Editor’s note! I believe Christmas is one of the best moments of the year. Whether you celebrate or not, it is a reminder to make the most out of the dark and cold days, to treat ourselves and our loved ones, to indulge on delicious food, and to cozy up our home. I am very happy to present the third edition of Nordic Design’s Christmas Magazine. This year again, I’ve selected some of the best gift ideas from Scandinavia for you and your dear ones. I’ve added a few new features I hope you’ll enjoy, and that will put you in the holiday mood. I am grateful for your support, feedback and loyalty in 2012. Thank you all very much. These hand-made rubber boots designed by Ilse Jacobsen have become an icon in Scandinavia, and are easily recognizable because of the laced-up fronts. They are made of 100% natural rubber and the cotton-fleece lining makes them both warm and comfortable to wear. The soles are warm isolating and very light. The rubber boots are ideal for outdoor activities, rainy or snowy days in both urban and suburban settings.

The Beolit 12 from Bang & Olufsen is a wireless iPod speaker designed by Danish designer Cecilie Manz. Its look is suggestive of the company's 1960's transistor radios, but featuring an aluminum grille, a range of loudspeaker fabric color options, and an Italian leather carrying strap. It has Apple airplay technology for seamless wireless streaming. A 120-watt amplifier on the 2.1 stereo system is connected to two tweeters and a 4-inch subwoofer, offering powerful sound for its 2.8kg weight. The device's rechargeable battery has a playback time of approximately 8 hours wired (4 hours airplay), capable of simultaneously charging iPhones, iPads, or other connected devices.

The Danish design company &Tradition introduced earlier this year a new sofa designed by the world famous designer and architect Arne Jacobsen for SĂ¸llerĂ¸d City Hall in 1939. The sofa is one of his early designs and has never been produced before. Mayor features a unique style that draws as much upon the Danish traditions of fine woods and functional solutions as on the international modernism for which Arne Jacobsen is famous.

Where will you celebrate Christmas this year? In my hometown Umeå, in the northern part of Sweden. Together with my family, my husband and my sisters family. How will you celebrate the holiday season? I love the Christmas holiday. It’s the best time of the year, gathering all family members and friends, eating nice food, giving and receiving gifts, and decorating the house. I will probably start early (mid November) as I’m making a Christmas Craft edition of my iPadmagazine Trendenser. I will let the decorations stay put in our apartment since we are travelling away for half of December. How will you decorate your home this Christmas? I have a very bright and minimalistic home, but when it comes to Christmas I go ”all in” with red details. I have a lot of Christmas favorites that I reuse (like my Elflugan lamp and some traditional candle holders as well as Christmas decorations from my childhood). I’m not much of a fan of Christmas trends, I prefer sustainable investments in a few nice pieces that can live for a lifetime. I like the thought of my kids growing up with the same traditional decorations as I did. How does the perfect Christmas tree looks like? Its big with small lamps and filled with Christmas gifts underneath. Actually it’s only when it comes to wrapping paper that I tend to follow current trends so I go all in for the look and feel of my gifts. What is your holiday wish for others? I wish everyone a niece peaceful time together with family and friends. No stress. No pressure. Just pure leisure time. Which song(s) is guaranteed to be on the playlist during the Holidays? What is your favorite Christmas memory or tradition? Me and my sister always got up very early in the morning and immediately went looking for our first gift that Santa had hidden in the house during the night. It was always a lot of excitement! Are there any special foods you will enjoy over the holidays? It might sound strange but I just LOVE Swedish beetroot salad! It’s my favorite on the Christmas table. What are your favorite places to shop for gifts? I usually travel to Copenhagen in December to go shopping for Christmas gifts, it is such a nice and cozy city especially in that month. I love all the small shops like Stilleben and Systrarna Grön, but also warehouses like Illums Bolighus and HAY.

Where will you celebrate Christmas this year? This year I will spend Christmas with my family at my summerhouse in the countryside, an hour drive north of Copenhagen. How will you celebrate the holiday season? In Denmark we celebrate Christmas on the 24th of December, starting out with a very nice Christmas dinner followed by singing and dancing around the Christmas tree, and then opening presents… We don’t wait till the 25th like in the US. The 25th and 26th we have Christmas lunches with the extended family members, like uncles and cousins. Christmas is really the time of the year where family members are all brought together. How will you decorate your home this Christmas? I don’t decorate my house very much for Christmas, but of course we have a beautiful tree and maybe some candlelight decorations. Just like my art being characteristically minimalistic, I like Christmas minimalistic too. How does the perfect Christmas tree looks like? Christmas trees are by nature beautiful, so I try to go easy on the deco. I preferably use old and wooden decorations, real candles (a Scandinavian tradition) and a star at the very top of the tree. What is your holiday wish for others? My wish is that everybody should get a Danish Christmas with a lot of snow outside the house and a nice dinner with the family by the fireplace. What is on your wish list for Christmas? My own wish list is pretty much the same every year. I love visual coffee table books about houses, interior or art. I also love travel books like Tashens “Great escape around the world”. I can sit for hours and dream myself away to remote destinations. It gives me great inspiration. At the moment I can’t seem to get enough of books about architect John Lautner. What is your favorite Christmas memory/tradition? When I was little I really loved Christmas, just like all kids. Now I have a one and a half year old son, and we really want to give him some good Christmas memories. One tradition that I really like: Two weeks before Christmas, my sister in law gathers the whole family for a walk into their beautiful countryside forest and to cut down a tree for every one of us. Before returning back into the warm farmhouse for a traditional Christmas-lunch, it is part of the tradition to gather in the cold, freezing to death, but drinking Gløgg (hot red wine with almonds and raisins) and homemade Christmas pastries –Enjoying our selves, despite the cold.

Which song(s) is guaranteed to be on the playlist during the Holidays? My mother is a very big fan of Elvis and I have grown up listening to him. I’m not an Elvis fan myself, but when I listen to “White Christmas”, it really brings me in the Christmas mood. Are there any special foods you will enjoy over the holidays? We will eat traditional Danish Christmas food, which is roasted goose and duck, glazed potatoes and gravy. For dessert we have “Ris à l’amande”, which is like a rice pudding with warm cherry sauce. In there we put a whole almond and the person who gets it will get an extra “Ris à l’amande” present (check out p.47 for a recipe). What are your favorite places to shop for gifts? I love to go to small shops in the centre of Copenhagen and find unique gifts, old books or vintage jewellery.

Maybe with my mother, sister and niece, or at a friend’s new place with a couple of other friends… How will you celebrate the holiday season? Probably by eating and just relaxing a lot. How will you decorate your home this Christmas? I´m not much into Christmas decorations, but I always put up two snowflakes in my kitchen window that my dear friend Peter Nylander once made for me… How does the perfect Christmas tree looks like? Its big, has lights in it, and smells wonderful! What is your holiday wish for others? Peace, Love and Health! What is on your wish list for Christmas? Peace, Love and Health! What is your favorite Christmas memory/tradition? I always make “Knäck”. I´s a Swedish fudge-like candy… Which song(s) is guaranteed to be on the playlist during the Holidays? I only buy Christmas gifts to myself… and my gift to myself this year is a trip to New York for 3 whole months!

Ingibjörg Hanna Bjarnadottir" Designer" Where will you celebrate Christmas this year? At home with my husband, 2 children and 2 cats. How will you celebrate the holiday season? This is not only Christmas time: It is also a big birthday season in our family so there will be a lot of birthday parties, cakes and good food. How will you decorate your home this Christmas? My sons have made lots of beautiful Christmas ornaments at kindergarten and school, so our Christmas decorations are mostly handmade and cute. I also love to have lots of white Christmas lights and candles. How does the perfect Christmas tree looks like? For me the perfect Christmas tree is the one that we cut down at the family’s summer cottage. It is usually very tall, and the shape can be a bit wild. The ornaments we have are very personal and not so styled, but I feel it fits perfectly together and I love the outcome. What is your holiday wish for others? To enjoy the little things and not stress so much. Even though it is a very busy time for most people we should try to ease off the expectation on everything needing to be perfect and the same as it has always been. To welcome new and relaxed traditions, and most of all enjoy spending time together.

What is on your wish list for Christmas? I would love to have Tjorn cardigan from Farmers Market What is your favorite Christmas tradition? Going with my family to our summer cottage to choose and cut down our Christmas tree. We drink hot chocolate, eat cookies and listen to Christmas songs after the hard work. I also love baking gingerbread with my sons and to watch them really having the best time decorating the cookies and tasting them as well. Which song(s) is guaranteed to be on the playlist during the Holidays? Happy Xmas (War Is Over) - John Lennon Sálmar Jólanna - Sigurður Flosason Are there any special foods you will enjoy over the holidays? We always have Ptarmigan on Christmas eve. For me it tastes like Christmas! My husband and I had it for dinner once in July, and it was really not the same… What are your favorite places to shop for gifts? I love going to Reykjavík’s main shopping street, Laugarvegur on "Þorláksmessa" (a celebration on the 23rd of December) when the shops are open late. You meet a lot of people who are buying their last gifts or just going there for the Christmas spirit. On Laugarvegur there are beautiful design shops like Aurum, Hrím and Kiosk. My favorite shop to buy gifts is Epal. They have such amazing collection of beautiful things and I can just stay there for hours.

Minty Chocolate mousse " With cream cheese and organic dark chocolate.

Chocolate mousse has deep roots in the coming season. Dark and rich, creamy and thick, it suits the darker months ahead in Iceland – Garnished in white and red, it is a denominator for the holidays. Cream cheese chocolate mousse is for us a desert that can be wonderfully adapted with local produce and organic, rich chocolate of your choice. The cream cheese can vary as the chocolate and as easy it is to make, it is worth trying with different ingredients. This recipe has its roots 20 year back, made by a friend of us who won a competition in the National Radio were Icelandic cream cheese was supposed to be the main ingredient. When we thought about some festive recipe that could easily be updated year after year, with some quality and locally made cheeses and chocolate, this one popped into our minds. Simple and easy to make, this rich chocolate mousse is prepared ahead –Therefore a great dessert for a party at home with family and friends and a golden rule for a delicious and stress free entertaining. Enjoy and happy holidays from Home & Delicious in Iceland. Ingredients: 400 g cream cheese of your choice 8-10 tbs powdered sugar 2 eggs 1 1/2 tsp vanilla 200 g chopped chocolate 70%, melted and cooled slightly 500 ml whipped cream 150-200 g chopped chocolate with mint filling, 70% Directions: Beat the cream cheese in a bowl until smooth. Combine sugar and eggs in another bowl and beat until light and fluffy. Add the vanilla and melted chocolate and stir until well combined. Fold the cream cheese in the chocolate mixture and stir through, mix all together. Stir in the whipped cream and again, stirring until well combined. At last, but not least, add the chopped chocolate with mint filling and combine slowly with a spoon to spread evenly. Spoon into serving cups or larger serving container. Refrigerate until served. Meyer’s pork roast with crackling and gravy" Claus Meyer is the ultimate ambassador of Nordic cuisine, and he is fully dedicated to the cause – TV-series, books, lectures, trainings, restaurants (Noma is one of them), and other food-related companies. The man is passionate. Here’s his version of the traditional Danish pork rib roast, also known as ‘Flæskesteg’. Enjoy it on Christmas eve with the crackling, and on a sandwich with red cabbage the next day. It’s a pure delight!

Ingredients: 800g of Pork neck on the bone with skin intact Coarse salt 10-15 bay leave 6-7 cups of water 2 tbsp. of flour 1-2 tbsp. of apple syrup (æblegastrik) Sea salt Freshly ground pepper

45 Directions: Score the pork skin all over at 5mm intervals right down to the meat. With a damp hand, rub in plenty of coarse salt and stick the bay leaves into the cuts. Place the roast, skin-side up, on an oven rack over a deep roasting tray with 6-7 cups of water. Roast the pork in a preheated oven at 180C/gas mark 4 for 65-70 minutes. Halfway through the cooking, pour the liquid from the roasting tray into a saucepan and reserve for gravy â&#x20AC;&#x201C; there should be around 600-700ml. Let the saucepan stand for a moment then skim most of the fat from the liquid. Bring to the boil, and reduce to approximately 400-500ml. Turn off the heat and leave to stand. Sprinkle with flour allowing the fat to absorb it, then whisk thoroughly and bring to the boil. Simmer the gravy for 6-7 minutes. Add the apple syrup and season to taste. If needed, pour the gravy through a sieve to remove any lumps before serving. Measure the roast's core temperature with a meat thermometer before taking it out of the oven â&#x20AC;&#x201C; at 65C it will be slightly pink and juicy (cooking to a higher temperature will give a dryer roast). Let the roast rest for at least 15 minutes before carving. Serve roast pork with boiled potatoes, red cabbage and the gravy. Source

Ginger cookies" These Swedish ginger biscuits are traditional Christmas treats. Delicate and delicious. Ingredients: 200 grams butter, at room temperature 200 grams sugar 100 ml golden syrup 4 tablespoons orange juice 2 tablespoons orange zest 1 teaspoon ground ginger 3 teaspoons ground cinnamon 2 teaspoons ground cloves 300 â&#x20AC;&#x201C; 325 grams flour 1 teaspoon baking soda 100 â&#x20AC;&#x201C; 125 grams blanched sliced almonds Directions: Preheat oven to 200 degrees C (390 degrees F) and line baking sheets with parchment paper. In a large bowl, cream the butter and sugar. Stir in egg, golden syrup, orange juice and orange zest. Sift together the flour, bicarbonate of soda, cinnamon, ginger and cloves; stir into the creamed mixture until combined. Roll dough out to .25cm thickness, and cut into shapes with biscuit cutters. Place on baking trays and bake for 8 to 10 minutes in the preheated oven. Cool biscuits on wire racks. Source

Risalamande"

Ingredients: 1 1/4 cups water 75 grams of pudding rice 1 vanilla pod, seeds only 1 1/4 cups milk 2 tablespoons of sugar ¼ teaspoon of salt 75 grams of blanched almonds 1 1/4 cups whipping cream 3 tablespoons confectioners sugar 15 oz can of Morello cherries in heavy syrup 1 tablespoon cornstarch Water Directions: Place water and rice in a medium cooking pot, cover with a lid and simmer for 2 minutes. Add milk, vanilla, sugar and salt and simmer over very low heat for 40-45 minutes. Stir often to make sure the milk does not burn. Refrigerate for several hours or overnight. In the meantime, chop the almonds, but keep a whole one for the Risalamande gift. Once the mixture is completely cooled remove from refrigerator and break it up with a spoon. In a small bowl add whipping cream and confectioners sugar, and beat with a mixer until you see tracks from beaters in the cream. Add the whipped cream to the rice mixture, and incorporate the almonds. Cover and place in refrigerator until ready to serve. In a small dish mix together the cornstarch and some water to form the thickening agent. In a small saucepan bring cherry and syrup to a simmer. Add the cornstarch/ water mixture to cherries a little at the time, stirring until syrup starts to thicken. Simmer for 1 minute and remove from heat. Serve the Risalamande cold with the warm cherry sauce on top, and remember to hide a blanched almond in the mixture.
