OUR PEOPLE We are launching into fall 2017 with a packed calendar of events. We have so many visiting principals presenting a wide range of products, from exclusive Bordeaux connoisseur tastings to the world’s top whisky masters, there is something for every palate. The WSET education program is being offered, both Level 1 & 2, and David Michiels is back with his 3-Class Introduction to Whisky. What is brand new this fall, you ask? Our Cellar Club! Not only is the loyalty program launching with great anticipation and momentum, but we’re adding in complimentary tastings exclusively for our Cellar Club members. Every year we pick local charities to support and this year’s recipients are ones we are proud to work with. As usual we have selected charities that have a deep personal meaning for us and as we support family and friends dealing with cancer, our charitable focus has turned more and more in that direction.

For individuals new to wine study, this qualification provides a handson introduction to the world of wine. You’ll explore the main types and styles of wine through sight, smell, and taste, while also gaining the basic skills to describe wines accurately, and make food and wine pairings. Upon successful completion, you will receive a WSET certificate and lapel pin. MONDAY, SEPTEMBER 11 Connoisseur Event – Vintage Tasting of Clos des Jacobins, St-Emilion | 5-7pm $65 We are excited to welcome Thibault Decoster, from Clos des Jacobins, StEmilion, Grand Cru, for a vertical tasting from this highly regarded chateau. Having been ranked amongst the greatest wines in St-Emilion, between 1940 and 1950, Clos des Jacobins, fell into disrepair and disfavor as years went on. In 2004 Thibaut and Magali Decoster took over the reins and brought the winery back to its place of glory when their 2006 vintage won the Saint-Emilion Grand Crus Classes challenge in Hong Kong in 2006. Tonight’s tasting will include the 2009, 2010, 2011 and 2015 vintages. Please book early. *Note: Early Start Time THURSDAY, SEPTEMBER 14 Fine Wines of Miguel Torres: Spain & Chile | 7-9pm $45 Please help us welcome Caroline Leblanc, Brand Ambassador for a special tasting of the premium wines of Miguel Torres. Caroline will be your special host for an evening filled with some of the Torres Family’s top tier wines from Spain & Chile while you taste, Caroline will explain the history of each wine that you’ll be enjoying. Wines to be tasted include: Manso De Velasco - Chile, Mas La Plana - Spain, Perpetual - Spain, Purgatory Spain, and Salmos - Spain. With a history that dates back to 1870, the Torres Family is renowned for their wines around the world and today they ship to over 140 different countries. This is a night not to be missed for lovers of great red wines.

Classic Old Fashioned

Shaken & Stirred: Classi c Cocktails on Nov. 16th!

INGREDIENTS: • 1 teaspoon superfine sugar (or 1 sugar cube) • 2 to 3 dashes Angostura bitters • 2 oz bourbon or rye whiskey • Orange and/or cherry, to garnish Place sugar in an Old Fashioned glass. Douse with bitters and add a few drops of water. Add whiskey and stir until sugar is dissolved. Add several large ice cubes and stir rapidly with a bar spoon to chill. Garnish with orange or a cherry.

Classic French 75 INGREDIENTS: • 2 oz Champagne • 1 oz Gin • ½ oz Lemon Juice • 2 Dashes Simple Syrup Combine gin, syrup, and lemon juice in a cocktail shaker filled with ice. Shake vigorously and strain into champagne flute. Top up with Champagne and stir gently. Serve and enjoy.

THURSDAY, SEPTEMBER 28 TasteDay Thursday – Get to Know Pinot Noir | 7-9pm $15 This week TasteDay Thursday delves into the “Heartbreak Grape”: Pinot Noir. Known to be one of the most fickle and difficult in the field, this grape has the potential to turn into some of the world’s most magnificent wines. Grown around the world this grape showcases multiple flavour profiles in the glass as it brings to life the place and the vintage it was grown in like no other grape. Be prepared to be entranced! FRIDAY, SEPTEMBER 29 Connoisseur Pinot Noir Class (Includes VIP Festival Entry) | 5:30-6:30pm $95 Is the new world catching up to Burgundy? This comparative tasting will be conducted with wines from some of the world’s most famous Pinot Noir producing regions. This special look at Pinot Noir will feature a few bottles of well-aged wines from the Willow Park Wines & Spirits library collection. We will open the Joseph Drouhin Griotte Chambertin Grand Cru 2001 and compare it to the Calera “Selleck Vineyard” 2013. This evening will also feature wines from estates of Central Otago, Willamette Valley, and Yarra Valley. Meiko’s kitchen team will prepare a few tasty appetizers and offer a selection of cheeses famous for their perfect Pinot Noir pairing characteristics.

FRIDAY, SEPTEMBER 29 Pinot Noir Festival | 7-9pm $40 VIP Entry | 6:30-9pm $60 The Willow Park Wines & Spirits Trusted Expert team has a special place in their heart for the elegant and multi-layered wines made from the Pinot Noir grape. Known in the wine world as the hardest grape to grow yet can be the most pleasant to experience. Explore the festival cellar tasting examples from around the world with a featured focus on the Burgundy and California regions. You will find the versatility of Pinot Noir pairings in tonight’s selection of herb & mustard marinated pork tenderloin, grilled salmon with honey and dill sauce, chicken and mushroom tarts, and classic gougéres.

SATURDAY, SEPTEMBER 30 Pinot Master Class | 4-6pm $100 This class will allow us to delve deeper into the reasons why Pinot Noir causes such heartbreak. No grape is more difficult to grow than Pinot Noir and once collected in the cellar, even the healthiest grapes can cause you problems in fermentation. Who are the Winemakers that are mastering this varietal? This class will be conducted from the viewpoint of the winemaker and you will taste the wines created by some of the world’s most recognized Pinot Noir wine making experts. Estates to be featured include Patz & Hall, Domaine Comte Georges de Vogue, Domaine Perrot Minot, and Beaux Freres.

THURSDAY, OCTOBER 5 TasteDay Thursday Wines of Bordeaux - Right Bank | 7-9pm $15 This week TasteDay Thursday explores the area of Bordeaux with a focus on the area known as the Right Bank. At the end of this class you’ll have a much better understanding of why we refer to the wines from this area as more feminine and elegant than their big, and bold brothers from the Left Bank.

All Things Apple: Cider & Calvados on Oct 11!

Calvados 101 The area of Calvados is broken down into three main regions, each known for a specific taste profile. These regions will be mentioned on the bottle and will give you some guidance as to the flavours that are awaiting you in your glass. Calvados Pays d’Auge: Rich, round and complex. This area has the most restrictive rules for production. Fermentation must be slow and take at least six weeks to ensure flavours and aromatics, The spirit must be aged a minimium of 2 years and distillation must take place twice in pot or alembic still. Calvados: Fresh, lighter in style, fruity and aromatic (over 70% of all production) Calvados Domfrontais: Floral aromatics with a soft tartness on the palate. This area also allows for up to 30% pears to be used in production and must have a minimum of 3 years aging in oak barrels. Fermier Calvados: This classical “farm-made” style is growing in popularity but is made in small batches from one farm in the region. Founded in 1988, by famed winemaker Paul Hobbs. Since the winery’s first vintage in 1999, the wines of Vina Cobos have received critical acclaim from around the globe. Tonight’s tasting will immerse you in the terroir of Argentina, as you explore Cabernet Sauvignon and Malbec with an incredible lineup of wines that have all been rated 90+ points or higher.

PANZANELLA SALAD INGREDIENTS: • 1/2 cup olive oil • 1 sprig fresh rosemary • 1 clove garlic, sliced • 4 cups cubed (1 inch) day-old crusty bread • 4 cups halved grape or cherry tomatoes

1/4 red onion, thinly sliced 1/4 cup red wine vinegar 2 tbsp capers, drained 1/2 tsp sea salt 1/4 tsp fresh cracked pepper 1 cup torn fresh basil leaves

DIRECTIONS: 1. In small saucepan, bring oil, rosemary and garlic to simmer over medium heat; reduce heat and cook until garlic is light golden, about 3 minutes. Strain; let cool.

2. Toss bread with 2 tbsp of the herbed oil. Spread on baking sheet; bake in 350F oven until crisp and golden, about 12 minutes.

3. In large bowl, combine all but 1 tbsp of the remaining herbed oil, tomatoes, onion, vinegar, capers, salt and pepper; toss to coat. Let stand for 30 minutes.

4. Toss in basil and toasted bread; arrange on a platter. Drizzle with remaining herbed oil.

ALSATIAN APPLE CAKE INGREDIENTS: • 125 g or 1/2 cup butter • 150 g or ¾ cup sugar • 3 eggs • A few drops of lemon juice • 200 g or 1 cup plain flour

2 tsp baking powder 3 tbsp milk 4 or 5 medium apples Pinch of salt

DIRECTIONS: 1. Whip the butter and sugar together in a processor for a minute, then add the eggs, one by one, along with the flour, salt, baking powder and lemon juice. If preferred, beat the butter and sugar together with a wooden spoon, then incorporate the other ingredients and continue beating until a smooth.

2.Line a tart or cake tin with greaseproof paper and pour/spoon the batter in. Peel and core the apples and cut into thin wedges. Position the wedges in the batter pushing them in so that just the thick edge of each apple slice is left visible. Continue until the batter is completely covered with apple slices. Bake at 180°C or 350 F for 35 mins. The cake is ready when golden and a skewer inserted into the cake comes out clean.

3. Leave to cool, then turn out onto a cooling rack before putting on a plate and sifting icing sugar over the top. It could also be served with a spoonful of cream or crème fraîche for dessert. SUGGESTED PAIRING: St. Urbans-Hof Ockfener Bockstein Spatlese

Calvados Hot Toddy

All Things Apple: Cider & Calvados on Oct 11!

INGREDIENTS: • 1⁄4 cup sugar • 1 tsp. cinnamon, plus more for garnish • 6 oz. apple cider, plus more for rimming glass • 1 1⁄2 oz. fine calvados • 4 oz. heavy cream – whipping cream works best • 1 stick cinnamon, for garnish

Mix sugar and cinnamon together in a bowl wide enough to fit the rim of a double-walled glass. Pour apple cider into a bowl of similar size to about 1⁄4-inch depth. Dip the rim of the glass in apple cider and then cinnamon-sugar mixture. Whip cream and 1⁄2 oz. calvados until stiff peaks form. Refrigerate until ready to use. Heat 6 oz. apple cider in a 2-qt. saucepan. Add remaining calvados. Pour into glass and top with whipped cream. Garnish with ground cinnamon and cinnamon stick. Recipe adapted from Saveur

INGREDIENTS: • 2 cinnamon sticks, plus more for serving • 2 medium apples, thinly sliced – leave skin on • 1 medium pear, thinly sliced • 1 medium orange, thinly sliced • ½ cup pomegranate seeds • 1 (750 ml) bottle white wine Pinot Gris and Pinot Grigio • 2 cups apple cider • ½ cup Calvados • ¼ cup orange juice • 2 Tablespoons lemon juice • Club soda, for serving Place the cinnamon sticks and fruit into a large pitcher. Add wine, apple cider, brandy, orange juice, and lemon juice. Allow to sit in the refrigerator for 3 – 24 hours. 4 – 8 works best. Pour sangria and fruit into glasses. Add a splash of club soda. Garnish with a cinnamon stick, if desired.

Perfect Pairings

CARAMELIZED ALMOND TART INGREDIENTS: • 3/4 cup all-purpose flour • 1 tablespoon baking powder • Pinch of salt • 6 tablespoons unsalted butter, at room temperature • 1/2 cup sugar • 1 large egg, beaten

TOPPING: • 2/3 cup sliced almonds • 1/4 cup sugar • 2 tablespoons unsalted butter • 2 tablespoons milk

DIRECTIONS: 1. Preheat the oven to 350. In a medium bowl, whisk the flour with the baking powder and salt. In a bowl, using a handheld electric mixer, beat the butter with the sugar until light and fluffy. Add the egg and beat well. Gradually add the flour mixture and beat until incorporated, then stir by hand to blend thoroughly.

2. Scrape the dough into a 9-inch tart pan with a removable bottom. Using a piece of plastic wrap, pat the dough into the pan in an even layer. Bake for about 20 minutes, or until the pastry is firm and golden brown. Transfer to a rack to cool completely. Leave the oven on.

3. Spread the sliced almonds on a baking sheet and toast in the oven for about 4 minutes, or until golden brown.

4. In a small saucepan, cook the sugar and butter over low heat, stirring, until the mixture turns light brown, about 3 minutes. Slowly add the milk and cook, stirring, until the mixture is smooth. Remove the pan from the heat and stir in the sliced almonds. Spread the topping over the tart base and bake for 10 minutes, or until sizzling and set. Let cool slightly. Gin Lambrusco Cocktail INGREDIENTS: • 2 oz of Gin • 1 ounce of fresh lime juice • ½ oz of simple syrup • 1 cup ice • Float 1 ½ ounces of Lambrusco over top by using the back of a spoon In a shaker add gin, lime, simple syrup, and ½ cup of ice. Shake. Fill serving glass with the rest of the ice. Strain mixture into serving glass. Using the back of a spoon slowly pour Lambrusco over the spoon near the side of the serving glass to give the cocktail a layered look.

All Things Apple: Cider & Calvados on Oct 11!

INGREDIENTS: • ½ cup sugar • Peel from one lemon • 2 inch piece of ginger peeled and thinly sliced • 3 cinnamon sticks, broken • 10 whole cloves • 1 bottle cranberry juice • 2 ½ cups Calvados • Whole cranberries • Lemon & Apple slices • Cinnamon sticks

1. Add sugar, lemon peel, ginger, cinnamon sticks, and cloves to a large pot. 2. Pour in cranberry juice and stir. 3. Simmer for 30 minutes. 4. Cool to room temperature. 5. Pour into a large pitcher, straining out lemon and spices. 6. Add Calvados to pitcher and let mixture chill for 24 hours. 7. To serve, add to a slow cooker and warm on a LOW setting. Or gently warm on the stove over low heat. 8. Ladle into mugs and serve with a few cranberries, a squeeze of lemon juice, apple slices, and a cinnamon stick. Recipe adapted from BakedBree.com

JAMIE’S PRESCHOOL The isolation that results from a critical illness such as cancer can be especially tough on a child. Jamie’s Preschool is a safer haven for play and learning for kids with cancer and fragile immune systems. Without Jamie’s, our young students have little opportunity for education or socialization outside of the home and hospital. Even a common cold or flu can be serious for an immune-compromised child; chickenpox can prove fatal. At Jamie’s, strict health guidelines and communicable disease control, restricted enrolment and a state-of-the-art facility allow these kids to continue to interact, reducing the risk of learning or social deficits that may result from isolation. We also welcome young siblings of sick children, to minimize their exposure to illness or infection that could harm their sibling. Sheltered field trips and holiday parties allow families to continue to enjoy normal community activities free of the risks of public outings, as well as an opportunity to build a network of peer support. PROSTATE CANCER CENTRE Calgary’s Prostate Cancer Centre (PCC) is a non-profit, world-class medical centre with a mandate to help improve the quality of men’s lives and their families’ lives for those living with prostate cancer. Annually there are over 18,000 patient visits by these men and their families to access multiple programs and services at our Centre. In addition, over 5,000 men a year visit our Man Van program throughout Southern Alberta. WELLSPRING CALGARY A cancer diagnosis can be devastating. It brings countless life-altering moments and events for the people who receive the diagnosis, and for those who love them. People with cancer are compelled to find a ‘new normal,’ before, during and after treatment. Priorities shift, relationships change, life is… different. While Calgarians have excellent medical resources to fight cancer, those living with cancer and their loved ones often find they need more – emotional, informational, and practical support. This is the critical gap Wellspring Calgary uniquely fills. We offer a comprehensive range of evidence-informed programs, resources and support for our members (anyone living with any type of cancer, and their significant caregivers) at any point on their cancer journey. Our services are all offered free of charge and no referral is required. We can provide onsite child minding and we have a stream of programs specifically for young adults (18-39) living with cancer. In 2016 alone, 4,223 members had access to 26,710 hours of program delivery. Supporting this, 192 volunteers donated 10,875 hours of their time and talent.
