Keeping It Simple: Coconut Pumpkin Soup

INGREDIENTS

• 1 onion

• 1 butternut

• 1 sweet potato

• 3 large potatoes

• 1 tablespoon chicken masala

• 1 tablespoon curry powder

• ½ cup coconut cream

• 3 cloves garlic

• Pinch of black pepper

• Salt to taste

• 1 teaspoon nutmeg

METHOD

1. Start by peeling and chopping the butternut and potatoes in large chunks. Cut onions in big chunks as well. Heat oil in a pot and add onions to cook. Add the spices then follow by adding potatoes and butternut.

2. Season with pepper and salt and cover with water. Put a lid on and cook for 25 minutes.

3. Add garlic and coconut cream and cook for another 5 minutes. Blend and put in the same pot to cook for a few minutes before serving. Check if the soup needs more salt then remove from heat.
