Dear Friends, As we go to print with our 2019 Spring/Summer Events Calendar, we are busy preparing for our upcoming 25th Anniversary Celebrations! The amazing events we have created over the years are what sets us apart from other wine, beer, and spirit retailers. Our TasteDay Thursday program, created in September 1994, was the beginning of what would become Canada’s most comprehensive beverage education program offered by a private retailer. The annual Willow Park Wines & Spirits Charity Wine Auction is Canada’s longest running retailer-hosted charity event of its kind. We are proud of the charity work we have done in the community, and we continue to contribute and promote hundreds of charity events throughout the year. All proceeds from our tastings are donated to charity. But what makes us stand up tall is our relationship with our customers, and how they reach out on a regular basis to tell us what we are doing right or wrong. Both these ladies have years of wine & travel experience and they will be the ultimate hosts for this week long trip. Your adventure begins in Paris for a night before meeting the group in Narbonne. Your home for a week will be the 1000-acre winery Château L’Hospitalet, a haven of pine forest and vineyards overlooking the Mediterranean Sea. It is the perfect base from which to explore this incredibly historic part of France, where Romans first planted vines over 2000 years ago.
The main visit of each day will be to a nearby Gerard Bertrand owned winery. Gerard’s biodynamic wineries in the area are symbolic of his amazing focus as a custodian of the land. You will visit Château La Sauvageonne near Montpellier, Clos d’Ora in the Minervois and Domaine de Villemajou in Corbieres, just to name a few. In addition, a day will be spent in the charming village of Cucugnan at Château Trillol with owner James Sichel. The family has owned this winery for over 25 years and enjoy sharing the wine and the culture of this famous Cathar region with guests. Other notable activities will include a visit to the famous walled town of Carcassonne and lunch at the busy Narbonne market.

Veal Osso Bucca in Citrus Sauce with Noodles By Peggy Perry This lighter style Osso Bucca has been a family favourite for years. You can make it 2 or 3 days ahead and it freezes well. Leftover veal is delicious cut up and served with some sautéed vegetables on rice or pasta. I usually double or triple this recipe.
SERVES 4 INGREDIENTS: • 4 veal shanks - 10 ounces each • 2 Tb olive oil • 1 orange • 1 grapefruit • 1 lemon • 2 cloves of garlic chopped • 1/2 red onion chopped

1 carrot chopped 1 celery rib chopped 1/2 bunch of Italian parsley 1 bottle dry white wine 2 cups chicken broth 1 28 ounce good quality canned tomatoes
DIRECTIONS: 1. Sautéed veal on both sides until brown. Salt & pepper as desired. 2. Remove from the pan and add the vegetables and half the parsley. Sautéed until soft. 3. While the vegetables cook, zest all the fruit and squeeze the juice into a bowl. 4. Add white wine to vegetables and reduce by half. Chop the canned tomatoes and add to the pan without adding the juice. 5. Add in Citrus zest and juice and chicken broth and half of the parsley. Return the veal to the pan and cook for 2 hours. The meat should almost fall of the bone. 6. Cook a wide egg noodle or fettuccine and spoon the Osso Bucca sauce over the noodles. Place a shank on top and sprinkle with the remaining parsley.

APRIL 2019 THURSDAY, APRIL 18 East of France Festival - Germany, Georgia, Hungary, Romania, Greece, Moldova, Turkey 7-9pm $40 The religious holidays in the spring often turn our thoughts to the traditional celebrations of Central and Eastern Europe and the importance of pairing wines with celebratory meals. The Riesling grape is important to Europe’s Eastern viticulturists, as are the international varieties like Cabernet Sauvignon and Pinot Noir. Taste these better known varietals alongside indigenous grapes that are somewhat hard to pronounce but endlessly expressive! Georgia’s Rkatsiteli, Greece’s Agiorgitikom and Hungary’s Tokaji. THURSDAY, APRIL 25 TasteDay Thursday – Intro to Organics 7-8:30pm $15 Join us for an introductory class where we will dive into the landscape of organic wines. You will learn about the difference between organic and biodynamic wines and the special processes for each. You’ll discover how these trends are growing and becoming more widely accepted by winemakers everywhere. FRIDAY, APRIL 26 Master Class: The World’s Best Organic Wines 7-8:30pm $100 Winemakers were among the first famers to reject the use of pesticides and other harmful substances on their crops. It was Chateau Guiraud in Sauternes that decided, under the guidance of Xavier Planty, to be the first Bordeaux Estate to become 100% organic in 1983, and this was under Canadian ownership! The famous and eccentric Michel Chapoutier was the most highly visible proponent of organic grape farming in the Côtes du Rhône in the 1980’s. Chapoutier’s research and return to biodynamic farming has been much discussed and debated over the years. Here at Willow Park Wines & Spirits, no one is more conversant on this subject than Trusted Expert Michael Bigattini! A ninth-generation descendant of the Bouchard family, Luc is the Export Director for Maisons et Domaines Henriot, which, in addition to the eponymous Champagne Henriot, owns Bouchard Père et Fils and William Fèvre. Bouchard grew up in the vineyards of Burgundy and took part in the annual harvest since childhood. In fact, following family tradition, Bouchard was baptized with one of the house’s most famous wines, the Beaune Grèvres Vigne de l’Enfant Jésus. Taught by XL 103.1’s ‘The Coach’ Jamie Herbison Assisted by Samantha Nelmes, Willow Park Wines & Spirits Wine Room Manager Our ever popular wine basics course is back for another season with wine expert Jamie Herbison leading this 6 class introduction to the world’s major wine producing countries. Jamie will base the class on the required textbook ‘Windows on the World Complete Wine Course’ by Kevin Zraly. Of course with his many years of food and wine learning, he will also share great recipes, entertaining tips and his favourite food and wine pairings. Each class will begin with a regional bubble and a tasty appetizer. Six to eight wines will be tasted and there will be a classic food and wine pairing each week and a selection of cheese to help strengthen your food and wine pairing skills. Official class start time will be 2:00pm on Saturdays between May 11 and June 22 with no class on May 18, 2019. The class will run until 5:00 pm. Jamie and Samantha will be available from 1:45 pm each Saturday to answer questions and share a refreshing taste of bubbles. Jamie’s lifelong passion for food and wine has recently been reinforced by a 3 year stint as a wine instructor at the Robert Mondavi Institute for Wine and Food Science in Napa Valley. Samantha has recently completed her Level 3 Wines & Spirits Education Trust Certification and brings several years of wine study and travel to the program.

Spicy Noodle Soup with Pork By Peggy Perry
INGREDIENTS: • 1 tbsp. minced or grated ginger • 1 tbsp. minced garlic • 1 pound of ground pork • 1 or 2 minced red Thai chilies • 1 tbsp. five spice powder • 1 tsp. toasted ground Sichuan peppercorn • 8 cups chicken broth • 2 cups sliced vegetables(mushrooms, carrots, zucchini, celery, bean sprouts) • 1/2 pound fresh Chinese noodles or 4 ounces thin dried noodle Soy Paste to taste • Sriracha sauce, minced green onion and/or cilantro to finish
DIRECTIONS: 1. Sauté ginger, garlic and red bird chili peppers for 2 minutes then add ground pork. 2. Season with 5 spice and toasted ground Sichuan peppercorns. 3. When Pork is cooked, add soy paste (1 teaspoon black or balsamic vinegar, 1 to 2 tablespoons soya, a little broth, 1 tablespoon sesame oil, and minced cilantro). 4. Add broth and bring to a boil. 5. Add thinly sliced vegetables. 6. Add cooked noodles. 7. Sprinkle green onion and/or cilantro on top.

MAY 2019 Warm Potato Salad By Landin Sharkey, Regional Chef Calgary North
With summer just around the corner I wanted to share one of not only earls favorite summer dishes but also one of my personal favorites. Warm Potato Salad is a classic side dish that is great any time of the year but to elevate it a little further during the summer and early fall, buy fresh corn on the cob, grill it on the barbeque and slice the kernels off the cob.
INGREDIENTS: • 2 lb baby red potatoes • 3 tbsp olive oil • ½ cup corn kernels (thawed if frozen) • ½ cup bacon ½ inch in size • Potato salad dressing • 2 tbsp finely chopped chives
Potato Salad Dressing: • ¾ cup Mayonnaise • ½ cup sour cream • ¾ tsp lemon juice • ¼ tsp fine salt
SUNDAY, MAY 26 WSET Level 2 | $799 3 Sunday Classes May 26 & Jun 2 and 9 | 10am-6pm WSET 2 - AWARD IN WINES & SPIRITS A beginner to intermediate level qualification exploring wines and spirits for those working in the industry or wine and spirit enthusiasts. For individuals seeking a core understanding of wines, this qualification explores the major grape varieties and important wine regions in which they are grown. You’ll learn about the styles of wines produced from these grapes as well as key classifications and labelling terminology. A basic overview of the key categories of spirits and liqueurs will also be provided. Upon successful completion, you will receive a WSET certificate and lapel pin, and will be able to use the associated WSET certified logo. PROGRAM OUTLINE • How wine is made and factors influencing style • WSET systematic approach to wine tasting • Wine-producing regions • Sparkling wines, sweet wines and fortified wines • Spirits and liqueurs • Label terminology • Food and wine pairing • Key white & black grape varieties
DIRECTIONS: 1. Preheat oven to 425 F (220 C). 2. Halve the red potatoes and toss with 2 tbsp Olive oil thoroughly coted, transfer to a parchment lined rimmed baking tray, arranging the pieces face down. 3. Bake for 35 to 40 minutes or until potatoes are tender when pierced with a fork. 4. Transfer to a large mixing bowl and drizzle with the 1 tbsp Olive oil. Allow to cool slightly. 5. Using the same bake tray and oven setting, heat the corn and bacon in in the oven for 5 minutes or until slightly roasted. The object is to givet he corn some color and heat the ingredients thoroughly. 6. Toss the potatoes, corn, bacon and dressing until well coated and mixed evenly 7. The recipe makes 4 to 6 ounces of Arugula Pesto.

Alex can answer any wine questions you may have and can find you the perfect bottle of wine you didn’t know you were looking for. “Terrior plays such an important impact in winemaking. A chardonnay from a hotter climate like Napa Valley will taste a lot different than one from Chablis, France”. His charismatic personality in addition to his product knowledge is sure to leave you with a smile on your face and a better understanding of our products after just a short chat.
INGREDIENTS: • 6 cups of arugula • 1 to 2 medium garlic cloves • 1 to 2 tbsp. lemon juice • 3 to 4 tbsp. grated parmesan cheese • 3 to 4 tbsp. olive oil, extra virgin olive oil preferred • 1 teaspoon maldon salt
DIRECTIONS: 1. Purée garlic in blender/food processor. 2. Add arugula, parmesan cheese and lemon juice. 3. Pulse 3 or 4 times. 4. Scrape down sides of blender and add olive oil slowly, running blender or food processor continuously. 5. Add salt.

Cook 1 pound of pasta according to package instructions. Toss pesto in pasta. Top with some chopped tomatoes and a few arugula leaves. Add parmesan and black pepper. Add sautéed seafood for a non-vegetarian version.

Deepwater Arugula and Radish Salad with Dijon Vinaigrette • • • • •
6 cups arugula 1 bunch radish, quartered 1 cup fresh peas ¼ cup Dijon vinaigrette Toss ingredients in salad bowl
Dijon Vinaigrette • 1 ¼ cups extra-virgin olive oil • 2 tbsp Dijon mustard • 1 shallot, finely chopped (optional) • Pinch salt and pepper • 3 tbsp water In the largest metal bowl you have, whisk vinegar, mustard, shallot, salt and pepper together. Continue whisking (in one direction, to avoid splitting the dressing) for about 1 minute while adding olive oil in a thin stream. Whisk again for 45 seconds (dressing should emulsify and stick to the whisk). Taste and season if necessary. Whisk in water to get to a pouring consistency. Pour into a hinged jar and store in fridge for up to 3 weeks. Recipe from westernliving.ca
