J.E. RIDLINGTON AND SON WAS ORIGINALLY ESTABLISHED IN 1705 AS YATEMAN WINE AND SPIRIT MERCHANTS. IT WAS IN THE OWNERSHIP OF A DORSET FAMILY, BEFORE CHANGING ITS NAME TO J.E. RIDLINGTON IN 1842. IT WAS PURCHASED BY HARRY BATEMAN IN 1918 TO OFFER HIS BREWERY CUSTOMERS A QUALITY SELECTION OF WINES AND SPIRITS, ALONG WITH SUPERIOR SERVICE AND CHOICE, PROVIDED BY EXPERTS.

John Bateman, Harry’s son and George’s brother, developed the business into a bonded warehouse and cellars. It was an offer that would become the envy of Lincolnshire, not only due to the carefully selected range, sourced from all over the world, but also due to the Cognacs, Ports and Sherries imported from the continent in oak barrels, ready for decanting at J.E. Ridlington. John Bateman also oversaw the unique blending of fortified wines. This tradition and skill was passed down to John’s son Peter and has now been taken on by Jackie Bateman, who works very closely with wineries, vineyards and agents to ensure a range and service most beneficial to our customers.

Our service and this brochure are all about helping customers make the best choices in selecting the most appropriate wines for their business and customers. Every pub and restaurant is different and has its own unique requirements. Many require purely value offers, others an extensive range and some a selection to match their food offers. Most need all of these! Making the correct selections can be difficult. This brochure has been designed so that you can view each wine by country in one section and by grape variety in another – all with images of bottles and descriptions. We can lay out suggested wine lists for customers and produce tent cards and table talkers to entice customers to buy. And should you

wish to alter your range at any time, we can swiftly supply new lists. This brochure comes with helpful tips and background information to assist you. We also have Wine and Spirit Education Trust qualified experts with experience on both sides of the bar. WHAT IS WINE?

WINE IS AN ALCOHOLIC DRINK MADE FROM A SINGLE VARIETY OR A BLEND OF GRAPES, USUALLY WITH THE ADDITION OF NO OTHER INGREDIENT, EVEN YEAST, AS THE YEAST IS NATURALLY FORMED ON THE GRAPE SKINS.

STYLES

GRAPEVINES

The main wine styles are red, white, rosé and sparkling. Red wines are created after long contact with red grape skins and rosés by brief contact with red grape skins. Most sparkling wines are created by the addition of yeast to the bottle, or during the production process.

Although grapevines can grow within a year, some are over 100 years old, dependent upon the variety, environment and climate. In the Southern Hemisphere, harvesting takes place between February and April and in the Northern Hemisphere between August and October.

GRAPE VARIETIES

VINTAGE / NON-VINTAGE

Different grape varieties create different styles of wines, the grape’s character often coming from the growing environment, soil and the climate of an area.

If a wine is a blend from several harvests it is a nonvintage wine. However, if the grapes for the wine were all harvested in one year, it is a vintage. Certain vintages (year of harvesting) are noted as being superior to others.

COUNTRIES France has traditionally been the most famous wine-producing country in the world. However, different styles and varieties of grapes are now grown on nearly every continent and varying wine production methods present fascinating opportunities for sampling and adventure! From Australia to England, Argentina to New Zealand and France to Chile.

CLIMATES Cooler climates tend to produce wines which have tartier tastes and warmer climates fuller, riper flavours.

SINGLE VARIETAL WINES & WINE BLENDS Single varietal wines are made using only one grape variety, while wine blends are made with a mixture. Neither is necessarily superior, they are just different wine producing methods.

WINE TASTING

MAKE SURE YOU CHOOSE THE RIGHT WINE VARIETY BY FOLLOWING THESE TIPS FOR TASTING AND FOOD PAIRING.

EYES...

Firstly tilt the glass slightly to one side and check the wine for clarity, viscosity and colour.

NOSE...

Swirl the glass before smelling the aromas and checking for any ‘off smells’ (corked wines have a certain stale aroma to them created by infected corks, rather than cork floating in the wine).

MOUTH...

Taste the wine by taking a small mouthful, sucking in air slightly to ‘breathe’ the wine and roll it over all areas of the tongue, checking for sweetness, acidity, tannins, alcohol and body. Swallow the wine to combine the senses of the tongue and nose.

QUESTIONS...

In the aftertaste do the flavours linger? Are there any predominant flavours? Do new exciting flavours come to the fore?

DEFINING YOUR WINE LIST THERE ARE IMPORTANT FACTORS YOU NEED TO CONSIDER WHEN MAKING SELECTIONS FOR YOUR WINE LIST: •

What is your target market?

What proportion of wine sales do you envisage being through ‘social drinking’ and how much as an accompaniment to food?

Which wines do you wish to match to your food offer?

Do you wish to offer a selection of entry level, intermediate and premium wines and where should the main focus be?

Which countries do you wish to have represented and which grape varieties? It is often best to balance your list between popular countries and best performing grape varieties.

Do you wish to avoid stocking wines which are also available in the supermarkets?

Do you wish to stock a number of well-known branded wines?

How many whites, reds, rosés and sparkling wines will you stock?

Do you wish to regularly update your wine list and introduce ‘Specials’ and ‘Wines of the Month’ to keep the offer fresh?

MAXIMISING YOUR WINE SALES & PROFIT STAFF RECOMMENDATIONS

MERCHANDISING

Customers are often given confidence by knowledgeable staff with a basic understanding of wines, who are able to make recommendations, especially with regard to food matching.

Effective merchandising gives the customer confidence in the wines you have on offer and the way in which you look after them. A display of quality glassware appropriate for red, white, rosé and sparkling wines adds significantly to the wine experience. However, ice buckets, coolers, tent cards and well organised bottle displays add value.

FEATURE WINES Having a ‘Wine of the Week’ or even ‘Month’ gives customers confidence and gives you the opportunity to focus your staff on a particular wine and even set them sales targets. It is also an opportunity to push wines that return good margins.

FRIDGE SPACE The highest margin wines, which require cooling, should be placed on the top shelf of the fridge, as this is where customers will focus their attention. Low margin house wines should not be prominent.

PRICING You may consider pricing wines by the bottle and by the glass, with the bottle being at a discounted price. You may consider pricing your wines by gross profit percentage, percentage mark up or cash margin. It is often best to price more expensive wines based on cash margin otherwise they become unattractively expensive.

WINE LIST As well as ensuring your wine list is comprehensive and well balanced, do not lay your list out in price ascending order. Your high profit wines should be positioned in the middle of the list. This is where the majority of customers buy from!

WINE LIST DESIGN & PRINTING We offer a wine list design and printing service completely free of charge. The design and layout is based upon the specification which can be agreed between yourself and our Wine Manager, in order to ensure that it is the most appropriate for your venue and offering. These can be turned round very quickly and updated as per your requirements.

QUALITY POINT OF SALE MERCHANDISE HELPS BOOST SALES We have a wide range of point of sale merchandise to help boost your sales and emphasise care and quality. This includes corkscrews, ice buckets, tent cards, posters and wine seals.

TRAINING Our Wine Managers and Telesales team have all studied and qualified for the Wine & Spirit Education Trust Award and are skilled at offering advice and tips to help you maximise your wine potential. We also have qualified trainers who can offer training and sampling for your staff, either at our brewery in Wainfleet or at your premises.

NEWSLETTER We produce a periodic wine newsletter for our customers which keeps you updated on such things as market trends, new wines to the market, forthcoming promotions, incentives and Wines of the Month. There are also ‘top tips’ on marketing and presentation and the generating of margin, volume and profit opportunities created by wines.

REWARDING SUCCESS As well as great wines, great prices, support, promotions and incentives, we also hold a monthly draw for customers where we are their main supply & have had a wine list created for them.

SOMMELIER AWARDS The Sommelier Wine Awards is a wine competition with a difference. As Britain’s only on-trade wine competition, it focuses entirely on wines aimed at the on-trade. Since it started in 2007 it has grown to become the first point of reference for the UK’s on-trade wine buyers as well as the key competition for wines trying to increase their presence in hotels, pubs, bars and restaurants across the world. The SWA judges all serve or buy wine for their venues in the ontrade, or are leading consultants. Wines with general distribution in the high street are not permitted to enter, except for sparkling and fortified wines, or merchants’ online-exclusive wines.

STORAGE & TEMPERATURE

HOWEVER GOOD YOUR WINE SELECTION, QUALITY CAN BE JEOPARDISED BY POOR STORAGE, TEMPERATURE CONTROL OR PRESENTATION.

STORAGE

TEMPERATURE

The main wine styles come in red, white, rosé and sparkling. Wines should always be stored away from strong light, hot bulbs and heat sources, if they are to retain their quality.

Part of the wine experience is to ensure that all wines are served at the correct temperature, which helps to maximise the aroma, effervescence and flavour of each style.

Wines not on display for serving should ideally be stored at a temperature of 13º-15ºC for them to develop and retain their qualities.

Light red wines should be served at 12º-15ºC, which is slightly below room temperature. However, there is an increasing fashion to drink these lightly chilled.

Bold red wines should be drunk at 15º-18ºC, which is normal room temperature.

Light white wines should be served at 8º-12ºC, which is chilled from the fridge. Sparkling wines should be served slightly colder.

Rich white wines should be served at 12º-15ºC, having been chilled in the fridge and left to sit at room temperature once opened, allowing them to breathe.

Cooler jackets are often useful for white wines and sparkling wines should always be served on ice.

FRANCE BEAUJOLAIS NORTH OF LYON IN EASTERN FRANCE IS THE WORLD-RENOWNED REGION OF BEAUJOLAIS. WINEMAKERS HAVE BEEN CRAFTING FRESH AND FRUITY WINES ALONG THE BANKS OF THE SAÔNE RIVER FOR CENTURIES. With few exceptions, all Beaujolais wines are made from the Gamay grape, which is thought to be a cross of Pinot Noir and an ancient white variety known as Gouais. All Beaujolais grapes must still be hand-picked and the traditional winemaking method used. The warm, sunny climate is ideal for wine production. The northern half of Beaujolais is hilly, with soil that is granite-based. The southern half, also known as Bas Beaujolais, is much flatter and has mainly sandstone and clay-based soil. As you might expect, this change in the landscape is reflected in the wine. Northern vineyards often create complex wines, whereas lighter, fruitier wines usually come from the south.
