamari served with cilantro cream sauce are also unique dishes offered for starters. To experience the flavor and style of both Mexican and Southern California, go to The Taco Joint. They serve up shrimp, fish, pork, chicken and beef tacos and quesadillas, including a variety of fresh salsas and freshly prepared nachos. The Jersey Girl is a must too. Philip and Deborah John have created an all-new warm, casual, hip dining room and bar serving California cuisine using farm-fresh seasonal ingredients. Hot

Cheddar Crab Dip or the Eggplant Crepes made with ricotta, spinach, fresh basil, roasted garlic, and mozzarella are great for starters. The Grilled Mojito Hanger steak with latin pesto or the Seared Shrimp and Scallop Tomato Spinach Risotto are truly “Chef Selections” on their menu. This is great for those who want something a little different from all the other great food offered on Morey’s Piers. There are also 18 unique concession stands providing plenty of variety to satisfy many palates. What would a boardwalk be without the classics like Curley’s famous fries with a lemon shake up. Curley’s has been making their hand cut fries on the boardwalk since 1974. They peel ‘em, slice ‘em, and fry ‘em right in front of you and what better to wash it down than with a nice lemonade shake up made with freshly squeezed lemons. If fries are just a side for you then pair them up with a real Philly cheese steak sandwich at Jake’s Steaks located right next door. Thinly sliced rib eye with Philly rolls are brought in fresh daily. You can also go to The ALOHA Smoothie Company, Waffles and Ice Cream, and Mama’s Kitchen serving up the classic hot dogs, corn dogs, cotton candy, and pretzels. The kids will never get tired of the same old thing and there is enough range for even the most sophisticated palette. Singer Island: Your Ticket to Paradise By Karen Feld

esort islands have an enticing lure, especially if it’s a sun-drenched peaceful destination and just a two-hour getaway from bustling New York City. Singer Island is just the place to unwind and relax. Located across the inlet at the north end of Palm Beach is Singer Island, rimmed with motels and high-rises. At the north end is Palm Beach Marriott Singer Island Beach Resort & Spa. You just may have found your ticket to paradise. The 21-story condo-style property is the only all-suite beachfront hotel in Palm Beach nestled on a sandy Riviera Beach between the Atlantic Ocean and the Intracoastal Waterway. Nearby is the protected John D. MacArthur State Park, a favorite place to spot sea turtles—loggerheads, greens, and leatherbacks. The resort is far enough away from the pretension of Palm Beach, yet near enough (only 20 minutes by car) should you want to shop or dine on famed Worth Avenue.

A typical day on the resort begins with a morning coffee on the balcony overlooking one of the area’s largest beaches. Then, it’s time for yoga. My instructor, Elsa, greeted me for a gentle morning class on the sandy beach; it was a spiritual way to start the day. Afterward, on a long relaxing stroll, I passed kids searching for unique shells as I walked the long stretch of one of Florida’s best sandy beaches feeling both the warm rays of the sun on my shoulders and a gentle cool breeze on my face. I soon settled into a comfy lounge chair under an over-sized sturdy umbrella to block the midday rays.

TENNESSEE TOWN Whether you’re a little bit country or more rock and roll, you’ll find plenty to do in Nashville. This country music center boasts great nightlife, way beyond just the kind played by Garth Brooks and Dolly Parton. Located in the heart of Tennessee’s rolling hills, the city also offers a wealth of fun that you can enjoy with or without cowboy boots. Be sure to see a show at the Grand Ole Opry and for historians, spend a few hours and see a Nashville of yesteryear at Belle Meade Plantation. Nearby you’ll thrill at seeing the historic Ryman Auditorium or perhaps visit the Hermitage, home of President Andrew Jackson. The Great Smoky Mountains National Park in the Southern Appalachians beckons year-round. The 800 square miles of mountains are named for the bluish veil they almost always wear, which the Indians once called “smoke.” (We now know that this mist is formed by a mixture of water vapor and oils secreted by plants.) Spread across the southwestern corner of North Carolina and the southeastern tip of Tennessee, the Smokies offer miles of quiet beauty; virgin forest; ancient, rounded mountains; winding drives with inspiring views; marked trails for hiking and horseback riding, many of which can be covered easily in a day or less; streams for fishing; and lush vegetation. Where to Stay The best way to take in the mist-shrouded panorama might be from a rocking chair on the terrace of Blackberry Farm (blackberryfarm.com), a 4,200-acre estate located in the town of Walland. This hotel evokes an English manor house, with guestrooms divided among a colony of cottages. MASSACHUSETTS TOWN Boston’s dense layering of history, culture, and romance can be best appreciated by walking. Start exploring this beautiful city by following the Freedom Trail—marked with a red line along the old sidewalks of the city—and touring major sites like the Paul Revere Home and Old North Church. Where to Stay Make your reservation for one of Fairmont Copley Plaza’s (fairmont. com) beautiful suites. They offer guests stunning views of the square. CALIFORNIA TOWN Welcome to San Francisco where rolling hills (more than 40) challenge cars and offer walkers a brisk workout within just a few blocks. But take heart! If you don’t feel like exercising, there are still plenty of ways to explore this delightful city. A fun way: Step aboard the cable car and zigzag through the city’s nooks and crannies. The city occupies a hilly peninsula of 47 square miles. On its western border is the Pacific Ocean; to the east is huge, beautiful San Francisco Bay. The waters of the bay join the Pacific through the narrow northern strait that the Golden Gate Bridge spans so majestically. Where to Stay Built in 1904, the Westin St. Francis (westinstfrancis.com) was barely established as the most sumptuous hotel in town before it was ravaged by fire following the 1906 earthquake. The grande-dame hotel reopened in 1907 with the addition of a luxurious Italian Renaissance–style residence designed to attract loyal clients from among the world’s rich and powerful. Rum’s The Word By Clint Brownfield cotland brought us single malt, Russia pioneered Vodka, Mexico gave us Tequila; France, Cognac & Armagnac. As for the glorious Caribbean, its shining star is most certainly Rum. Born in the New World of the sugar cane that Columbus brought over on his second voyage, rum is a drink inextricably linked with this region. Once the mainstay of island economy throughout the area, rum prevails as nearly everyone’s drink of choice, especially when visiting the Caribbean—let’s just call it “drinking locally.” It’s available in extremely high proofs, and when aged for decades, it goes down as smooth as silk. No matter which island you visit, you’ll find dozens of tiny, ramshackle wooden sheds where locals gather to enjoy some gossip and good cheer.

The most classic of the frozen concoctions is the Pina Colada, which incidentally is the official beverage of Puerto Rico. (For the uninitiated, pina colada pina translates as pineapple, and colada means strained, or creamed.) Virtually 75 percent of the rum consumed in the U.S. is produced in Puerto Rico with Bacardi leading the field. To get a real sense as to how rum is produced be sure to visit Casa Bacardi (casabarcadi.org) while you’re in San Juan, where you will explore the past and get a taste of current rums via tours offered daily. The Joy of World-Class Cuisine By Wendy Knecht

s I pack my travel bag, my mind recollects all the good times that have included plenty of fine dining and tasting of new cuisines for the very first time. In my many years of traveling, both as a flight attendant and a passenger, I have found that eating my way around the world is not only a learning experience but also one of the major highlights of traveling. Nothing beats eating foods where they originate and learning about the specialties of any locale. Food is an integral part of the local heritage, and experiencing the regional foods and drinks has enriched my travel experience immensely, and I’m certain it will yours.

People are proud of their culture, and food is culture, so trying the local fare is mandatory. I really can’t think of any place on earth that I have been where people aren’t proud of their local food heritage. Cincinnatian’s pride themselves on their Chili; 3-way, 4-way or 5-way… and I have even had it 7-ways! A trip to Texas without eating barbecue? Unthinkable! Kobe beef in Japan, New Zealand mussels, Hungarian goulash, the list goes on.

Sharing a meal is what makes life pleasurable. What could be more fun than sharing a Caprese salad in Capri or paella in Spain? You might discover your favorite food along the way. I discovered Pavlova working my way to Sydney as a Pan Am flight attendant, where it was our premier First Class dessert. Pavlova is a creamy, marshmallowy, crunchy-crusted, fruit-laden delight—and I still dream about and crave it to this day. JUNE 2016 | NEW YORK LIFESTYLES MAGAZINE | 41


meat. You might want to be a little careful in food stalls in places like India or China, but others can be a delicious delight. Check out any French fry or waffle stall in Belgium and you’ll soon be going back for more. Don’t forget the local drinks. You must have the original Irish Coffee at the Buena Vista Café at Fisherman’s Wharf in San Francisco and the original Singapore Sling at the Raffle’s Hotel bar in Singapore. These places might be touristy, but they are institutions and you’ve got to go. Brazil’s national cocktail is the Caipirinha, and you wouldn’t want to miss drinking one there.

You may be surprised at how we’ve made our own version of certain dishes. Our take can be a lot different than the way it was originally intended. You may be happy or disappointed to discover that pizza and pasta in Italy are not sauce-laden like their American counterparts. Though I must say that I have never eaten anything in Italy that was a disappointment. In all honesty, new foodie experiences may not end up to be entirely pleasant, but they are always an adventure. I have had some scary dining experiences, such as choking on a fish bone at an upscale karaoke bar in Seoul, eating grease-laden potato pancakes at a long-lost relative’s home in Prague, and trying to consume an entirely unidentifiable plate of “something” in Bhutan (they swore it was vegetarian). Speaking of “vegetarian”; when the thought of blood sausage makes your stomach turn, this can be the best tack to take. If you’re truly adamant about not trying something new, professing strict vegetarianism can get you out of some hot water. I once had to employ this in the hinterlands of Vietnam. Adventure is one thing, but I just couldn’t bear the thought of what could be in that mystery 42 | OUR CITY, YOUR LIFE | JUNE 2016

As an international flight attendant, I would sometimes pick my flights for the onboard food, which Pan Am always matched with the country traveled to. The best gravlax ever was on the Oslo flight and the creamiest, best cheeses were served in First Class from Paris. To this day, I can’t resist cambozola cheese, the most mouthwatering mix of gorgonzola and camembert you ever tasted. I loved to work first class to ensure there would be enough caviar left over for the crew. Oh, the joys of world class food. Gourmet food browsing in local markets can not only be the best entertainment, but you could stumble upon the best meal or treat of your life. I have always considered a visit to a local grocery store a mandatory destination on any trip. Checking out the aisles is an education in and of itself and a most interesting one at that. So, eat your way around the world. You don’t want to miss out on any culinary pleasure. At the sales office of 50 Clinton Street I saw the rendering model and all the details of the fixtures that are shaping 50 Clinton Street to be a true value gem. In the master bath next to the marble soaking tub there is another custom niche. It runs along almost the whole length of the tub, draws your eye to the tub, and compliments the luxury of the tub. Both of these bathrooms are very balanced as can be seen from the pictures. The mix of materials and colors, from herringbone white marble, brass, bronze, patterned floor tiles, and vertical subway tiles really draw your eye to the space as a whole creating the visual ‘balance’ in these beautifully designed bathrooms. These custom pieces create the uniqueness that you won’t see in any other bathroom. In the master bathroom there are custom vintage-style beveled vanity mirrors. The bevel of these vanity mirrors draw your eyes downward and outward helping to visually see the balance of the whole bathroom design. In the second bathroom there is a custom bronzed metal vanity. The vanity itself looks beautiful from the picture. The two niches in the vanity are great design details. However, the vanity design is a lesson in balance - consider how the wings of the hot and cold handles are perfectly situated to draw down from the edges of the mirror on a line. And notice the center points of the sconces are perfectly in line with the bronze hooks below which draw down to the center of the square niches in the vanity both left and right. The curved faucet balances the exposed drain underneath. And installing the subway tiling vertically to balance with the high vanity mirror is also a nice detail. In both bathrooms the mirrors are medicine closets with lots of shelving. Kudos to Paris Forino, your “understated glamour” will not go unnoticed (or understated). 48 | OUR CITY, YOUR LIFE | JUNE 2016


A special feature that makes this building a gem in my opinion are the bi-level backyards that are available with the duplexes. One, there are 1,300 square foot backyard spaces available in the duplex models which is bigger than most apartments! The backyard is a duplex so you can have your BBQ on the lower level for more privacy and have a garden or lawn on the upper level. Also there is access to both levels of the backyard from either condo floor with a hallway leading from your second floor to say to the furthest part of your duplex backyard. This shows great thought in the design of the outdoor space. It is private with pictures showing a fenced in terrace garden and you do not have a building butting up against your backyard line. No noisy neighbors are in the immediate area making for a more peaceful outdoor space. All of these points are why I think these duplexes are real gems. If you miss your chance at owning one of the three available duplexes you can still enjoy the rooftop. 360 degree views of the Manhattan skyline are available on a landscaped deck. The penthouses also have private rooftop terraces and secondary terraces adjacent to master suites and living areas. 50 Clinton Street is shaping up to be a great building at the heart of the LES in Manhattan with a real sense of community. Rizzo’s Pizza tastes excellent and the staff really make you feel at home. The Clinton St. Baking Company recently expanded to make more room for their amazing brunch experience. In addition, one of a kind stores like Blue Bayer and Koneko make living on the LES special and unique. The price points are in the current sweet spot of Manhattan real estate and the fine details and backyards make 50 Clinton Street a value gem in my opinion. Paulina Porizkova: Aging with Beauty

or two decades Paulina Porizkova was the gorgeous supermodel who effortlessly went from the runways of Paris to the pages of Vogue. She was featured on the cover of Sports Illustrated’s swimsuit issue for two consecutive years and was twice named one of People Magazine’s 50 most beautiful people in the world. Born in the Czech Republic, she began her modeling career at the age of 18. Now 51, Paulina is aging gracefully. Her secret? Part nature, part nurture and an extra dose of “good attitude”. Like everyone else, she looks in the mirror and has to accept that growing older may mean growing wiser but it also means trying a little harder to look and feel great. Her mindset towards aging is practical and surprisingly for someone so stunning, a little self-depreciating. Married for 27 years to musician Rick Ocasek, she’s also mom to two sons, Jonathan and Oliver. Never one to rely solely on her looks, she easily transitioned from model to actress and author. During my recent interview with Paulina she was funny and grounded. I had so many questions, for example I wondered... “When your entire life you’ve been the most beautiful woman in the room how on Earth do you grow old?” in addition to is it really possible to age and be OK with it? Q: Do you feel pressure to age gracefully? A: “Of course. I feel pressure, not to age. Having made my living as a model, people were usually more interested in what I looked like, than what I had to say. There’s nothing but pressure to look the way I looked 30 years ago. Beautiful people are not supposed to age, they’re not supposed to be human.” Q: What were your first signs of aging and how did it make you feel? A: “I remember it exactly. I was on my way out of modeling, and was shooting a movie in Australia. I had just turned 36 and I looked in the mirror and thought, ‘what, wait a minute, who’s face is this?’ But it didn’t make me depressed. I was full of hope for what the future held, but I did think, ‘Oh my God, I’m getting older.’ Q: What are your biggest beauty concerns? A: “I just turned 51 and I keep feeling like I’m melting. I feel like a wax candle, everything is dripping down and it’s really disconcerting. It’s like a magic trick or a joke, but it’s not very funny. I think I want to go to space now and hang out in a no-gravity zone. Q: What do you do to combat the signs of aging? A: “To be absolutely honest, I don’t think there’s really anything that combats aging. How you take your aging is in your head. I don’t like botox and I don’t think it looks good. I would rather get over myself. But I understand the desire to look 30 forever. I’d really like to look 30 for the rest of my life but I don’t want to spend the time and money. I don’t want to chase my youth, but I’m not willing to gain fifty pounds and let my hair go gray either. I do like to look pretty but I also want to look age appropriate. I want to like myself enough so that I can age. Q. Are there any beauty products that you swear by? A: “I use exclusively RXGenesys, which I love. I love all of their products. It works better than anything I’ve ever used. I was lucky, they came to me and asked me to be a spokesperson. So I went online to check out the science behind it. For me to stick with something for a year and a half is huge and I’ve used nothing ever since. Now I give RXGensys to all my family and friends and they’re hooked too. I never travel without it.

Q: If you were stranded on a desert island and only had one beauty product, what would you want it to be? A: If I couldn’t have my RXGenesys, I’d want diaper Cream. A tube of A & D Ointment. You can use that stuff for everything. On your lips, it’s a Moisturizer. If you don’t have shaving cream, you can shave your legs with it. It keeps the ends of your hair, soft and frizz free. It’s really an all purpose product. Q: What are your thoughts on plastic surgery to look younger? A: “I think it’s sad, when people have too much plastic surgery. It’s horrible to see faces that are unable to smile. Too much plastic surgery makes people look almost like robots. Women over 40 or 45 don’t have role models to look up to and that’s not good. Rich people can afford to buy youth, a strange kind of looking youth; but at what cost? Q: Do you think Americans are obsessed with youth? A: Yes. In America we’re not celebrating aging and that’s not cool. It’s sort of an American thing to celebrate youth and beauty like it’s an accomplishment. Living a full, long life is an accomplishment. I just joined Instagram and I don’t like it. It just makes me worry more about what I look like. When I’m lit right and I have sunglasses on and I’m lying down, I look great. Q: Do you think there’s anything positive about growing old? A: I like myself so much better now that I’m older. I’m smarter, funnier, kinder and more patient. Now that I’m aging, I get to take pleasure in the things that passed me by before. Q: Do you have any advice for people who want to look great as they get older? A: Yes. Don’t over think it. Be the best version of you, that you can be. Don’t get consumed with getting older. If you’re freaking out about aging, then you’re freaking out about the wrong thing and your probably missing out on what’s great right now. Live in the moment and give yourself permission to age. •

Draft to Design: The Workspace of the Future By Anthony Rapacciuolo

New York Lifestyles Magazine had the pleasure of speaking with Mr. Moudis about his journey driven by passion and fueled by client satisfaction that lead him to opening a firm that is currently ranked top ten in the nation and just over a quarter of a century old.

In high school my guidance counselor suggested I take a mechanical drawing class which is really the beginning of architecture. I almost immediately fell in love with it and realized that I wanted to be an architect. There’s a lot that goes into the process, but first and foremost you need to understand the client, their business and their needs. Before we even put pencil to paper, we make sure we understand all of their requirements, and we make sure that they understand how the workplace has evolved over time to where it is today. We conduct an analysis of the space the client selects to make sure it lays out well, and guide them through technical issues such as electricity and the like. Then when all that’s been decided we’re really able to discuss the vision and branding of the space. You cannot create something for someone unless you truly know them, and once our design team is confidant they understand the vision, that’s when we put pencil to paper and begin to create. At the end of the day, there’s nothing more satisfying than pleasing the client when the project is finished.

Tell us how you got started and describe the creative process of architecture?

How has the way of doing business shifted as it relates to office space?

t a young age, native New Yorker Ted Moudis not only learned the importance of hard work, but also that the client is the most important component of any project or transaction. In fact, this ideology carried with him throughout his life and became the mantra of his architectural firm, Ted Moudis Associates, which has office locations in Chicago, London and of course New York. But, as Ted will tell you, it was his humble beginnings working at his Father’s diner each morning, then as a draftsman in the afternoon, and ending his days by taking college classes at night, that paved the way to the success he enjoys today.

Everyone today is vying for the same talent, and the days of the older more traditional looking office environments are gone. A lot of the new projects that we’re working on focus on an open floor plan with few if any offices, and even those will now be created with glass fronts. Also the days of having cubicles with high partitions are gone, this way when you’re standing or walking around you can see the entire operation. There’s more focus on allowing as much natural light as possible into the space, and making it more collaborative. How do you think this new way of arranging the space fosters productivity? In the past, people thought if they worked hard they would get a private office and then if they worked even harder they’d eventually get the corner office. Now instead of being behind a closed door, your part of team you’re talking and sharing ideas. There isn’t “idle space” anymore as there was in the past like a pantry where someone could get coffee or water, now it’s usable space that’s out in the open. There are still specific jobs and organizations that need to work behind closed doors, but we are seeing the vast majority of our clients focusing on collaborative and team based configurations for their office. Discuss your favorite project over the years? That’s almost like asking who’s your favorite child! I love all the

projects we’ve worked on in the past because they all have a story and background behind them. Each one helped me to get my firm to where it is today. I worked for my Father in his diner, so I didn’t inherit a business, I didn’t buy a business; I did it the hard way on my own and each client has played a role in that. There are a lot of other firms, some bigger than us, and we are ranked in the top ten in the county for office design. I’m excited to come into work every day, and not that many people can say that which is why I don’t favor any particular project over another. Tell us a little about your life outside the office? I’m a New Yorker born and raised, and I love the energy; there’s nothing like the New York vibe, and I’d have to say that restaurants are my hobby. I do a lot of entertaining and meetings with clients and I always look forward to trying new restaurants. Talk about what you see as being the trend over the next 5 years. The workforce is changing, and something interesting we’re seeing is a transition toward unassigned seating. The desk is your desk for a specific time, but then you move to where your team is. An unoccupied desk is wasted real estate, so unassigned seating allows more flexibility and collaboration. As far as forecasting the future, all I can say is there’s no going back. •

Myth or Fact? Six Lessons to Literally Save Your Skin this Summer By Dr. Doris Day ummer is here and with it comes longer days of sunlight with more time for outdoor activities and weekends at the beach. This also means more exposure to the sun and the potential for sunburns and damage to your skin. We know the effects are cumulative with every exposure building and it is also a fact that enough exposure to ultraviolet radiation (UVR) rays will ultimately lead to premature aging and potentially skin cancer. Here is your chance to check how skin-savvy you are. Test your knowledge with the six most common questions I get asked concerning summer skin: 1. Myth or Fact: A base tan will protect your skin from sunburn? Myth: The assumption that a tan offers significant protection against sunburn is false. You first have to damage your skin to acquire a tan, which obviously defeats the whole “protective” purpose of tanning. A tan is a biological signal by the skin that DNA damage has occurred.

There is no such thing as a “safe” or “healthy” tan. Since sunburns are also associated with higher risks of skin cancer, especially the deadliest form of skin cancer, melanoma, it’s very important to avoid both suntans and sunburns. 2. Myth or Fact: You can only get a sunburn on a sunny day? Myth: Even on overcast days, 70-80 percent of the ultraviolet rays travel through clouds and they can cause surprisingly bad burns. In fact, I often see the worst cases of sunburn on cloudy days. In addition, sunlight reflects off snow, ice, sand and water, intensifying UVR effects by up to 80 percent. I recommend a sunscreen of Sun Protection Factor ( or ‘SPF’) of 30 or higher every day in addition to being sun smart. This means wearing sun protective clothing, UV blocking sunglasses, a broad rimmed hat and seeking the shade and avoiding midday sun when possible – even on a cloudy day, even if you are not at the beach. 3. Myth or Fact: Only fair-skinned people get skin cancer? Myth: While fair-skinned people are at a higher risk, even those


with skin of color are susceptible to skin damage as well as skin cancer. No matter your skin type, you should use a sunscreen with an SPF of 30 or higher and seek the shade between 10:00AM and 4:00PM.

sun-protective, such clothing must have a UPF higher than 30 and retain its sun-protective qualities after numerous washings and exposure to sunlight.

It is also important to check your skin from head-to-toe each month, paying careful attention to any suspicious growths, and make sure you have an annual skin cancer screening with your dermatologist. Keep an eye out for any suspicious growths; some types of melanoma tend to occur on the palms, soles of the feet and mucous membranes, or even the eyes. Show anything new or changing to your dermatologist, they will either reassure you that it’s fine to watch or they will remove it and send it to the lab for further testing. The key for any cancer is early diagnosis and for most skin cancers, even malignant melanoma, early diagnosis can have a 98% or higher cure rate.

5. Myth or Fact: UV rays from Tanning beds are more dangerous than those from natural sunlight ?

4. Myth or Fact: Some clothing is more sun-protective than others ? Fact: The weave of a fabric and even the color has a big impact on how much protection it provides against UV rays. A typical white summer cotton T-shirt offers an Ultraviolet Protection Factor (or ‘UPF’) of 5 to 9, but its UPF decreases to only 3 or 4 when the fabric gets wet, therefore allowing considerable sun penetration. Choosing a fabric with a tighter weave that will allow less UV to come in contact with the skin is of the utmost importance. You can tell if a fabric is woven tightly by using the “hole effect”: hold a particular fabric up to a window or light. The less light you can see, the better the protection. When selecting fabric colors, be aware that many dyes absorb some UV penetration. Darker colors, as well as some bright colors such as orange and red, have higher UPF ratings. Pale and pastel colors have lower ratings. A piece of pale yellow cotton fabric typically has a UPF of 5 to 9, while the same fabric dyed black has a UPF of 32. Many manufacturers offer special UV-absorbing clothes, from swimsuits and shirts, to hats and pants. This clothing will usually have a high UPF rating, indicating how much UVR it absorbs. These clothes have special weaves and contain UVR absorbing chemicals such as titanium dioxide. To be considered

Fact: New high-pressure sunlamps emit doses of ultraviolet A (UVA) radiation that can be as much as 12 times that of the sun. In fact, UVA and ultraviolet B (UVB) are proven human carcinogens, according to the U.S. Department of Health and Human Services. Exposure to tanning beds in youth increases melanoma risk by 75 percent and people who use tanning beds are 2.5 times more likely to develop squamous cell carcinoma and 1.5 times more likely to develop basal cell carcinoma. The World Health Organization has recently classified both UVA and UVB as known carcinogens. This means that anyone exposed to these rays for long enough will eventually develop skin cancer. 6. Myth or Fact: You don’t need to wear sunscreen under makeup ? Myth: Anything that has an SPF label is sunscreen, but the trick is you have to use enough of it to get the proper effect of the SPF on the label. Most people do not use enough so it is important to use sunscreen under makeup and to reapply sunscreen every few hours if you’re outdoors. Most women don’t have the time or inclination to wash off their makeup to reapply sunscreen so for this reason I recommend an SPF sunscreen in the form of a powder which can go over makeup to give you the protection you need. Now you are ready to face the summer and keep your skin looking it’s most beautiful best, this summer and for many summers to come. Paleo and the City

or many of us New Yorkers, fitness is a priority. We climb countless subway steps, ride our Citi-bikes, and try to limit our calorie intake. “Jess was a typical New York City girl,” recounts Jordan Brown, CEO of Hu Kitchen, describing his sister’s habits years ago. Jessica Karp, co-founder of the Hu restaurants, added, “I ate 100-calorie packs-- I didn’t care as much about the ingredients. Then when I had my daughter—when she started eating food—I did not want chemicals in her food which in turn forced me to address the question - what am I putting in my body?” Shortly afterwards, Brown, Karp, and Karp’s husband, Jason, teamed up to create Hu Kitchen, one of the few locations in the city that centers around paleo food. The paleo diet aims to mimic the diet our caveman ancestors might have followed. It emphasizes fruits, vegetables and meats while eliminating grains, processed foods, and dairy products. Typically, vegans and those with glutensensitivity can find satisfying food options in paleo establishments. None of Hu Kitchen’s three founders had prior experience of the food industry beforehand. Brown had been working in real estate development. The Karps had a finance background. About six years ago, Brown found himself in a Las Vegas airport looking for a book to read. He found Mark Hyman’s The Ultra Mind 58 | OUR CITY, YOUR LIFE | JUNE 2016

Solution, which introduced him to different concepts such as the relationship between gluten and inflammation. “I’d always thought I was healthy and athletic. I had never really considered the root cause [of our health problems.] I thought I’d try one thing—I’d cut out gluten. Within five to six days, I had reversed a skin condition that had I had seen several doctors for. It was pretty incredible! Just the removal of something for days eliminated something that had been a nuisance in my life for years. That rash disappearing is what opened my eyes.” Several studies have highlighted the benefits of eliminating gluten to those with undiagnosed sensitivity. Many large studies support the health benefits of fruits and vegetables. In mid-May, a study of over 90,000 women suggested apples, bananas, grapes, oranges and kale can protect adolescent girls from developing breast cancer later in life. In the fall of 2015, the World Health Organization warned against the cancer-causing potential of processed meats. A few studies have investigated the paleo diet as a whole. One suggested it might reverse metabolic syndrome and the cardiovascular risks associated with increased belly fat. Others showed that a healthy paleo diet could potentially lower your blood pressure, lower your triglyceride levels, lower your hemoglobin A1c (a measure of your average blood sugar), and facilitate weight loss. Together, these changes would presumably lower your risk of heart disease.

Brown and Jason Karp avidly read books with dietary themes, searching for answers on how to cook better and feel better. “The two of them ambushed me,” Jessica Karp explained. “I said, ‘Give me something I can read on vacation— while I’m on the beach.’” They handed her Michael Pollan’s In Defense of Food. “It changed my world. I really got on board.”

paleo diet does not specifically minimize fat in the diet. Instead, it incorporates fat from natural sources—such as coconut oil—and not from heavily processed seed oils.

Brown added, “We created this restaurant from a place of pure fervor— on a personal level. We really saw results from it-- versus spotted a trend and latched on to it.” The team executed their vision. They used wooden tables and rounded edges to mirror the food concept of food in touch with nature. “We wanted people to feel like they’re a part of it.” The trio regularly changed the menu based on feedback from their loyal customer base. About a year after opening the restaurant, Brown read The Paleo Diet by Loren Cordain. “The idea of not eating grains and not eating dairy was foreign to me, but I decided to try it out. Nothing worked better for me in terms of my energy and mental focus. I worked out the same amount with the same or better results. That really drove home the concept and I became a hardcore paleo.” Hu Kitchen, short for Human Kitchen, has a hot plate section featuring organic chicken, a refrigerated section, and juice and smoothie counter. It features a Mash Bar for snacks. Almond butter often substitutes for dairy except on the coffee lines. Some critics argue that eliminating dairy products could lead to a calcium deficiency. However, paleo followers can substitute salmon, kale, and broccoli-- foods that are rich in calcium. The restaurant developed its own vegan line of chocolate. The

No genetically-modified organisms (GMO) are used as ingredients in any of the foods. The Hu Kitchen founders decided their food would be prepared solely in coconut oil and olive oil. Brown and Karp are focused on honesty and transparency in food preparation. Describing some other vendors who cook with GMO canola oil, Brown explained, “They use a bit of olive oil so they can list the ingredient on the label. But that’s not the same as the cooking oil. Cooking with olive oil is something that’s far more expensive. This is something no one ever talks about in the restaurant industry. It’s not something the masses have asked about.” Karp emphasized, “At the end of the day, we believe in clean and real food. Trust the food. Trust the ingredients. We take a lot of pride in our work, and we will never sacrifice the taste.” Coming full circle, Hyman, who authored the book that motivated Brown, has visited the Hu several times—as have other food luminaries who inspired the founders. t may seem surprising, but one of the most important things you can do to maintain a youthful, glowing appearance is to eat foods that provide your features with optimal nutrition. I often tell friends and clients that you can slather on all the moisturizer you want; over-condition your hair to the point of exhaustion or hide your unsightly nails under layers of polish, but unless your skin, hair, teeth, and nails and every other part of your body are getting the nutrients they need, you are not going to look your best. The foods we eat serve as the nutritional foundation for our features, and our appearance is enhanced or diminished, based on whether we choose to consume or avoid specific nutrients in our diet. Brittle nails? Maybe you’re suffering from an iron deficiency. Dry skin? Perhaps you are not eating enough beauty-enhancing fats. Below are some of the foods you will want to include in your diet for glowing skin, fuller hair, and healthier nails. Since the warmer weather is upon us, I included a Beauty Diet Summer Menu to get you started on the path to feeding your features and looking fantastic!

I cannot forget to tell you about this delicious snack for skin: dark chocolate. The sweet treat contains high levels of cocoa flavanols – these are plant compounds with antioxidant properties, and they have been associated with softer, more hydrated skin according to recent research. If you spend a lot of time in the sun this summer, you will definitely need your SPF. You will also be smart to include spinach and tomatoes in your diet, as well as fruits like watermelon, cantaloupe, and mangoes. These foods contain carotenoids—specific names include beta-carotene, lycopene, and lutein—which may help protect the skin against sunburn. FOR HEALTHY HAIR or FEEDING YOUR HAIR: Many people assume that good hair care starts with shampoo. In fact, beautiful hair starts with what you eat.

FOR GLOWING SKIN or FEEDING YOUR SKIN: When you feed your skin with beauty nutrients, it will give back to you in the form of a glowing complexion for years to come.

Hair is mostly made of protein (in the form of keratin) and your protein intake can have a dramatic effect on the texture and color of your hair. I recommend consuming at least 25% of calories from protein on a daily basis. Lean meats, poultry, fish, eggs, peanut butter, and low-fat dairy (including Greek yogurt, which has more protein than its non-Greek counterpart), are all excellent sources of protein.

To keep skin soft and supple, I recommend consuming beautyenhancing omega-3 fatty acids, found in fatty fish like salmon, trout, and herring, as well as some plant foods like walnuts and flaxseeds, at least three times per week. Omega-3 fats lubricate skin and prevent moisture loss from cells. They also protect against inflammation that can lead to dry scaly skin, redness, and acne.

When it comes to hair health, there are two important minerals that I always recommend for a marvelous mane: iron and zinc. Iron helps red blood cells carry oxygen to the hair follicles, and keeps hair smooth and strong. Even if you are not clinically anemic, you can experience hair loss simply from not getting enough iron in your diet. Lack of iron can also lead to dry, brittle hair.

Lunch Oysters, clams, crabmeat, lean meats, and dark meat poultry are good sources of iron and zinc. Tofu, lentils, and beans are plant sources of these important hair minerals. (Plant foods contain non-heme iron, which is not as well absorbed as the heme iron in animal foods; however, you can enhance your body’s ability to absorb non-heme iron by consuming a small amount of vitamin C-rich orange juice in the same meal). FOR BEAUTIFUL NAILS OR FEEDING YOUR NAILS: Fingernails are a good indicator of your nutritional status, and to have beautiful, healthy nails it’s important to eat a well-balanced diet rich in beauty nutrients. Similar to hair, one of the most important nail-boosting nutrients is protein, found in fish, poultry, cottage cheese, eggs, dairy, and peanut butter. Our nails are made of protein (keratin), so to grow long, strong nails, I recommend consuming a little bit of protein with every meal and snack. This will help you meet your protein goals, and will provide your body with an adequate amount of amino acids for nail growth. B vitamins are also important for nail growth, and the B vitamin biotin has been associated with increased nail strength among individuals with brittle nails. Biotin is found in whole grains, eggs, salmon, and yogurt.

While there is no scientific evidence that calcium intake significantly alters nail quality, those who take calcium supplements sometimes comment that their nails are less brittle or smoother, or that they grow faster, according to an article published in the New England Journal of Medicine. hat is the chance you may be traveling internationally for business or on a vacation and need some medical attention but not know where to go? Often these scenarios arise when we least expect it. There have been developments that can now help potentially answer all these questions. This is the era of “smartcare” and “ubiquitous health” which allows patients to access health care and providers at the touch of a button. The United States has costs of health care that exceeds that of other highincome countries and also spends more public dollars on health care than all but two of the other countries. Fortunately there is a new way to respond to these challenges that can meet the needs of people on the move or with limited access to health care resources. Telehealth or telemedicine is so popular that its utilization will rise from less than 350,000 in 2013 by twenty times to roughly seven million in 2018, according to a report published by IHS Technology. 62 | OUR CITY, YOUR LIFE | JUNE 2016

Telemedicine allows you to bring more convenience and comfort to your lifestyle and can connect you virtually to a health provider when your circumstances do not allow you to go to a facility for your care. What is telemedicine? Telemedicine is not “face time” and “Skype” since those aren’t secure and your information can be hacked. Telemedicine is any electronic communication between a physician and patient and can be used legally to diagnose and treat up to 8% of medical problems typically seen in the Doctors office. Phone calls, emails, and secure text messages are all compliant ways to connect with your physician. Video conferring is the BEST way to connect with your doctor for the most accurate diagnosis since the physician can assess a lot more by “seeing” you as a patient. For New Yorkers, telemedicine allows physicians and patients to connect with each other via real-time applications that allow them to conduct a remote appointment,


or ‘virtual visit.’ In a city that never sleeps, spending hours in a doctors office is like wasting a lifetime. Telemedicine is the perfect accessory for city dwellers to ensure they never have to miss a beat. Five things to look for when choosing a company: Who are the doctors? Many companies allow you to choose who you connect with. Many of the doctors have ratings and reviews from other patients. 1. Where are the doctors? Some providers may function from a different state however they should always let you know where they are licensed. 2. Is this company trustworthy? A trustworthy company will never compromise your care by using doctors outside of their specialty to treat you. 3. How much time do they spend with you? Although the convenience of a virtual visit is great, also make sure that a company gives you the time you need and will not diagnose you in 2-3 minutes. 4. Telemedicine companies are not medication dispensaries. A good doctor will never prescribe medications just because you ask for it and the same applies to telemedicine providers. With this fascinating approach, telemedicine creates a way for you to: • Monitor chronic illnesses by having the convenience of being monitored at home rather than weekly visits to clinics and office. • Get access to a provider when traveling or unable to get to an

office while eliminating the need to sit in a clinics waiting room. • For older patients and family members who need consistent care, its particularly beneficial for those who are home-bound or need assistance when being transported. A ‘teledoc’ will communicate with patients via phone or video chat rather than face-to-face and is done over a secure medium that delivers high-quality video and audio. Why make visits keep you from your work and daily activities when you can get reputable medical advice and connect with each other via real-time applications through a remote appointment, or ‘virtual visit.’ Various physical exams and psychiatric assessments can be carried out without patients ever needing to leave their homes or place of work. Telemedicine will never replace the need for physical interaction between patients and physicians, however it can greatly reduce it. It can deliver the right care at the right time and actually encourage you to become more compliant with medications, visits and also reduce the time which you wait to contact a physician. All the benefits of telemedicine may not be for everyone, but like any good business, we like options. kitchen and the meals you prepare. Rather than join the Clandestine Service, a great way to build and enhance your culinary enthusiasm is to spend a Saturday at America’s most esteemed culinary school, The Culinary Institute of America, in Hyde Park, NY with a CIA chef and a class of fellow food lovers in a hands-on cooking or baking class.

An endless array of cooking classes Perhaps you have a specific passion for a certain food or simply an interest in discovering a new world of global flavors and ingredients. You will certainly find a Saturday Kitchens class that will interest you. Maybe you crave Indian or Italian food; or you want to create impressive desserts at home; or possibly you want to hone your skills with sauces and gravies. From “Artisan Breads at Home,” “Cake Decorating,” “Chinese Cuisine,” and “Behind the Meat Counter” where you will experience a comprehensive lesson in meat butchery, to “Bistros and Brasseries” with its focus on comfort food, the choice of classes is nearly endless. Teaming up for “Gourmet Meals” We recently experienced the “Gourmet Meals in Minutes” class where, under the expert tutelage of Chef Scott Swartz, we learned a number of culinary techniques and skills to increase our speed and efficiency while preparing a variety of outstanding recipes. Our morning began with a continental breakfast where we were introduced to Chef Scott, who then led our group of 14 aspiring gourmands to his kitchen. After donning our CIA aprons and chef hats (which were ours to take home), we were divided into four teams, each tasked with four recipes to prepare for our bountiful feast. Our team of four prepared four items: a papaya and black bean 66 | OUR CITY, YOUR LIFE | JUNE 2016

salad, roasted carrots and parsnips with rosemary and sage, grilled marinated lamb chops with white bean and rosemary ragout, and mussels in a white wine and saffron broth. And with honest humility, we can say each item was outstanding. We must also say that the other three teams in our class prepared dishes just as delicious as ours. A few of the dishes included a lobster and roasted red pepper salad, jerked pork kabobs, grilled steak salad with horseradish dressing, and salmon en papillote (in parchment) with fresh herbs and purple potatoes. All ingredients in our recipes were created from scratch (yes, we were squeezing lemons and limes, peeling ginger and garlic, and shelling lobsters). Chef Scott and his two student assistants, Travis and Isaac, provided a wealth of guidance and interesting techniques, often stopping the class to gather to watch a demonstration such as knife techniques for slicing different vegetables, constructing the salmon en papillote, and preparing lobsters for the boil. Our class spent about three hours preparing and cooking our recipes, with some time taken for the various demonstrations. Each group then proudly plated their culinary creations. We then had the pleasure of eating a wonderful lunch from our buffet of “gourmet meals.” We also were able to take home some of the leftovers (you might want to bring along some plastic food containers for them). Although our preparation time wasn’t exactly “minutes” (as the class title suggests), we did learn a number of techniques to increase our efficiency and ways to prepare certain things ahead of time, all of which will help save time when we try our recipes at home. For any of the Saturday Kitchens classes that don’t prepare a meal, such as the various baking classes or a sweets class like “Creative Cupcakes,” a buffet lunch prepared by CIA chefs and students is provided. A great gift and a way to bond A Saturday Kitchens class at CIA is a great way for a group of friends to get together and experience a fun class in cooking, baking, and enjoy a delicious meal with wine. It can also be a great


gift idea. Maybe you know someone who would be interested in “Everyday Grilling,” “The Flavors of Asia,” “Global Street Foods,” or how about “Everything Chocolate”? The Saturday Kitchens classes also offer a great way for a parent to spend some time together with their teen working side by side in one of CIA’s famed kitchens. The usual minimum age for the Saturday Kitchens is 18 years old; however, the program devotes one of its Saturdays to Parent and Teen classes with a minimum age of 12. Teens will be relieved to know that all of the classes on these days are Parent/Teen sessions, so they will have plenty of other teens in their class to experience the joy of cooking. Maybe you are interested in an even more intense culinary experience than a one-day Saturday Kitchens class. CIA offers a more in-depth experience in its 2-day to 5-day culinary Boot Camps. With cooking-themed Boot Camps and baking and pastry-themed Boot Camps, you will spend a few days working side-by-side with a CIA chef-instructor and other Boot Campers learning fundamental culinary techniques, gaining confidence in the kitchen, and bonding with others that have a passion for food. “The food world’s most famous classrooms” If you enjoy fine food but don’t have the desire to get into the kitchen and prepare your own by taking one of CIA’s classes, you can experience the exquisite food, gorgeous ambiance and super service of one of The Culinary Institute of America’s fine restaurants at its New York campus in Hyde Park. The American Bounty Restaurant focuses on the seasons and products of the Hudson Valley in its contemporary and traditional regional dishes. The Bocuse Restaurant, named for the most famous chef in France, Paul Bocuse, re-imagines the execution of classic French cuisine through the lens of ultra-modern cooking techniques. Pangea presents creative cuisine with unique flavors and an urban flair with a belief that dining should be a global adventure. For a truly

authentic Italian experience, Ristorante Caterina de’ Medici and the more casual Al Forno Trattoria provide exceptional dining experiences. The last and most casual of the CIA’s restaurants is The Apple Pie Bakery Café, which showcases the talents of the baking and pastry arts students and faculty. Some food for thought (pun unintended), why not make a visit to CIA a mini getaway? Student-guided public tours of the campus are available Mondays at 10 a.m. and Monday-Friday at 4 p.m., when classes are in session (tour cost is $6, reservations required). Not only will you see the students actively participating in their culinary and baking classes, you will tour the beautiful grounds of the campus. Originally founded in 1946 in New Haven, CT to provide culinary career training for World War II veterans, the CIA moved in 1972 to the expansive main campus in Hyde Park, the former Jesuit novitiate St. Andrew-on-Hudson. With stunning views of the Hudson River, the campus is quite impressive. So plan a tour for a Friday, enjoy an exquisite meal in one of the restaurants, spend the night in a nearby hotel (information available on the CIA website), and be ready and raring to cook on Saturday. Our day at CIA reflected the school’s commitment to excellence. While interacting with Chef Scott and assistants Isaac and Travis, and then talking with our student-guide on a tour of the campus, we were impressed with the hospitable and professional manner of everyone. Raymi – Peruvian Kitchen & Pisco Bar

aymi Peruvian Kitchen & Pisco Bar is a modern Peruvian restaurant that captures the multicultural spirit of Peru in Chelsea. This Chelsea offering blends the Spanish, Japanese, Chinese and native influences that embody the country’s vibrant cuisine. The space is great with high ceilings and a bar, high tabletops accommodating large parties and standard seating for smaller groups. Pisco is a colorless grape brandy produced in the winemaking regions of Peru. I tried a Pisco Sour made up of Pisco, lime, egg whites, and bitters. It was quite tasty and more on the sweet side. One drink I highly recommend for those like me who like it spicy is the Jalapeno Chilcano. Made of Pisco 100, lime, ginger ale, and bitters, it has a great jalapeno bite and I thoroughly enjoyed it. Be careful, it has a high alcohol content that can sneak up on you. 68 | OUR CITY, YOUR LIFE | JUNE 2016

I sampled two ceviches for starters: Clasico and Aji Rocoto Tiradito. The Clasico is wild striped bass, lime, red onion, sweet potato, cilantro, and habanero. This is a very traditional ceviche and though it does have habanero in it the dish is sweet. If you are a fan of ceviche you are sure to enjoy this dish. The Aji Rocoto is a little more acidic in taste. Made up of Red Snapper, sweet potato, choclo, chalaca, and cancha it has a nice taste to it and is a bit tangier than the traditional Clasico. From the Small Plates section of the menu I enjoyed the Anticucho and the Pastel De Choclo. The Anticucho is hanger steak, aji panca, choclo, confit potato, and rocoto sauce. Choclo is a Peruvian corn very much like a lima bean. The hanger steak was delicious, tender and juicy served in an A-1 like sauce. The confit potato was very interesting too. The outside is hash brownish with a nice crust and the inside soft like an au gratin. The Pastel De Choclo is a Peruvian corn cake with roasted mushrooms, mushroom jus, and watercress.


A very soft, sweet treat and if you have never tried corn cakes I recommend this one. From the Large Plates selection of the menu highlights are the Arroz Con Pato and Raymi’s most popular Lomo Saltado. Arroz Con Pato is crispy duck leg with cilantro jasmine rice, dark beer, and salsa criolla. The duck was tender, cooked to perfection, with a slight chew from the skin. It was cooked so perfectly it practically fell off the bone. The jasmine rice was creamy and tasty with a cornucopia of flavors. I tried it with the red onions and the rice had a creamy cilantro taste. The red onions enhanced the cilantro jasmine rice making it even sweeter. Duck is a somewhat more difficult dish to prepare correctly because of its fat glands and dark meat making it relatively tougher meat. Kudos to the chefs at Raymi for preparing such a tender version. The Lomo Saltado is Raymi’s most popular dish and I think I know why. For steak lovers it is fantastic. It is hanger steak served with soy sauce, tomato, red onions, crispy fries, and jasmine rice served on the side. The slices of steak are very impressive; the outside is seared and the inside tender. It almost passed the fork test but no worries since I did end up cutting the steak with a butter knife. I like the way the crispy fries are served in the same bowl as the steak. The rice is served on the side with butter and garlic. It is simpler than their cilantro jasmine rice and sweeter. I would recommend saving the fries for last. Try the fries in the sauce after you have savored all of the meat. The crispy fries are crispy on the outside but still have plenty of baked potato consistency.

For dessert I had the Picarones and Coconut Sorbet. I do have to call out Raymi’s coffee. I love latin coffee. Stronger than most varieties and always served with steamed or hot milk, Raymi serves their coffee in a pot so that you don’t have to constantly ask the waitress to refill your cup. To say it is strong is an understatement. I love heated or steamed milk so that you can still enjoy a hot cup of coffee with milk and not a cooled or old cup. Raymi could open up their own coffee-to-go shop with the quality of their coffee. The Picarones are Peruvian crispy donuts served in chancaca honey. You get three little donuts to an order and they are crispy on the outside and sweet inside. The Coconut Sorbet is two football shaped scoops of sorbet with slivered Peruvian chocolate, toasted coconut, and a sprinkle of cinnamon. The sorbet is unique. It is not soft like many sorbets. It has a great ‘chill’ in it that paired nicely with my hot coffee. I would recommend both desserts for something different. Overall I would recommend Raymi if you are seeking something vibrant and different on your palette. The ambiance is warm and relaxing, the food and drinks are adventurous and flavorful, and the prices are very reasonable. TEENAGE NINJA MUTANT TURTLES 2: OUT OF THE SHADOWS RATED PG 13 The heroes on the half shell take on their old adversary Shredder and vigilante Casey Jones (The Arrow’s Stephen Amell) in a sequel that also stars Megan Fox, Will Arnett and Tyler Perry as the mad scientist Dr. Stockman. Donatello, Michelangelo, Leonardo and Raphael are not only movie stars they are also New York City’s official family ambassadors for 2016. No word on whether the fab four sewer dwellers will visit the Metropolitan Museum of Art to view the work of the Renaissance artists for whom they are named. The 2014 TMNT film grossed $ 493,333,584 at the global box office. That buys a lot of pizza.

INDEPENDENCE DAY: RESURGENCE RATING PENDING “We always knew they would come back”. Twenty years after Earth was invaded and major cities were destroyed the aliens return in a humongous mother ship in director Roland Emmerich’s sequel to his 1996 blockbuster. In the years following the original attack the UN created an early warning system - the Earth Space Defense Program. There is nothing like the threat of global extinction to unite the disparate and quarreling nations of the world. Mr. Emmerich’s strength is not political commentary but he does know how to spectacularly blow up the major cities of the world. Returning cast members Jeff Goldblum, Bill Pullman and Judd Hirsch are joined by Liam Hemsworth and Jessie Usher. THE SHALLOWS NOT RATED Summer begins June 20 which means a shark attack movie will open soon at a theater near you. This year it’s “The Shallows” debuting June 29 and starring Blake Lively as Nancy, a grief stricken young woman who after her mother’s death , travels solo to a remote South Pacific island unaware the surrounding waters are a buffet for sharks. Paradise this is not with Nancy going one on one with a (CG) great white. FINDING DORY RATED PG Ever yone’s favorite forgetful fish Dor y (Ellen DeGeneres) searches for her family in the sequel to the 2003 blockbuster: “Finding Nemo”. Why did it take those Pixar wizards 13 years to reunite the sea dwelling stars of their movie which took in more than $900,000,000 at the global box office? According to Dory’s director who was interviewed by Entertainment Weekly, “there was zero discussion of a sequel.” The starry voice cast includes Ed O’Neill, (a cranky octopus), Idris Elba as Fluke the sea lion, plus Diane Keaton and Eugene Levy as Dory’s parents. Newcomer Hayden Rolence is the new voice of Nemo. ME BEFORE YOU RATED PG 13 Me Before You ranks high on the “wannasee “list of readers who made Jojo Moyes’ 3 handkerchief novel a best seller. Emilia Clarke, best known for her role as the evil Daenerys Targaryen on “Game of Thrones”, plays Emilia, a young, inexperienced caregiver who falls in love with her wealthy, handsome wheelchair bound patient. Will Traynor (Sam Claflin) survived a motorcycle accident at age 35 but faces a bleak future confined to a wheelchair in his parents mansion. To buoy his spirits, Emilia suggests they throw caution to the wind and plan a vacation in Mauritas where the rest of the story plays out. The film’s producers are depending on the books female fans to turn “Me Before You” into a “Love Story” like hit at the box office.

THE FREE STATE OF JONES NOT RATED Matthew McConaughey returns to Mississippi, the setting for his 1996 film “A Time To Kill”, for the Civil War drama, “The Free State Of Jones”. Newton Knight (McConaughey),a farmer and a fierce opponent of slavery leads a group of slaves and white farmers into battle in director Gary Ross’ film which is based on a true story. Bob is a CIA agent who needs Calvin, the only man he trusts with computer skills, to prevent an enemy from stealing the encryption codes to the US satellite program. June Broadway Reviews with Pat Collins THE FATHER A LEGEND RETURNS TO BROADWAY Frank Langella’s alternately charming and irascible character in “The Father” is diagnosed with dementia, stubbornly refuses help from his daughter and ignores the advice of his physician. The three time Tony winner who is one of the greatest actors on the planet speaks this heartbreaking line near the end of Florian Zeller’s 90 minute play. ‘Who exactly am I “. The Manhattan Theater Club production which brought Mr Langella another Tony nomination is scheduled to close June 12, 2016.

ECLIPSE Eclipses’ limited run comes to an end June 19, 2016. Danai Gurira’s Tony nominated play received 5 additional nominations including one for: Lupita Nyong’o in the leading actress category. She plays the youngest of four women held prisoner and sexually violated by a murderous war lord during Liberia’s civil war. AN ACT OF GOD HEAVEN SENT The 90 minute comedy returns to Broadway, this time with Sean Hayes as God - . The Almighty has stern words for those who aspire to E Z pass their way through the pearly gates, One of his many rebukes is aimed at Kanye West: “The next time you win a Grammy and thank me for your God given talent they’re going to get God-taken”. Regarding the Garden of Eden, he confides that “Adam and Eve were an afterthought. The original garden of Eve residents were Adam and Steve gay, straight, bisexual, transgender - all are equally smitable in my eye”. Mr. Hayes who made his Broadway debut in 2010 was Tony nominated for Hal David and Burt Bachrach’s musical “Promises Promises”. LES MIZ BIDS AU REVOIR The third Broadway production of Les Miz ends its run Sept 4 and not «One Day More». When Alain Boubil and Michael Schonberg’s 1985 musical debuted in London it received mostly negative reviews. In the intervening years it proved to be a durable hit with audiences there and on this side of the Atlantic. Its original Broadway run began in 1987 and was followed by revivals in 2006, and 2014. The story is well known to high school students who read Victor Hugo’s 19th century novel about Jean Valjean, the French peasant who stole a loaf of bread to feed his child , spent 19 years in jail for the petty crime and was tormented by police inspector Javert one the most memorable villains on the page and the stage.

CIRQUE DU SOLEIL; PARAMOUR ALL NEW AND DIFFERENT The Canadian troupe’s first musical created for Broadway pays tribute to the Golden Age of Hollywood with 10 original songs and a cast of 38 singing and dancing on the stage of the Lyric Theater and flying high above its stage as well. BROADWAY’S BUSIEST DIRECTORS Two over achieving Directors, Casey Nicholaw and Joe Mantello each have four shows running simultaneously on Broadway. That record breaking number was last achieved in 2001 when Susan Stroman had bragging rights to four productions. Mr. Nicholaw’s musicals are: The Book of Mormon, Aladdin, Dirty Rotten Scoundrels and Tuck Everlasting. Pat Collins’ Picks of New Home Entertainment Releases MY NAME IS DORIS RATED R FOR LANGUAGE RUNNING TIME: 1 Hour 35 minutes The titular character, who lives in the modest Staten Island home she shared with her recently deceased mother, is an eccentric 60 something bookkeeper who is all but invisible to her workmates. Enter a young handsome co-worker whose friendship she mistakes for a budding romance. The plot takes a U-turn when the possessive Doris witnesses John (Max Greenfield) embracing his gorgeous blonde fiancée. Devastated by what she regards as a betrayal Doris turns into spiteful stalker and the movie is reduced to a pity party devoid of the humor that somewhat enlivened the first half of this dramedy. The reliably wonderful Tyne Daly contributes a first rate performance as Doris’ best friend. Ms. Field, a two time Oscar, winner shines in a film unworthy of her extraordinary talent.

KUNG FU PANDA 3 RATED PG RUNNING TIME: 95 minutes In Kung Fu Panda 2, the large, lovable hero asked “where am I from?” in the franchise’s third installment. Po gets an answer when he is reunited with his biological father (Bryan Cranston) and subsequently emotionally torn between a newfound parent and his adoptive father Mr. Ping. The Furious Five are back as well and Po has a girlfriend named Mei Mei, (Kate Hudson). The other starry voices are provided by Angelina Jolie, Dustin Hoffman, Jackie Chan, Lucy Liu, Seth Rogen and J K Simmons as the villainous Kai. Panda 3 delivers humor, heart, action and a believe-in -yourself message to Po’s young fans. And there are millions of them as evidenced by the global box offices grosses: Kung Fu Panda (2008) $631,744,560 Kung Fu Panda 2 (2011) $665,692,281 and Kung Fu Panda 3(2016) $516,121,844). 82 | OUR CITY, YOUR LIFE | JUNE 2016

ZOOTOPIA RATED PG RUNNING TIME: 1 Hour 48 Minutes Disney’s delightful animated comedy pairs Judy Hoops (Ginnifer Goodwin), a resourceful quick thinking bunny with Nick (Jason Bateman), a wise cracking fox. He’s a con artist. She’s a newbie ambitious Zootopia police officer relegated to meter maid duty despite being number one in her class. Not a bunny to be easily discouraged or dismissed Judy persuades the water buffalo-police chief (Idris Elba) to assign her the case of a missing otter and enlists Nick’s help despite his habit of not being entirely trustworthy. One of the innumerable funny scenes which parents will especially enjoy involves a slow moving sloth behind the counter at the Zootopia DMV. Another is a rodent mobster with a Don Corleone personality. Those references will not register with young movie goers but Zootopia brilliantly and comically presents a world in which prejudice is replaced by tolerance and any good hearted hardworking bunny can hop to the top.


LONDON HAS FALLEN RATED R RUNNING TIME: 99 minutes President Benjamin Asher (Aaron Eckhart) and his bodyguard/buddy Mike Banning travel to London for the Prime Minister’s funeral at St Paul’s Cathedral. In attendance are nearly all the world leaders who are killed by terrorists disguised as police officers. POTUS and the well-armed Mike survive a deadly dull game of hide and seek between them and the goons working for Pakistani arms dealer Aamir Barkawi bent on exacting revenge for a drone attack that killed his daughter on her wedding day. In the 2013 “Olympus Has Fallen” North Koreans held the President hostage in the White House. The sequel requires the Commander In Chief to keep pace with the muscular Mike as they outrun the enemy through the streets, alleys and demolished buildings of London (actually Bulgaria where most of the film was shot). In Washington Secret Service director Lynne Jacobs (Angela Bassett) and Vice President Allan Trumball (Morgan Freeman) are powerless, having exhausted all options to prevent Barkawi from beheading the President live on You Tube. Director Babak Najafi is responsible for one of the worst movies of the year and it’s most xenophobic thus far.

HAIL CEASAR RATED PG-13 RUNNING TIME: 1 hour 36 minutes Directors Ethan and Joel Cohen return to the Capital Pictures, a fictional Hollywood studio and the setting for their 1991 film “Barton Fink” The film begins with the kidnapping of the studio’s biggest star Baird Whitlock (George Clooney), a Charlton Heston like actor currently shooting a Ben Hurlike movie. Investigating Whitlock’s disappearance and keeping the crime from becoming front page news is a job for Capital’s “fixer” Eddie Mannix (Josh Brolin) whose responsibilities include preventing and containing scandals that would sully the reputation of the studio and its A list stars. One example of Mannix’s damage control involves a pregnant Dee Ann Moran (Scarlett Johansson). He arranges for Dee Ann to adopt her out of wedlock baby in order to satisfy the media’s curiosity. Mannix, a practicing Catholic devoted to his family, is based on a real life MGM fixer during the day of Louis B Meyer. The Coen’s cast includes Jonah Hill, Channing Tatum- terrific as a Gene Kelly like tap dancer, Tilda Swinton playing 2 rival gossip columnists and Ralph Fiennes, a snobbish director saddled with a young awkward cowboy Hobie Doyle (Alden Ehrenreich). I will not divulge the identity of Clooney’s unlikely captors who demand a $100,000 ransom. Hail Caesar is best enjoyed by TCM viewers and AARP members who remember the waning days of Hollywood’s golden age.

X FILES NOT RATED The truth is out there and on June 14 so is the complete series on Blu Ray. The box set contains nine seasons of television’s longest running sci-fi series starring David Duchovny as Fox Mulder and Gillian Anderson as Dana Scully. Also included are six new episodes in the Event Series with the show’s stars reprising the roles that made them famous X-files creator and executive producer Chris Carter contributes a commentary on how the X series evolved. The Event Series can be purchased separately on DVD and Blu Ray.

13 HOURS RATED R RUNNING TIME: 144 MINUTES Americans looking for a Hillary Clinton connection to the events that unfolded when she was Secretary of State and/or a thoughtful analysis of what went tragically wrong on September 11 2012 in Benghazi are well advised to avoid “13 Hours” which runs a seemingly interminable 2 hours and 24 minutes. This is a Michael Bay production and Mr. Bay does not do subtle. His version of that horrific event is long, loud and often bewildering.13 Hours recreates the attack on the American diplomatic compound that killed ambassador Christopher Stevens and three other Americans. A second deadly assault at a nearby USA complex claimed two more lives. The private security officers who are called upon to control an uncontrollable situation include an ex-Navy Seal played by John Krasinski and a number of other equally brave men. I give credit to Mr. Bay for honoring those who so nobly serve our country. My wish is for him to do it as well as Clint Eastwood. •

Lifestyles Book Review: Passed & Present By Allison Gilbert assed and Present is not a new book about sadness and grieving. It is about happiness and remembering. The book is a one-of-a-kind guide for discovering creative and meaningful ways to keep the memory of loved ones alive. My goal from the start has been to share exciting opportunities for honoring and celebrating those we miss most, no matter how long they have been gone. I wrote Passed and Present because it is just the kind of roadmap I needed after my loved ones passed away. Readers will learn how to meaningfully repurpose inherited items such as jewelry, clothing, photographs, letters, and other mementos, and they will come to appreciate how technology — smartphones, scanners, apps, websites, and more— can be used to integrate a loved one’s memory into our daily, digital lives.

One of my favorite chapters focuses on travel. Destinations lure you around the world—from Japan to Mexico, from The Bahamas to Israel—to cities and towns where reflecting and honoring loved ones is a communal activity. I call this notion Commemorative Travel. Following each location, I include a section called Bring it Home, offering additional sites to discover in the United States — as well as ways to incorporate aspects of meaningful foreign traditions into your practices at home in New York City. This book was important for me to write because grief experts have long said taking proactive steps to remember loved ones is essential to healing – yet no book had ever focused exclusively on concrete ideas for doing so. It was critical for me to fill this remarkable void. Remembering is key to happiness. It is the essential springboard. That enables us to celebrate loved ones who have passed while enthusiastically, unreservedly, and joyously embracing our present. The book I am reading right now is Aidan Donnelley Rowley’s, The Ramblers. It’s the perfect book for New Yorkers! Scenes unfold in Central Park, Greenwich Village, and across the Upper West Side. The novel unfolds during the course of one week, over Thanksgiving. I picked up The Ramblers after hearing Rowley give a terrific reading at Book Culture on Columbus. Book Culture is a lovely independent bookstore located between 80th-81st streets, and it holds delightful events for readers to meet and engage with writers. The store was packed that night and I was thrilled I got to hear Rowley speak on all aspects of writing her latest book – how she developed the plot; her inspiration for the characters; and why she felt so compelled to reveal the entire story over one week. As a writer, I adore hearing how other writers approach their work. We decided to ask a professional, Steve Keogh, Senior Teaching Professional at Chelsea Piers Golf Academy in the City his view on the three clubs every golfer should be carrying to help their game this season; Club #1: A Fairway metal (3 wood / 15 degree or 5 wood / 19 degree) Why? “these are a little more forgiving and much easier for most people to hit compared to a driver” Club #2: A 3 or 4 iron hybrid (23 to 28 degrees depending on manufacturer) Why? “They are very forgiving clubs and easier to get in the air plus also much easier to hit out of the long rough compared to the 3 or 4 iron.” Club #3: A gap wedge (50 to 52 degrees depending on the manufacturer) Why? “This fills the gap between a standard pitching wedge and the sand wedge, hence the name gap wedge. In terms of bounce with wedges, the bounce of a wedge is using the back end part of the soul of the club. The higher the bounce 10-14 degrees the better it will be for the golfer. The Big Number: Gas Prices By Laurie Gelman

s sure as the sun will rise, so will gas prices this summer. Cynics would say it’s no coincidence that the cost to fill er’ up goes up just as New Yorkers (like most Americans) are hitting the road for vacation, but the truth is many things make the price of gas fluctuate.

Once the oil is delivered, the refineries take their cut of course they earn about 20 cents on every gallon they process. This price usually rises in the summer months because they have to adhere to the Clean Air Act starting from May to September and switch to summer blend formulas. Considering that U.S refineries pump out 18.5 million barrels a day, according to OPEC (that’s 777 million gallons) they earn their (20 cents) of the pie.

If you have ever wondered how that perpetually changing number at the gas pump is determined, here’s a layman’s look at the deal. Using a farm to table analogy, lets follow the path of petrol from oil field to gas station and see who gets a piece of the pie. First you need some crude oil, the price of which is the single biggest factor in the pricing of gasoline. It’s a pretty simple system - if there is a big supply then price is low. If there is a shortage, the price goes up. Prices have gone as high as $146 per barrel to below $30 per barrel and that fluctuation is mirrored at the gas pumps. To put it in relatable terms, if the price of crude goes up by $10 a barrel, you will see a 25 cent hike in gas. Once you’ve bought your crude, now you need to get it to a refinery. The US may get the majority of it’s oil from the Middle East but we refine that liquid gold right here in the good old USA. So getting it here is half the battle. If all is well, it’s a smooth transfer. But if there is a hurricane in Louisiana or government instability in Iraq or Yemen, transport of the oil can be put in jeopardy. Any delay will definitely affect the price you ultimately

Now its time for Uncle Sam to take his chunk. Taxes on gas are levied at all levels of government - federal, state and local all have hands out for their slice. The big boys tax it at around 18.4 cents per gallon and although state taxes vary, the average is about 25 cents per gallon. That adds 46 cents per gallon to the total you pay. And finally we come to the gas station owners. They earn about 14 cents for every gallon of gas they sell. The cost of doing business varies not only from city to city but neighborhood to neighborhood. You have to consider the rent they pay, the number of employees they have and any number of other overhead costs. Traffic patterns also play into it. Two stations can be across the street from each other but if one gets a better traffic flow and is more easily accessible, he will get more business and be able to charge less for gas. So New York, as you pay your $2.23 (as of the day I write this) a gallon for regular, you may want to think about how many hours you will have to work to pay for this summer’s vacation. • JUNE 2016 | NEW YORK LIFESTYLES MAGAZINE | 89

For CEOs like yourself, what’s the most important aspect of branching out to international markets? Years ago when I first visualized the concept of EZBZ, I saw it as an amazing tool that can revolutionize global trade. What if you can buy precious stones from India or textiles from China without using a broker – by just messaging every supplier in that country? What if I can reserve a guesthouse in Thailand directly from its owners who may not be listed on one of the travel sites? EZBZ’s goal is to facilitate global commerce for consumers and connect them directly with local businesses across the world who can sell and market their goods and services without relying on third party brokers. 2. How long ago did you decide to expand EZBZ’s reach outside of the United States? What factors influenced your decision to expand internationally? 90 | OUR CITY, YOUR LIFE | JUNE 2016

My decision to expand started just over 1 year ago. At the time, we were having first discussions with potential partners in the Middle East and Asia. I always knew I wanted to take EZBZ internationally, but knowing the challenges we would face, I really wanted to do it right. 3. In your experience, what do you see as the number one obstacle facing companies that want to branch out into the global marketplace? There is a misconception that in today’s digital world every online company can operate internationally with little additional effort. Although this can be true for a lucky few, such as social media companies driven by user generated content (Twitter, Instagram and Facebook), the majority of companies that try to launch in a new country fail. The primary reason for this is the tremendous financial investment and effort needed to succeed in another country. Too often the company’s leaders and resources become overextended; while trying to focus attention on the new country, they are still needed significantly on the first, ultimately decreasing the impact they are able to have on either. After time, these resources become drained to critical levels and strain the business. 4. What processes assisted EZBZ in figuring out which markets would be best for international expansion? It is a no-brainer that an American company should expand first to another English speaking country. Although we looked at


opportunities in Europe and Asia, Canada seemed the most logical starting point since it is a natural extension of the US market. However, I really wanted to test two different countries, and due to interest from multiple countries in the Middle East, we focused there. In the end we settled on Israel since after only two weeks of discovery, we managed to line up powerful joint ventures with some of the country’s largest companies – including its major electric company, one of the country’s largest banks and its largest television station. What we are learning from these two countries is now helping us plan our expansion for the next two years. 5. When EZBZ decided to branch out to international markets including Canada and Israel, how long did it take for you to establish roots in these markets? In Canada, it took us less than 2 weeks to identify our local operator and 4 more to complete the technology adjustments and set up the initial six joint ventures with which we would launch the country. In Israel it took us longer to identify the best operator, but the joint ventures closed more quickly. These two countries helped us cement our methodology for launching EZBZ in a new country.. 6. What structural elements of an innovative tech business, like EZBZ, made it scalable to an international marketplace?

Traditionally, businesses like EZBZ have a very hard time setting up operations in a new country since it involves on-boarding and sales to local businesses, something that must be done by someone local and is usually very expensive. EZBZ’s significant advantage is with its technology, which uses artificial intelligence algorithms to understand a user request and match it to all the relevant businesses who can match it. The technology can be adjusted to work in any country in a very short amount of time, allowing EZBZ to launch any country in less than two months. EZBZ also uses local operators in order to open new countries. To do this, we identify individuals or companies that already have a local structure in place and are positioned in the market to take on local operations of EZBZ. These individuals have necessary connections in different industries that EZBZ has forged successful partnerships with in America such as media, utilities, banking, insurance and real estate. These partners are bringing more ideas and innovation to EZBZ as well as massive international joint ventures, which change the game for the company. 7. What were some of the unexpected obstacles you have encountered while trying to expand EZBZ outside the United States?

The biggest challenges are the physical distance and time differences. In many countries, big business is conducted faceto-face and digital substitutes such a Skype and GoToMeeting are barely tolerated. As for time differences, the Middle East expects many meetings to take place early in the morning and on Sundays, which is a work day for them, and they are only 7 hours away. Comparatively, scheduling with the Far East and Australia, can be an organizational nightmare. 8. What cultural barriers did you encounter when moving your business into international markets? How do you overcome those? Absolutely. For example in Israel, we faced a cultural technological barrier when working with the Orthodox Community since many of their businesses do not have access to email or SMS. To overcome this, we developed a technology that will send the business owner an actual phone call that will read him the request. If he wants to reply, he just needs to dial back and the call is directed to a call center who will reply for him. Additionally, we need to adjust our marketing collateral for certain countries where modesty is very important and images of women in presentations, videos or movies are usually replaced with men. Finding Fido’s Fountain of Youth By Dr. Heather Loenser ho wouldn’t agree that your quality of life is more important than the number of candles on top of your birthday cake? Living to a ripe old age is only a blessing if you’re healthy enough to enjoy it. New Yorkers wear their old age proudly; thanks, in part, to living in a city which forces us to be active. It is often easier to walk 10 blocks than to hail a cab in rush hour and almost anywhere you look, you see older folks exercising. My 94 year old client Ruthie scolds herself if she misses one day of speed walking with “The

Girls.” She completes crossword puzzles faster than her daughter can buy them for her. Ruthie’s neighbor, Teddy who’s 89, regularly bikes three miles in Riverside Park to meet his buddies for a kale and quinoa salad at Pier I Cafe. Both of these seniors adhere to key tenets of good health: they eat well, exercise regularly, engage in stimulating activities, and, believe it or not, take proper care of their teeth. Though neither one ha found the Fountain of Youth, each is close enough to feel the spray. The same tenets apply to our dogs. As a veterinarian, part of my job is to heal sick pets. The other part is to provide pet parents with a roadmap to the Fountain of Youth for Fido.

HELPING FIDO FIND THE FOUNTAIN OF YOUTH While certain breeds live longer than others, every dog requires the same health care. Here are surefire ways to add years to your pet’s life. Eat Well...Be Well The statistics are startling: More than 50% of all dogs and cats in the United States are overweight. Often it’s because owners equate food with love. Unfortunately, every time you offer your pet an extra treat or scrap of food, you’re encouraging him to waddle towards premature death. Obesity causes a plethora of medical problems and decreases a pet’s life expectancy by up to 2.5 years. If your pet is overweight, he is prone to develop: • Arthritis and ligament injuries • Diabetes (which often requires insulin injections twice a day for the rest of his life) • Heart and respiratory disease • Cancer Most of my pet parents are surprised to hear that their pet is overweight. Some don’t even realize Fido’s fat because the pounds creep up gradually. Owners of furry dogs sometimes have trouble seeing the fat through the fluff. No matter the reason, a pet parent is embarrassed to hear the news, almost as if he’s been pegged as an irresponsible owner. The solution is simple: Put feelings aside and do something. Your pet’s life depends on it! Here’s an easy test to determine whether or not your pet needs to lose weight: Run your hand lightly along your dog’s side starting from her front leg and moving towards her tail. Can you feel your fingers sliding over her ribs like a car driving over speed bumps? If you answered “No,” your pet is likely overweight. Your veterinarian will work with you to develop an appropriate feeding plan using the Nutritional Assessment Guidelines by the American Animal Hospital Association. A little head’s up: Expect the plan to include cutting down on treats. Give Fido just half of that doggy biscuit and he won’t even notice the difference. Or supplement his treats with carrots, green beans and apple slices; they will satisfy the crunch... without the calories. Mind Games are a Good Thing An active mind is as important as a well-tuned body. Unlike their ancestors, our pets don’t need to problem solve; they’re not hunting for their next meal or figuring out a safe place to sleep. So it’s up to us to keep their minds challenged. Pet puzzles and treat-dispensing toys boost a dog’s brain power. My two highly intelligent mixed breeds love to play with puzzle toys and I can almost “see” them thinking as they work for the reward. Here are a few ways to stimulate your dog’s brain: Brain Power DIY Activities: • Scatter kibble throughout the house and encourage your dog to hunt for it • Freeze canned dog food, pumpkin, or low-sodium chicken broth inside a sturdy rubber dog toy. This provides hours of licking and chewing delight • Turn a muffin tin upside down and sprinkle kibble in the recesses of the tin. Your dog is forced to strategically retrieve each piece of food 92 | OUR CITY, YOUR LIFE | JUNE 2016


Keep on Truckin’ Inactivity has adverse effects on your pet. Arthritis is one of the top diseases that afflicts aging dogs. While we can’t reverse the changes inside a pet’s joints easily, we can support the muscles to keep them strong. Controlled brisk exercise is the best way to safely strengthen muscles. My favorite activities for my pet patients are: • Climbing stairs • Walking up and down hills or ramps • Swimming in clean bodies of water One of the top injuries I see in the ER is a torn knee ligament, similar to that sustained by athletes. No matter what treatment is done, arthritis will ultimately result in that knee. To decrease the chance of knee trauma, avoid activities that cause rapid jumping or twisting: • Jumping from deck stairs • Running for a frisbee • Chasing squirrels Don’t Give Your Pet’s Teeth the Brush Off Imagine the condition of your teeth if you never brushed them or visited the dentist. That’s the sad reality for most of our pets. By the time a dog is three years of age, he’s likely to show signs of dental disease. Over time, tartar and bacteria accumulate around the teeth and gums causing: • Stinky breath • Painful toothaches • Potential heart and kidney infections Regular at-home brushing and dental cleanings by the veterinarian can reverse many of these problems. Find a veterinarian who adheres to the recommendations in the American Animal Hospital Association’s Dental Care Guidelines. There are also foods and treats specifically designed to help keep your pet’s teeth clean. Look for products with the VOHC (Veterinary Oral Health Council) Seal of Approval as these are proven to decrease tartar and plaque accumulation.. Our Pets...Ourselves Caring for our pets has added health benefits for us as well. The Human Animal Bond Research Institute (HABRI) compared pet owners to non-pet owners and found that pet owners: • Are more likely to exercise and be in better shape • Have lower blood pressure and a better cholesterol profile • Have a lower risk of dying from a heart attack • Experience less loneliness and depression The Fountain of Youth may not be on the map, but it is certainly at the end of your leash. Stern love the diversity of New York City — where else can you live on a block with people from Afghanistan next door, China across the street, Canada two doors down, Latin America to my left amid born and bred New Yorkers mixed in? Where else can I share neighborhood celebrations that range from breaking the Yom Kippur fast to breaking the daily Ramadan fast; from the party for a daughter’s Quinceañera to a son’s Bar Mitzvah; from swapping family sauce recipes to family baklava recipes sometimes all on the same weekend? That diversity has not only enhanced my life, it has driven my career. However, it is not just cultural or religious diversity - it’s economic, it’s political, it’s lifestyles, it is the idea that New Yorkers come in all sizes and shapes, religions and cultures, sexual orientations, ages and professions. We may practice different rituals, earn different dollars, eat different foods, or wear different clothes, but whenever the first bars of a song about New York are heard — from Jay-Z to Sinatra, our arms are around one another, and we are unitedly singing our pride of belonging to this amazing city. I have lived in New York City for almost my entire adult life — covering three of the five boroughs in just under 35 years. In the 1980’s, I made downtown Brooklyn home while I served as Dean of Students at Polytechnic University. Shopping at A & S, eating at Gage and Tollner and breathing in the exotic smells of the spice 94 | OUR CITY, YOUR LIFE | JUNE 2016

shops that sprang up on Atlantic Avenue enhanced the excitement of working with a student population that consisted of a huge number of first-generation Americans who were often the first in their family to attend college. From there, I was appointed to the Brooklyn Borough President’s Diversity Task Force, ultimately propelling me to accept a job creating and building a powerful anti-bias education program: the ADL A WORLD OF DIFFERENCE Institute. It also brought me a move to 28th Street and Park Avenue in Manhattan. It wasn’t a career change that took me out of Manhattan and into Queens — it was a different commitment: marriage. With my husband, Donald, came a home in Bayside — soon followed by the amazing opportunity to take the helm of the U.S. Fund for UNICEF — the advocacy, education and fundraising arm of the international children’s organization. Most of the work we do at the U.S. Fund for UNICEF is very community or village focused. Surprising as it may sound given the size of New York City, here in Bayside, I very much feel like I live in a “village.” I love that the principal in our local elementary school knows the name of every child — that our butcher not only knows my name, but follows UNICEF and asks me about it while prepping my order — that our neighbors help one another at every opportunity. I am thrilled that our neighborhood has allowed my children glimpses into life from all over the world. I did not have to

For many of the children and families that I’ve met through my travels with UNICEF, that sense of belonging to a community can be a lifeline. In my neighborhood, there is a feeling of safety and camaraderie, which is the same thing that I seek for every child we work with. I recently had the opportunity to visit a New York City school as part of the launch of our new UNICEF Kid Power program. By getting active with the UNICEF Kid Power Band, kids go on missions to learn about new cultures and earn points. Points unlock funding from partners, parents and fans, and funds are used by UNICEF to deliver lifesaving packets of therapeutic food to severely malnourished children around the world. The more kids move, the more points they earn and the more lives they save. A team of us spent the day at Public School 242 in Harlem, and it was a lot of fun to be able to talk about this program that we are launching nationally with school children here in my own backyard, in the city that I love. P!nk, one of our newest UNICEF Ambassadors, joined us and she really motivated those kids to get active. The school in Harlem was the perfect place to highlight what UNICEF Kid Power represents, for the kids who participate and the kids who are helped. It really resonated with these students. One third grader I spoke to told me she was happy to have a chance to give to others. It’s empowering, because it’s about kids helping other kids and helping to save lives. In addition, this desire that UNICEF Kid Power taps into — the same inclination that keeps kids Trick-or-Treating for UNICEF every year since 1950 — to me defines the New York spirit. For all the reputation that New York is a tough place, New Yorkers are really compassionate. It is in times of crisis that you see the strongest part of this city. We saw it after 9/11, we saw it after Hurricane Sandy. We know how to rally for the occasion, and we hang together. •

families to get a turkey and I wanted the kids to be entertained so I would arrange for Santa Claus to be there with candy and activities for the children. 2. You recently created your own hashtag #teensforhillary to support Hillary Clinton’s political campaign. How important a tool do you think social media is to get teenagers interested in societal causes? Do you have any tips for other teenagers who want to create awareness around a certain cause using social media? I think social media is a great social platform to spread awareness and to interact with other people. I think social media is among the most popular ways that teens around the world communicate and I encourage other teens to use social media if they are interested in creating awareness around a certain cause. Teens are bombarded with social media so it must catch their attention. Lastly, you must be passionate about your idea and don’t give up. 3. You were recently thrown a magnificent Quinceañera with guest appearances from world renowned artists Pitbull and Nick Jonas. Tell us about the most unforgettable moment at the party? What was the best part? As a whole, the party was beyond my imagination. The venue and decor was amazing as well as the performers. Overall, my favorite part was the father and daughter dance. It was very special to both of us and I will always remember it!

15 minutes with Maya Henry By Ivette Manners lthough only a freshman in high school, this young San Antonio socialite has also demonstrated wisdom and drive well beyond her years in her athletic success as well as her interest in politics. She has already positioned herself as a competitor on the Texas Tennis Championship circuit. She is also actively engaged in politics and recently had the opportunity to meet presidential candidate Hillary Clinton during one of Clinton’s campaign fundraising events in New York City. Maya created the hashtag #teensforhillary with the aim to raise awareness amongst teenagers on issues of female empowerment and opportunities for Latina America women. 1. NYLM: Maya, you are the daughter of lawyer and philanthropist Thomas J. Henry. Have you always had an interest in philanthropy, like your father, or is it an interest that you have discovered recently? I have grown up knowing that we should help others. 4. You have Mexican heritage on your mother’s side. What role does that play in your life? In what ways do you think your Mexican heritage comes through? My Mexican heritage plays a huge role because my abuela [Maya’s grandmother] has lived with us since I was born and has helped raise me and influence me. Personality wise my Mexican heritage makes me fiery!! It helps me understand diversity and other cultures and it has made me understand loyalty and the importance of a close family. 5. Tell us something that most people do not know about you. Most people do not know that I am outgoing until they get to know me. I also don’t eat meat or dairy. 6. What is the best dining experience you’ve ever had? What was your favorite dish? What about the meal made it so special? Uchi in Austin is my favorite restaurant. My favorite dish is the yokai berry dish with salmon, kale, Asian pear and yuzu. The flavors are so good together and it is healthy. 7. Which three items must you always carry with you when you leave the house? And why those three objects? My cell phone, my wallet, and my NARS lipstick in “dolce vita”. 8.
