W E LCO M E TO F O N TA I N E B L E A U M I A M I B E AC H Sixty years ago, architect Morris Lapidus created the daring design of the original Fontainebleau, offering new and unexpected ways to experience glamour and style. His bold, creative thinking has served as a blueprint for our reinvention of the resort and his words and architecture continue to inspire us. Fontainebleau Miami Beach has recaptured its place among the world’s most celebrated resort playgrounds. A perfect mix of iconic glamour and 21st century chic, few hotels or resorts in the world define a destination as Fontainebleau defines Miami Beach. Here at Fontainebleau we are from our birth unique and original without compromise. When one thinks Miami one thinks Fontainebleau. We are a destination with character and personality and history and culture buried in the fantasy resort destination of Miami Beach Florida‌invented by an architect named Lapidus, who truly pioneered resort architecture as we know it today. We have infused Fontainebleau with the sexy, glamorous, ultramodern spirit of the original. A stage for fun and sun, fantasy and escape re-opened and renovated for a modern experience. The most extraordinary experiences lie at the intersection of your world and ours. The stage is set. Explore. Jeffrey Soffer Chairman & CEO

AN INTRODUCTION The timeless Fontainebleau has emerged from the original vision of legendary architect Morris Lapidus whose daring designs epitomized a concept of life “more unusual, more interesting, more warm.” Today, Fontainebleau Miami Beach weaves its attributes—striking design, headlining music, contemporary art, fashion, and technology— into a vibrant new kind of immersive guest experience. Situated on an oceanfront stretch of the Atlantic, the architectural wonder sprawls across more than 20 acres.

36

THE LEGACY Since its grand opening in 1954, Fontainebleau has been the place to see and be seen. When Fontainebleau’s architect unveiled his plans nearly 60 years ago, he explained: “Fontainebleau is designed to convey a feeling of delight, to provide a setting, away from home, away from daily cares, just for the pleasure of a great experience.” To provide this experience, Lapidus broke away from conventions to create what he called “an architecture of joy.” He chose passion over formality, curves over straight edges and hot colors over the traditional vanilla palette. Irony, surprise, wit, serendipity, coincidence, and whimsical extravagance were his tools. Critics and academic killjoys were outraged. The public couldn’t get enough of it. Eventually, the original Fontainebleau came to be recognized as a masterpiece of Modernist architecture, but it was always Modernism with an edge, and with plenty of humor and an abundance of art. Everything Lapidus designed or placed in Fontainebleau was meant to delight and surprise.

Hakkasan Hakkasan promises one of the most vibrant and memorable dining experiences. Whether drawn by splendid recollections of previous meals or the curiosity of what will delight at the next one, Hakkasan guests look forward to Chef Loo’s inspired menu of modern Cantonese cuisine. Chinois haute cuisine is meant to be enjoyed and experienced in the proper fashion. Let the fourth floor rooftop enclave of rich textures and hues mesmerize you with waves of exotic dishes. The name “Hakkasan” pays homage to the ‘Hakka’ people from the New Territories of Hong Kong while ‘san’ is the respectful Japanese form of address. This same tradition and respect goes into every menu item and how they are each prepared and presented. Traditional techniques use fresh local ingredients to ensure the contemporary dishes retain the essence of conventional Chinese cuisine. Hakkasan offers a mouthwatering selection of dim sum every night and for lunch every Saturday and Sunday, 12 - 2:45 PM. Aficionados will enjoy the traditional and new menu items that take stir fry, soups, congees, vegetables and dumplings to whole new levels.

Enjoy an incredible meal overlooking the resort’s iconic majestic ocean and poolside views. Inspired by Mina’s sons and their two gastronomic obsessions – Sammy is the burger maniac, Anthony adores pizza – the restaurant’s casual dining menu is modeled on what the Mina family likes to cook, serve, and eat at their backyard get-togethers with family and friends. Chef Mina and his team at Pizza & Burger know how food naturally brings people together, so they strive to make every meal a celebration. Backed by decades of experience and a spirit of discovery, these craftsmen balance spice with sweetness, and bold with savory, to offer you global flavors you just can’t find anywhere else. Savor delicious pizzas made from scratch, rich with fresh, local ingredients and Mina’s to die for burgers, graze on an array of craveable snacks or design your own salads from a list of fresh, tasty ingredients. BLEAUFISH Taking freshness to a new level, Fontainebleau Vice President of Culinary Operations Thomas Connell and his team launched BleauFish, the hotel’s very own commercial fishing boat, providing fish, lobster and crab claws to the hotel’s famed award wining restaurants. BleauFish provides most of the 500 pounds of seafood used daily, where the live catch is received and housed in a collection of 2,000-gallon salt-water tanks called “Water World.” Designed and built by Fort Lauderdale’s Living Color Aquariums, Water World includes fish friendly amenities including temperaturecontrolled water — Florida spiny lobsters prefer the thermostat set to 70 degrees; Maine lobsters prefer to chill at 50 degrees. A blue-hued ocean mural on the walls of Water World, and the tanks’ lights, kept on timers to mimic the ocean’s patterns, relaxes the fish. “We want them to feel at home,” says Chef Connell. “The less stress a fish feels, the more delicious it’s going to taste. And that’s the whole reason we did this: to provide guests the freshest seafood experience possible. We’re literally going from ocean to table in a matter of hours.”

LOCKER 28 For over 6 years, Fontainebleau has cured some of the best beef in the entire country. We select Amish raised beef and dry-age it to the perfect taste and tenderness. Our Vice President of Culinary Operations, Thomas Connell, credits the region, the lack of pesticides and hormones, the soil’s nitrogen cycle, and Amish traditions for producing a natural product unlike any other on the planet. We bring the meat into Locker 28, the hotel’s meat locker and market, for dry aging. A stainless-steel walkin cooler precisely maintains conditions of 36 degrees Fahrenheit and 85 percent humidity. We weigh it, tag each one with the original start weight, and meticulously monitor its progress to ensure all are drying evenly. Each steak waits its time to be sliced, trimmed, and served to you, our guests, at StripSteak and Pizza & Burger by Michael Mina, Hakkasan, Scarpetta by Scott Conant, and the rest of the hotel’s dining venues. A rack is ready when it’s firm to the touch and doesn’t leave any moisture on the fingers. Prime cuts are aged for at least 28 days; shoulders ground for burgers are aged for about 60 days. Larger rib-eye racks go for about 35 days, and smaller ones spend around 28 days drying. A New York strip’s prime drying time is between 28 and 32 days, and the butcher shop is constantly working to ensure it has enough dry-aged meat at the right point of maturity to meet our customers demand and our talented chefs specific needs. The quality of our product here is borderline Kobe Beef—valued for its flavor, tenderness, and fatty, wellmarbled texture, consistent across the board. From the New York strips to the shoulders we use for our dry-aged burgers, to even the bacon (we smoke and cure our own bacon) and the chorizo we make in house for our red wine chorizo at Vida, its just endless what the possibilities are when you have a facility like Fontainebleau’s. You don’t need to put anything on it other than maybe a little bit of salt.

THE ART OF FONTAINEBLEAU The new 21st century Fontainebleau follows Lapidus’ precedent by incorporating “cool and hot” examples of contemporary art as a part of its radical departure from the ordinary. The mission of Fontainebleau’s art program is to entertain and educate. It is defined by a select number of world-class visual artists and thinkers. Each of them has a significant impact on the look and feel of Fontainebleau. In addition to Turrell’s light installations, major works include the chandeliers by Ai Weiwei, works by Rosalyn Drexler, John Baldessari and Tracey Emin, and photography by Thomas Ruff and Liza Ryan. Each work of art you see in Fontainebleau today is unique, original and site-specific. All the work has been integrated into the hotel’s total architecture and design to create a completely curated environment. Guests walking the lobby and encountering one of James Turrell’s light installations or an Ai Weiwei chandelier will know at once that Fontainebleau is unlike any other hotel on earth, and that the party is on.

172

AI WEIWEI CHANDELIERS In the Chateau Lobby are three crystal chandeliers that impart an ultramodern, sophisticated and glamorous atmosphere. Multimedia impresario Ai Weiwei, designer of the famed “Bird’s Nest” at Beijing National Stadium for the 2008 Summer Olympics, created these brilliant chandeliers for Fontainebleau. By dramatically increasing the scale of a normal chandelier, Ai made a common object an unfamiliar and awe-inspiring one. Paradoxically, the sheer size of the complete pieces also emphasizes the thousands upon thousands of individual components required to create them. For Fontainebleau, the chandeliers act as contemporary updates of Morris Lapidus’ original designs. They embrace the historic past of Fontainebleau while simultaneously looking towards the future.

JAMES TURRELL James Turrell’s work in light and color provides Fontainebleau’s artistic signature. Turrell’s work also has a strong historical resonance with Morris Lapidus’ own early experiments. Lapidus, like Turrell, understood the power of light and color to define and shape the guests’ experience.

INSPIRATION An enduring architectural landmark. Bold and imaginative design. Lapidus prompted new and unexpected ways to experience glamour that has been endured for over half a century. The rebirth of Fontainebleau magnificently restored Lapidus’ signature details.

178

Chateau Lobby with, at left, The Stairway to Nowhere

COLUMNS A signature effect of Lapidus’ design is the column disappearing into the lighted “cheese hole.” When Lapidus was designing retail stores in New York in the 1950’s, there were typically buildings over the stores, with tons of steel and masonry. Lapidus’ drew the column into a lighted hole so the weight disappeared, thus making the building seem lighter.

CHEESEWALL The underlying project of all Lapidus architecture is to literally make the walls disappear. In many of his designs, Lapidus used indirectly lit display niches in “woggle” shapes to display merchandise and de-substantiate the walls. These cheese “woggles” or “cheese holes” are integrated throughout Fontainebleau with great effect. The architecture resides in arranging and directing the dance of vision.

STAIRWAY TO NOWHERE This iconic landmark maintains its gold hue and original architecture, and it is the focal point of the hotel’s expansive Chateau Lobby. When Fontainebleau opened in 1954, guests descended the Stairway To Nowhere, dressed in their finest evening attire, for the sheer pleasure of making a grand entrance. Today it continues to be used for guests to make an unforgettable entrance.

BOWTIE The “bowtie” floor pattern, one of the original Morris Lapidus design elements is reflexed in the Chateau Lobby’s white marble floor decorated with black marble bows. The bowties are a nod to the ones Lapidus wore personally throughout his entire adult life. Under the design direction of Jeffrey Beers and Lifescapes International, Fontainebleau’s poolscape boasts a bowtie inspired free-form pool.

“I LOVE

Linen ”

100%Capri - The fashion and household linen brand - was generated by the talent of Tony Aiello, a brilliant young businessman who succeeded in creating a brand that has rapidly become synonymous with Italian craftsmanship. Linen, the quintessential fiber of vegetable origin, is good for the skin and cares for the body of those who wear it, enveloping them in the snowy caress of soft fabric. The use of linen is perfectly integrated in the philosophy of 100%Capri, since the attention to the environment is not a derived from a passing trend but is an authentic corporate lifestyle that sets the natural element at the core, starting from the raw material used right through to the creation of the products. And we’re not talking only about fashion creations or the household linens, but about all the little details, such as the

exclusive shopping bags and made up in pure linen. Tony’s genuine strong point is that he has managed to take this lifestyle from Capri to all over the world. In fact in 2008 he landed in Bal Harbour, with Flagship Store in the most luxurious mall in the United States, The Bal Harbour Shops and 100% Capri has stores in St. Barth, Roma, Sicily, South Africa, Beverly Hills, Firenze, Ibiza and will open this fall in Dubai. “I love linen. Linen is a timeless beauty in its purity and perfection. To me linen means eternal youth and an escape to the Mediterranean landscape of

my home in Capri. My personal pride is in our exclusive materials. We have searched the world over to deliver to you the finest fibers which are weaved and tailored by the experienced hands of our artisans. Our timeless style and design is an expression of elegance but most importantly freedom. 100% Capri is 100% Natural - It’s a pure pleasure to wear.” Thus is it is the felicitous combination of linen and the magic of the Island of Capri that gives rise to the man/woman/child collection of 100% Capri, allowing those who wear them to live in a dream.

J.W. COOPER: OTHER LIKE NO

If having what no one else has is essential to you, then J.W. COOPER is where you need to be.

S

hopping is an expression of oneself. We head out in search of something extraordinary to call our own, only to return less than wowed. Why? Because so much of what’s available today is the same.

Not true at J.W. COOPER at Bal Harbour Shops. Here, surprising is its specialty. The unexpected is always found and “made by hand” is embedded in its authenticity. A purveyor of original and superior quality accessories, collectibles and custom items, J.W. COOPER has been redefining the men’s and women’s high-end accessory market for more than 35 years. Not only is every item in this gallery-inspired boutique a work of museum-worthy art, each piece is created by an artist. J.W. COOPER goes to great lengths to source artwork unlike any other and works in tandem with various artists to create exclusive objects (offered in the store or for sale). From its famed belt and buckle collection – presenting more than 250 styles for men and women – to its coveted skulls, sculptures, jewelry, bags and luggage, there’s something for everyone at J.W. COOPER. Where else can you find dress belts that pair 14- and 18-karat gold, and sterling silver with stingray, alligator, lizard and ostrich? Adorned, engraved and filigreed with stones such as diamonds, rubies, sapphires, lapis and red tiger eye, they are the epitome of elegance.

W

hat other luxury locale showcases one-of-a-kind, handcarved buckles born out of the most exotic materials like fossilized mammoth ivory (10,000 to 50,000 years old), mother of pearl, black jet and fire agate for an expression all their own? The trophy buckles found at J.W. COOPER introduce the ultimate opportunity to demonstrate personal style in the most unusual and memorable way.

And, how about the J.W. COOPER skull collection? Featuring skullthemed buckles, jewelry and fine art sculptures, it speaks for itself. Imagine donning a skull ring crafted of 18-karat gold, diamond and sapphires. Fascinating to many, the skulls of J.W. COOPER have a following that is spellbinding.

“There’s no one else doing what we’re doing” Todd Rauchwerger, CEO of J.W. COOPER.

“I want to consistently offer something different to those who have done and seen it all and to those who value the original and collect special items for themselves. Moreover, our accessories are fitting for every personality and situation, from the boardroom to city streets to leisurely weekends away. In our opinion, being surprised is what keeps people feeling alive. We specialize in this feeling, and it is the heart of what we do. At J.W. COOPER, each piece tells a story, enticing collectors. This is obvious from the outside looking in. Greeted by an exquisite interior comprised of warm woods, a custom made Kudu horn chandelier and a stunning painting of a majestic horse leaping, guests will enjoy a boutique as imaginative as its goods, making the experience what it’s supposed to be – all about the very distinctive you.
