A Note from Willow Park Wines & Spirits’ New President I am so pleased to be kicking off our 2019 Fall program with the announcement that our Henuset ownership has honoured me with the promotion to President of Willow Park Wines & Spirits. It has been wonderful working with this company for the past 25 years and I am excited to lead this amazing retail organization into the future. Speaking of more new roles, after 5 years of great leadership Suzanne and Scott Henuset have passed over the reins of the Willow Park Wines & Spirits Charity Wine Auction to Karen and Reid Henuset. Our new Co-Chairs have created a hot theme for our most important event of the year – Caliente! Get ready for a sizzling show on November 2, 2019. The entire Willow Park Wines & Spirits team is excited to support Karen and Reid in their new roles and hard work to raise as much as possible for our local charities. This is a casual interactive opportunity for our customers to enjoy a one on one interaction with a knowledgeable passion winery principal. GRILLED RAINBOW PEPPERS By Peggy Perry The peppers in this dish will dance with the complex and vibrant Gérard Bertrand Côte des Roses Rosé - one of Peggy’s favourites!
Preparation: 15 minutes Grilling Time: 6 minutes Servings: 6 to 8 servings
Ingredients • 1 garlic clove, minced • ½ lemon • ½ tsp (2 ml) salt • ¼ tsp (1 ml) ground black pepper • ¼ cup (50 ml) olive oil
• 1 cup (250 ml) fresh basil, coarsely chopped • 3 each red and yellow peppers • 1 tbsp (15 ml) olive oil • ½ cup (125 ml) crumbled feta
Directions Place garlic in a blender. Squeeze in 1 tbsp (15 mL) juice from lemon. Add salt, pepper and ¼ cup (50 mL) oil. Blend until mixed. Add basil. Puree to a saucy consistency. Use right away, or cover and refrigerate up to 2 days. Bring to room temperature before using. Oil grill and heat barbecue to medium-high. Slice peppers into quarters. Place peppers in a large bowl. Drizzle with 1 tbsp (15 mL) oil. Toss to evenly coat, then place on grill. Depending on size of grill, you may need to barbecue in two batches. Barbecue with lid closed until peppers are lightly charred, turning often, 6 to 8 minutes. Remove peppers to bowl as they are done. Evenly drizzle basil sauce over top and toss peppers until well coated. Place on a platter, then scatter feta overtop. Delicious warm or cover and leave at room temperature up to 3 or 4 hours. Nutrients per serving 2.1 g protein, 10.3 g fat, 6.6 g carbohydrates, 0.7 mg iron, 56 mg calcium, 232 mg sodium, 1.3 g fiber, 122 calories

In his role as General Manager of The Guild, Cam Pinkney combines his 20 years of experience in the food and wine industry with his passion for stellar hospitality. After completing the Hospitality Management Course at SAIT, Cam became enamoured with wine and travel, encouraging him to complete his Level 4 Diploma with the Wines & Spirits Education Trust. Due to his expertise, Cam has consulted on many wine programs at top restaurants around the country and currently judges the International Wine & Spirit Competition in the UK.

Shawn Jackson started his unconventional culinary career in his native Quebec, successfully revitalizing menus and launching new locations before receiving any formal education. Always craving more knowledge, Shawn attended George Brown, followed by staging at several innovative restaurants, before helping open numerous restaurants and brewhouses around the country. It’s time to take your taste buds on a trip to Southern Italy! Michael will be preparing a classic limoncello, as well as his very own ‘Mellocello,’ emphasizing the balance and harmony needed to make the liqueur. This famed region is also home to some of the best Italian wines like Chianti, Montalcino and Montepulciano, along with many of our favourite wineries. Tonight, we’re delighted to have Antonio Zaccheo, owner of the renowned Carpineto vineyards, help us pair his award-winning Tuscan wines with classic Tuscan cuisine, including his Vino Nobile di Montepulciano, which was scored in Wine Spectators Top 10 Wines of 2018! After tasting bistecca toscana and pici, you’ll understand why this region reigns supreme! THURSDAY, SEPTEMBER 26 Brunello Master Class 7-8:30pm $175 Style: Seated Tasting, Non-Reserved Seating Winemaker Ferruccio Biondi Santi was responsible for producing the first Brunello di Montalcino in 1865, an archetype for the style we know today. The esteemed reputation of their wines along with successful growth in the 1960’s motivated others to follow suit. Situated south of Siena and close to the Mediterranean Sea, vineyards planted along the hillsides of Montalcino enjoy warm, dry summers cooled by maritime breezes, creating ideal conditions for viticulture. Tonight, we will be featuring a Riserva from the historic Biondi Santi, along with some of our favourites like Terralsole and Gaja Pieve Santa Restituta.

Growing up in Paris, France, Michel Nop has always been immersed in the food world. Michel trained at several restaurants across Europe, including his family’s own restaurant, before moving to Calgary to work as Chef de Partie at Teatro Ristorante. He briefly returned to France to cook in Michelin-starred restaurants before continuing his phenomenal career in the Calgary food scene. Michel has been instrumental in opening critically acclaimed restaurants such as Cassis Bistro, Chef’s Table, and Foreign Concept. His work has received accolades from notable institutions, such as Relais & Chateaux and CAA/AAA. Now, as the Chef de Cuisine of Buffo Restaurant, Michel’s mission is to delight his guests with the simplicity and generosity of Italian cooking.

Directions: 1. Peel and thinly slice the onions and the garlic. 2. In a Dutch oven over medium-high heat, add the oil and the butter. When the butter is melted, add the onions and the garlic. 3. Lower the heat to medium and let it caramelized until golden brown for about 30 minutes. 4. Strain the onion and discard the oil. 5. In the same Dutch oven add the sugar, when the sugar starts to bubble add the vinegar. Once this is done you can add the caramelized onion and the prosciutto 6. Allow this to simmer over low heat for 20 minutes. 7. Serve warm on toasted focaccia with a piece of marinated artichoke and finish with lemon. You can save leftover jam for a couple weeks in the fridge.

TUESDAY, OCTOBER 1 Sherry Masterclass with the Alvear Family 7-8:30pm $45 Style: Seated Tasting, Non-Reserved Seating Sherry and spirit lovers unite! Founded in 1729, Alvear was the first winery to be established in Andalusia, Spain and is one of the most prestigious and internationally renowned bodegas in the region. Boasting extensive vineyards that are located in the most famous estates in the Sierra de Montilla y Moriles producing the key grape variety Pedro Ximénez, which is used by the bodega as the unique base wine for its sweet, Fino, Oloroso and Amontillado wines. The evening will start by pouring the Bodegas Alvear Marques De La Sierra, followed by a sit-down tasting of top scoring sherry’s. We’ll be tasting the Alvear Fino, Amontillado, rare bottles of Fino Capataz Solera de la Cases and Criadera A Montaillado, 2015 Pedro Ximenez de Anada, and 1927 Pedro Ximenez Solera, each of which have scored over 90 points. The evening will conclude with the delicious Alvear Brand Gran Reserva. Bodegas Alvear is rooted in family tradition, and the winery is now in its eighth generation of family ownership. This evening we are joined by family member and proprietor, Fernando Alvear along with export manager Alvaro Ruiz. Together, they will guide us on a journey to discover the history, range, and enjoyment of the various styles of Pedro Ximénez wines. CHICKEN PAILLARDS WITH AVOCADO AND POMEGRANATE SALSA By Meiko Pennock For the Chicken • 4 4-6 oz. boneless, skinless chicken breast halves 1 • ⁄3 cup fresh lemon juice • 3 tbsp. extra virgin olive oil • 1 tbsp. pomegranate molasses • Kosher salt and freshly ground black pepper
For the Salsa • 1 large lemon • 1/2 medium pomegranate • 3 small scallions, white and light-green parts only, thinly sliced • 2 medium firm-ripe avocados (6 to 7 oz. each), pitted, peeled and cut into 1/4 inch dice • 2 tbsp. extra-virgin olive oil • 2 tsp. chopped fresh flat-leaf parsley • 1 tsp. finely diced seeded jalapeno • 1 tsp. pomegranate molasses • Kosher salt

Prepare the Chicken Pound each chicken breast between pieces of plastic wrap wrap until about 3/8 inch thick. In a shallow bowl, stir the lemon juice, 2 tbsp. of the olive oil, pomegranate molasses, 3/4 tsp. salt, and 1/4 tsp. pepper. Add the chicken, turn to coat well, cover, and refrigerate for at least 20 minutes and up to 1 hour.

Make the Salsa Finely grate the zest from the lemon and then squeeze 1 tbsp. juice. Pick the seeds out of the pomegranate, discarding any pith, and put them in a bowl. Add the lemon zest and juice, scallions, avocado, olive oil, parsley, jalapeno, pomegranate, molasses, and 1/2 tsp. salt.

Cook the Chicken Heat 1/2 tbsp. of the olive oil in 12-inch skillet over medium heat. Add 2 of the chicken breasts and cook until lightly browned, about 3 minutes. Flip and cook until lightly browned on the other side and cooked through, about 3 minutes more. Transfer the chicken to a plate and cover to keep warm. Repeat with the remaining 1/2 tbsp. oil and 2 chicken breasts. Serve the chicken with the salsa spooned over the top.

Tonight, we’ll be sipping on only premium sakes while learning about the history and production of this incredible rice-based drink. Kinjo will be in the room dishing out their fantastic sushi for an authentic pairing experience. Hosted by Dave the Sake Guy, this evening is sure to get you excited about what’s big in Japan!
Ingredients • ½ cup cream • 5 ounces soft goat cheese, plain or garlic and herb seasoned • ¼ teaspoon freshly ground black pepper, or to taste • 2 tablespoons extra-virgin olive oil • 1 pound mini-tomatoes, such as grape, teardrop, or cherry tomatoes • ¼ cup chives, chopped • ¼ cup fine dried bread crumbs, preferably garlic-herb seasoned • 2 tablespoons freshly grated Parmesan or Romano cheese • 1 clove garlic, minced • About ¼ teaspoon salt, or to taste • Freshly ground black pepper
Procedure Toss washed tomatoes with chives and garlic and olive oil. Mix cream with goats cheese and spread over tomatoes. Sprinkle bread crumbs and Parmesan cheese on top. Bake in 350 degree oven for 15 minutes.

Our ever popular Wine 101 course is back for another season! Hosted by wine expert Jamie Herbison and Wine Room Manager Samantha Nelmes, these 6 classes serve as an introduction to the world’s major wine producing countries. Jamie has based the class on the textbook ‘Windows on the World Complete Wine Course’ by Kevin Zraly. Of course, with his many years of food and wine learning, Jamie will also share great recipes, entertaining tips and his ultimate food and wine pairings. Each class will begin with a regional bubble and tasty appetizer. Six to eight wines will be tasted, followed by classic appetizers and a selection of cheeses to help you strengthen your food and wine pairing skills. The weekly class will run on Sunday’s from 2:005:00pm between November 10 and December 15. Jamie and Samantha will both be available 15 minutes before and after the class to answer any additional questions about the material, or simply for another sip of bubbles! Jamie’s lifelong passion for food and wine has been reinforced by a 3 year stint as a wine instructor at the Robert Mondavi Institute for Wine and Food Science in Napa Valley. Samantha has recently completed her Level 3 Wines & Spirits Education Trust Certification and brings several years of wine study and travel to the program

Celebrate! 26th Charity Wine Auction Week Dear Friends & Guests, It is our honour to be your hosts for the 26th Charity Wine Auction week of events, marking our first year as hosts for this unforgettable event. Although we have big shoes to fill, we couldn’t be more excited! This year, we’ll be bringing some spice with a Latin fiesta in the theme of ‘Caliente’. Prepare yourself for an evening of fiery beats, inspired food from some of Calgary’s best chefs, and premium wines from the world’s top wineries. The silent and live auctions will be your opportunity to acquire rare bottles, score exceptional trips, and bid on unique experiences with members of the Trusted Experts team. As always, this incredible party is put together in order to support a variety of deserving charities spanning multiple disciplines. We continue to support the Alberta Children’s Hospital Foundation with the Centre for Child and Youth Mental Health, which will provide care and access to walk-in clinics, intensive outpatient therapy and a community-based day hospital. This facility will provide families with tools and understanding to better identify, develop treatment plans for, and manage mental health issue before they escalate into crises.
Through their support, affected individuals and their families are equipped with tools to meet all psychological, emotional, and education needs. This year, we will be adding the Alberta Animal Rescue Crew Society (AARCS) to the list of our beneficiaries. AARCS is an animal welfare organization founded on compassion for homeless animals, focusing on rescuing, rehabilitating, and rehoming. While the Charity Wine Auction week of events demonstrates the best of Willow Park Wines & Spirits, it also showcases the incredible people who we depend upon for its success. It is the generosity of our guests and donors that allows us to continue to give back to local charities that are important to us. For the second year we will be donating to the Tom Baker Cancer Center. As an innovative leader in cancer research, treatment and care, the facility put our past donation towards treatment programs for both inpatient and outpatient care. The Calgary Wellspring Hospice remains an important cause for us. With a focus on the individual rather than the disease, the centre provides community based treatment for those living with cancer.

The town of Tequila in Jalisco, Mexico is one of the most colourful and fun we’ve found. This tour begins when we pick you up in the quaint village of Tlaquepaque, which is a short transfer from the modern airport in Guadalajara. Meet the locals on a late morning tour of the city highlights, including an authentic street taco lunch. Our home base will be Tequila and the brand new El Tequileño Hotel and Spa. We have an action packed itinerary planned, but there will be plenty of chances to also relax by the pool. Our focus is tequila: historic El Tequileño, iconic Herradura, Fortelezza and a very interesting cultural programme at Jose Cuervo. Technical tastings, tours and visits with the distillers are the cornerstone of our tour. Our meals range from rustic to elegant, all made with fresh local fare and Mexican flare. Tequila is approaching its 500th anniversary and there is much to see and delve into. Early heavy rains brought mildew and great apprehensions for Bordeaux winemakers hoping for a big harvest after the cataclysmic frost of the 2017 vintage. Luckily, the skies parted and Bordeaux experienced its second hottest summer since 2003, along with perfect dry autumn harvest weather. While the grape growing season was challenging, this ideal weather later in the season brought high hopes for quality. Most vineyards produced good yields with some biodynamic practicing ChĂ˘teaux like Pontet Canet, Palmer and Dufort Vivens suffering low yields but doing a brilliant job with the remaining juice. 2018 was a vintage where all black grapes varieties excelled, leading to wine with great tannin and body as reflected in the high scores throughout the region.
