Honeycomb Serves 6 165 g sugar 25 ml honey 60 g glucose 30 ml water 7 g bicarbonate of soda
Place all the ingredients except the bicarbonate of soda in a small, heavybased saucepan over low heat. Stir until sugar dissolves, then bring to the boil until it reaches 183Â°C and starts to colour on the sides. Remove pan from heat and whisk in the bicarbonate of soda. Pour honeycomb into a well-oiled tray and leave it to set for about 20 minutes. Break honeycomb into pieces, dip in melted chocolate and nuts, or use as a garnish for desserts.
