Barossa Cabernet Sauvignon Shiraz 2001 This fine handcrafted wine reflects Yalumba's dedication to creating wines with regional character, varietal flavour and individual personality. Yalumba has, for more than 150 years, been a vital part of the Barossa, making wines that reflect the best of the region. This wine is no exception. A classic Australian blend, it is a rich and full-bodied wine showing elegant fruit and structure. Lifted leafy eucalypt and sweet berry fruit characters on the nose are underpinned with mocha, chocolate and spices. Peppery berry fruit and refined tannins provide structure and a long, velvety finish.
The 2000/2001 Barossa Valley and Eden Valley growing season was near to perfect, with much needed winter and spring rains filling the soils and the vines beginning their growth in almost perfect conditions. Flowering was even and was followed with a warm and dry ripening period. The Cabernet Sauvignon and Shiraz were fermented separately to maximise blending options. Batches generally remained on skins for 8-12 days, but selected parcels remained on skins for a further 1-3 weeks post ferment to further assist palate development. After draining and pressing, the wines were transferred to barrel for maturation. Yalumba Barossa Cabernet Sauvignon (60%) Shiraz (40%) 2001 is deep to dense red in colour with subtle purple hues. An elegant and harmonious blend of sweet, earthy red berries and cassis, with restrained cedary oak overlaying a spicy and almost minty plum fragrance. The palate is deep, ripe and creamy with a plum richness. Smooth fine and stylish, the velvet-like palate is framed by fine-grained tannins.
