Fish and Meat Philosophy In recent years we have seen a constant wave of trends hit Hong Kong, one after another with each new wave eclipsing the last; nouvelle cuisine, fusion, molecular, farm-to-table and nose-to-tail. Ultimately, all good things, however we are naturally reverting back to the beginning of the cooking cycle. This does not mean that everything must be forgotten. All our pasta is homemade. Our cooking is honest and rustic whilst technique driven. Fundamentally, we want to provide carefully sourced farm-to-table ingredients that speak for themselves.

Fish & Meat is an honest ingredient focused restaurant. Our menu is designed to share and is amended with seasonality. Our focus is to hunt for the best ingredients and deliver food and flavours that you crave day in, day out.
Our sea bass is delivered fresh daily and is line caught in France. We purchase Alaskan cod because we believe this is both the most consistent quality and our supplier operates good sustainable practices. We use Australian Blue Swimmer crab for its texture and flavour.

We do not limit our love of great ingredients to just food. We apply the same passion and techniques to create awesome flavour and sensory experiences in our cocktails. Drawing influences from our ingredients, our mixologists have played with the boundaries whilst offering classics with their own options for a clever twist.
