WORKING TOGETHER

Pure Catskills Guide

The New York City Department of Environmental Protection wishes to thank the farmers and forest landowners who have worked hard with the Watershed Agricultural Council to protect and enhance water quality in the Catskill and Delaware watersheds. This effort has justifiably become a national model that advances the interests of watershed landowners and water consumers alike, while maintaining the highest standards of environmental policy and public health. Through projects like the Pure Catskills Guide, we are hopeful that the partnership to protect water quality can extend to improving the economic viability of the region’s farms, forests, and communities. Vincent Sapienza, P.E. Acting Commissioner

About Pure Catskills Pure Catskills is a regional, buy local campaign developed by the Watershed Agricultural Council to improve the economic viability of the local community, sustain the working landscapes of the Catskills and preserve water quality in the NYC Watershed region. Pure Catskills works to promote hundreds of farm, forest and local businesses throughout Delaware, Greene, Otsego, Schoharie, Sullivan and Ulster Counties in New York State.

j

ABOUT THE WATERSHED AGRICULTURAL COUNCIL The Watershed Agricultural Council (WAC) works with farm and forest landowners in the New York City Watershed region to protect water quality on behalf of nine million New York residents. WAC uses Whole Farms Plans, Forest Management Plans and Conservation Easements to help farmers, forest professionals and private landholders address water pollution concerns on properties located in the Croton and Catskill/ Delaware Watersheds. The Watershed Agricultural Council’s mission is to promote the economic viability of agriculture and forestry, the protection of water quality, and the conservation of working landscapes through strong local leadership and sustainable public-private partnerships. FOR MORE INFORMATION Visit WAC online at nycwatershed. org for more information about the four key programs. For questions or other inquires contact Heather Magnan,

Director by email jCommunications j at communications@nycwatershed. org or phone at (607) 865-7090. Why buy Pure Catskills? When you make a purchase from Pure Catskills farmers, foresters and businesses you support a rural economy, protect the working landscapes, preserve water quality, and ensure that small communities in the Catskills survive. It protects the environment. Well-managed farms and businesses help keep the soil fertile and the water clean, which is critical to the ecosystems that plants, animals and humans inhabit. It preserves the working landscape. Protecting the working landscapes in the Catskills ensures the delivery of over one billion gallons a day of clean, fresh drinking water to nine million New York residents. It’s part of our culture. Our culture is rich with music, art and literature that have drawn from the values instilled through working the landscape. Helping our farmers, woodworkers and other local businesses stay profitable is an essential part of our cultural heritage. It is an investment in the future. Supporting a safe, local food system enables us to feed ourselves for generations to come. Support for this project comes from Pure Catskills members, the Watershed Agricultural Council and New York City Department of Environmental Protection. Pure Catskills Buy Local campaign is an economic initiative of the Watershed Agricultural Council with funding from NYC DEP, USDA, U.S. Forest Service and other sources. EOE/EOP ©WAC 2017

Pure Catskills Guide

elcome to the 2017-2018 Guide to Pure Catskills Products, your one-stop source for where to eat, drink, shop, stay and play in the Catskills! The pages of this magazine showcase over 270 farm and forest-based businesses, restaurants, local artisans, other non-profit organizations and accommodations located throughout Delaware, Greene, Schoharie, Sullivan, Otsego and Ulster Counties in New York State. The local food movement is not new to the Catskill region. It is a part of our livelihood, our everyday routine, and to put it simply—it’s our lifestyle. This year we are proud to feature nine restaurants who are just as passionate about preparing high quality meals as they are about purchasing locally sourced food. These pages will show you a glimpse inside the doors of the Peekamoose Restaurant and Tap Room, Ruby’s Hotel, Pickled Owl, Table on Ten, The Bull and Garland, Zephyr Restaurant, The North Branch Inn, Rolling River Café and Two Old Tarts and One Smart Cookie. Every establishment is committed to the same mission, to source the best and most nutritious products from the very region they reside in. This year, we wanted to show you the unique partnership between the farmers, growers and producers in the Catskills, and the chefs who use their products. We are extremely proud that each page you are about to flip through reflects the abundance of products, people, restaurants and businesses that Pure Catskills is working to support, from the farm to the table. My hope is that you will take the time to meet the chefs who have dedicated their menus to sourcing locally because they are helping to preserve the working landscapes of the Catskills, and are keeping their money within our communities. In doing so, they are helping to improve the economic viability of the region while providing the public with some of the most delicious, nutritious and outstanding meals in the world. And it’s not just the nine restaurants featured who are making a difference, it is all of those listed under our Restaurant and Lodging section on page 47. Visit purecatskills.com for upcoming events, extended member listings, wholesale information, member news and additional resources. Purchase member products online at purecatskillsmarketplace.com. THE BULL & GARLAND T

he Bull & Garland pub and inn brings an authentic taste of the English countryside to the Catskills. Owners Oliver and Melissa Pycroft moved from London, UK to Hobart, NY in 2015 after falling in love with an 1830's former coaching house and private residence on Main Street that reminded them of the country pubs they used to frequent in England. They were delighted to discover that Hobart was also home to a charming book village community modeled after the well-known book village of Haye-on-Wye in Wales. The couple spent a year renovating their building before opening in October 2016 with Oliver (and his decade of restaurant experience in London) managing the pub and Melissa (with her extensive arts and project management background) operating as head innkeeper. The pub is now a vibrant hub for visitors and locals alike, serving British and NY craft beers on tap and a seasonal menu of traditional pub favorites, using the best of locally sourced ingredients to create their homemade savory pies, pastas, soups and pates and a changing array of daily specials. 'We strive to highlight local produce while showcasing the best of British cuisine and our Pure Catskills membership has provided us with an invaluable resource as new entrepreneurs in the area. The network of local farmers and producers has helped us realize our vision for our pub while building long-lasting relationships with our suppliers, who have also become our friends. —Melissa & Oliver Pycroft

t the newly restored North Branch Inn our story is the story of our community. Our Bar Room and Restaurant with its laid-back style and casual elegance serves dishes created by Chef Erik KineallyHill from products that he sources from good people we know. Our neighbor's stewardship of the agricultural heritage of our area inspires us through all seasons and we are committed to transmitting this passion to our guests. We consider it our responsibility and privilege to be part of the system that supports those around us. Plus it makes for delicious meals. Within minutes of our Inn and Restaurant we can find almost all the product and produce that we need to put together a concise, ever changing and hyper seasonal menu. Products like venison from Halloran Farm, the famed trout from Beaverkill Trout Hatchery, guinea hen from Jen Grossman and duck from La Belle Farms. Vegetables from multiple growers like Somewhere In Time Farm, Horak Farm and Apple Pond Farm. Cheeses and milk from Tonjes Farm. And of course fingerlings and strawberries and all kinds of magical things from Mountain Sweet Berry Farm and Rick Bishop. Every year our list grows as more and more people are inspired to get their hands in the dirt and we are the great beneficiaries of that movement. For guests that have traveled hours to visit our area and perhaps stay in one of our 14 rooms or for those that live down the road and pop in for a cold cider from Wayside on tap or Aaron Burr by bottle, we

THE NORTH BRANCH INN take the art of service seriously. We might be wearing plaid and jeans because we're in the country, but we like to think that we still can go toe to toe with anyone. Above all, as the next generation of hospitality people in an area with a famous history of hospitality, we have one great measure. Happy guests who feel like they've connected with the area we are proud to call our home.

PEEKAMOOSE RESTAURANT E & TAP ROOM

ver since our opening in 2004, Peekamoose Restaurant & Tap Room has been proud to serve locally grown Catskills produce and proteins. Although we have developed strong, lasting relationships with our farmers, we are constantly impressed by the increasing numbers of new people to our region, who are cultivating their own farms and who are embracing responsible and sustainable agriculture. We have been a proud member of Pure Catskills for many years, and often use their directory as our go-to site for finding new ingredient sources for our menu. We think it’s important for people to realize that when we source locally, we are not only using the best, most nutritious ingredients, but also keeping money within our local economy. We visit our farms, hatcheries, breweries and distilleries and get to see the human face behind this hard work and talent. We have the opportunity to know these artisans, their challenges, and goals. We’re not buying from some huge corporation where the money goes to some CEO halfway across the country. We’re supporting the independent grower and their families. It’s a beautiful gift to us to be surrounded by such dedicated people, whose commitment and talent are the reasons for our success. Our menu changes daily to reflect the best of the season’s offerings. From our oven roasted chicken, raised at Snowdance Farms, to our produce from Bob Kiley of RSK Farm, to our delicious pan seared rainbow trout from Beaverkill Trout Hatchery, we are proud to serve our guests the best possible foods. We consider ourselves fortunate to have this landscape and lifestyle that Catskills living has provided us.

PICKLED OWL

P

ickled Owl, a gastropub located on Main Street in Hurleyville, NY is the result of my lifelong dream to create a restaurant that would reflect my personal love of scratch cooking and handcrafted beer. It is an added bonus that my wife and I have been blessed with the opportunity to build the business in the same area in which we were raised. Our hometown enables us to take full advantage of locally sourced produce and meats providing ingredients that are fresh, flavorful and free of antibiotics or chemicals, while at the same time helping our economy thrive. Encouraging customers to experience Pickled Owl creations paired with locally crafted beer is a large part of the gastropub ideal and showcases some of what Sullivan County’s farmers and brewers have to offer. Being a member of Pure Catskills has given us the needed connections to meet our standard of quality and support other resident entrepreneurs. Our veggies are procured fresh when possible from neighboring farms, and our meats and fish are supplied in the same fashion. Our house-made sausages, veggie burgers and beef, ground and blended in house, set our gastropub apart from the typical dining fare. We are proud to serve local products and support local farmers. —Evan Allees

ROLLING RIVER CAFÉ R

olling River Café, Gallery & Inn was born out of our love for food, art and community. We’re a small family-run business, none of us coming from a hospitality background. However, this café has always been a dream of ours. Now we are grateful to be nearing nine years of operation and planning an addition this fall. From the beginning we envisioned a farm-to-table restaurant because we are avid believers in quality ingredients and supporting local economy, and here we are in the heart of a food goldmine! It’s so helpful for us to have resources like Pure Catskills to promote the area, creating unity. We were drawn to the Catskill region due to its clean air and water, protected by the passion of our local community. We buy from many farms, and are proud to have our own chickens for eggs and a large garden for much of our produce. We serve an international menu whose elements are directed by seasonal availability. We have a rotating menu that is posted weekly on our Facebook and website. The café is an old carriage house perched on the Little Beaverkill River. Much of the original structure remains to uphold the cozy farmhouse feel, and the walls always exhibit works of local artists. In the warm months, we offer outdoor seating along the river, the evenings lit with twinkling string lights and candles. We encourage you to hop over to our ping pong table for a riverside game! Next door we have a quaint country inn which is available year round. We are thrilled to be working with a fantastic group of people on the revitalization, rejuvenation, and beautification of Parksville, our small hamlet we love so much. —Rob, Kim & Miriam Rayevsky

TABLE ON TEN

t’s been five years. What started as a Fitzcarraldo enterprise—pushing a boat over a hill to build an opera-house in the wilderness—has become a way of life. Every new season confirms we’re part of something bigger, as the spaces between what is possible gets smaller and opportunity increases. There’s a level of engagement and optimism up here now that was unthinkable when we started. And being part of a community of people doing stuff feels much better than going it alone. Why would we source elsewhere if there’s amazing stuff on our doorstep? The relationship is reciprocal; raw materials here are wonderful, our proximity allows us to showcase them uniquely, thus the cycle of good work continues and we all benefit. It’s is a great time to be living and working here. So much is possible. —Inez Valk

RUBY’S HOTEL & RESTAURANT W

hat is now Ruby’s Hotel and Restaurant was once the Myers Hotel in Freehold, NY. It closed down in the 1960’s and had remained boarded up for years. Ana Sporer and Frank Giorgini discovered this 1800 architectural gem; complete with original tables, chairs, light fixtures, Art Deco bar and soda fountain. Together they purchased the building and lovingly restored it to its former glory. They opened for business in 2002 and have been building a loyal following of local and metropolitan food lovers ever since. Chef Ana Sporer was formally a chef at the Pierre Hotel and is currently teaching at the Institute of Culinary Education in Manhattan. She brings her skills to Ruby’s kitchen utilizing all the freshest ingredients from Hudson Valley purveyors and her own extensive organic garden. Her seasonally changing menu of culinary delights can be enjoyed in the front bistro, in the more formal back room or outside on the creek side patio in the summer. Ruby’s also houses two charmingly restored hotel rooms and a designated Fine Art Gallery on the second floor. Pure Catskills has been a valuable resource for locating local purveyors and bringing in new clientele. Ruby’s summer hours are Thursday, Friday and Saturday 5–9 PM. —Ana Sporer & Frank Giorgini
