Bacon & Cabbage Terrine with Baby Leek Cream “This is one of my favourite starters that we serve at The Olde Post Inn and is one of those dishes that I can’t take off the menu. It can be a little tricky to prepare, but as long as it’s pressed correctly, it works. Chef Gearóid Lynch’s starter is a captivating mix of ingredients. Our wine experts found this pairing to be an exhilarating challenge. The terrine’s blend of salt, sweet, spice, fluffy cream and dense texture takes this dish to level ten deliciousness and calls for wines equal in measure. Feudo Luparello, a blend of Grillo and Viognier is another incomparable wine from Sicilian winemaker Walter Bartolomei. The refreshing tropical fruit notes counterbalance the salt of the ham hocks and quells any heat from the spice of the star anise and cardamom. A superior pairing is Domaine Ricard ‘Tasciaca’. Maverick winemaker Vincent Ricard loves to buck a trend and gently ages this Loire Sauvignon in Oak, lending it the power to match the body and texture of the terrine. The acidity of both wines will brilliantly cut through the cream and salt.

“You just can’t beat the traditional Christmas turkey. Everyone’s perspective is different with regard to the stuffing but I think it is fine to stuff the actual bird. We believe that pairing the right wine with your Christmas turkey is as important as all the sides. Contrary to popular belief, turkey pairs wonderfully with reds -- just keep them on the lighter side. If your preference is red, a stellar choice is Domaine Duband Cote De Nuits Village. This Pinot Noir is a turkey-friendly stunner. A creamy and buttery Chardonnay from Burgundy is a top choice for a special occasion white and Domaine Emilian-Gillet is at the top of that list. Clarke’s Marmalade Glazed Whole Irish Free Range Goose & Goose Fat, Polenta Crusted Maris Piper Roasties Free Range goose is a delectable alternative to turkey at Christmas. The buttery flavour of a free range bird is from geese enjoying their diet of Irish grass. Gary met Pat Clarke and his wife at the Taste of Donegal and came away from their stall with some lovely jam and marmalade. It is now Clarke’s that Gary uses for his glaze. Is it any surprise that Gary raises the bar with an adventurous alternative to the traditional Christmas Turkey? He has mastered the almighty Goose with this stunning dish and adds some extra flair with his goose fat, polenta roasties. Goose is naturally fattier and more flavoursome than turkey, allowing bigger wines to pair. For something really special, uncork Silvano Bolmida’s luxurious and almost sinful Barolo. Its bold tannic richness stands up nicely to the rich meal. You may find a new favourite in pairing Bender Paulessen Riesling with your succulent bird. It may not have a red’s tannic structure, but their intense minerality and high acidity, have long been a go-to white for hearty winter dishes.

Ireland’s only raw milk blue Quinta Do cheese made from Crasto LBV Goat’s milk. It is Native Varieties €23.85 similar to an English Stilton in texture and its unique balance makes it a giant on a cheeseboard. Quinta Do Crasto Port LBV’s elegant red fruits and spicy character pairs beautifully with the salty, nutty nuances.

A semi-soft, creamy, cheese, closely resembling the French classic Reblochon. The year it was released it won Silver in the World Cheese Awards. Castellari Bergaglio Gavi Salluvii is lively on the palate with wonderful Castellari citrus flavours and a searing Bergaglio Cortese Chablis-like streak €17.00 complementing the velvety, melt in your mouth texture.

A creamy cheddar made from pressed cow’s milk and sold at 6-12 months maturation. Winemakers: Walter Bartolomei Ciù Ciù Walter Bartolomei is a giant of Italian wine. He is responsible for the ever popular Ciù Ciù winery, and has recently taken over Sicilian winery Feudo Luparello. Ciù Ciù is produced in the Marche, on Italy’s Adriatic coast. The wines are certified organic, and like Feudo Luparello, they are pursuing sustainability through wastewater, energy and biodiversity projects. Bartolomei’s wines are among our greatest discoveries. They offer Mediterranean flair and flavour at a price that keeps them accessible. Walter’s wines use Italian speciality grapes like Passerino, Montepulciano and Sangiovese. These grapes thrive on Walter’s vineyards, producing wine perfect for easy enjoyment. He strives for fresh, light and fruity wines which offer many drinking and food pairing options. It comes as no surprise that Ciù Ciù and Feudo Luparello are a favourite for parties and are among our most popular wines.

Montepulciano - 13% Abruzzo DOC - Italy This Montepulciano has a lovely vibrant nose of red fruit. The palate is majestically smooth and full of ripe cherry, strawberry and burnt raspberry flavours with some earthy notes. Tannins are very refined, and there’s a final touch of acidity to keep everything fresh.

Winemakers: Valva Martínez de Toda

Las Cuadras Valva Martínez de Toda is a young and innovative winemaker and her Las Cuadras Viognier and Muscat is a superb Catalan white that has gone down a treat this year at Wines Direct. Las Cuadras vineyards are located in the Costers del Segre area of Catalonia in north eastern Spain. About 2 hours drive west of Barcelona. Las Cuadras’ 71 ha of vineyards are spread over rugged ground at an elevation of 300m above sea level with clay-limestone soil that Viognier and Muscat grapevines love. Valva Martínez de Toda prioritises the quality of her fruit, insisting that great wine is made in the vineyard. She has also equipped the cellar at Las Cuadras with the last word in modern winemaking, including an organoleptic laboratory to help determine optimal ripeness and maturation. The wines develop at a stable temperature in 300 litre barrels. All this careful effort in the vineyards and cellars pays off with intensely flavoured, sophisticated wine. To get the most out of your Christmas drinks, follow 3 simple rules: 1) half-fill your glasses for temperature and aromatics, 2) sweet or fortified wines need smaller glasses, and 3) bubbles go in narrow flutes.

In Victoria’s picturesque McLaren Vale, the Coriole Vineyards stretch out under the watchful eye of Mark Lloyd’s son Duncan. Coriole has a rich history dating back to 1860, when the property’s old house and barn were first constructed. The Lloyd family acquired the land in 1968. They wasted no time in releasing the first vintage under the Coriole label two years later. Some of the Shiraz vines in production today date back to 1919. Mark and Duncan are firm believers that good wine is made in the vineyard. The region's deep red soils produce richly coloured and textured red wines. While some wines are aged in new oak, the Redstone and Sangiovese are aged in older oak, producing a wide range of styles. The Lloyd family has a strong environmental conscience, and organic practices have been adopted at Coriole, with plans to further expand organic production over the coming years.

Bender Long hours of research and walking vineyards up and down the Rheingau finally brought us to Andreas Bender. He is an exciting new addition to Wines Direct and is known to his fellow winemakers as “the Maverick of the Mosel!”

Andreas comes from a winemaking family in the Mosel town of Leiwen. He acquired his 35 ha of vineyards in Pfalz and the Mosel bit by bit from family friends or bought from neighbours as the next generation opts out of winemaking. Andreas is a traditionalist: choosing prime soils, hand-selecting grapes, using time-honoured methods in the cellar and allowing natural fermentation of his fruit.

Weissburgunder - 12% Mosel QBA - Germany German Pinot Blanc from 30-year-old vines harvested on steep slopes with slate soils. A silky soft stone fruit core erupts with a burst of sharpness on the finish.

Andreas’ contemporary attitude comes through in the Bender label design and his accessible and fun wines. His Pinot Noir and Weissburgunder ably avoid the pitfalls of intimidating new drinkers and connoisseurs alike. Instead, he takes Pfalz and Mosel’s traditional grapes, cool climate, and slate soils and uses them to create rich, enticing wines that we are genuinely excited about. Serving order is absolutely a matter of preference. But here’s a rule of thumb: dry before sweet, white before red, light before full-bodied, young before old . . . and bubbles before everything!

Meet the

Winemakers: Marie and Sylvie Courselle Chateau Thieuley

Sylvie and Marie Courselle are sisters and oenologists from Bordeaux. Together, they run Chateau Thieuley, their family estate near La Sauve in Entre-Deux-Mers, Bordeaux. Chateau Thieuley was bought by their grandfather in 1950, but it was their father, Francis Courselle, who made the estate famous. A renowned expert in white wines and an oenological educator at Bordeaux University, Francis Courselle earned Chateau Thieuley’s reputation by making outstanding white wines that rival the great white wines of Burgundy. Marie and Sylvie Courselle were raised in vineyards and wineries, steeped in the practice and culture of winemaking. It is here where they inherited their father’s passion for wine. So, it is no surprise they’ve grown up to make award-winning exceptional wines.

Winemakers: Alister Purbick Tahbilk The man behind Four Sisters and Tahbilk, Alister Purbrick is one of the best-known winemakers in Australia. In fact, the Purbricks are founding members of Australia’s First Families of Wine, an exclusive group of uniquely historic wineries. Tahbilk was established in 1860 in the Nagambie Lakes region of central Victoria. The property lies on rich river flats along the Goulburn River. The name 'Tahbilk', rather appropriately, is the Aboriginal term for 'place of many waterholes'. Today, Alister works closely with his daughter Hayley to bring a carbon-neutral strategy to the winemaking and viticulture at Tahbilk. Hayley is the fifth generation of the Purbrick family to make wine at Tahbilk.

Temperature matters to wine. Sweet and sparkling wines need 2 hours in the fridge, but rich whites and light reds only need 40 minutes. Fuller-bodied reds like room temperature, but that means the pantry, not beside the fire!

Winemakers: Françoise Antech Antech Françoise Antech is one of France's more vocal and gregarious female winemakers. Strong women have been the driving force behind Antech (pronounced “Anne – Tash”) for the last three generations of the winery. Françoise is the 6th generation of her family to run the estate and winery and she is dedicated to making wine worthy of their legacy. Limoux is the home of sparkling wines. Historians believe that in 1531, long before corks were popping in Champagne, monks in the Abbey of Saint-Hilaire near Limoux had invented the sparkling wine still made there: Blanquette de Limoux. Antech has been part of this tradition since the late 19th century. Antech has a wide-ranging and fully integrated policy of sustainability. Françoise’s mission is making wine that benefits the land, her customers, her employees, future generations, her family and herself.

Meet the

Winemakers: Pascual Olivares Fernandez Bodegas Olivares Pascual Olivares Fernandez began producing small quantities of Monastrell in 1930, laying the first brick at Bodegas Olivares. Pascual’s sons, Celestino and Vicente took over operations after their father retired and have now been succeeded by the third generation. Pascual’s grandson and namesake is the current commander-in-chief at Bodegas Olivares. In their Hoya de Santa Ana vineyards, at an altitude of 825 meters, a unique terroir and old ungrafted vines combine to yield distinctive, genuinely expressive Jumilla wines. Pascual strives to produce wines representing the wonders of the harsh yet beautiful landscape in Jumilla. Olivares’ wines are vinified using natural yeasts which Pascual tells us is to “preserve the grape’s natural character, and not mask it.” As a part of their natural approach to winemaking, no artificial or chemical fertilisers are used on the vines. Pascual’s ethos is to fully utilise everything nature has to offer to express the terroir of Jumilla and the flavours of Monastrell. Decanting: An elegant decanter is stylish, but just pouring your bottle into a carafe gives the wine enough air contact to open it up. If you spent years in a sealed bottle, you’d want a breath of air too!

Winemakers: Alix Marès

Château Puy Castéra Located between Pauillac and Saint-Estèphe, the 28-hectare Château Puy Castera vineyard is owned by Alix Marès, a very dynamic young woman who is also a fully qualified agronomic engineer. Alix follows the traditional Médoc methods of wine-making. The winery was started in 1975 by Alix’s father, Henri Marès, who worked closely with oenologist Professor Emile Peynaud to build a special cellar which uses the gentle power of gravity throughout the wine-making process. This gravitational technology is in use from the moment the grapes reach the cellar until the wine is poured into barrels. This minimises grape damage and allows her fruit to shine. Alix is advised by one of the Médoc’s best oenologists, Jacques Boissenot. Jacques Boissenot has worked with Chateaux Margaux, Mouton-Rothschild and Palmer amongst others. His involvement at Château Puy Castéra is a bellwether of the exquisite quality wines they produce.

Winemakers: Françoise Roumieux Mayard

Vignobles Mayard Vignobles Mayard is an outstanding property in the Rhône’s most renowned appellation, Châteauneuf-du-Pape. On our last trip to her family winery, Françoise Mayard told us how Vignobles Mayard may never have existed, were it not for her great-grandfather’s love for his ancestral vineyards. Following the phylloxera epidemic that decimated the French wine industry in the late 1800s, many vignerons emigrated to the New World. Gratien Mayard, Françoise’s great-grandfather, was set to follow them. In 1923, Gratien was about to step onto a ship bound for the U.S. when he finally succumbed to the pull of his home to stay and work the land. He painstakingly replanted the vineyards, vine by vine, and began making wine under the new Châteauneuf-du-Pape appellation. Perhaps this explains their decision to eschew chemicals in the vineyards and to use more environmentally friendly, labour intensive methods. Finding a wine to match Christmas Dinner can be a real challenge. There are just so many different flavours going on between the turkey, ham, stuffing, and the vegetables. Crowd pleasers like full-bodied Chardonnay, Rhône reds or Australian Shiraz are the way to go!
