Before the seasonal flood of celebs engulfs us all, a quick review of Spring’s noteworthy noshes. They’ll seem quaint come July! Back in April, Justin Timberlake and Jessica Biel ate burritos without shame at La Fondita, where Josh Lucas celebrated Cinco de Mayo a week later. ☛ Also in April, over at Nick & Toni’s, Jimmy Fallon broke bread with Lorne Michaels, hashing out the details (we can only assume) of Seth Meyer’s future. ☛ Candice Bergen dined with her family nearby but managed not to squeal.

The city mainstay will be in residence at The Capri thru Labor Day in Nobu’s old digs. Chef Cliff Crooks, an alum of Blue Water Grill and Gramercy Tavern, gave us the deets. Any Hamptons menu musts? Tuna tartare, which is a BLT Steak staple. It’s so fresh and light. How do you like your steak? Medium rare. What’s the secret behind those insanely popular popovers? Tender loving care. Topping Rose House is fully up and running. The restaurant portion of Tom Colicchio’s 151-year-old Bridgehampton outpost had been slated to open last summer, but was delayed until September. This weekend he’s christening the 22-room inn portion, which boasts a Naturopathica spa, wellness center, and revamped barn for events. Why the redesign? It was time. The restaurant was last redone 20 years ago. This year we’re doing brunch again, and while looking around in daylight, I realized it needed a re-do. We wanted the design to be more contemporary, so there’s natural wood and white oak. We added banquettes, and our iconic art pieces are still there. It’s really open and fresh, but it’s still the same restaurant. How painful was it? We did it all in six weeks. Pretty amazing! Different trades were all working at once; everyone was here at the same time, climbing over each other. After a quarter-century in biz, does the competition still stress you out? I’d be lying if I said I didn’t keep an eye on it! But I don’t lose sleep worrying about the competition. I stay up at night wondering how we can make ourselves better. Celebs flock to Nick & Toni’s. Any big fish you still haven’t landed? We have everyone from Paul McCartney on down. It runs the gamut. Maybe I’m jaded.
