From the editor ELIZABETH CAMPBELL

Happy 2015! I’m so excited we get to open another chapter of our lives and kick off the new year in style.

Pod chair

Last year I wrote down a list of goals I wanted to achieve in 2014. My year went a bit pear shaped in the middle due to some personal issues that were higher than little ol’ me, but essentially I didn’t do too badly. The list consisted of business-type activities and getting systems and processes sorted, and talking to my accountant about maximising profit. Double tick. Plus also personal things like travelling (tick), cutting my hair short (tick), climbing Mt Warning (tick), taking dancing classes (sort of tick, I did dancing at the gym and I was in a pantomime. I think that counts!), try a juice detox (tick) and make new friends (tick times a million!).

Devonport 9pce Dining

There were some things I didn’t get to do such as sky diving (I went bungy jumping instead), snorkelling at Byron, buying a tent and going camping, going to Fish House restaurant in Burleigh, abseiling at Kangaroo Point and buying a pair of Christian Louboutins. Well, I’m happy to report they are now on my list of goals for this year. I have always been one of those annoying people who writes everything down. I get that from my Dad: “Write it down” he would say. And I’m a huge believer in goal setting - in which we’ve spoken to the all-time guru in the sport of goal setting, Matthew Michalewicz, in this edition. Very apt for the first mag of the new year.

Newport Daybed

The human mind is a powerful tool. Everything in life is created twice: Before we manifest it in the “real” world, we create outcomes in our mind. Those outcomes are what we focus on – focus positively and with optimism, and we will have positive outcomes. That’s what I’ll be doing in 2015 and it’s also my piece of wisdom for you going into this year.

What do you do when your teen wants to talk? A Give them your full attention B Arrange a time when you are not busy C Tell them to go ahead, no matter who is in the room How does your child ask for permission? A Asks straight out B Gives you the details and waits for you to decide C Waits until you are in a suitable mood before presenting you with the details Do you tell unfavourable stories about yourself? A Yes, I often tell my tales so my child sees me as a person B Only when I am trying to make a really important point C No! My child does not need to know those things Do you know your child’s favourite electronic game? A Yes! Now I play it too B Sure, but I couldn’t name it C Do they play games? Your teen comes home with a bad grade, you: A Were expecting it, we discussed it already B Are a bit surprised, you thought he/she was studying C Are stunned, what was your child thinking?

All stock on sale, including handbags, jewellery and clothing. Genuine prices.

What happens when you disagree? A We talk, I expect my teen to have different opinions sometimes B My teen grudgingly comes over to my side C I often use the ‘I’m the parent’ card so I can win Can you name your child’s closest friends? A Yes, they spend so much time here I could write biographies B Yes, I think I know their last names too C Possibly, I am never sure who they are closest to How do your disagreements play out? A Talk together and end on a good note B Find it difficult to communicate but you both stay calm C Argue and yell

Mostly A: Fluent teen speaker You could write a book on teens. You are switched on to your child’s life, can converse with their friends easily and you make sure your teen feels he/she can come to you for advice. Beware of being too involved though; sometimes teens need a bit of space to help them grow. Mostly B: Tentative talker Teen speak is not quite a second language yet but you are communicating well enough that your relationship is good. You have a balance between the friend and parent roles and you feel confident that your child is sharing with you.

Phone 5561 1038

Mostly C: First-year apprentice Do you often wonder where on earth the adult-teen translator is? Finding a balance between being a friend and a parent to your child can be hard, but showing an interest in their lifestyle is a good way to start. You may be overwhelmed at first but with practise you could be outclassing them on their next computer game.

LOCAL PROFILE

Maya

keeps it simple

Tell us a little about yourself? I met my husband, Perry, overseas in America on a seven-day Contiki tour of the West Coast. We are coming up to our 18th wedding anniversary and are very proud of our two amazing children Sam, 12, and Zara, 9. Where else have you lived and worked? I was born and grew up in Israel and lived there until I was about 21. In Israel I served two years in the Israeli army, and later worked for General Motors in luxury cars sales. I moved to Australia shortly after meeting my Australian husband and initially lived in Maryborough, where I did voluntary work with school children, performing group exercise activities. I have been part of the Gold Coast fitness industry for 17 years and have been working as a naturopathic nutritionist and iridologist for about seven years. Why do you love what you do? I just love, through practicing my modalities, being able to help individuals become the healthiest they can be. It gives me so much pleasure seeing my patients and readers explore what wholesome eating and lifestyle can do for their health, affecting not only the way they look but feel as well. What made you want to get into it? I grew up with my father after my parents separated when I was about 10. Around the same time, possibly attention seeking during a very tough part of my childhood, I became vegetarian, which I still am now (although nowadays I do include fish in my diet). Living with my father, there was a lot of unhealthy food in the house. Although he did buy some fruit and vegetables, I wasn’t the type of child that would go for an apple, peach or broccoli. I most of the time ended up filling up with ice cream, biscuits and chocolate milk. Of course I got chubby, tired and unhappy. In 2000, I began to study nutritional medicine. This was the start of a journey that over the years has changed my life and my entire approach to health, body image and eating. Tell us about your book? Why did you write it? In this era of information overload, I January 2015

Having lived on the Gold Coast for almost 20 years, Mermaid Beach local Maya Brosnan has certainly lived her life. The author of KIS and Lose Weight takes some time out of her busy schedule to talk to Get it decided it was time to put a book together that will take the stress and confusion away from achieving a healthier you. By teaching individuals to enjoy their food and learn how to better communicate with their bodies, while enjoying an occasional treat, I am helping many people bring more balance into their lives and take control of their weight. What’s something you do or enjoy that not many people know about you? I am a bit of a coffee snob. I believe life is way too short for bad coffee, peeling carrots and oh, that’s right, counting calories too! I also enjoy little treats like a glass of wine or chocolate with a great big smile on my face every once in a while. What are your top tips when it comes to the new year and a new you? • Keep it simple this year. Educate yourself and make gradual, longlasting changes to your eating habits and lifestyle. • Eat wholesome unprocessed foods. • Focus on foods that you can have rather than foods you can’t and enjoy an occasional treat with a smile. • Find a type of exercise you enjoy. • Learn to love and respect yourself and your body as you focus on bite-size personal results and achievements. Local resident and passionate yachtsman David Willmington says it is privilege to offer Papillon as a charter experience on the Gold Coast. “Showing tourists and locals the beauty of the waterways and seeing some of the exclusive real estate options along the journey is simply breathtaking,” he says. “The most popular cruise is the two-hour sail, which includes seeing the sights of the Broadwater through to Surfers Paradise, which is especially spectacular at sunrise or sunset.” Plan to get a group of eight together or simply book a special-occasion sailing experience and you will be guaranteed complete comfort. Get goal setting, gorgeous Goal setting, what is it exactly and who should do it? Entrepreneur and goal-setting genius Matthew Michalewicz shares his insights into the art

o it’s 2015, the new year, and your plan is to get organised and achieve big things. It’s the perfect time to start putting ideas in motion, list out your Larne Wellington goals and get into it. Goal setting isn’t a new concept, but it’s an effective one and Life in Half a Second author Matthew Michalewicz says you can implement it in any area of your life so your big dreams and visions can be broken into more management steps. Here he takes time out with Get it editor Elizabeth Campbell to shed some light on the subject. Why is goal setting important? I think it’s important for two reasons and the two keywords are focus and context. Most human beings - about 80 per cent, and most businesses are also in the 80 per cent mark - don’t have clear and precise goals, which means they are not focused on anything at any point in time. They are just operating. They are going through life, the motions and just existing, surviving and doing things from day to day. Whereas once you have a goal you start focusing on activities that will lead you towards that goal. You start looking for things you are going to contribute to that goal and it focuses your attention. It also allows you to make decisions within the context of the goal. Most people struggle with making important decisions and they ask their friends or they ask their advisers if they should do something; should I invest in this course? Should I change January 2015

“Once you have a goal you start focusing on activities that will lead you towards that goal. You start looking for things you are going to contribute to that goal and it focuses your attention.” career? Should I apply to this promotion? Should I leave my job and start a business? What these questions specifically signify is they don’t have clear goals. If you have a clear goal you would ask questions or you would evaluate opportunities within the context of those goals. You would ask yourself: Will this help me achieve my goal? Or is this a step towards my goal? Have you found this from personal experience and research? Or is this an actual proven fact? No, it’s a proven fact and even though I’ve used goals for a long time I really didn’t understand why they worked until the research, studies and statistics on them. I have always been that person who has written down things, focused on them and tried to achieve them, but it was really reading the research that explained it to me. When did you start goal setting? I think I started probably when I was 14 with weight training. That’s been almost 25 years. Who should goal set? That’s a good question. I want to say everybody, but I am not sure 100 per cent of the population would really benefit from it. The people who want to achieve something should goal set. If you are trying to get ahead in your career, are launching or growing a business, are in athletics or show business; whatever you are trying to pursue the achievement of something that’s when I think goal setting is of the most of value. How do you actually do it? The way I like to think about it is within your general direction of your life. You set some kind of goal whether it’s a position, a level of income, something measurable; something specific. You put a time period around it and then you work backwards. What needs to happen for you to achieve that goal? I like this concept and that’s where my goal pyramid comes from. It’s taking your end goal and unpacking that into all the other things that need to happen for you to achieve your end goal. It breaks down what you are trying to achieve into bite-size pieces. What other attributes do you need for goal setting? I think you have to be accountable, which is difficult for a lot of people. So the best way to be accountable is to force accountability on yourself. This concept of telling the public what your goals are is a form of accountability that you choose. The more people you tell and the more often you verbalise your goal, the more likely you are commit to it. Have a goal buddy, like a training partner, where you regularly meet and discuss your progress towards each other’s goals.

What about obstacles you come up against? I think in every journey we find obstacles and stumbling blocks. It’s rare that you set a goal and everything goes to plan. You always have challenges along the way. I like telling people the things that I am doing because I find that they comment on it, give me advice, open my brain up to new levels of thinking or they introduce me to people who can potentially help. When you get stuck, go back to what other people have done to overcome similar obstacles. Ask yourself is there a set of people that have achieved this kind of thing? What did they do? How did they overcome obstacles? What were the tactics they used? Are those tactics applicable to you? Also keep in mind that just because that you have a goal doesn’t guarantee that you’ll achieve it. It doesn’t guarantee success. It helps us achieve more than we otherwise would have. What is your best tip when it comes to goal setting? Get a good goal buddy. It’s always easier to do it with someone. Find a really good person who you get along with, who also has goals that they have committed to and make them your goal buddy. Do it together. 17

To Tinder or not to Tinder

that is the question

nline dating sites can be rife with unwritten rules, sleazy folks and loads of uncertainty…despite all the negative press, newly single woman Patty Kapua has found Tinder an adventure of online romanticism and courtship. Patty said when she started out in the dating game she had no idea of what to expect. “Or any idea of what I was getting myself into,” she says. “I’ve had a conservative love life with only two long-term relationships, spanning over 25 years. One of my longterm partners was a family friend and the other I met at a nightclub.” Patty, a managing director of Inner Spark Systems, now works with couples and

singles as a dating and relationship mentor. She runs weekly dating classes to help those navigate the dating scene. Before checking out dating sites, Patty thought the world of online dating was only for desperate, lonely people who lacked somewhat in the art of communication. “I envisaged those with online dating profiles to be hiding behind a keyboard, unsure of themselves and their own ability to connect with real people, but desperate to find the love of their life,” Patty says. “Since researching this topic (both in theory and in practice) I realised I was not alone in my own uneducated judgment. There are plenty of others who have had a similar beliefs prior to entering the world of online love seeking.

“We are all a little curious. Most of us just want a little fun and connection in our lives and online dating often presents a safe and exhilarating option to seeing what, or rather who, is out there.” So Patty set out to get to know the world of online dating primarily through Tinder. “For those who want to do more than ‘hook up’, the key is you and how you portray yourself,” Patty says. “It is all about the profile and so many people get it wrong. If you want to get the most out of this whole dating experience, you need to forget the fake and the bravado that you could present to protect yourself. Just be you.”

8 crucial tips to consider before venturing on to online dating sites 1 Ask yourself, are you ready for this? How much emotional

Patty Kapua

baggage have you checked in to take with you on this journey? 2 How long has it been since you’ve been “consciously uncoupled”? Do you have a perception of how soon is too soon to find new encounters or romance? 3 Have you severed all ties from you ex? If you’ve let him go, it may be time to see what online dating has to offer. If you haven’t, perhaps you should not jump in just yet? 4 Be honest with yourself: What is your intention on Tinder? What is it that you want in a relationship and/or with your sexual partner? Allow yourself to be honest and upfront. 5 If you do Tinder, allow yourself to feel and to experience: Yes, you can keep your true feelings locked away and choose to be detached, however,

in turn your sex life will be mechanical; missing the key ingredients of love and connection. 6 Be present: Being present in the online dating world is about connecting to your heart and mind, being comfortable about what you really want in a relationship and consciously being aware of how and what you seek. 7 Treat online dating as a judgment free zone: Be especially careful not to judge simply on image/photo or profile. You never know who may be hiding and who may rock your world with just a little conversation. 8 Be open minded and curious: You are online to meet new people and to be able to master the art of human connection through conversation. It’s not rocket science, however, we as mere human beings often make it more difficult than it needs to be. 18

From

“fridge junkie” to fit and fabulous

ulie exercised every day, she enjoyed her work as a labourer on a 12-month renovation of her property. However, once that was over she decided to take a rest and soon became a “fridge junky,” gaining 10kg in the 12 months following the project’s completion. She was unhappy with herself and needed a change. When she went to her monthly hair appointment, at the End Salon, Mermaid Beach, she was greeted by owner, Lisa, and thought she looked amazing, so asked her what the secret was. “Vision at Bundall,” Lisa says. “One day I just stopped the car on my way home and called Michelle at Vision to make an appointment. This was the first time in 10 years that I decided to put myself first and it felt good.” Listening to Lisa inspired Julie to call Vision and she hasn’t looked back since. She changed her eating habits to three meals and two snacks, including protein drinks and now also drinks two and a half litres of water every day.

Inspired by her trainer, Michelle, after only three days Julie thought: “I can do this.” “I really enjoy coming to Vision every week for my personal training. Seeing the changes to my body, feeling my improved state of mind and losing an amazing 9.4kg has made me unbelievably happy,” Julie says. “I owe it to myself to be kind to my body by nourishing it well and exercising every day. This is my new journey and I will continue to grow because of it. I could not be healthier and happier. I have also regained my self-confidence because of the changes.” If you are looking for a change like Julie was, take her advice and give Vision a call. “What are you waiting for? Book an appointment at Bundall. The team are fantastic. You will love your new journey to being healthy and happy. What more could you ask for?” Julie says. Thinner isn’t always better

here’s only one part of a woman’s body that she doesn’t want to be any thinner – and that’s her eye brows. If your eyebrows have always been too thin for your liking, or gotten thinner over the years, Lella Hammam is here to solve all of your brow dilemmas with 3D Brow Building. This revolutionary technique was developed in 2013 by two very talented and business minded women who realised not only were there gaps in their distressed clients’ eyebrows, but the beauty industry too and this had to change. London’s leading chemists spent two years to come up with this life-changing treatment that not only meets all manufacturing standards for 2015, but also many of the European Union standards for 2018 too. These chemists call 3D Brow Building a “super” grade adhesive and this treatment is now a super hero, saving people’s confidence, one brow at a time. With the rise in Chemotherapy patients, over-plucked and under styled brows, 3D Brow Building targets those who consider themselves “challenged” when it comes to showing off bold brows. Understandably this treatment has attracted a lot of interest and is

in hot demand with people realising their eye brow woes are soon to be history. Growth serums and eyebrow transplants are emerging as contemporary options to solve eyebrow issues, but unless you’re a super model, actress or other celebrity, these procedures are essentially out of reach. Many people will just settle for their eyebrows being sisters, because they can’t ever get them looking the same, but Lella Hammam focuses on symmetry and will sculpt your eyebrows into identical twins. Healthy-looking eyebrows with arches that are in proportion to your face shape is an enquiry away at Lella Hammam who offers the new and extensively-researched 3D Brow Building method. You spend time styling your outfit each day, ensuring your clothing, shoes and accessories all complement each other to make you look fabulous. So do the same for your face and complement your beautiful eyes, lips and facial structure with some gorgeous eyebrows. New year

new do

Welcome 2015 with a fresh new look. Whether it’s simply a spin on your style or a whole new ’do, a new year can spell a new you The options There are endless options for selfresurrection and the smallest of changes can have the biggest effect. TRY: Instead of wearing your hair straight, try it loosely curled and tousled. Opt for highlights throughout your dark tresses, deepen the roots of your hair for a nice ombre look or be really daring and go dark all over to give your locks the ultimate gloss. The colour of the year is varying tones of warm brown. Keep highlights and colour over them for an interesting, yet rich, look with dimension and variation, all while keeping it soft. NOTE: Be careful to choose the right tone for your skin and eye colour. Brown can be amazing and light you up when correctly chosen. TRY: A quick up ’do for a more temporary change. On trend hair This year boasts extra-loose, lived-in looks

for your locks. Hairdos have a come-undone look so your low half-done pony tail twist is now extra style savvy. Make-up When it comes to a new you, a new look is not complete without a face. Fresh skin is always in, so find the right make-up for you. HOT TIP: My favourite everyday make-up is Jane Iredale - a mineral make-up range with every colour of the rainbow. Personally, I like to use a small amount of the BB cream (hides a multitude of sins), followed by pressed powder lightly over the top. The result is flawless skin, great coverage, no caking and on in a minute. Remember less is more. A flash of bronzer and eyes always look good and mean you can be out the door in minutes. If you have been a smoky-eye fan try a nude eye with eyeliner to mix it up. RULE: The 2015 liner rule is eyeliner on top only for a clean chic look. If you just can’t let go of the smoky eyes then go for a very on-trend plum tone. It looks 29

super cool and amazing on our green and hazel-eyed friends. But never fear if you don’t have green or hazel eyes, there is a plum out there for you too. Now that you’re all inspired, happy new you for 2015. Amanda Higl is a well-known Gold Coast hair stylist and make-up artist. HEALTH

summer beauty problems solved -

with one product Beach hair. Tick. Pink polish on your toes. Done. Bronzed skin. Check

ou’re all ready for the hot weather, except for the seven deadly sins of summer that can dampen your mood quicker than an rainy day at the beach. There’s only one summer essential you need and Going Coconuts author Brynley King says it’s coconut oil. Here’s why… Chafing Let’s get the most embarrassing out of the way first, shall we? Chafing is a common problem that many people experience during our steamy Aussie summer. Fortunately, coconut oil can be used on any part of the body to not only prevent chafe from occurring, but also to heal sore and inflamed skin. Sunburn Forgot to slip, slop, slap and now you’re looking less like a bronzed goddess and more like a tomato? The properties found in coconut oil are known to relieve the pain of a bad burn plus heal the skin and limit peeling at the same time. Try patting a washcloth splashed with a little apple cider vinegar on burnt skin to relieve stinging before generously applying coconut oil mixed with peppermint oil to the affected area. Chapped lips A pop of colour on the lips can make any outfit go from good to great, but if your pout has been receiving a little too much sun, wind and salty air, even the most moisturising lipsticks aren’t going to glide on as they should. Feeling creative? Mix 1 tablespoon of coconut oil and olive oil with ¾ teaspoon of honey for a DIY lip treatment. January 2015

Ingrown hairs Razor bumps and ingrown hairs aren’t pretty but for many people they’re inevitable after any type of shaving, waxing or hair removal. Coconut oil is anti-inflammatory, anti-microbial and anti-fungal, which makes it’s a miracle pre and post-hair-removal product. Replace shaving creams or soaps with coconut oil for your closest shave yet before rubbing a decent amount into the area after your shower. Frizzy hair Unfortunately, humidity equals frizz. Before bedtime, apply a good dollop of oil to your lengths and ends, tie in a topknot and

The properties found in coconut oil are known to relieve the pain of a bad burn plus heal the skin and limit peeling at the same time. leave in overnight for a super nourishing and inexpensive hair treatment or use as an anti-frizz hair serum by applying a pea size amount to dry hair. Mosquito bites For many, this time of the year means outdoor barbeques, picnics and the occasional game of backyard cricket, however, it also means the mosquitos are out in full force. If these pesky little bloodsuckers make you itchy just thinking about them, then coconut oil may be your new best 30

friend. When applied to an insect bite, the oil is known to work faster than calamine lotion at stopping the itch and reducing swelling. Dry skin Bid dry, flaky skin farewell by mixing coconut oil with raw sugar for a DIY body exfoliator, then use the oil on its own as an all-natural, paraben-free body moisturiser. Turning a new leaf on your health in 2015 The new year presents a fresh opportunity to work on your health. This is especially the case if you feel there are areas of your health that could be improved

any of us get to the end of a year feeling worn out and overweight. But there are some simple tips that we can follow to kick start our health and feel energised for 2015. Tip #1: Plan to succeed We plan most if not all other areas of our life, yet many of us fail to plan our health. We allow our schedules to run us rather than the other way around. The old adage that if we fail to plan then we plan to fail is also true for our eating, exercise routines and our sleep. Start each week deciding ahead of time what you will eat for lunches and dinners, when you will exercise and how much sleep you will get each

night. This ensures we succeed at attaining good health rather than getting to the end of another year feeling defeated. Tip #2: Small things We all grasp the concept that in life it is the little things that seem to matter most. This is also true when it comes to making health goals. Start small and do not aim to change all of your bad habits at once. Focusing just on one small change a month will add up by the end of the year. An example might be to drink more water this month. Start each day by filling two large water bottles that you plan to

drink for the day. Take small sips throughout the day to stay hydrated. Once you have mastered one habit move on to the next. Tip #3: Have a health check How many years has it been since you had a health check? When was the last time you felt well? Feeling tired, unable to lose weight, irritable and unable to sleep should not be your norm. Yet so many people struggle year after year feeling this way. Make this your best year yet when it comes to your health. From good health all other areas of your life improve. Consider seeking some professional advice from an integrative doctor who will look at the root cause of your health issues and help you devise a plan to feel fantastic again. DINING with Chris Mcleay

Enter if you dare

The very sight of the Draculas Haunted House on the Gold Coast can send shivers down your spine, but what about the food? hen darkness falls, voices call, inviting you into the house for an amazing night of cabaret and fine food. The undead lurk around the front gates taunting guests to “enter if you dare”. I was fortunate enough to be invited by the team at Draculas to view the latest instalment of their hugely successful vaudeville cabaret production Spiderlash and to sample dishes from the three-course menu selection included in the package. From the moment my partner and I ascended the stairs into the Draculas castle, the playful bantering of the cast set the atmosphere for dark humour. A glass of Australian sparkling wine was offered before we were ushered to the amazing array of themed complimentary canapés for all VIP-pass holders. The nervous look on some first-time visitors to Draculas was priceless as the zombie and vampire-costumed wait staff walked by. Undead wait staff who remain in character throughout the night, encourage guests to chomp down on canapés such as brie cheese and strawberry fingers, prawn tornados and freshly rolled sushi. With drink in hand purchased from the ghoulish-themed bar where pre-dinner liquid courage is available, we joined the queue for the ghost-train ride to the dining hall. Not to give too much away, make sure you hold on to your drinks. Tightly! We survived the ride and were ushered to our table; centre dining area with a perfect view for the upcoming show. The bread on offer was baked January 2015

in the underground dungeons and served with a selection of three handmade dips, including a smooth hummus and a sundried tomato tapenade. While the band of the undead entertained the crowds with a twist on modern rock, our entrees arrived. A deliciously crisp tart shell filled with a textured filling of spicy chorizo, leeks, chickpeas and ricotta finished with balsamic and rocket. The ravenous hordes, myself included, unceremoniously devoured every last crumb. A mischievous vampire nurse took our maincourse order. I decided on the chicken breast sumptuously roasted with preserved lemon and fresh thyme, fused with streaky bacon and marsala jus. My partner opted for the pork belly with a lick of exotic Asian-inspired sauce, sided with silky sheets of creamed potato gratin. Also available was the Moroccan-style slow braised lamb shank on a soft pillow of saffroninfused rice pilaf and the delicate coriander and coconut-crusted snapper fillet, baked over fennel, with a kiss of kaffir lime beurre blanc foam. Once dinner was ordered it was then time to sample some of the cocktails that are as famous as Draculas itself. Undead with trays of all sorts of evil concoctions shuffled past with the eerie mists of 40

dry ice surrounding the room, we asked the nurse for her choice of cocktail. We were presented with what I believe was the haiku. A great mix of vodka, blue curacao and lemonade. Delicious. We also ordered a bottle of moscato and a few bottles of chilled Coopers. Main course arrived in what seemed no time at all. The chicken was superbly moist with the streaky bacon flavour seeping through the breast working well with the sweetness of the marsala jus. The meals are a generous size and have been well constructed with the emphasis on quality produce. My partner’s meal was also delicious. I should know, I ate half of it. The pork belly had taken on flavourings from the Asian-inspired sauce and I detected a subtle hoisin tone that complemented the pork perfectly. The curtains began to rise as we finished the last of our main meals completely satisfied. The cast are masters of crude comedy and the front men are greeted with a round of applause. As I squeezed in the macabre chocolate coffin of creamy bacio with roasted hazelnut, Frangelico liqueur and raspberry coulis, the cast of Spiderlash took over the evening and wowed the crowds who could not have enjoyed a better meal. WINE

Aromatic wines

with Justin Leith

for hot summer days

Summer time is here and all I can think about with the warmth of the sun on my face is sipping some delicious aromatic white wines, writes Justin Leith grape and often the wine makers too. This may be because riesling can wear so many hats and range from the very sweet German Auslese style up to the bone-dry styles we see coming out of the Clare Valley in Australia. Riesling can have a many varied array of flavours from the citrus spectrum of limes, lemons and mandarins to the tropical spectrum of papaya and mango to the orchard with green apples to the floral spectrum too. Albarino can portray stone fruits, citrus and floral notes but it has great natural acidity that gives the wine a nice crispness and pairs with seafood beautifully. Sauvignon blanc, of course, is in the aromatic family and the best come from France in appellations such as Sancerre and Pouilly Fume where the terroir gives the wines finesse and minerality subtlety and depth. Some would argue that New Zealand is making some of the best sauvignon blancs in the world. With their upfront fruitiness and their herbaceous notes, which can be super concentrated and pungent. However, there are many other great examples apart from Marlborough. Check out other regions such as Martinbourouh and Nelson that are also making a great sauvignon blanc. Cheers and Merry Christmas to all.

he term aromatic wines refers to grape varietals or wines that have pronounced aromas and flavours and tend to be un oaked as barrel fermentation can spoil these gorgeous fresh fruit aromas and tastes. Aromatic wines tend to be fresh and vibrant with pronounced acidity that gives the wine lively fruity characters. Therefore these wines rarely go through malo lactic fermentation, as the acid is the key attraction. The home of aromatic white wine is definitely found deep inside the Vogue mountain range in a beautiful village named Alsace. Alsace is located on the border of France and Germany, and is technically now in France but once was a province of Germany before the end of World War II. From this region the grapes that are grown include riesling, pinot gris, gewßrztraminer and pinot blanc. With the new popularity of pinot gris, look towards Mornington Peninsula in Victoria, plus Tasmania and New Zealand as many producers from these regions are really making fantastic gris. Riesling is often the true wine-lover’s favourite

H Scorpio Oct 23 – Nov 22 New ideas can appeal as options for sharing your knowledge or for studies that can give you a cutting edge arise. You’ll want to apply yourself on the financial front too as you consider ways to budget or increase your earnings. Later in January, getting organised at home could enhance your creativity and perhaps energy levels too.

H LEO July 22 – Aug 23 As Saturn becomes established in your romance sector and zone of pleasures, you may become more serious about your talents and hobbies with a desire to take things further. In addition to this, it is likely you’ll be busy at work this month, so pace yourself to reduce any potential for pressure. This month will also find you becoming more conscious of your health and wellbeing.

H Sagittarius Nov 22 – Dec 22 Saturn puts the pressure on you to focus on important goals. It is going to be with you for much of this year and will press you to prioritise wherever you can. Communication is enhanced by the Aquarius new moon on January 20, which will be ideal for promoting yourself or finding new, engaging interests. With your ruler Jupiter in retreat all month, look to conserve your resources.

H Virgo Aug 23 - Sept 22 Romantic opportunities look bright, with a fiery focus on dating and light-hearted affairs. But remember, for you to really be at ease, you must feel emotionally secure. Saturn also asks you now to think more seriously about where you live, who you live with and how. A relocation could be possible this year, or some extra family responsibilities.

LAST WORD

with Sarah Blinco

Are sheep

really doomed?

We have a lot to be grateful for this year, so let’s make that our focus ecently over Friday drinks, one of my friends blurted out, “Where do all the letters sent to Santa addressed ‘North Pole’ actually go?” Fair query. I began to investigate this ever-so-serious matter so I could share answers with you, until I realised it’s January already. Whoops, time to move forward. Here we are, the beginning of a brand new year brimming with possibilities and potential. I am not at all prepared! Usually by now I’ve drafted intentions on paper and have a plan of attack at the ready, but this year not so. There’s a little voice nagging in one ear telling me how disorganised I am; and into the other ear is a whisper insisting it’s cool, that I’ve finally grasped the notion of “going with the flow”, allowing surprises to come my way. Good start to the year, I reckon − hearing voices and all. Where to commence without a plan? Being the girl I am, last night pondering it, I added all the numbers together: 2+0+1+5. Eight. Bible scholars say the number eight signifies new beginnings, which is pertinent. Of course, the number eight is also associated with good fortune according to various Eastern cultures. Perhaps we’re all off to a lucky start? It turns out 2015 is the Chinese Year of the Goat (or sheep or ram) and guess what, it’s my year! January 2015

Upon further investigation, I discovered it’s not actually my year at all. In fact, many who strongly believe in the Chinese zodiac hope they do not have children born in 2015. It’s unlucky, devoid of magic and miracles. Oh, and we sheep should definitely steer clear of the number eight. Double whoops. As I understand it, we are apparently doomed. Awesome. “Sheep are thought of as loyal, generous and kind.” How lovely, I thought, until I continued researching ... “Traits not so useful in a dog-eat-dog world.” Bit depressing! I’ve decided to ignore all this doom and gloom though. If I was to buy into it, I’d be pretty lame, not because of any superstitious beliefs, but because on one swift sweep of the overall scenario, it’s obvious we have it pretty good today. Delve back to a significant moment in our history – 100 years ago this year, April 25 (the date of my birthday, actually), our troops landed at Gallipoli. It is one of many, many tragic war-ravaged days gone by. In that Great War, nearly 40 per cent of our small population of under five million was enlisted for service. Everyone in Australia would have been touched by it; but I was born free, and I consider that lucky. This was further reinforced by an ActionAid campaign I spotted recently. Called The Worst Period of Her Life, it’s designed to raise awareness and money for 50

the distribution of sanitary kits to female refugees in places like Syria and Afghanistan, so these poor women can retain dignity when “that time of the month” comes. Surveys of Western women indicate over half wouldn’t go to work if unable to access these products. How heartbreaking − and truly unfortunate − that on top of everything else that’s fallen apart, many women don’t have access to a whole host of products and services which we take for granted as absolute “basics”. No, it’s not about comparison and I don’t intend to put a downer on your New Year celebrations. My point is though, we are lucky. No year is without its highs and lows, but if 2015 is challenging (for goats or otherwise), then let’s tackle it gracefully and gratefully. Are we unlucky, even in the Year of the Goat? As a goat, sheep ... or perhaps ram, I choose to see most certainly I am not. I − we − have freedom and hope. We can access an education and medicine. We will not be prosecuted for dreaming big! What a fortunate gift. Speaking of, I did find out about those letters to Santa. They actually go to Canada – there’s elves on the task there, but they’ve got a lot to get through, so if you send your note soon, you’re more likely to receive a reply for next Christmas. There is always magic and good fortune in the world for those keeping an eye out for it. Happy 2015!
