MARCH 2017 WEDNESDAY, MARCH 8 A Night with the Wines of Tommasi | 7-9pm $35 Please join us for a special evening as we welcome Pierangelo Tommasi, Co-owner and Export & Marketing Manager for one of the great Italian wine families: Tommasi Family Estates. The Tommasi family founded its wine company in 1902 in the Valpolicella Classico region just outside of Verona Italy. Today it is run by the 4th generation of the family and the family’s business has grown to not only making wine in Veneto where it all began but all in the regions of Tuscany, Lombardy and Puglia. This evening’s tasting will include wines from the four different family winemaking estates and will be a night not to be missed by anyone who loves Italian wines as we will be sampling the family’s Brunello, Amarone and Fiano just to name a few. WEDNESDAY MARCH 8 Young vs Old Whiskies | 7-9pm $50 Dave Michiels is happy to introduce this new whisky class that he has specially created to showcase both the classic whisky styles and the exciting new treats that you’ll find on the whisky wall today. You’ll be fascinated by Dave’s insight on whiskies to know. A great evening for whisky fans of all levels.

THURSDAY, MARCH 9 Tasteday Thursday’s Wines of Canada | 7-9pm $15 Tasteday Thursday this week explores the wines of our very own country as we look at the wines from both the East and the West and the differences and similarities between them. You’re sure to leave with a much deeper appreciation and understanding of Canadian winemaking history and the incredible talent currently being developed here. SOLD OUT! FRIDAY, MARCH 10 CPO: Music & Wine Festival 7-9pm $40 Join us for an exquisite evening as we take your senses on a journey around the globe. Your palate will be tempted by the culinary talents of some of Calgary’s top chefs whose dishes will be expertly paired with wines from countries all around the world. Each one of the night’s highlighted countries will be inspired by world renowned composers whose music will be part of our Orchestra’s musical season in 2017. You can look forward to savouring the flavours and wine styles from France, Italy, Argentina and Canada. SOLD OUT! SATURDAY, MARCH 11 10am-5pm MONDAY, MARCH 13 6:30pm-9pm WSET Level 1 Award in Wines | $349 For individuals new to wine study, this qualification provides a handson introduction to the world of wine. You’ll explore the main types and styles of wine through sight, smell, and taste, while also gaining the basic skills to describe wines accurately, and make food and wine pairings. Upon successful completion you will receive a WSET certificate and lapel pin.

TUESDAY, MARCH 14 Dave’s Beer Gems | 7-9pm $25 With spring just around the corner but the chill still in the air Dave the Beer Guy has some favourite brews to share, perfect for the in-between season time of year. He’ll show you some great finds from the beer wall that will work for cool nights and hearty dishes along with a few that will also work on that first day of sipping in the sun even if you do still have your snow boots on. Dave’s got some treats up his sleeve that you’re sure to love. Beer fans don’t miss out. THURSDAY, MARCH 16 Tasteday Thursday’s Wines of Old | 7-9pm $15 This week explores the wines of old including wines such as Meads made from honey and mulled wine styles. Perfect for chilly nights. You’ll be fascinated by the history of these wines and how they have lasted through the ages. FRIDAY, MARCH 17 Irish Whiskey Master Class 5:30pm-6:30pm $55 David Michiels is excited to bring you a Whiskey Master Class all on the exciting offerings from Ireland. The Irish Whiskey wall is set to explode with new whiskies over the next few years and Dave is ready to get you in the know so that you can be just as excited as he is. Includes entry to All Things Irish Festival. FRIDAY, MARCH 17 All Things Irish Festival | 7-9pm $40 Happy St Patrick’s Day! Spend the evening celebrating the luck and spirit of the Irish at our special festival highlighting an incredible collection of beers, whiskies and even a liqueur or two. THURSDAY, MARCH 23 Clos de Los Siete Exclusive Vintage Tasting | 7-9pm $50 We’re very excited to bring an exclusive vertical tasting of Clos de Los Siete from the heart of the Uco Valley in Argentina. This award winning malbec blend is the result of brilliant winemaking with both French and Argentinian influences. Famed wine consultant and enologist Michel Rolland, first conceived this wine in 1998 and it was been winning over wine critics and loyal wine enthusiasts around the globe ever since. This special tasting will include wines from 2004, 2006, 2009, 2010, 2013 and 2014 and will be hosted by a special guest visiting from Clos de Los Siete. This is a tasting not to be missed for lovers of great red wines. Seating is limited.

During this tasting event Peter will be guiding you through a lineup of wines from France, Spain, Italy and the United States just to name a few. You can look forward to learning all about perfect pairings for classics such as chocolate chip, coconut macaroons and oatmeal raisin along with a few cookie surprises from Meiko and her incredible kitchen team. Cookie fans you won’t want to miss out on this enlightening evening that is sure to make cookies and milk seem so passé. WEDNESDAY, MARCH 29 Women & Wine – Wines to Know | 7-9pm $45 Ladies, get your girlfriends together for a fun and entertaining night as Trusted Expert, Erin Rosar shows you wines that she feels every girl should know. Stocking your wine rack can be like stocking your clothes closet. If you have great basics you are ready for anything at anytime. Erin will show you wine rack must-have styles that will ensure you are always ready to be the “hostess-with-the-mostest” anytime someone drops by. We’ll explore how this area is exploding with incredible wines and winemaking talent and how the weather and the land help to shape the exciting wines that are coming from this vast area.

THURSDAY, MARCH 30 Chappellet Winery - A Napa Connoisseur Class | 7-9pm $95 The Chappellet family’s romance with Pritchard Hill started 50 years ago when Donn and Molly Chappellet first glimpsed its magnificent vista of forests and wildflower-filled meadows. Pritchard Hill’s rugged terroir has become legendary for producing wines with great intensity and depth - qualities that define the world’s finest Cabernet Sauvignons. Join us for a special tasting lead by Cyril Chappellet followed by a light buffet supper and discussion. Cyril, is the eldest son of Donn and Molly and he is deeply immersed in the family business and says his goal is “to continue what my father started – making extraordinary wines that express the unique growing conditions of Pritchard Hill.” The Chappellet wines have consistently received the highest praise from critics, and are sought after by the world’s premier collectors.

APRIL 2017 WEDNESDAY APRIL 5, 12 & 19 Whisky Basics (3 Night Course) | 7-9pm $125 Scotch Expert, David Michiels will start off with the basics of scotch tasting and move along into more advanced topics and tastings throughout the month. You’ll be fascinated with the history, traditions and vast varieties of scotch on the market. Each evening you’ll discover new topics and have a taste of six scotches that will enable you to develop your palate and understanding of one of the world’s most beloved spirits. In 2012, David Michiels was inducted into the Keepers of the Quaich at Blair Castle in Scotland, for his outstanding contribution to scotch whisky. His selection of scotch whisky at WPWS is considered one of the strongest of any store in North America. Text book included.

Join Fine Wine Director Peter Smolarz, who has just recently returned from Argentina as he leads you through a tasting of some of Argentina’s best wines. Peter will share stories from his recent travels and tales of the groundbreaking winemaking that is happening in Argentina in regards to high altitude vineyards and how this effects what you experience in the glass.

Peggy’s Green Rice Suitable for Vegan & Vegetarian Food Plans

INGREDIENTS: • 2 cups of uncooked rice, white or brown • 1 tb oil • 1 tb soya sauce • 1 tb Rice Vinegar Cook rice as directed, toss with oil, soya and Rice. Cool - can be made a day ahead. Cook a selection of chopped vegetables and herbs such as; • 1/2 cup onion • 1 cup minced red & orange pepper • 3 cups minced spinach • 1/2 cup cilantro • 1/2 cup green onion • 1 cup defrosted peas (I like it really green!)

DIRECTIONS: Blend the veg and rice in a greased oven proof dish. Fold in 1/2 cup chopped cashews, 1/2 cup coconut milk and Chili sauce to taste. Bake in a 350 degree oven for 30 mins. Just before serving sprinkle with fresh cilantro. Serve with sliced limes. Top with oven baked or fried tofu if desired. Recipe by Peggy Perry

Classic Mint Julep

Join us for Cocktails of the South on May 30th!

INGREDIENTS: • 3 fresh mint leaves • 1 tablespoon Mint Simple Syrup • Crushed ice • 1 oz bourbon • 1 (4-inch) cocktail straw • 1 - 2 fresh mint sprigs • Powdered sugar (optional)

Place mint leaves and mint simple syrup in a chilled julep cup. Gently press leaves against cup with back of spoon to release flavors. Pack cup tightly with crushed ice; pour bourbon over ice. Insert straw, place mint sprig directly next to straw, and serve immediately. Sprinkle with powdered sugar, if desired. Mint Simple Syrup • 1 cup water • 1 cup sugar • 10 – 12 mint sprigs Softly boil water, sugar and mint leaves until flavour level has been reached. Strain mint leaves out and cool in glass jar. Can be stored for a couple of weeks in a sealed container in the fridge.

1885 Chatham Artillery Punch INGREDIENTS: • Lemon oleo-sacchrum • 1 pint fresh lemon juice • 1 750ml bottle VSOP cognac • 1 750ml bottle bourbon whiskey • 1 750ml Jamaicanstyle amber rum To make an oleo-saccharum, peel the zest of 12 lemons, getting as little pith as possible. Firmly muddle the peels in a sturdy bowl with 2 cups of light raw sugar. Cover and leave the mixture to sit in a warm place for about an hour. Muddle the mixture again, and it’s ready to use. Mix oleo-sacchrum with 1 pint of freshly squeezed lemon juice. Stir and strain into an empty 750 ml bottle. Add water to fill any remaining space in the bottle, seal and refrigerate. To serve, fill a two-and-ahalf gallon punch bowl with ice and pour in the bottled oleo-sacchrum. Add the bottles of cognac, bourbon, and Jamaican-style rum. Top off with three bottles of chilled brut champagne. Stir. If a sweeter style of punch is desired then pineapple, orange or peach slices can be added to add more fruit flavours. Recipe adapted from David Wondrich book Punches Oleo saccharum, translates to sugar oil, is a technique based on sugar’s ability to extract moisture. “Oleo saccharum is the process of extracting oil from citrus peel using sugar and allowing the sugar to pull out the oils and flavours. Any citrus fruit peel can be used.

A Real Canadian Treat!

MAPLE BEER BRITTLE INGREDIENTS: • 6 slices thick-cut bacon cooked crispy and chopped • 1/4 cup Maple Bacon Ale (or your beer of choice) • 1 cup sugar

1/2 cup corn syrup 3 Tbsp unsalted butter 1 tsp baking soda 1 cup of chopped peanuts

DIRECTIONS: 1. Sauté the bacon in a preheated skillet on medium heat. Cook all 8 slices. You want the bacon to be crisp, so give it a good 20-30 minutes and flip when needed. Let the bacon cool on paper towels and then chop. A coarse chop is better than small, fine pieces so the bacon will be noticeable. Set the chopped bacon and chopped peanuts aside.

2. Have ready a baking sheet lined with a silicone mat. You can use parchment paper as well, but silicone mats work very well.

3. In a saucepan combine the beer, sugar and corn syrup and bring the mixture to 250 degrees F without stirring. (You will need a candy thermometer). Once it reaches temperature add the butter and stir constantly until the brittle mixture reaches 320 degrees F. Take the saucepan off the heat and stir in the baking soda. The brittle will foam. Add in the chopped nuts and bacon, folding to incorporate evenly.

4. Pour onto your prepared baking sheet and spread evenly. Let the brittle cool completely and then break into desired sized pieces. Melted chocolate can be drizzles over top if desired before it is broken for a real sweet treat. Enjoy! Recipe adapted from Tayna from Letters from Lulu

Canadian Recipes! East Coast Seafood Chowder Peggy Perry’s Family Tradition

INGREDIENTS: • 1 large onion chopped fine, about 3/4 cup • 2 cups diced potatoes • Salt to taste & approximately 3 cups of water to cover the above • 2 cups chicken or fish broth • 1 cup of white wine • 2 cups of chopped white flesh fish like halibut or cod • 1 cup raw seafood - sliced scallops, chopped shrimp • 1 to 2 cups of milk or cream • Roux - 3 Tb flour blended with 3 Tb butter • 1 to 2 cups of precooked shellfish if desired • 1 cup of fresh diced tomato DIRECTIONS: If adding precooked shellfish, add at the end of the cooking time. I usually will precook clams and/ or mussels, remove them from the shell and add with the tomatoes. Sautéed onions in butter, add potatoes and salt. Cover with water and simmer until potatoes are just slightly undercooked. Add in chicken or fish broth and wine and bring back to a gentle boil. Add uncooked fish and shellfish and simmer 5 minutes. Add warmed milk or cream and then stir in roux. Once the soup has thickened, add cooked seafood and chopped fresh tomatoes. Serve piping hot with a grind of pepper and sprinkle of parsley. This recipe can easily be doubled. It freezes well. Serves 12 people.

MAPLE GLAZED SALMON INGREDIENTS: • 3-4 6 ounce salmon fillets, skin on • 1/4 cup pure maple syrup • 2 tablespoons soy sauce

1 clove garlic, minced 1/4 cup chopped green onions Large pinch of ground ginger or to taste

DIRECTIONS: 1. Mix maple syrup, soy, garlic and ginger in a baking dish. Dip each side of the salmon fillets in the marinade, then let sit, skin side down, for about 20 minutes.

2. Turn on broiler. Spoon a bit more of the marinade over salmon then place 4-5 inches under broiler element. Cook to desired doneness, about 10-15 minutes, depending on thickness of fillets. Remove from oven and spoon some of the syrupy marinade over salmon and sprinkle with green onions before serving.

3. Meanwhile, pour marinade into a small saucepan, bring to a boil over medium-high heat, stirring frequently. Once it reaches a boil, reduce heat slightly and allow to cook several minutes, stirring frequently, until reduced to 1/4 cup.

3. Serve salmon warm with 1 Tbsp of the maple soy glaze drizzled over top and black pepper and green onions if desired. Add roasted vegetables, rice or potatoes for a delicious dinner. Enjoy! Recipe adapted from Cooking Classy
