t was ten years ago this month that the first edition of this magazine was launched and it's fair to say that back then I couldn't have imagined that here I'd be writing this intro 120 editions (not to mention a husband and two kids) later! As well as being chuffed that the magazine has been so well received over the years, we wouldn't be where we are without the great local businesses and institutions who advertise with us and the loyal readers who look forward to each edition coming out. Thank you to you all. I'd also like to take a moment to thank all those who work so hard behind the scenes to help put the magazine together, and to ensure it is the best distributed magazine in the area too.

Saturday 14 September sees the return of Corsham’s Street Fair to the town centre. With live music, entertainment, stalls, the Little Zoo, great food and drink, an art exhibition at the Town Hall and a fruit and vegetable trail, there’s definitely something for everyone. This year’s event will not only be in the High Street and Martingate Centre but also in the car park and garden of Corsham’s Digital Mansion on

Pickwick Road. This area will include a sneak peek of the upcoming Peacock Arts Trail (see p17 for details); a state of the art, one of a kind gamer van full of consoles (12-2pm only) and children’s activities, including tri-golf and inflatable fun. he crop I look forward to this month is from our local potato grower in Corsham. With the first of the maris piper potatoes we can now offer consistency to our customers, which is essential to them. The upcoming crop is looking better than last year’s, as we have had more rainfall at a critical time at their growing stages. Apparently the potato started around 350 million years ago when they started to evolve from their poisonous ancestor, the nightshade. This family of plants eventually evolved not only into potatoes but chilli peppers, bell peppers, tobacco plants and tomatoes. This is why you can buy some plants today that claim to have potatoes underneath and tomatoes on the top! Has anyone ever tried these? Let me know. September is the only month you can get hold of cultivated cob nuts, and it’s also

an excellent time for apples, pears and plums as well as local vegetables. Look around at your local farm shops and village shops to get local produce and even outside people’s homes! It is the

TIME TO BAKE

The World’s Biggest Coffee Morning on Friday 27 September is Macmillan’s biggest fundraising event for people facing cancer. FRAN STEVENS, aka The Food Wife, offers some delicious recipes to bake if you’re taking part.

Makes approx. 20

Here is an easy cookie recipe that you can whip up in no time. They are also perfect to bake with children. I make the dough the night before but you can use it straight away. You could always swap the chocolate and cranberries for something else, but these are a winning combination.

Ingredients 125g caster sugar 100g soft light brown sugar 125g butter, softened 1 tsp vanilla extract 1 large egg, beaten 225g self-raising flour 100g white chocolate chips

85g dried cranberries Method Cream together the two sugars and butter until pale in colour (a couple of minutes in an electric mixer should do it). Add the vanilla and egg. Beat again, this time slowly. Add the flour and beat until completely smooth. Fold in the chocolate and cranberries. Use a large piece of grease-proof paper and lie it flat on your work surface. Place the dough onto the paper and then use the paper to roll into a fat sausage. Twist the ends to keep it tight and then place in the fridge to chill, until ready to use

(alternatively, use immediately by leaving this stage out and simply putting spoonfuls of the mixture onto prepared baking trays). Preheat your oven to 180ºC. Line baking trays with baking parchment. Cut slices of the prepared dough and place on the trays (it should make 20 cookies). Leave space in between them as they will spread when cooking. Bake for 8 - 10 minutes. They will still be soft when you remove them from the oven, but will set as they cool. Allow to cool fully on a wire rack. Store in an airtight container. THEWESTWILTSMAGAZINE 29

Using the bananas makes for a wet batter but allows you to use less fat and sugar than a standard cake. I have chosen to pair the sweet banana with chunks of bitter dark chocolate. Not only a great combination but it also gives you delicious pools of chocolate throughout the cake. Ingredients 110g softened butter 60g caster sugar 2 large eggs, beaten 2 large / 3 medium / 4 small very ripe bananas, mashed 1 tsp vanilla extract 170g self raising flour 100g dark chocolate, either use chips or break a bar into pieces Method Cream together the butter and sugar. Add the eggs, one at a time, beating the mix after each addition. Add the vanilla extract. Fold in half of the mashed banana, followed by half of the flour. Repeat with the remaining banana and flour. Fold through the chocolate pieces. 30 THEWESTWILTSMAGAZINE

Pour into a lined 2lb (900g) loaf tin and bake in a preheated oven at 180ºC fan for 50 mins, or until golden, risen and springs back to the touch. Remove from the oven and allow to cool in its tin for half an hour before transferring to a wire rack. Store in an airtight container and it should last a few days.

Makes 12 One of my favourite puddings is apple and blackberry crumble. Sweet and a little tart all at the same time, and just a bowl of comfort.

Method In a jug, mix together the milk, oil and egg. Lightly combine the apple, blackberries, flour, sugar, salt, cinnamon and baking powder in a bowl. Add the liquid to the dry mix and gently fold into each other. Do not over mix it. Fill a muffin tray with 12 cases. Put a tbsp of mixture into each case. Then divide any remaining mixture equally between the cases Use your fingers to rub the crumble topping ingredients together in a bowl. Sprinkle over the top of each muffin. Bake in a preheated oven at 200ºC fan for 20-25 minutes (mine were ready at 22 minutes). Leave in the tray for 10 minutes and then transfer to a wire rack to cool.

Here is a muffin version which is simple to make and ideal with a cup of tea for the obligatory tea and cake. Find more recipes at: thefoodwife.co.uk These are best eaten on the day but will be perfectly edible for a few days (if they last that long). I zapped them for 20 seconds in the microwave after the first day but they could also be frozen. Remember that when making muffins do the minimum amount of mixing. The batter should only just be combined and will be lumpy – that’s good! It makes for a light muffin.

Many fruit bowls will gather a collection of over-ripe bananas from time to time and making a loaf cake with them is a great way of using them up, especially if, like me, you will only eat a banana when it’s slightly green.

Ingredients For the muffins 1 egg, beaten 60ml oil 120ml milk 200g plain flour 100g caster sugar 2 tsp baking powder ½ tsp salt 1 tsp ground cinnamon 2 eating apples, peeled and cored then cut in to a medium dice 120g blackberries For the crumble topping 25g cold butter, cubed 25g sugar 50g oats ½ tsp ground cinnamon

JAMES GRAHAM, head chef at The Three Daggers in Edington, talks king scallops, royal tea parties and cooking beef Wellington for friends. What was your first job in catering? Welford Place in Leicester. I started working as front of house staff during my masters degree. When I finished my studies I took my first role in the kitchen and have never looked back. The Low & Slow Shack offers delicious slow cooked favourites

Where have you worked before? The Pointer in Brill which was Michelin Pub of the year in 2018 while I was there. The Oxo Tower in London, Waltons of Walton Street. Le Manoir & Petit Blanc. I also had my own restaurant for 9 years in Fairfield called Allium. What is the first dish you mastered? Scrambled eggs, such a simple dish but needs to be perfect. Do you have any favourite local suppliers? Our fruit and veg comes up daily from our own farm and we use Baynton Farm lamb (you can see the sheep from the beer garden!) and Edington Pigs for their rare breed Large Blacks. All of our beef comes from Tim Johnson at Stokes Marsh farm just a mile away.

MONTEREY Starting out from San Francisco, we picked up the car and headed south on Highway One, heading for Monterey, a two hour drive from the city. Along the way you’ll find glorious stretches of coast - the hardest part will be limiting the number of times you stop for photo-ops. On the way, grab a bite to eat in Pescadero - a blink-and-you’ll-miss-it town straight out of a Western. Monterey is one of my favourite Californian cities - even without its world-famous marine life, the city is home to a wonderful mix of vistas, from awe-inspiring coastal views to classic American street 38 THEWESTWILTSMAGAZINE

The park is on a monumental scale, set aside at least three days to make sure you see as much as possible. During our visit, the last of the spring snows were still melting so some trails were closed, but we still got to see the most spectacular views and some parts of

the park were so quiet that we could observe a Yosemite Fox trying to catch its prey in the snow. If you find the time, there’s also lots to explore just out of the park, including Hetch Hetchy which is only 20 minutes along a spectacular, and spectacularly narrow, valley road from the hotel. Hetch Hetchy is a glacial valley and man-made reservoir and has some fantastic trails around it of various lengths, perfect for any fitness level and utterly beautiful.

SONOMA The Sonoma Inn is perfectly located if you are looking to explore the city - park up, forget about the car and wonder into town to visit the many wineries right on the doorstep. The choice can be a little overwhelming, so the hotel staff are on hand with recommendations for tasting and dining locally.

SAN FRANCISCO After so many days of hiking and then a day of wining, it was time to head back to the City, where we had started a week before. San Francisco has an embarrassment of riches, some iconic and touristy and other more cultural entities a little more off the beaten track. We were 40 THEWESTWILTSMAGAZINE

determined to stay in the heart of the action and opted for The Marker Hotel. Just minutes walk from Union Square, The Marker oozes style and personality, with opulent suites decorated in jewel tones and some playful elements. The building dates from 1910 in the Beaux-Arts style and effortlessly combines old and new.

"San Francisco has an embarrassment of riches, some iconic and touristy and other more cultural entities a little more off the beaten track." Within the hotel is Tratto restaurant - a foodie destination worthy of a visit in itself. The restaurant menu is Italian themed, with trattoria-style dishes made to be shared and oozing with robust, fresh flavours. There’s definitely the feel of an upscale neighbourhood bar - perfect for enjoying happy hour before heading into the night. There are certain places that need to be ticked off here and seeing the Golden Gate Bridge in the flesh is absolutely worth the effort - we took a longer route to SF from Sonoma

just so we could drive over it. Alongside that there's the classic Pier 39, home of the sea lions, Alcatraz, the famously steep Lombard Street, and, my favourite, Golden Gate State Park, which affords its own beautiful views over the bay. You’re never far from great food in San Francisco either, so make time to head to the Mission District for the best burrito of your life, the LGBT Castro District for great cafes and people watching and brunch havens in Fillmore and Tenderloin. China Town and Little Italy are musts too. After eight days of exploration, it was time to call an end to a road trip that could easily have taken ten times as long, there is so much to see.

TRAVELLERS’ TIPS San Francisco has a warm Mediterranean-style climate that's characteristic of California's coast, with moist mild winters and dry summers. There are two seasons for whale watching in Monterey. Visit from mid-December through mid-April to see gray whales, dolphins and killer whales migrating, or visit from mid-April through mid-December to see humpback whales, blue whales, dolphins and killer whales.

THE BEGINNING Knees started life in 1879 when Henry John Knee opened his first shop in Trowbridge called Knee’s Ironmongers & Manufacturers and sold a wide selection of things for the house including paints, varnishes, mantel pieces, tile hearths, fenders, fire irons, kitchen ranges, stoves and lamps. Towards the end of the 1980s, Knees settled on the three sides of the business which remain today: retail; property, from land and buildings acquisitions over the years; and engineering.

The last few weeks have been extremely busy at Fairfield Farm College, as staff and students finished the academic year with a flurry of activities to celebrate the years achievements. Fairfield, a Specialist College for students with special educational needs, has had their largest intake this year, welcoming 85 students. Students have been enjoying the last few weeks as the college has hosted an array of special events to mark the ending of the academic year. Highlights include a whole college trip to Longleat followed by the annual Summer Ball. This tropically themed night was thoroughly enjoyed by the hardworking students, giving them a chance to let their hair down and enjoy some great food and even better dancing! The College hosted the annual sports day where all students enjoyed kickboxing, skateboarding, dancing, climbing, archery and a range of other sports. Paralympic tennis star, Louise Hunt, attended and students worked with Louise on a variety of activities. Students also enjoyed the annual Reunion BBQ where leavers from years gone by are invited back to tell everyone how well they are doing in the adult community. This year’s leavers graduated with a full ceremony on Friday 12 July. A total of 26 students graduated with over 150 guests in attendance. IS IT POSSIBLE TO DEFER PAYING YOUR CARE HOME FEES?

We asked ANDREW DOUGLAS, a partner at Awdry Bailey Douglas Solicitors who specialises in elderly care, for his views on this issue... SURELY YOU CANNOT DEFER PAYMENT OF FEES WHEN IN A CARE HOME? If, after a financial assessment by the local authority, a person is shown to be unable to pay all their care home fees from their income and capital savings (which must fall under the upper capital limit of £23,250) other than through the sale of their home a local authority must offer them a deferred payments arrangement. This takes the form of a mortgage.

Everyone is welcome to join, they have a monthly meeting to plan their next steps and also a green drinks event held in one of the local pubs talking about all things from hedgehogs to badgers, from plastic bottles to food waste.

FILM SCREENING The first event for the group is a screening of A Plastic Ocean, an incredibly powerful film based around the issues we face within our oceans. After everything we’ve seen in the news over the last year, this is a real eye opener and an inspiring and motivating opportunity to change your lifestyle. Five Bath Rugby players have been selected in England’s Rugby World Cup squad.

ath Rugby’s Joe Cokanasiga, Jonathan Joseph, Ruaridh McConnochie, Sam Underhill and Anthony Watson have been selected in Eddie Jones’ official 31-man England squad for the 2019 Rugby World Cup in Japan this month. After an impressive first season with Bath, McConnochie is the only uncapped player in a squad that contains over 1,000 caps. Owen Farrell will captain England in his second World Cup campaign, whilst it will be a third for Dan Cole, Courtney Lawes and Ben Youngs. Cole and Youngs are the most capped in the squad (86). On the players not selected, like Bath’s Charlie Ewels, Eddie Jones said: “A lot of good players have missed out, we feel for them, I feel for them personally. I got an interestingly insight into London by examining the origins behind the city’s different areas. They paint a very innocent, natural and even idyllic scene with Carshalton being a farm by the spring where cress grows; Bromley: a clearing where broom grows and Croydon a valley of wild saffron. And before long I spotted the fruits of labour in these more central spots: Hammersmith, a place with a hammer smithy (forge); Chelsea: a landing place for chalk; Chiswick: a cheese farm and Soho: a hunting cry.

Welcome to the first comment column in the brand new The West Wilts Magazine. Usually I would use this opportunity to get things off my chest that peeve me about, well anything really. The state of society generally, young people, older people, middling people, up-to-date things, out-ofdate things, things that grind my gears slightly, or a lot, hopefully in a humorous manner”.
