Festive Fare

Christmas Day for us is all about simplicity. Rather than slaving away in a hot kitchen, we prefer to cook the turkey outdoors on the BBQ with our friends and family around us. Christmas lunch doesn’t need to be anything fancy, just as long as it packs a flavour punch. These recipes require such minimal prep, giving you more time to celebrate with the ones you love.

Passionfruit and coconut panna cotta with strawberry mint salsa Panna cotta 50 ml water 120 g caster sugar 1 1/2 gelatin leaves (titanium strength), soaked in cold water then squeezed to remove excess water 100 ml good quality coconut cream 200 ml of passionfruit pulp, seeds removed (frozen works well) 200 ml cream, whipped to soft peaks

Strawberry Salsa 1 punnet of strawberries, finely diced

leaves, finely shredded * 81 mint tbsp lime juice * Method: To make the panna cotta, bring the water and sugar to the boil and stir until the sugar dissolves. Remove from the heat, stir in the gelatin sheets and once combined, allow to cool. Once the sugar syrup has cooled, combine with the coconut cream until it is well incorporated. Stir through the passionfruit then carefully fold in the whipped cream. Pour into small glasses, cover with plastic wrap and place in the fridge to set for 6 hours. To make the strawberry salsa, place all ingredients in a small bowl and mix to combine. To serve, remove the panna cotta from the fridge, top with the strawberry salsa and serve immediately.
