THE FACE OF Family Distilling in the Lehigh Valley

Eight Oaks Farm Distillery

It was a cancer diagnosis that gave birth to the craft distilling business that is Eight Oaks Farm Distillery. In 2012, founder and CEO Chad Butters and wife Jodi learned she had cancer. As she recovered, a deep discussion revealed what was most important to them going forward: more time with family and each other, becoming entrepreneurs, doing something related to agriculture and having fun. They researched opportunities for months before discovering the field of craft distilling—it checked all the boxes.

Eight Oaks is the platform from which the Butters family lives their purpose. Known for their Pennsylvania Rye Whiskey and Applejack, the farm in New Tripoli uses regenerative agricultural practices to grow their own barley. Local partners supply corn, rye and apples. Their award-winning spirits are just a part of Eight Oaks’ larger plan—to build a better community. “That community begins with healthy soil, which nurtures the farm, inspires our spirits and gathers the community,” says Chad. “In turn, the community supports our ability to do just that.”

Luxury Country Club Living Steel Club | Spirk Brothers

Growing up, David Spirk and his brother-turned-business partner Robert spent summers at Steel Club, a family-oriented, 18-hole Donald Ross-designed facility that opened in Lower Saucon in 1934. In 1985, Dave founded Spirk Brothers, a full-service construction and project management company.

Spirk Brothers quickly became a trusted name in the Lehigh Valley and beyond. “In addition to our many local projects, we operate in 17 states up and down the East Coast,” notes Allison Spirk, Director of Operations.

In 2018, the brothers and other partners purchased Steel Club’s assets, planning to reimagine the traditional country club model. Innovative developments

have been underway Club-wide, starting with the restaurant. “At the time of purchase, there were about 20 dining members. We now have over 30,000,” says Grace Spirk, General Manager. Plans also include a par-3 course, enhanced event/restaurant venues, indoor tennis/pickleball courts, a gym, a multi-story driving range and an all-season turf field.

“We’re especially looking forward to the Residences at Steel Club project,” adds Dave, “which will be a collection of 168 custom homes spread throughout four locations on our 280-acre campus.” Each home will be uniquely customized to the buyer’s specific tastes and preferences. A golf cart, cart garage and first-floor primary suite are some of the features already included in each home. Roads are named after some of the brothers’ partners.
