You’re sure to be blown away at how the base product of different vodkas such as potatoes, grapes or grains can change your experience in the glass. Rum & Ginger Tea

Don’t miss Rum Master Class on Jan. 19!

INGREDIENTS: • 2 ½ cups brewed orange pekoe tea • 3 oz. dark rum • 2 teaspoons honey (or agave nectar) • 2 slices orange • 2 fresh ginger (thick, peeled slices) • ¼ teaspoon ground nutmeg

In a small saucepan set over medium heat, combine the tea, rum, agave nectar (or honey), orange slices, ginger slices and nutmeg. Heat the mixture over medium heat and simmer for 15 minutes. Remove from the heat and let the mixture rest for about 5 minutes. Remove the orange and ginger slices, and pour into 2 mugs and serve, each garnished with a piece orange. Enjoy with a warm slice of Golden Rum Cake! Recipe on page ___

Antebellum Mint Julep INGREDIENTS: • 2 tsp superfine sugar • 6 - 8 fresh mint leaves, and a few for garnish • 2oz cognac Stir sugar and 1 tbsp of water in a highball glass until sugar dissolves. Add in mint leaves; gently crush with a spoon. Fill glass with crushed ice. Pour cognac over ice, let settle and then spoon in more ice. Garnish with mint leaves and a straw.

The Summit INGREDIENTS: • 4 slices of ginger • 1 lime slice • 2 oz VSOP Cognac • 6 oz lemonade • A fine peel of cucumber Place the lime and ginger into a glass, and add 2 oz of Cognac. Then add ice and stir. Add the rest of the Cognac and lemonade – then, finally add the cucumber peel. (Created in 2008 for the Cocktail and Cognac Summit)

FRIDAY, FEBRUARY 23 Potato Chip Pairings | 7-8:30pm $25 We’re bringing one of our most popular events back for some fun in February as we dedicate an entire evening to creating tantalizing pairings with one of the world’s most treasured snack foods – potato chips! You’ll be awestruck at how our team will take your everyday chip flavours, and a few unique ones, from simple snack food to high-society classy. Trust us, you’ll never look at a potato chip as simple again. This is going to be fun! Please book early to avoid disappointment.

INGREDIENTS: • 1 cup chopped walnuts (optional) • 1 (18.25 ounce) package yellow cake mix • 1 (3.4 ounce) package instant vanilla pudding mix • 4 eggs • 1/2 cup water

1/2 cup vegetable oil 1/2 cup dark rum 1/2 cup butter 1/4 cup water 1 cup white sugar 1/2 cup dark rum

DIRECTIONS: 1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over the bottom of the pan.

2. In a large bowl, combine cake mix and pudding mix. Mix in the eggs, 1/2 cup water, oil and 1/2 cup rum. Blend well. Pour batter over chopped nuts in the pan.

3. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Let sit for 10 minutes in the pan, then turn out onto serving plate. Brush glaze over top and sides. Allow cake to absorb glaze and repeat until all glaze is used.

4. To make the glaze: in a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil over medium heat and continue to boil for 5 minutes, stirring constantly. Special Occasion BRUNCH INSPIRATION BASIC CREPE RECIPE INGREDIENTS: • 2 cups all-purpose flour • 1/2 teaspoon salt • 2 cups 2% reduced-fat milk • 1 cup water

1 tablespoon butter, melted 1 tsp vanilla 4 large eggs Cooking spray

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and salt in a medium bowl. Place milk, 1 cup water, butter, and eggs in a blender; process until combined. Add flour mixture to blender; process until smooth. Cover and refrigerate 1 hour. Heat a 10-inch crepe pan or nonstick skillet over medium-high heat. Coat pan lightly with cooking spray. Remove pan from heat. Pour a scant 1/4 cup batter into pan; quickly tilt pan in all directions so batter covers pan with a thin film. Cook about 1 minute. Carefully lift edge of crepe with a spatula to test for doneness. The crepe is ready to turn when it can be shaken loose from the pan and the underside is lightly browned. Turn crepe over; cook 30 seconds **We recommend making a double batch as you play with the proper temperature of the pan to get the crepes the perfect colour and consistency.


Have brunch with the Trusted Experts! Join us March 4th for a special French Bistro Brunch at 1pm! Preheat the oven to 400°F. Line a baking sheet with parchment paper or a Silpat. In a medium bowl, whisk together the flour, salt, sugar and baking powder. Add the cubed butter, and using your fingers, work it into the flour until the mixture resembles wet sand.

WHITE CHOCOLATE RASPBERRY SCONES (Makes 8 Scones) INGREDIENTS: • 2 1/2 cups all-purpose flour • 1/2 teaspoon salt • 1/4 cup sugar • 2 1/4 teaspoons baking powder • 6 Tablespoons cold unsalted butter, cubed • 2 large eggs • 3/4 cup heavy cream, plus more for topping • 2 teaspoons vanilla extract • 1 cup raspberries • 3/4 cup white chocolate chips • Sanding sugar, optional

In a separate medium bowl, whisk together the heavy cream, eggs and vanilla. Add the wet ingredients into the bowl with the dry ingredients and stir the mixture several times then add the raspberries and chocolate chips, and mix until it forms a moist dough. (The raspberries will break apart slightly, but the less you stir the mixture, the more light and tender your scones will be. See Chefs note below) Transfer the dough onto a generously floured work surface and gather it into an 8-inch circle that’s about 3/4-inch thick. Cut the circle into 8 wedges. Space the scones out at least 2 inches apart on the lined baking sheet. Brush cup the tops of the scones with heavy cream then sprinkle them with the sanding sugar. Bake the scones for about 20 minutes until pale golden and they’re baked through. Remove from the oven and serve immediately. CHEFS NOTE: The more smashed the raspberries are, the wetter the dough will be. If needed, sprinkle the top of the dough with flour while gathering it onto your work surface. Do not knead the dough, but rather loosely gather it. The less touching, the better! Recipe adapted from Justataste.com

MIXED BERRY CREPES (Makes 12 crepes) INGREDIENTS: • 1 1/2 cups frozen unsweetened raspberries, thawed • 1 1/2 cups frozen unsweetened blueberries, thawed • 1 cup sliced frozen unsweetened strawberries, thawed • 1/4 cup granulated sugar • 1 teaspoon cornstarch • 1 tablespoon fresh lemon juice • 6 tablespoons 1/3-less-fat cream cheese, softened • 1 tablespoon powdered sugar (optional)

Combine first 5 ingredients in a saucepan; bring to a boil. Reduce heat; simmer 5 minutes or until thickened. Remove from heat; stir in juice. Cool. Spread 1 1/2 teaspoons cream cheese over each crepe, and top each with about 2 1/2 tablespoons berry mixture; roll up. Top each crepe with about 2 tablespoons berry mixture. Sift powdered sugar evenly over crepes just before serving, if desired

INGREDIENTS: • 1 cup Guinness • 1 cup dark molasses (not blackstrap) • 1/2 teaspoon baking soda • 2 cups all-purpose flour • 1 1/2 teaspoons baking powder • 2 tablespoons ground ginger • 1 teaspoon ground cinnamon • 1/4 teaspoon ground cloves

DIRECTIONS: 1. Preheat oven to 350°F. Generously butter bundt pan and dust with flour, knocking out excess.

2. Bring Guinness and molasses to a boil in a large saucepan and remove from heat. Whisk in baking soda, then cool to room temperature.

3. Sift together flour, baking powder, and spices in a large bowl. Whisk together eggs and sugars. Whisk in oil, then molasses mixture. Add to flour mixture and whisk until just combined.

IRISH WHISKEY FUDGE INGREDIENTS: • 397g can condensed milk • 150ml pint Irish Cream Liqueur • 450g/1lb Demerara sugar

4oz Butter 2 tbsp Irish Whiskey

DIRECTIONS: 1. Grease a 7inch/18cm square tin.

2. Place all the ingredients, except the whiskey, into a large non-stick saucepan and heat gently stirring until the sugar has dissolved.

3. Bring the mixture to the boil and simmer for 10 minutes stirring continuously until the temperature reaches 116*/240*C on a sugar thermometer (make sure you stir continuously scraping into the sides of the saucepan or the cream and butter will burn and give you brown specks in your fudge) - don’t worry if you don’t have a sugar thermometer fill a small bowl with cold water and drop a teaspoonful of the mixture into the water - roll it between your fingers it should form a soft ball. If not simmer and stir for a little longer and try again until a soft ball is formed.

4. Remove the pan from the heat and beat for 5 minutes with a wooden spoon until thickened and slightly grainy. Stir in the whiskey and pour into the prepared tin. Allow to cool. When cold cut into squares. Store in an airtight container for 1 month if it lasts that long! Pairs perfectly with your favourite Irish Coffee! Recipe adapted from Goodtoknow.com

DUCK CONFIT INGREDIENTS: • 3 Tbsp salt • 4 cloves garlic, smashed • 1 shallot, peeled and sliced • 6 sprigs thyme

Coarsely ground black pepper 4 duck legs with thighs 4 duck wings, trimmed 4 cups (approximately) duck fat

Sprinkle 1 tablespoon of salt in the bottom of a dish or plastic container large enough to hold the duck pieces in a single layer. Evenly scatter half the garlic, shallots, and thyme in the container. Arrange the duck skin-side up over the salt mixture, then sprinkle with the remaining salt, garlic, shallot and thyme and a little pepper. Cover and refrigerate for 1 -2 days. Preheat the oven to 225°. Melt the duck fat in a small saucepan. Brush the salt and seasonings off the duck. Arrange the duck pieces in a single snug layer in a high-sided baking dish or ovenproof saucepan. Pour the melted fat over the duck (the duck pieces should be covered by fat) and place the confit in the oven. Cook the confit slowly at a very slow simmer-just an occasional bubble-until the duck is tender and can be easily pulled from the bone, 2-3 hours. Remove the confit from the oven. Cool and store the duck in the fat overnight. (The confit will keep in the refrigerator for several weeks)

DUCK RILLETTE

INGREDIENTS: • 1 ½ cup duck fat (reserved from duck confit) • 4 Tbsp Armagnac or Brandy • 4 Tbsp chopped parsley • Ground black pepper & salt to taste Scrape the fat from the duck and reserve. Discard the bones and skin. Shred the meat into a bowl and add armagnac or brandy, parsley, salt & pepper. This can be packed into jars and covered with melted reserved duck fat to store For Duck Rillette Crostini, scrape off the solid duck fat and pile the meat lightly onto crostini. MEET OUR GUEST BENOIT BRUMEAU! Born in Bordeaux in 1978, Benoit Brumeau is the sales manager of JM Cazes Selection in France and throughout the Americas. A graduate in international trade, and technical/sales initial training in wines and spirits, he will during his studies for two internships determining career choices: one in Toronto (Canada) with an agent, the other one at E & J Gallo Winery, Paris. Thus, he set out on his career as E&J Gallo France regional sales manager.

A wine enthusiast, in 2006 he led a world wines import business, based in Bordeaux. In 2009, he joined the Cazes family and became the sales manager for J.M. CAZES in France and Europe. We are honoured to have both Chateau Palmer Director, Thomas Duroux and Owner James Sichel here to conduct a tasting of the wines of Chateau Palmer. This tasting will include the rare Chateau Palmer white and 19th Century Blend as well as Chateau Palmer’s Alter Ego. The vintages tasted will be 1986 Palmer, 1996 Palmer, and 2006 Palmer – a study of three decades. After the formal presentation of the wines, there will be a light buffet of French cheese and charcuterie.
