Our lambs are Icelandic sheep, 6 months old, promoted by Whole Foods as the mildest, most “gourmet-tasting” type of lamb on the market. We do not wean them or feed them grain. You will be guaranteed a lean, tender, very healthy product. The only other supplement our lambs have in addition to the grass and their mother’s milk is kelp and mineral salts. We do not use antibiotics or hormones, and our fields are organically managed. Lamb produced using only grass contains higher levels of Omega-3 Fatty Acids and Conjugated Linoleic Acids (CLAs) than conventional grain fed meats. Omega-3s and CLAs have been linked to reduced risk of heart disease, some cancers and adult onset diabetes. The good news this year is that our lambs were big, healthy, and sleek by the end of the summer and the cuts came back looking great. We were very pleased with the job that Royal Butcher did with our animals this year. The other good news is that we have a retail meat license now, so we can sell you or your friends lamb by the piece any time you want it. The not so good news for us meat producers in Vermont is that processing fees have gone way up – we paid 65% more to have our animals butchered this year over last year. We have tried to keep our prices as reasonable as possible given this drastic increase, but we have had to raise them this year to keep afloat. In place of whole lambs this year, we are offering a 22# box of a variety of cuts for $240.
