Rustic Italian Cooking A Taste of Northern Italy: Liguria Discover some of the delicious dishes of northern Italy from the Luguria region! We’ll prepare Ciuppin Ligure, a shellfish and calamari stew in a broth of tomatoes and white wine. We will then create Genovese focaccia with a grape tomato and herb garnish. Next, we will stuff zucchini with cheese, roll it in breadcrumbs and herbs, then bake it. Our last dish, torta di zucca, a roasted butternut squash torte with almond cream and lemon zest, will end our evening. CUL 4023 $39 | mandatory fee: $30

A Taste of Southern Italy: Sicily Imagine the delight of your friends and family when you serve culinary treasures from the region of Sicily. We will first prepare Pasta alla Norma, penne with layers of eggplant, ricotta, mozzarella and salata in a tomato sauce. Next, we will make a veal roll with a fresh herb filling, garnish it with breadcrumbs and Parmigiano, then sauté it. A seasonal vegetable or salad will complement our meal. Everyday Pasta After this class, you’ll want to enjoy fresh pasta everyday at your home! First, we will toss sautéed shrimp and fried zucchini with rigatoni and a béchamel sauce and Parmigiano. Cacio e Pepe, spaghetti with toasted black pepper and Pecorino-Romano will follow. We’ll then enjoy carbonara, spaghetti with sautéed pancetta, Parmigiano and scrambled eggs. Appetizers and Small Bites In this hands-on class, we’ll create a variety of Italian appetizers, just in time for a perfect winter-weather party. We will begin with a tart with a spinach, Parmigiano, eggs and diced prosciutto filling. We’ll then prepare a costini with sautéed diced apples, bacon and Gorgonzola. Puff pastry with an asparagus filling and Parmigiano garnish will follow. The next appetizer we make, onion pie, is a blend of caramelized onions, beaten eggs and Parmigiano. We’ll then enjoy our final appetizer, chicken liver pâté made with a sauté of chicken livers, caramelized onions and white wine. CUL 4044 $39 | mandatory fee: $30

Explore some of the delicious foods of Italy! Join us to prepare Florentine-style thick strip steak that we will pan sear garlic and rosemary. We will also prepare Yukon potatoes and bell peppers, sautéed with rosemary and garlic. An arugula salad with shaved Parmigiano and a lemon vinaigrette will follow. Torta della Nonna, a torte of pastry cream, lemon zest and pine nuts, will be the sweet finish to our evening.

Braciole con Gnocchi Join us to prepare thin slices of beef tip sirloin with pine nuts and parsley in a red wine tomato sauce. Chicken Cacciatore Cacciatore translates to hunter, but there’ll be no need for you to hunt for a fabulous chicken cacciatore recipe! We will braise our chicken pieces in a tomato sauce with mushrooms, onions and chillies, then serve it with penne. We’ll then dip thin eggplant strips in an egg wash, fry, and then layer them with basil, mozzarella and Parmigiano, then bake them with a dusting of breadcrumbs. Finally, we’ll make Baba al Rum, individual cups of sponge cake with a simple syrup and rum, with a lemon pastry cream and fresh berry garnish CUL 4044 $39 | mandatory fee: $30
