A popular Malay inspired dish made with fresh spices, root of galangal, turmeric, lemon grass and candle nuts. This citrusy flavoured curry is well balanced in both flavour and taste. The creaminess of candle nut and coconut cream combined with lime creates an explosion of flavour.

Ingredients • 1000g chicken pieces • Enough water to cover chicken for cooking • 3 tbsp cooking oil • 150g onions – chopped • 90g coconut cream • 3 tbsp lime juices • ½ tbsp salt • 1 tbsp sugar Recipe courtesy of Pearly Kee www.penanghomecookingschool.com

To make the curry paste • 3 lemon grass, cut heads and take off loose leaves • 3 candle nuts, split to half to wash • 45g red chillies, deseed and cut to pieces • 25g fresh turmeric, rub off dirt and slice • 35g galangal, slice very thin • 15g garlic, bashed and remove skin • 3 dried chillies, tear to 5 pieces and soak in water
