TURKEY From traditional white whole turkeys to convenient turkey butterfly and saddle with little or no waste, the delicious centrepiece of your Christmas table is in safe hands with Simpsons Butchers.
YOUR TURKEY For a large family gathering or a more intimate festive celebration, Simpsons Butchers have the right turkey for you. Our Black Barn Turkeys are Farm Assured, reared in large barns and roam freely in tree lined meadows. Fed on a natural diet, our birds give an unrivalled level of texture and flavour. We only source from British farmers, who share our values on quality and animal welfare.
Whole birds make an ideal centrepiece and offer plenty of dark and white meat to suit all tastes whereas Turkey Saddles are ideal for those who prefer white meat - two turkey breasts sat on the breast bone, feeding from 8 - 20 people. Turkey Butterflies are another popular choice offering little or no waste - boneless turkey breast cut to size, feeding from 2 to 20 people effortlessly.
For the ultimate convenience, our breast joints are quick to cook, boneless and easy to carve. With a selection of stuffings and accompaniments, they are a popular, stress free choice.
CHICKEN & COCKEREL
Chicken and Cockerels are supplied by Banham Poultry of Norfolk, an independent family run business of 40 years producing the best quality poultry to be found anywhere in the UK.
Black Barn free range bronze and white turkeys are available as well as traditional white turkeys. All turkeys and poultry must be pre-ordered.

COOKING TIMES 30 minutes to an hour before roasting remove your turkey from the fridge. Cover flesh with soft butter. Always preheat your oven for at least 20 minutes before cooking your turkey. Get your timings right. Heat your oven to 180°C/350°F. Weight 4-5kg 5-6kg 6-7kg 7-8kg 8-9kg 9-10kg
Cooking Time 2¼ to 2½ hours 2½ to 3 hours 3 hours to 3½ hours 3½ to 4 hours 4 to 4¼ hours 4¼ to 4½ hours
Cover the turkey loosely with foil, but remove it just under an hour before the time is up to get the turkey nicely browned. Every 45 minutes remove the turkey from the oven (close the door) and baste the turkey all over. Roast your bird for the calculated time, or until the juices run clear from the thigh if you pierce it with a knife or a skewer.
BUYING GUIDE Whole Turkey 8-22lb (3.6-10kg), Chicken 4-5lb (1.8-2.2kg) and Cockerel 6-12lb (2.7-5.4kg). A 12lb (5.4kg) bird yields approximately 12 portions. Turkey Saddle: 8-12lb (3.6-5.5kg). Turkey Butterfly: 2-14lb (1-6kg). Allow approximately 1lb per serving which will leave enough leftovers for sandwiches.
COOK’S - TIP
Place the turkey on a bed of root vegetables and onions before cooking. The juices from the pan will make a delicious turkey gravy after cooking.
Don’t forget to leave time for your turkey to rest when it comes out of the oven. Turkeys between 4-6kg should be rested for 1½ hours, and ones from 6-10kg can rest for two hours.
COOK’S - TIP Basting with pan juices cools the surface of the turkey and slows down cooking, which in turn keeps the breast meat cooking at close to the same rate as the legs and thighs.

FESTIVE BIRDS A delicious alternative for your Christmas table this year.
DUCK & GOOSE
Duck and goose are supplied to Simpsons Butchers by Madgetts Farm and have been served in internationally renowned restaurants since 1978, offering a delicious alternative for your Christmas table this year. Birds are reared from day old chicks, bedded on straw and allowed to roam freely. They are fed on a natural cereal based diet for a succulent and exquisite taste. Please pre-order duck and goose. Ask your local Simpsons Butchers for more information and availability.
COOKING TIMES Goose - Preheat oven to 180°C/350°F. Use the spare fat to spread over the legs of the goose. Cooking time is 30 mins per kg. Place on a rack in a large roasting tin, prick the skin all over with a fork and rub a teaspoon of salt into the skin. Cover loosely with foil and place in the middle of the oven. Remove the foil for the last 30 mins. Cover with foil and rest for 20 minutes before carving. Duck - Preheat oven to 220°C/425°F. Pat the skin of the duck with a kitchen towel. Prick the skin around the duck legs. Season with salt and pepper. Place on a rack in a roasting tin and roast in the middle of the oven for 20 minutes per 500g plus 20 minutes extra. Cover with foil and rest for 10-20 minutes before carving.
COOK’S TIP - ROASTIES
Save the fat from your roast goose or duck to use for making delicious crispy roast potatoes.
BUYING GUIDE Goose has superb flavour but rather less meat. Allow nearly 2lb (900g) per person. Sizes: 10lb (4.5kg) to 14lb (6.5kg). A small duck serves two people, a large duck four people. Sizes: 5lb (2.2kg) to 7lb (3kg).

BEEF A beautifully roasted joint of beef on the bone makes the most magnificent feast, a rich red wine gravy adds to the sense of occasion.
DRY AGED BEEF
We now offer up to 45 day matured beef. Dry aged beef develops a rich dark flavour and the wonderful marbling is a reliable indicator of quality, ensuring great taste and tenderness; a special treat for your Christmas Day celebrations. This method of dry aging beef adds depths of flavour and texture, by concentrating flavour in the meat and natural fats which gives our beef its rich and distinctive taste. It can be purchased in all of your favourite cuts at our flag ship Heckington store (some cuts must be pre-ordered) and delivered to any of our other stores or ordered online for home delivery.
Our pasture raised beef is tastier, sweeter and healthier than grain fed beef and aged to perfection for a flavoursome and delicious tender meat.
Moderately hot oven, suitable for all cuts. 180Â°C/350Â°F. Rare: 15 minutes per lb (450g) plus 15 minutes.
Medium Rare: 20 minutes per lb (450g) plus 20 minutes. Well Done: 25 minutes per lb (450g) plus 25 minutes.
Cook joints with a natural fat with fat side up, add a little fat to lean joints and baste during cooking.
BUYING GUIDE Joints to choose: Fore Rib bone in or boned and rolled, Sirloin bone in or boned and rolled, Topside or Silverside. 3 to 4lb (1.4 to 1.8kg) boned joint yields 6 good sized portions. All cuts are also available from the dry aging cabinet.

PORK Our pork comes from outdoor-reared pigs, slowly grown, resulting in tender and flavoursome meat. Simpsons Butchers stock Farm Assured, outdoor reared pork from local farms for its renowned excellent taste and superior quality. Pork is cut and prepared fresh to order by our experienced butchers and has a good layer of fat without being excessive so that the meat is always full of flavour and provides good crackling.
BUYING GUIDE Leg of Pork makes a lovely lean roast and dry-brining keeps it succulent. Loin is lean too, while juicier cuts such as shoulder and belly need slow-roasting.
COOKING TIMES Allow your meat to come to room temperature before cooking. Start roasting at 240°C/460°F (or as high as your oven will go) to get heat through to the centre of the joint. After 20 minutes, reduce the temperature to 180°C/350°F and continue to roast for 25 minutes per 450g. Pierce the centre of meat with a fine skewer. There should be no traces of pink left in the juices.
COOK’S TIP - CRACKLING
Ask your Simpsons Butcher to score the rind. Stand meat on a trivet in roasting tin, rind uppermost. Brush with oil and sprinkle with salt. Do not cover. If the crackling isn’t as crispy as you’d like near the end of the roasting time, turn the heat up and cook for a further 10-15 minutes. Be careful not to overcook the meat though, as it will become dry.
Joints to choose: Loin or joint from the leg. 3 to 4lb (1.4 to 1.8kg) boned joint gives 6 to 8 generous portions. Allow slightly more weight if buying on the bone.

LAMB Our locally sourced lamb is naturally reared and grass fed for the most succulent taste.
Here at Simpsons Butchers we source lamb from local farms, providing Lincolnshire Farm Assured produce with full traceability from farm to fork and the best quality lamb throughout the year. All lamb is prepared to order and trimmed to the highest standard. With a full range of quality racks of lamb available including shanks, chops and many more great cuts, try some of the tastiest gourmet lamb this Christmas.
BUYING GUIDE Joints to choose: Leg, Shoulder or Saddle. A 4 to 5lb (1.8 to 2kg) joint on the bone gives 6 to 8 good portions. Allow slightly more for saddle due to the amount of bone.
COOK’S TIP - GRAVY The magic of a gravy lies in the roasting tin. After setting your roast aside, spoon out as much fat as you can, then set on a medium heat on the hob, add a glug of water and scrape up all of those delicious caramelised golden bits left in the pan. Add wine, seasoning and a touch of sweetness (cranberry jelly, or sugar), then bubble until syrupy and strain into a jug.
COOK’S TIP - RESTING This is just as important as every other part of the roasting process. It allows the moisture to redistribute back through the meat, making it juicier and easier to carve. Transfer your cooked roast to a warm platter or clean board and cover loosely with foil. Rest for at least 30 minutes before carving.
COOKING TIMES Pre-heat oven to 190°C/ 375°F. Allow 25 to 30 minutes per lb (450g) plus 25 to 30 minutes over. A boneless lamb roast will take longer to cook than a bone-in roast.

GAMMON From smoked ham to moist gammon these impressive joints offer a delicious festive alternative. Using only the very best quality ingredients, our raw and cooked gammon joints can be cut to any size. From traditional and smoked ham ranges to moist and tender gammon roasts, supplied boneless or *bone in these joints make ideal centrepiece and offer a delicious alternative for your Christmas table. COOKING TIMES Cook with water or cider to cover, add a bay leaf, 1 onion, 2 carrots plus a tablespoon of brown sugar and a shake of black pepper. Simmer for 20 minutes per lb (450g) plus 20 minutes. Cold gammon: cool in the liquid - left over liquid makes a wonderful soup stock.
GLAZING HAM Brush away and crumb coating, making shallow cuts in a neat design in the fat. Coat with the glaze (below); wrap foil around the lean part. Heat for 20 minutes at 180°C/350°F.
Simpsons Christmas Glaze: Blend 5 tablespoons cranberry sauce, 2 ½ tablespoons orange marmalade, 2 tablespoons chopped walnuts, 1 teaspoon mustard powder and a good pinch of ground cinnamon.
COOK’S TIP - LEFTOVERS
Pieces of cooked ham and gammon can be used as stuffing in jacket potatoes, filling in omelettes, added to soups or used in a variety of salads.
BUYING GUIDE Ham: If boned allow 4 to 6oz (100 to 175g) per person and 8 to 10oz (225 to 300g) if on the bone. Gammon: A 3lb (1.4kg) joint of gammon gives average portions for 6 people.
