AN EDIBLE BEACH It’s the midst of summer and it’s raining! You want to go to the beach, but the weather gods are not working with you... Don’t worry, just create your own beach at the table and spend some time Creative Cheffing at home! THE SEAWATER >> Silver- or white-coloured bowl with open edges >> Agar >> White wine >> Fresh seaweed >> Mussels >> Lemongrass >> Blue colourant Make a broth on intuition using the ingredients listed above. It should have a clear hint of the sea! Mix the agar according to the ratios indicated on the package and pour everything onto the platter. Leave to solidify and, right before it has fully hardened, place some little boats in the sea.
