Mr O'Hare, Iâ€™ve recently noticed you have a position available for a deputy food and beverage manager at your establishment. I have read the job desciption thoroughly and believe I have both the qualities and experience you are looking for. I have 5 years experience in working in a 4* hotel environment in bar, lounge and restaurant settings at a top Chester venue. This included supervising dozens of weddings and functions of up to 400 people. I worked in both of the restaurants and all the conferencing/function rooms and bars and can comfortably work in all areas effectively. I also worked as an F&B supervisor at a 3* hotel for 7 months. This included plenty of conference and banqueting. During my time here our 'heartbeat' customer satisfaction scores went from all being below target on arrival to all being well above company standards when I left. Dinner in the hotel was ranked as best in the entire UK estate at last report. I was responsible for F&B staff training and development, enforcing company procedures, overseeing F&B operations, duty manager tasks, stock control and procurement, planning and staff hours. The only pre-requisite I don't exactly have is F&B recruitment. I do, however, have experience in interviewing and recruiting in the retail sector, and I know what makes a good F&B assistant so I have most of the bases covered here. . I am looking for a position which ideally includes Duty Manager shifts or tasks. I like to know all departments of a hotel and be the person people come to when they have a problem or question and so DM shifts are also something I am seeking in employment in addition to F&B management if possible. EMPLOYMENT HISTORY . Department Manager, The Writing Place, Chester. 2003-08 As a department manager, I ran half of the store. I was knowledgeable about my products, and was responsible for promotions. I represented the company at trade shows and selected stock for the shop and devised ways of hitting and beating sales targets. I also set up and managed a commercial website and Amazon pro-trader account on behalf of the store, which surpassed expectations by receiving up to 200 additional online orders per week. One achievement I am particularly proud of was selling a Montegrappa pen for $3000, and within two weeks gaining repeat sales for a further $75,000 worth of pens. I had to leave due to University relocation but I really enjoyed this job as I had total responsibility for my area and was able to use my initiative to beat targets. When left in charge of the entire store during holiday periods, I surpassed the projections left by the owners. My daily routines included opening/closing, accounting, banking, recruiting, interviewing, training, merchandising, customer service, transactions, buying, trade fairs, company demonstration days, technical support, website design, online orders, deliveries/logistics and planning sales. Queen Hotel, Chester. 2008-2012 The Queen Hotel is a flagship Best Western Premier Hotel. The customers and guests expect a very high and attentive level of service from staff. During university holiday periods I have run the private residentsâ€™ bar, cocktail bar and the private function bars. On a day-to-day basis, I would organise stock, open and close the bar, train and motivate new staff. I worked in both of the restaurants during functions and organised/planned staff for large parties and weddings, including floor supervision and on one occasion I covered for the DJ! I co-ordinated up to 15 staff. I put any inexperienced staff through their training weeks and helped them get to a suitable standard for the calibre of our customers. F&B Supervisor, Holiday Inn Chester 2012-2013 I worked here for 7 months following on from the Queen Hotel and helped turn the F&B team around into a success. As a supervisor I was accountable for stock control/security, full cellar maintenance/management and stock procurement, devising staff training and also disciplining. There was an F&B manager and 2 supervisors; myself and the other only did breakfast shifts in the restaurant, so I was in effect a deputy F&B manager with the same responsibilities as your position offers. I designed and implemented training for staff to comply with set company standards which when I left we were well ahead of target. I was in charge of a well-trained, competent team of F&B assistants in bar, restaurant, conferencing and banqueting settings, usually supervising 4-10 people. I had pretty much every responsibility from ordering napkins to dealing with medical emergencies on behalf of the hotel, which happened more than once. I did DM duties for the hotel also and kept staff hours to a minimum during quiet periods. I had manager responsibilities on our till systems to rectify errors, perform refunds, charge to hospitality accounts, calculate combined package charges (e.g. 40 welcome drink proseccos) and count totals, produce reports and bank our floats.

OTHER INFORMATION . Extremely reliable and in good health - only 2 periods of sickness in 8 years' employment. The first of these was confirmed swine flu during the epidemic, the second was contracting noro-virus from Holiday Inn (the hotel was subsequently closed due to outbreak). Always on time and used to working overtime and longer hours on busy days and over Christmas. I'm always well presented. I wore tailored suits/shirts instead of Holiday Inn issued ones at my last job. I'm very approachable and friendly with guests and always go the extra mile to help - I had quite a few good reviews on Trip Advisor and our comment cards.
