•••• Local Life rom a very early age, Jacquie Pern, director of The Pheasant Hotel in Harome, has been involved in the world of hospitality. At five years old, her parents, always looking for a new challenge and change of career, decided to make a brave move and take their first pub, The Buck Inn at Thornton Dale. Over the next four years, Jacquie and her elder sister Susie were pretty much left to entertain themselves as their busy parents, worked tirelessly to run an extremely successful village pub. This was Jacque's first introduction to catering, albeit on a relatively basic level. Many hours were spent in the kitchen with the lovely local ladies who worked there, picking up vital tips and testing their homemade pea soup!

Along with business partner and chef, Peter Neville, she took over the hotel in 2009, when a full refurbishment was undertaken.

After a short stint of 'normal life', once again, the family entered into another catering challenge when they bought The Blacksmiths Arms at Hartoft. Again, this was an extremely busy operation and although both sisters worked alongside their parents through their teenage years, and thoroughly enjoyed their time there, both decided, that it wasn't the career for them!! The bright lights of London were beckoning and Jacquie decided to follow her dream and began a three year Musical Theatre Course at the tender age of 16. A wonderful and exciting time followed, experiencing life in a vibrant city, new friendships and independence. Whilst studying full time, Jacquie also worked in restaurants and theatres in the evenings. It was during her time in London that Jacquie began to realise how much she loved to work and that success would only be achieved if you were prepared to work for it. It was also becoming apparent how much she missed being in Yorkshire, with her family, and the good old down to earth no nonsense approach. "I began to find the world I was in a bit pretentious and really missed home". On returning to Yorkshire, Jacquie found herself drawn back into catering when she took the job of Assistant Manager at The Milburn Arms Hotel in Rosedale. It was there she met her future husband Andrew and as a couple they went on to own and run The Star Inn at Harome. "I was 26 when we bought the Star and despite it being very hard work and a huge commitment, the support and encouragement we received from

Being fortunate to enlist the help of her interior designer partner, Peter Silk, and have access to lovely fabrics, wallpapers and accessories, Jacquie was able achieve the look and feel she wanted. The Pheasant is a 16 bedroom country house hotel with the most idyllic location, just across from the village mill pond. Having recently renovated their house in the nearby village of Gilling, whilst working in the hotel most days and providing a taxi service for four children, there's never a dull moment!!!

A Chef’s Life ... Andrew Pern

Always a Chefʼs favourite, “Tarte Tatin”, the deep toffee-appled fruit, soft and sweet contrast with ice cream hot and cold. The ice cream has a real milky, dairy taste to it using Wensleydale Cheese, which is made up in the Dales. Happy Cooking… Ampleforth Abbey Apple Tarte Tatin with Wensleydale Cheese Ice Cream (Makes four individual portions) For the Apple Tatin 200g puff pastry 100g sugar 30g butter 4 orchard apples 10g icing sugar For the Wensleydale Cheese Ice Cream 500ml cream 125ml milk 4 egg yolks 125ml caster sugar 3 tbsp glucose 100g Wensleydale cheese To Serve 4, 15g wedges of Wensleydale Cheese 40g golden raisins warmed in 50ml golden syrup A few edible flowers Icing sugar Method: First make the ice cream. Heat the milk and the cream together in a thick bottomed sauce pan. In another bowl, mix the yolks, glucose and the sugar. When the milk and

cream mixture is hot, add the cheese and allow to melt. Pour the liquid over the egg mixture, and then strain. Allow to cool and then churn in an ice cream machine, until ready. To make the Tartes, dissolve the sugar in a pan with a little water on a medium heat, and allow to caramelize, remove from the heat, and stir in the butter. Peel, core and slice the apples into8-16 wedges depending upon the apple size. Arrange the apples in four blini (20cm) pans each over a quarter of the caramel mix creating two layers. Place the pans back on the heat until the caramel bubbles. Roll the pastry out and cut rounds sized to cover the pans. Place pastry over the apples, but ensure you tuck the edges in. Dust the pastry with sugar and bake at 200°C/Gas Mark 5, until golden. Turn out straight away, pastry side down. Serve with a scoop of the Ice cream and edible flowers to decorate. The raisins can be arranged around the plate and the plate dusted with icing sugar before serving.

STICKY TOFFEE CAKE Supplied by The Black Swan Tearoom, Helmsley INGREDIENTS:


225g whole Medjool dates

1. Stone and chop the dates quite small, put them in a bowl, then pour the boiling water over. Leave for about 30 minutes until cool and well-soaked, then mash a bit with a fork. Stir in the vanilla extract. Butter and flour a 10 inch cake tin, and sit it on a baking sheet. Heat oven to 180C/fan 160C/gas 4.

175g boiling water 1 tsp vanilla extract 175g self-raising flour, plus extra for greasing 1 tsp bicarbonate of soda 2 eggs 85g butter, softened, plus extra for greasing 140g demerara sugar 2 tbsp black treacle 100ml milk

2. While the dates are soaking, make the cake. Mix the flour and bicarbonate of soda together and beat the eggs in a separate bowl. Beat the butter and sugar together in a large bowl for a few minutes until slightly creamy (the mixture will be grainy from the sugar). Add the eggs a little at a time, beating well between additions. Beat in the black treacle then, using a large metal spoon, gently fold in one-third of the flour, then half the milk, being careful not to overbeat. Repeat until all the flour and milk is used. Stir the soaked dates into the batter. The mix may look a little curdled at this point and will be like a soft, thick batter. Spoon it into the tin and bake for 20-25 minutes, until risen and firm. 3. Remove the cake from the oven. Leave in the tin for a few minutes, then loosen it well from the sides of the tin with a small palette knife before turning it out.


Once the cake is cool, decorate with fresh whipped cream, toffee pieces, or your choice of decoration.

Pet Health Stressed Pets? Stress can affect our pets in many different ways. Some animals may become withdrawn and quiet. Others may become nervous or even aggressive. Certain medical conditions – for example cystitis (problems with passing urine) in cats and excessive grooming – can be triggered by stressful events. Below we will mention in more detail some of the most common causes of stress in our animals, and what you might be able to do to reduce stress levels or prevent stress in the first place.

Fireworks Many pets are frightened and stressed by fireworks at this time of year and this can also make the weeks around Guy Fawkes’ night stressful for owners too! It is not too late to try desensitising those pets who worry about fireworks to the sounds using prerecorded CDs in the weeks leading up to fireworks. By letting them listen to the noises, starting off at a low volume and gradually increasing it, this can allow your pet to become more accustomed and less panicked by the sounds. Otherwise, it is usually a question of doing what you can to keep them calm when fireworks are within earshot (remembering that many pets have more sensitive hearing than us!). Having the radio or television on inside to try and make the fireworks less noticeable can help. There are various products available which are either administered in the days leading up to or during the noisiest time to calm them down. We would be more than happy to talk you through the best options. Also consider the effects that an increased number of trick or treating visitors coming to the door might have if your pet is a bit nervous. Perhaps a sign on the door to alert those ghosts and ghouls to be considerate of anxious pets would be a good idea? Travelling It is not uncommon for pets to get stressed about travelling and sometimes be travel sick too. The two often go hand in hand and so it is worth trying to calm them down before a journey and/or using an anti-sickness medication. New baby People often forget the impact an addition to the family may have on pets who have never experienced the sound of a crying baby (again, desensitising CDs prior to the baby’s arrival may help) along with various disruptions in their normal routine. Some animals may even feel jealous if they are being paid less attention than they had been previously. Your pets may need some help to adjust

– and remember to give them the chance to be on their own if that is what they want. We advise you to never leave a baby or young child unattended with any pet.

Moving house Animals are very sensitive to change, and as it is also likely that we as owners will be stressed when moving house this can make the whole process a nightmare for our pets! It may be kinder to consider taking your pet to wherever they would usually go when you are on holiday – a pet sitter, cattery or kennels (ideally that they have been to before) while you are in the process of moving. You could take your dog to the new home to visit before moving to allow them to get used to it. Cats should ideally be kept inside or only allowed in the garden for the first few weeks after moving to try and reduce the risk of them either trying to find their way back to your old house or becoming disorientated and lost when going out for the first time. They may also have to establish their place in the hierarchy of the local cat population and this can be quite stressful or even lead to cat fights so watch out for signs of this. For all of these potentially stressful circumstances there will be behaviour advice and calming products that may be beneficial to your pet so please don’t hesitate to speak to a member of the veterinary practice team. With that in mind, this month’s wine of the month we bring you the stunning Krohn Colheita Port 2001 which rightly won the Gold award at the Sommelier wine awards. About Port Port comes from Douro, which is a Portuguese wine region centred on the Douro River in the Trás-os-Montes e Alto Douro region. It is sometimes referred to as the Alto Douro (upper Douro), as it is located some distance upstream from Porto, sheltered by mountain ranges from coastal influence. The region has Portugal's highest wine classification as a Denominação de Origem Controlada (DOC), and is associated primarily with Port wine. About Colheita A Colheita (literally `harvest' or `crop') is an aged Tawny Port made with grapes from a single vintage. By law, Colheitas should be matured in wooden casks for at least seven years, although in practice they tend to be aged for much longer sometimes up to 50 years. Once opened Colheita style port will keep well (unlike LBV or vintage ports). They are also more unlikely to throw up a sediment due to their long ageing in wood.
