Letter from the Editor

Taking a peek at your local conbini it has become evident that the big boys of beer in Japan have taken a serious notice of craft beer by making their own rather craftish-looking beer.

Products such as The Pumpkin and Galaxy Hop Session IPA are now available. This approach is very different from their counterparts in the US who just buy up craft breweries. On one level, Japanese beer manufactures are getting the names of new styles to market. Hopefully consumers will be inspired to find better versions of these styles that are actually produced by craft breweries.

A larger question remains though: how best to bring craft beer into the mainstream. At BEER ZEN we believe one of the most effective ways is for breweries and restaurants to educate the Japanese public about how to pair food and beer. Japanese love to eat and drink and while the typical mass produced lager goes well with any Japanese dish, there are many other styles that can complement a meal even more so. So, for this issue and next we will be looking at just that. This issue we take a peek into food and beer pairing and next issue we will speak with a group in the USA, The Culinary Underground, that is educating as many people as possible by doing brewery and food pairing events. Fingers crossed, we will be bringing their expertise to Japan for an event next year.

Sierra Nevada Moves Westward

A few years ago, the East Bay beer fanatics went abuzz with the news of Sierra Nevada opening their Torpedo Taproom up in lively 4th Street district of Berkeley. For many lovers of beer in Northern California, the flagship beer, Sierra Nevada Pale Ale, was their introduction to what beer should be: a beverage with the full flavor of the malts, grains and hops going into the brew. Every brown bottle with the bright green label could be enjoyed more than an entire 6-pack of the metallic taste of the corporate beers our fathers drank during our childhood.

Drinking Sierra Nevada beer wasn’t about quantity; it was learning to appreciate the skill level each master brewer brought to his beer.

The Torpedo Room pours their wellknown Pale Ale, Pilsner, Stout, Porter around the year. The seasonal beers, such as the Oktoberfest, the Celebration IPA and Summertime Lager make their, well, seasonal appearance. However, the specialness of the taproom to visit is in the beers that have a limited release, or often don’t even make it to bottling. These beers are the results of experimenting with the traditions, introducing new hops at the finish, or finding the right barrel to let the wort age until it is smooth and full of the flavors imagined by the brew master.

Tropical IPA The Torpedo Room poured a wonderful surprise last summer with a new IPA. Far from the expected fruit infused beers taste, this Tropical IPA created its magic from infusing the right hops at the right time. There is wonderful ripe papaya and guava nose, a very slight banana essence, but a crisp hop6

piness to cleanse the palate.

Best of all, the Tropical IPA is said to be made available next year in bottles!

Harvest Series This series of ale has something for every fanatic who savors the bite and floral finish of fresh hops. There is no other way to describe this beer: it smells of fresh, dank marijuana. This is a fair enough comparison since both hops and marijuana plants are somewhat related. The fun of this series is its emphasis on new strains of locally grown hops, many never used in any beer before, and its emphasis on using them soon after harvesting.

Ovila Quad Brandy Barrel Aged This series of beers is brewed with a partnership between Sierra Nevada and a California monastery. This brandy barrel aged ale sets itself apart from the plethora of bourbon barrel-age ales by its sweetness of the distilled wine remaining in the wood of the barrels. The pour is thick and dark, but the scent highlights are earthy fruits. Though plums and raisins come to mind, the slight sweetness from the brandy and the 10.4% ABV make this very drinkable on its own.

Tequila Barrel Aged Lime Ale The name brings to mind many a hungover morning full of regrets from

the night before. Don’t let the name turn you off! This is very drinkable ale that has the aromatic pepper and brown sugar of a great tequila, but just a touch of lime to cut the sweet. There is nothing to fear from it.

Bigfoot Ale This barley wine style beer has been part of the Sierra Nevada tradition for over 30 years. Well before the barrel-aged trend, Bigfoot Ales can be enjoyed right away, but are built to store away to see what characteristics develop over time. Every year features something a little new from the previous year.

What doesn’t change every year is the deep amber color, the big malt and toasted grain flavors.

June 2015. I had had no luck tracking the Captain down again in stores for a couple of months. Then suddenly it Jeremy McMahon looks into the rise of re-emerged. I ventured into, Captain Crow now held a prominent place on the shelves. And, more surprisingly, I would go back to these same stores merely days later to find it sold out. It seemed that people knew; the word was out.

Japan had begun to embrace a new craft hero.

But let’s go back a bit. To July 2014. The folk at Oh!La!Ho Beer, a brewery started in 1996 in Tomi City, have just released a new ale. Captain Crow had the hallmarks of being a success – great taste, name, and packaging – but this was reliant on a key piece that had been missing previously: a distributor. They realised that wide circulation would not be possible otherwise, and have felt the advantages since signing on with one last year. Contributing largely to planning and sales, their distributor has helped them take the steps needed to jostle their way into fridges nationally, where competition for space is hotter than it’s ever been.

Another decision that has reaped benefits: can it. It’s a major reason why Yo-Ho, Coedo, Echigo, and Ginga Kogen get into your store, and why Oh!La!Ho has been able to work well with its distributor. Totsuka informs, “Trading companies and wholesale distributors overwhelmingly support beer in a can; the logistical ease of storing and handling the product is an important factor for them.” This means wider circulation and consumption.

Now popularity is picking up. The brewery is getting more recognition, having more showcases, and receiving more inquiries. This is, in no small part, thanks to Captain Crow, which presently sells about one thousand cases per month. It’s a beer that looks to be taking Oh!La!Ho to the next level.

Something equally as refreshing as their delicious beer is that they know the importance of their customers. They regularly consult with them at events and value their feedback. They also place commensurate value on getting kegs into bars, giving people the option of drinking Oh!La!Ho fresh from the tap, or casually buying it around town. “Beer on tap goes hand-in-hand with the development of beer in cans,” conveys Totsuka. “They’re wheels on the same car.” Or, perhaps, sails on the same pirate ship?

Kuidaore translates to literally eating yourself into bankruptcy.

With a wealth of internationally recognized chefs, an abundance of fresh ingredients from both the land and the sea plus an excess of willing and hungry patrons, there is every reason to see why Osaka is called, “Japan’s Kitchen”.

Japan’s kitchen I wonder if there is a word for eating and drinking oneself into bankruptcy?

Kansai is home to 14 out of the 31 Michelin restaurants in Japan and there are thousands more established eateries in Kansai from some of the world’s leading fine dining restaurants to the kitsch stands, stalls and stores located in hidden alleyways and side streets.

Many are booked out weeks or even months in advance and it is not uncommon to see people lining up for hours on end for the chance to experience the latest gastronomic developments most of which perfectly fuse the traditional with the ultramodern.

However one major problem emerges with all of these dwellings plus the dozens of exciting new places popping up weekly, that is that you could quite possibly die before you get to try them all.

Factoring that in, settling into a restaurant for the night seems like a waste of time for myself and my taste buds so naturally one of my favorite things to do on a night out is to head to as many places in one night as possible. I often stop by for a beer and a recommended dish at as many new places my stomach or wallet will allow. This allows me to enjoy Japan”s Kitchen as much as one can.

To get the most out of my experiences and slim wallet, I took to studying food, beer and craft beer pairings so that I could fully appreciate every crumb and droplet that passes my way. So for this issue I have decided to share a little of what I have absorbed along the way.

The Golden Rule The first rule of beer and food pairing is… there are no rules.

A quick guide to pairing beer that is…

When it comes to taste “each to their own” is the golden rule.

Here are a few pointers to help get you started on your own gastronomic adventures.

As a simple rule of thumb, anything that goes with bread can go with beer. Beer is basically made from the same ingredients as bread.

So think of your favorite sandwiches and you are away. Into cheese melts? Try your favorite cheese with a toasty stout like The Dark Side from Outsider. Prefer salads? Something slightly hoppy and fruity with pine notes might suffice like a Pale Ale from Hitachino Nest matched with a green salad.

Not everything you try will be a homerun but there is a certain joy in finding a special something that satisfies your own personal taste.

What are the three big C’s?

I’m glad you asked that question.

Three big things to consider when eyeing up a menu are contrasting, complementing and cutting. Allow me to elaborate a little.

Complementary flavors.

To balance your beer with food or your food with beer keep light with light, sweet with sweet and robust beers with hearty meals.

For example, fruity beers go really well with sweeter foods so try a Yona-Yona with a sweet taste or desert and wash down a spicy curry with a nice rich Minoh Stout, and if you happen to have a Red Rose Amber Ale from Baird go looking for some nice tempura to match with its bready malts. Contrasting flavors.

Contrasting is where things get complicated. There are many established guides many of which can be found on Beer Zen’s Facebook page, which can help you understand the complexities and science behind gastronomy. There are a few common truths that sustain time and cultures.

For instance salt intensifies sweet, as a consequence nuts or french-fries have gone hand in hand with beer for decades.

Creams, sweet, and bitter are a winning combination; think about how bitter chocolate topping adds to the enjoyment of ice cream or how well a jam and cream scones go so well with tea. If you taste your beer before ordering a meal and it comes off a little creamy and hoppy we know something sweet from the menu will balance out the flavors so look for some nice honey glazed ribs, some ‘tare’ yakitori or perhaps a sweetened omelet if you prefer. By combining the right flavors we feel more satisfied and content.

Cutting.

If you enjoy spicy food like me but look like a beetroot afterwards sweetness can help tame the beast. Whenever I find Baird’s Double Piston Bock, I head straight for my favorite Indian or Thai restaurants. The sweetness helps balance the spiciness and allows me to concentrate on all the delicious flavors.

The bitterness in hops can help cut the sweetness in your beer and the fat in food. I had quite a moment recently when I asked a local brewpub which food they recommended for their signature beer, the knowledgeable yet slightly aloof reply was “Fatty food like American food”. I did however end up enjoying their high BVI IPA with a delicious deep dish Chicago pizza. And yes it was the perfect combination.

Whether cutting, contrasting or complementing I hope you too can now take more time to appreciate and enjoy beer alongside your meal and start to enjoy the amazing world of matching the best beers in the world with your meals whether you are in Japans kitchen, your own kitchen or whever you may be in the world.

This year my travel plans coincided with Craft Beer Association, now called the CBA some beer festivals so I’d have been foolish , over the last 17 years it has grown to host not to take advantage of it. Standing in a crowd holding your glass for hours leads to spilled beer and broken glasses a bit too often.

If you want to try as many beers as possible without breaking the bank this is the fest for you.

Great British Beer Festival The GBBF takes place in August during Obon which means people living in Japan can actually attend if they want to: the 2016 dates are August 9th-13th so start planning now.

Organized by the Campaign for Real Ale (CAMRA), it was first held in 1975 making it the Grandfather of Beer Festivals and like your grandfather it is wise beyond its years.

Your ticket to beery bliss costs 12 pounds for a day pass or a season ticket good for the five days of the festival is 26 pounds.

Discounts for CAMRA members on admission and merchandise at the fest are available so if you’re planning to buy a lot of stuff during your trip joining might be worthwhile.

Entering the Olympia Exhibition Center I was greeted by a beautiful massive hall with tons of glass letting natural light fill the space. Front and center was a booth with glasses in third-pint, half-pint and UKpint sizes. Getting a glass was easy: pay a £3 deposit, choose your size, drink, return glass for deposit or keep it as a souvenir.

Behind that booth you had 20 odd bars featuring over 900 beers, ciders and perries.

The focus was on casks of domestic brews but fantastic beers from all over the world were also available. The GBBF system is cash on delivery with prices for thirds about £1.10 to £4 depending on the beer and size. I encourage you to explore the fantastic cask ales using third-pint pours in a half-pint glass so that you can enjoy more beers without getting too wasted. Well until you’ve been there five hours or so anyways...

This festival is well nigh perfect: spacious convenient location – check, friendly knowledgeable staff – check, tables and places to lay down your glasses – check, great food and merchandise – check The only downside would be the noise but that isn’t surprising, when you cram thousands of people then add alcohol you’ll definitely get constant conversation noise going on in the background!

If you want to explore the world of beer from stouts to alts, beer festivals are a great opportunity to do so in one place. I recommend any one of these festivals but for a truly amazing experience the GBBF delivers the goods. My next challenge: attend the Great American Beer Festival and drink some of its 3800 different beers in Denver. Now how will I convince my day job to give me the time off, hmm...

Kamikaze

Craft Beer Works Kamikaze, commonly known as Kamikaze, celebrated its 3rd anniversary in June 2015. The bar is located in Horie, central Osaka. They have 23 taps and two hand pumps, all of which serve domestic craft beer.

In July 2015, owner Ryuta Hayashi organised an event where he brought craft beer and a club event together. “Most beer festivals or beer related events are held under the blue sky with ‘fun’ music and designed to be a refreshing event, but I thought something on the opposite side would be interesting; combining beer with something not so ??” Putting this event together was not so easy, as night clubs usually do not let people take in their own drinks. He managed to put this event together after making connections with the nightclubs in the vicinity. The whole purpose of this event is to add a new segment of the population on top of those that already enjoy craft beer.

“I think it’s worth having the people in their twenties or thirties that go to night clubs to taste craft beer so they’ll be more interested in 5, 10 years from now.”

“Not many craft beer bars in Kansai take this approach, so I think it’s kind of my mission.” Hayashi says that the event won’t be a one-time thing and that he plans on having it regularly.

In addition, at the bar manager Tetsuya Yamada’s suggestion, Hayashi, recently started serving selected whiskeys at Kamikaze.

“Malt connection”, says Yamada.

大阪市内中心部の堀江にあるCraft Beer Works Kamikaze（通称カミカゼ）、は2015年6月に3周年を迎えた。23タップ とハンドパンプ2つ、すべてに国内のクラフトビールが繋がってい る。 2015年７月にオーナーの林隆太氏は、クラフトビールとクラ ブを「融合」したイベントを開催した。 「ビールイベントってだい たい青空の下で気持よい音楽で！って爽やかなイベントが多いの で、その真逆も絶対面白いと思ってやりました。」と林氏は言う。 通常、クラブへの飲料の持ち込みは難しく、このイベントの開催 は決して容易なものではなかった。土地柄、周囲にクラブも多 く、スタッフとの繋がりも出来て、実現可能となった。 ここまでして、このイベントを開催したのには理由がある。 「 新しい層の掘り起こしをしたい」林氏は言う。「今現在クラフト ビールを楽しむ層に加え、クラブで遊ぶ20〜30代の層に美味し さを知ってもらうことによって５年後、10年後にあの辺りで遊ぶ やんちゃな人達にもじんわりクラフトビールを好きになってもら いたい。」こういう層へのアプローチは関西ではまだ少ないかも しれない。 「大袈裟に言えば、僕の使命かと考えています。」とい う林氏は今後もこのようなイベントを開催し続けていくという。 また、最近になって、Kamikazeではウィスキーを置くようにな った。店長の山田哲也氏の発案。 「モルト繋がりですよ」と言う。 次にどのような楽しみを生み出してくれるのか。今後のKamikazeの動きから目を離せない。 facebook.com/cbw.kamikaze

2014 年11月に1周年を 迎 え たばかり のFujiyamaはKamikazeに続いて、林氏 がオープンした2 店舗目である。両 店舗が 至近距離にあるのは偶然だったというが、 その 距 離 の 近さを 最 大限に活 かすことに した。差異を考えていたときに、輸入のク ラフトビールを専門に扱うビアパブが大阪 にはまだなかったことに気づいた。「輸入 もののビールがあまり好みでなければ、数 分 歩いてもらって、Kamikazeに行って国 内のものを楽しんでもらえれば．．．。もち ろんその 逆も。」両店が 離れていると、国 内、海 外 のビール をどちらも置くことにな ってただろう。「近いからこその、より振り 切った業態に仕上げることができました」 林氏は言う。Fujiyamaでは、アメリカ、オ ーストラリア、ニュージーランド、そしてヨ ーロッパのビールを取り扱っている。 以前はKamikazeで働いており、現在 Fujiyama店長の松尾みどり氏曰く、 「Kamikazeとは雰 囲気 が違う。どちらかとい うとF u j i y a m a の方 がカジュアル な 雰 囲 気 。客層も両 店 では 違う。クラフトビール を飲みにくるというお客さんよりも、肉料 理を楽しみに来られる方が多い。」 店 内 の 内 装は 、至ってシンプル。広 い 目のカウンターには、殻付きの落花生があ る。「お一人さまにも、気兼ねなくゆっくり してもらいたい」松尾氏は笑顔で言う。 facebook.com/nikubeer.fujiyama

Just a few minutes walk from Kamikaze, Ryuta Hayashi opened Fujiyama in November, 2014. They just celebrated their first year anniversary in November. Whilst thinking about characterising the two bars, he realised that there wasn’t a bar that served ONLY imported craft beer.

If customers did not favour imported ones, they could walk two minutes to Kamikaze for a domestic selection, and vice versa. Hayashi said, “If the two bars were farther apart, I probably would have kept both import and domestic at each. Because of the distance, I was able to differentiate the beer selection.”

At Fujiyama, customers can enjoy a selection of US, Australian, New Zealand and European beers on 7 taps.

Midori Matsuo, the bar manager now, formerly worked at Kamikaze. She sees the two bars being different in many ways. “I think Fujiyama has a more laid back atmosphere. It’s not all craft beer lovers that come here. Some people come here not knowing that we serve craft beer. They come for our meat dishes.”

The very simple interior that Hayashi himself designed and their wide bar counter welcomes you with complimentary peanuts.

“You never know what could become a conversation starter”, smiles Matsuo.

The Lost Beer Girl and the First Beer In Belgium

The bartender at the Brewdog bar in Brussels looked at me weird when I said that I only wanted one glass with my 75cl bottle of Cantillon’s Gueuze. First of all, I just moved to this city yesterday, so I don’t know anyone here yet that I can share my beer with.

Second, I honestly simply want to explore this bottle and have it all to myself (except if someone were to actually ask for a taste).

Right now, I am on the last drops of this fantastic Gueuze and I’m seriously considering getting another one because it’s really good,

and about three times cheaper than back home in Sweden. If one can find it in Sweden that is.

These last two weekends (Sept. 24th-26th and Oct. 1st-3rd), I have been working way too many hours a day at a beer festival in Stockholm called Stockholm Beer and Whiskey Festival. Working at the festival required being there from ten o’clock in the morning until midnight, like I said: way too many hours of sweat and labour. And on the last night of the festival? Well, we were there

even later, cleaning and emptying beer bottles, and sorting kegs. As is custom at the end of every beer festival, all the bartenders, brewers, and diverse workers go out for (surprise) even more beer (that we have to pay for this time).

By the way, I lied to you. Remember I said that the festival consisted of too many hours of sweat and labour? Well it wasn’t just sweat and labour. Half the time, we were walking around trying the new beer and whiskey that other brewers and importers had to offer.

There was quite a lot of liquid candy Available. Good thing we had two weekends to make sure that we didn’t miss anything.

You would think that we’d have had enough beer during the festival and not want to go to a bar for even more beer once it’s all over. But this is different!

It’s when we finally get to relax knowing that we would actually get enough hours of sleep that night. It’s when we get to hang out with each other, cheer with our glasses, talk about which beers were good at the festival, which ones were innovative, which ones were boring or surprising.

Like Stockholm Brewing’s Gose with Chanterelles, it was crazy and oh so good. Or Garage project’s White Mischief, a peach sour that one can drink all day long. Did anyone try Beavertown’s Yuzilla Phantom?

This is the kind of conversation that we have time for now that the festival is over. Call it an evaluation. Once all the opinions, hugs, beers and cheers for the night have been shared, we all grab a cab and go home for some wellearned sleep, hopefully not alone. Except for me. I got home, took a quick shower, grabbed my suitcase, and hurried to the airport. Hey, who needs sleep when Belgium and its delicious beer is waiting for you?

BY MARK BUCKTON PHOTOS BY CHING YEH LIN & MARK BUCKTON The leaves have turned, temperatures plummeted, and millions of hiking boots have been dug out in preparation for hiking season in and around the Kanto plain.

Yet for any self-respecting Tokyo based hiker also into decent beer, the options have long been limited on how to combine a decent walk in the hills with a few brewskis at the end of the day’s up and downs.

Okutama, way out west on the Chuo Line and not far from the Yamanashi border is criss-crossed with decent hiking trails; most centered on Okutama Station in the village of the same name.

But decent beers or places to pick up a bottle or two has always been a bit of a problem.

Most heading to Okutama in recent years wrap their walk at the village’s only supermarket – you cannot miss it – pick up a bottle or two of a local beer produced by Fussa-based Ishikawa Brewery and venture across the street past the local shrine and down to the riverbank.

The pilsner and pale ale offerings Ishikawa has on the market are more than worth the ¥600 or so charged. The porter is not bad either but does lose a lot of its flavor rather quickly. The traditional Meiji-era (1868-1912) recipe brew is incredible!

For the past few months, however, Ishikawa’s domination of all things beer sold in Okutama has had competition.

Always a good thing for drinkers, said competition comes in the shape of BEER CAFE VERTERE. Located in a back alley of the village (see TIP below) VERTERE occupies a plot of land combining a former residential home and (for Tokyo) large garden.

The interior is decorated in simple plain wood, matching tables and chairs offering limited distraction as it is, after all, the beer you are here for.

The wooden deck out back is a nice place to sit post-hike. Similarly plain in form, and for the most part surrounded by trees, it does lose brownie points when fumes from the local bus station are blown through the trees on a windy day. Oh – and the local ‘suzume-bachi’ wasps are massive – if they want your beer just give it to them. These monsters can kill!

Drink menu wise, things still seem to be settling down. Taps are limited but bottle options plentiful and seemingly ever changing. Much in the way of bottled beer is imported from the US although there are usually a few Sankt Gallen brews as well as much rarer Italian beers on offer albeit at prices a tad higher than in central Tokyo.

On tap, regional brewers such as Brimmer Brewing (Kanagawa) and Hitachino Nest (Ibaraki) beers are well represented and should be sampled first.

COEDO’s pilsner and IPL beers from Saitama, just north of Okutama, have been seen on the menu too of late, as has the wonderfully named ‘finisher’ Nine Tailed Fox 2014 – an 11% barley wine found in only a handful of places around the capital. The perfect accompaniment to cheesecake apparently!

Ishikawa ‘buying’ TIP: do ask for the bottles to be opened before you leave the store if you will drink them before heading for the train – unless you have incredibly strong teeth that is!

CAFE VERTERE TIPs: 1. ignore Google Maps when trying to find this hideaway for the first time, and just find the local police box. VERTERE is on the left around 50 meters up the narrow lane next to the police box.

Appendicitis tried to ruin my life…well, along with Japan customs. The two conspired to keep me from the Prairie Artesian Ales Tap Takeover. The plan was for just after Obon, but customs held the beer up for a week. That’s when Matt, owner of Imazato, had an idea: ALL Japan Prairie Artesian Ales Tap Takeover. Phred loved the idea, and on August 28th, Prairie Ales were enjoyed in Sapporo, Tokyo, Nagoya, Osaka, and Okinawa…by everyone but me.

Then, a miracle. Imazato planned a Saturday takoyaki party, and I was there. Sure, there was pain, but there was Bomb! Imperial Stout.

The 13% thick but silky smooth beer took the pains away. Though I had had it in bottles, it was a joy to have it on tap. Chocolate and coffee, with chili coming through more than in the bottle, made for possibly the best balanced beer ever. It was neither sweet nor acidic. The nose starts out chocolate and then moves towards coffee as it warms. It absolutely fills the nostrils. After 2, I was in dire need of an appendectomy.

But, instead I had a taste of the other two Prairies on tap. The Prairie Brett C Saison Farmhouse Ale at 8.1% is a bit high for a saison, but if you lived in Oklahoma, you’d do your damnedest to be drunk every night too. The nose was all grapefruit and the taste was bitter—like grapefruit pith (you know, the white part of the peel).

The Wild Sour Ale (7%) was just after the saison and the nose was also grapefruit along with lemon, though it had a sweeter smell. It was like carbonated grapefruit juice. Now, before you take that as an insult, I am a friend to all in the citrus family, and I do love my grapefruit. I am NOT a sour guy, but this beer was really nice.

There was some delicious cask canned smoked cheddar and The Kernel session ale (3%) shared by RicWick. All-in-all, a lovely day, at the “cheers-esq” Imazato (quote from Sept. Kansai Scene, though originally in the Dec 2014 issue of Beer Zen. I’m not bitter, plagiarism is the highest form of flattery.)

And, I took home a bottle (or two) of Prairie Noir, because what is more dark side than “noir”? It’s an Imperial Stout aged in oak whiskey barrels for an 11% treat. It is truly the blackest of pours with the brownest of heads. I am a HUGE fan already. A nose of wood, coffee, cocoa, and either whiskey or brandy.

It has champagne-like bubbles and tastes of licorice and whiskey. I start drinking it on an empty stomach as dinner cooks, and I am buzzing. Chocolate, slight coffee, but the licorice never disappears. This beer has a loooong finish. As it warms, there is a nice earthy sweetness. I am thrilled I have another.

Based on price, though, the Prairie Bomb! is the way to go. It satisfies everyone, every time. I believe you can still get a bottle at Imazato, “where everybody knows your name” (Dec 2014, Beer Zen The Dark Side). Also, take note: I have been told that a new Prairie Tap Takeover is coming to Imazato. Barring medical emergency, you can see me there.

The coastline of Akashi City in Hyogo looks out over the Harima-Nada sea. Awaji Island lies to the East and stretches off into the distance and on a clear day you can see Tanga Island in the distance off to the West. What a pity I could barely make out either; it was dismal and raining when I went to interview brewery staff Aya Shiro and Satoshi Hashimoto about Akashi brewery and their beers, and why it’s great being a brewer in Kansai.

Shiro: Akashi Brewery was founded in 1998 by the company, Nagasawa Foods. Seigo Na兵庫県明石市の海岸線から目の前に は播磨灘。東に淡路島が遠方に延びて、 晴れの日は西の方角には男鹿島も見える はずです。明石ブルワリーへ取材に行った 時、残念ながら雨の日でどちらもはっきり 見えなかった。そんな日にもかかわらず、 ブルワリースタッフの城彩氏と橋本聡氏 が快く明石ブルワリーのビール、関西で醸 造する良い点について丁寧に聞かせてい ただきました。 城：明石ブルワリーは1998年にナガ サワ食品株式会社により設立されまし た。今現在は長澤正剛社長。江井ケ島は 兵庫県では日本酒醸造地域として知られ ていて、実はこの建物自体が元日本酒醸 造所です。お酒が大好物な元社長はお酒 を造りたかったが、日本酒の有名な地域 でいきなり日本酒を造ることはハードル が高いと考え、地ビールを作ることを 狙っ ていた。90年代、クラフトビールブルワリ ーが日本全国に現れて、スタートとしては 良い時期だと直感しました。ビールについ て勉強する為、キリンビールに勤めていた 知り合いとヨーロッパをツアーしました。 チェコではお気に入りのシュバルツと出 会い、ぜひレシピを教えて欲しいと頼んだ ところ快くレシピを教えて下さいました。 同じ建物にレストラン明石江井島酒 館が入っています。明石ビールを飲みなが

gasawa is the current company director. Eigashima is well known as a Sake brewing area in Hyogo, and the building we are in used to be a Nihonshu Brewery. The former president enjoys a drink, but thought that clearing the hurdle to make Nihonshu in this area might be difficult, so he decided on craft beer instead. In the 90s, craft beer breweries were popping up all over the place, so it seemed like a good time to start. There’s an Akashi octopus on the restaurant’s menu we recommend you try with the beers. The president likes to collect old things, so in the back we have a tokkuri, or old Japanese Sake bottle museum. We use it as a party space, but it’s open all the time, so feel free to check it out. Upstairs is a huge collection of old Japanese antiques, including some antique brewery equipment that was used to make Nihonshu. It’s normally closed, but if you ask you can check it out for free.

Shiro: I personally got into brewing 16 years ago in 1998 because my boss told me to. I still remember the first year here: it was a tough year.

Hashimoto: I originally got into brewing by reading about beer at the bookstore. I applied to a couple of bigger breweries first but didn’t get in. In the end it was good that I ended up at Akashi; it’s in my hometown.

Hashimoto: Our flagship beers are the ‘Akashi Coast’ Pilsner and the ‘Yukyu no Koku’ Schwarz. Their greatest feature is the refreshment you get from them. The pilsner is filtered, and the Schwarz is matured, but they’re both light and easy to drink. Out beer production process is slightly different than normal. We’ve been told that it’s not the correct way to do things, but we do it anyway. I can’t tell you what it is we do exactly; it’s a big secret. I’m also proud of our ‘Akashi no Kimi’ Weizen. I put a lot of effort into it. I’ve tried to make one that’s sweeter with a heavier body. I’m trying to bring its level up to that of the better breweries in Japan, and I’d really like everyone to think it’s one of the best in Japan. I’ve learnt many things from a great number of brewers to strive to improve our brewing techniques.

Shiro: The brewers network in Kansai is good. We really help each other out, especially in times of trouble. I helped Kinosaki Beer out after they were flooded out by a typhoon a few years back, and they’ve repaid the favor. Our “Think Tank Beers” started in 2014, and it was originally an idea that allowed us to bring a new beer to Craft Beer Live. It was Tomoyo Kutsuna from Dotonbori beer that helped us come up with this idea, so we made it in collaboration with her. We might be competitors at a market level, but we’re all in this together, so we look out for each other.

Hashimoto: We’re always trying to make something that local Kansai residents will want to drink, and we’d really like people to notice the beers we make. BY PHILIP STARECKY I discovered this Brussels Beer Project when I popped in to Craft Beer Base and noticed a few beers with bold colorful labels. I picked one up and when I got home did some research where I found out they were a group of guys contract brewing with the goal of raising money to open a brewery in Brussels, hence the name: Brussels Beer Project (BBP). From the start, they embraced social media: making prototypes and having people vote on which beer will join their regular line up, after that the names are crowd-sourced and even better, for just 160 euros crowd-funders could get a 12 beers a year... for life! Unfortunately, to get the offer you needed to pick them up at the brewery so I had to pass on this deal of a lifetime.

Founded in 2013 by Olivier de Brauwere & Sébastien Morvan in Fall 2015 they reached their goal of opening a brewhouse in the Dansaert area of town. I got to visit in August while construction was still underway but the large industrial-chic space showed lots of promise. The plan is to brew the prototypes and smaller batches in house while continuing to brew their core beers at Brouwerij Anders. A space with tons of potential, I’ll definitely be back to visit the brewery and taproom once it opens.

In Belgium, if you don’t own a brewery many brewers feel you’re faking it, so BBP was ruffling feathers and shaking up the scene through contract brewing. However, among the public, their focus on putting a modern twist on classic styles was well received. In my opinion, when you combine crowdfunding, crowd-sourcing and US-influenced recipes you’ve got the makings of a fine 21st Century Belgian Brewery.

Let’s take a look at some of their beers: Delta 6% This Hoppy Belgian Saison was the winner of their first round of prototypes (Alpha, Beta, Gamma, Delta) and got to go into full production. The goal was to create some low, by Belgian standards, ABV beers that still pack a lot of flavor. It pours a lively light gold with a dense head of foam that had incredible staying power and left wonderfully delicate lacing behind. The nose is right of the money, striking you with a fruity hop punch before revealing the underlying more delicate funky saison character - really nice. Medium bodied, the taste has a subtle fruity hoppiness (lemon, passion fruit, mango) with a more assertive Brett-like funky saison character and a crisp dry finish. All in all, a beer made for hop and funk lovers.

Grosse Bertha 7% This Hefeweizen/Belgian Tripel hybrid was the beer that made me discover BBP. It pours a fairly clear light gold with a thick fluffy eggshell-white head. The nose is interesting as it has a definite Belgian funk character but also a hearty dose of cloves & banana like you’d find in a classic Weizen. The carbonation is fairly sharp while the mouthfeel is smooth. With flavors of wheat, banana, biscuit and mild cloves starting things off then revealing a tanginess with a touch of bitter/fruity hops, it is one solid wheat beer.

Baby Lone 7% This beer is named after Babylon due to the fact part of the mash is replaced with bread just like in the Ancient Middle East where the earliest beers brewed were basically fermented bread that was drunk through a straw. This unusual mash is combined with US hops giving the beer a deep reddish-orange color and a hugely resinous and citrusy aroma. Sharply carbonated on a medium-light body with a dry finish puts it squarely into IPA territory. The taste is quite intriguing: you get a sweet nutty caramel and toasted biscuits flavor from the bread and big brash pine and citrus rind notes from the hops. Very cool stuff. For hop heads but with a historical twist.

Dark Sister 6.66%

This beer began life as a one-off Christmas version of their Delta IPA. It pours pitch black with an incredibly dense head of beige foam that lingers for ages. The nose is sweet pine & soft chocolate - very approachable. The zesty IPA-like carbonation is complemented by a dry finish. It’s a very well balanced black IPA. In the beginning, you get a piney citrus hop burst that then morphs into chocolaty maltiness before veering back into a light hop bite. This is what I want in a black IPA: something that melds the two styles, not just an IPA that happens to be black. Heavenly when paired with a Pierre Marcolini macaroon.

Beyond these for core beers you may also find one-offs, seasonals and prototypes. I hope to see Babeleir de Bretagne Oyster Stout or Chove Chuva Stout spiced with Tonka beans in Japan in the future. The only limited BBP beer I’ve had the chance to try so far was: Proto 01 4%

This was part of their 2014-2015 prototype competition and was billed as a Berliner Brusseleir Weisse but it didn’t make the cut to become a regular beer – that honor went to Grosse Bertha. For now, we won’t be seeing any of their prototypes in Japan but hopefully we’ll get some in the future.

It pours a cloudy gold with a soapy head of thick white foam. The nose is tart, spicy, lemon with hints of that catpiss-like hop character. It has a raspy carbonation on a light body. It tastes really refreshing. I get notes of lemon, earthy Brett with metallic accents and some tartness. It’s also got an earthy nutty edge to it. Once it warmed up I also could pick up on some woodsy hop character as well. Quite a nice summer beer, maybe a new version will show up as a summer seasonal someday.

Brew Dogs and Great Danes!

I first visited Tokyo’s Stone Craft Beer and Whisky House during Golden Week 2011. It was by happy accident that I happened on this funky looking bar just a few minutes’ ramble down Asagaya’s Star Road. I had only moved to Japan the year before and was still always thrilled to discover a new craft beer place.

Since then, I’ve been back perhaps a dozen times, and indeed, they always do serve up Stone beer on tap. However, they offer much more than what is likely Escondido, California’s best known export, currently selling beers from the US, Belgium, the Netherlands, Scotland, and on this visit, a number of brews from Denmark’s Mikkeller. There were also a couple of Green Flashes, Sierra Nevada’s Torpedo Extra IPA, and Brew Dog’s flagship Punk IPA. As tap lists go, you could certainly do worse.

On the other hand, you might do better – at least pricewise – heading to their recently added bottle shop in the back. From a good-sized selection of chilled bottles and cans, you can grab one and pop it open in house (for a mere 100 yen over the take away price) or take one to go and enjoy at home, in the park, or on the train (brown bag optional – this is Japan!). Whereas the majority of the pints went for 1300, most of the bottles and cans were under half that amount, making them a better deal even with the small surcharge.

The ambience is reasonably pleasant as well, with lots of woodwork, plenty of bar seats, and a few tables near the back. Smoking is apparently allowed now, however. I didn’t remember that being the case before; an unfortunate change, in my opinion. As for the food, the fish and chips weren’t bad, but I’ve had better. If you need something to help soak up that pint of Thunderstruck IPA, though, this would be a good call.

But what if that bottle of Mikkeller leaves you wanting more? Next stop, Shibuya.

Many of you are no doubt already familiar with Mikkeller. Founded in Copenhagen by Mikkel Borg Bjergso and Kristian Klarup Keller, Mikkeller has made a name for itself through its innovative beers and the fact that its recipes are brewed by other breweries, making it what is often referred to as a “gypsy brewer.”

Prior to my recent visit to Mikkeller’s newest bar, in Tokyo, I had tried some of their brews both on tap and in a bottle. I can’t honestly say I understood what all the buzz was about; their beers were good, but didn’t knock me out, especially given that Mikkeller can be quite pricy.

Since my visit to the bar in Shibuya’s Udagawacho neighborhood, however, my opinion has changed. I sampled some very fine beers and felt I could really taste the passion that goes into these unique beers. I started with the Kirlek American Pale Ale. It was smooth, orange-brown, and the balance between maltiness and hoppiness was right in the pocket. Another highlight was the Crooked Moon Tattoo Double IPA. Full-flavored but not overbearing, this beer had taste and character to spare. Double IPAs can easily become too big for their breeches, but this one held its own - even at 9% alcohol. As I said, Mikkeller beers don’t come cheap. But how many really fine beers do?

I also really liked the vibe at Mikkeller. The décor is somewhat spartan, but the relatively large, open space and long bench alongside one of the walls encourages strangers to chat and compare notes on whichever of the twenty taps – mostly Mikkeller but some guest beers - they have opted for. The outside terrace plays a similar role and was quite a pleasant place to spend some time drinking on a crisp autumn evening.

So get to Stone for your in-house and take-away bottled beer needs, especially when yen are scarce. On payday, head to Mikkeller and splurge a little. You’ll be glad you did.

私が初めて東京のストーンクラフトビール＆ウィスキーハウスを訪れたのは２０１１年のゴールデンウィークだった。阿佐ヶ谷スター ロードから少し歩いたところにあるこのファンキーなバーは、その頃日本にきて間もない私には嬉しい発見であった。 もちろんストーンのビールはタップで繋がっているが、他にアメリカ、オランダ、ベルギー、スコットランドからのビールもある。この 記事の取材のために行った時は、デンマークのミッケラーがいくつか繋がっていた。その日には他にもグリーンフラッシュが何本、シ エラネバダのトルピドエキストラIPA、ブリュードッグのパンクIPAも繋がっていた。とても充実したセレクションがある。 ビールの価格を気にする方には、新しくできたボトルショップもおすすめ。良いセレクションの缶やボトルをその場で飲むこともで き（お持ち帰りより＋１００円の価格）購入後、電車や公園で楽しむことももちろんできる。パイントの価格が１３００円で、これに比 べてボトルのほとんどはその半分でそれなりに得。 内装は木造で雰囲気がよく、席は十分あり、奥の方にはテーブルも幾つかある。しかし、個人的に残念なことに、喫煙ができるように なっている。フィッシュアンドチップスはそこそこ美味しく、ビールとうまくペアリングする。 ミッケラーのボトルの後、まだ飲み足りなければ、次の目的地はもちろん渋谷のミッケラーだ。 クラフトビールファンはミッケラーの名前は聞いたぐらいはあるでしょう。コペンハーゲン でミッケル・ボルグとクリスチャン・ケラーに設立されたこのブルワリーは、常に高品質な ビールを作り出しており、ユニークなことに醸造所を待たない、いわゆるジプシー・ブルワ リーである。 東京のミッケラーへ訪れる前に、彼らのビールを幾つか味わうことはできた。ビールはとて もうまかったものの、当時なぜそれほど人気があるのかがわからなかった。だがそれは、 ミッケラーの宇田川町バーへ行った時に大きく変わった。そこのビールを一口飲んだだけ で、ブルアーのこだわりと情熱が感じられる。最初の一杯はケーレック・アメリカンペール エール、モルトとホップのバランスがよく、のどごしもまろやか。またクルックドムーン・タ トゥーダブルIPAもオススメする。アルコール度９％な濃厚なビールだが、とても飲みやす くフルボディー。もちろん、美味しいビールにはそれなりの価格はあるのでご注意を。タッ プはもちろんほとんどミッケラーだが時々ゲストビールも繋がっている。 ミッケラーの内装はなかなかおしゃれで、テーブルや椅子の配置によって他のビール好き の客と話もでき、オススメビールなどの話をして、出会いを広げられるかもしれない。外の テラスでビールを楽しむこともでき、季節の風に当たるのもいいでしょう。 ビールの持ち帰りのためにはストーンへ行き、給料日にはミッケラーへ行くのはどうでしょ う？それまで、乾杯。 (翻訳 Raymond K. Pork Por ter Pie

The weather is cold and maybe even a bit wet. Who doesn’t appreciate a nice hot stew created with a rich, dark porter ale in these conditions? Now throw that into a golden-brown, buttery pie crust and serve with a side of hot mashed potatoes and you’ve got this recipe, perfect for a cold, wet day, or any winter day if you like.

Ingredients (serves four to six): 200g cubed pork 1/2 onion sliced 5 small mushrooms sliced Two small potatoes peeled and cubed 1 small carrot peeled and cubed, bite-size 1cup stock 300ml porter 1/2 tsp thyme 1/2 tsp basil

1/2 tsp rosemary 1 bay leaf 1 clove of garlic minced 1 tbsp chopped parsley salt and black pepper to season 2 sheets of ready-made pie pastry 1 egg beaten Method: 1.

In a saucepan brown pork with garlic, onions, and mushrooms.

Add herbs, carrots and potatoes. Add soup stock, either fresh, canned or from a bullion cube. Slowly pour in porter and bring to a boil.

3.

Boil for 5 minutes then simmer for 30-40 minutes seasoning with salt and pepper to taste.

If the stew doesn’t reduce and

thicken, add a tablespoon of flour or potato starch. Once thickened, turn off heat and cover.

Preheat oven to 180°C. 6.

Roll out pastry dough to be larger than the pie plate.

7.

Press one pie sheet into the bottom of the plate. Add stew to the pie.

Carefully lay the remaining pie sheet over the stew and seal around the edge by gently pressing down with a fork. Carefully cut a few slits in the top pie crust to relieve steam during baking. Brush crust with beaten egg.

8.

Bake for 25 minutes at 180°C then increase the temperature to 200° for final 5 minutes. If the crust browns too rapidly, place aluminum foil over the pie for the remaining baking time.
