MATHIEU PÉROU

Mathieu Pérou was introduced to the kitchen at a very young age, he took the reins of Manoir de la Régate, an establishment opened by his father in 1995. Being inspired by his various experiences with the Ibarbourse brothers and Thierry Drapeau in France, Peter Gilmore and Tetsuya Wakuda in Australia and in the US with Corey Lee, Pérou finally took the reins of the Manoir de la Régate, an establishment opened by his father in 1995. Awarded with a Green star in 2020 and a Michelin star in 2021, Pérou reproduces what he learnt from his grandfather and father, he gives pride of place to the products of his region through a gastronomic cuisine of great sensitivity and great technical mastery. Having forged close relationships with his farmers, growers and artisans. Pérou selects them locally for their commitment to sustainable food and for the consistent quality of their exceptional products, for example by abandoning fish from the ocean to get closer to a fisherman on the Erdre and only offer freshwater fish to my customers.
