for Summer Good news for foodies, Cliq Café will soon open its doors, adding to the already exciting array of ‘must visit’ delicious destinations in The Market Room. The owner, Idan, of Luxe Bar in Bondi, extends his offering to St Ives and will boast a food bar, café and a licence so you can enjoy your favourite tipple with your food.
Upgrade THE experience Dropped your phone? Accidentally given your tablet a bath? Luckily, we’ll soon have Mobile Experts down on Level 1, which does repairs and parts as well as IT help.
Men of St Ives. There’s no excuse for not looking good over Summer as Kingsmen Hair is bringing its ‘old school with a modern twist’ barber shop to The Village. Its new premises opposite Café Milligram on Level 1 will offer a quality cut and plenty of man-pampering.
HOT NEWS FROM DELI HUB We already love Deli Hub for its amazing range of gourmet produce, and we love it even more now there’s a hot food bar. Pick up a delicious ready-made meal on Level 1 for maximum taste with minimum effort.
COME SAY HELLO Helloworld organises trips all over the world, but the St Ives branch has a home-grown feel as new owner Belinda Hunt is very much a local. Get flavour into your fish “The holiday season is a great time to choose seafood, such as oysters, as a light and fresh option,” shares Jason. “You can do so much with the flavours, and seafood is quick and easy to cook. A whole baked fish makes an eye-catching dish.” When choosing what to cook your seafood with, Jason has some great advice. “Lemons and limes and acidic fruits such as apples and tomatoes go really well with seafood. The key is to keep it simple and let the flavour of the fish speak for itself.”

baked whole Salmon with apples & CIDER Serves 4 2 small apples, cored and cut into wedges 1 lemon, cut into wedges 2 spring onions, sliced on the bias 1 whole salmon 600g (gutted, scaled and cleaned) Salt Freshly ground black pepper 2 tbsp herb butter 250ml cider 1 small handful tarragon, roughly torn 1 small handful thyme
1. Preheat the oven to 180°C (160° fan). 2. Arrange the apple wedges, lemon wedges and spring onions in a baking dish large enough to hold the fish. Sit the salmon on top and season the inside cavity with plenty of salt and pepper. 3. Top the salmon with the herb butter and pour the cider around the dish. Scatter some of the herbs on top. 4. Bake for 20 to 25 minutes until the flesh is firm and opaque and comes away easily from the bones. 5. Remove the fish from the oven. Let it stand briefly before serving with the remaining herbs on top.

Porchetta Pork Roast Shopping List Sutcliffe Meats and Romeo’s SUPA IGA 3kg to 3.5kg bone-in, skin-on pork shoulder roast, or a 2.5kg to 3kg boneless roast, fat trimmed to 6mm thickness ¼ cup chopped fennel fronds ¼ cup chopped fresh rosemary 2 tsp chopped fresh sage leaves 5 garlic cloves, grated or mashed to a paste Finely grated zest of 1 lemon 1½ tbsp salt 1 tsp fennel seed ¾ tsp red pepper flakes ½ tsp black pepper ¼ cup extra virgin olive oil
1. Score skin and fat all over pork, taking care not to cut down to the meat. 2. In a food processor or mortar and pestle, combine fennel fronds, rosemary, sage, garlic, lemon zest, salt, fennel seed, red pepper flakes and black pepper. Pour in oil. Pulse or mash until it forms a paste. Rub all over pork. If using a boneless roast, tie with kitchen string at 5cm intervals. Transfer to a large bowl and cover with plastic wrap. Refrigerate for at least 6 hours and preferably overnight. 3. Remove pork from refrigerator 1 to 2 hours before cooking. Heat oven to 230˚C (210˚ fan). Transfer pork to a rimmed baking sheet and roast for 35 minutes. Reduce temperature to 160˚C (140˚ fan) and cook for an additional 2¾ hours to 4 hours, until a thermometer inserted into the thickest part of the meat reads 180˚C, which will give you sliceable tender meat. (Bone-in roasts will take longer than boneless ones.) 4. Rest for 15 to 30 minutes.

1. Preheat oven to 120°C (100° fan) and grease a large oven tray (a round pizza tray works best for this). On a sheet of baking paper the size of the tray, use a plate as a guide to draw a 23cm circle, then a 13cm circle inside it. Place the paper on the tray, pencil-side-down. 2. Using an electric mixer, beat egg whites until soft peaks form. Add sugar, a spoonful at a time, beating until dissolved between each addition, until the mixture is thick and glossy. Add cornflour and vanilla and beat briefly, until just combined. 3. Using the pencil lines as a guide, scoop large spoonfuls of meringue onto the tray to form a wreath shape. Use the back of a spoon to make an indentation in the top of meringue, all the way around the centre. Bake for 1½ hours, then turn off the oven, prop the door open slightly and leave to cool completely. 4. To serve, carefully run a large knife between the pavlova and the paper to loosen it, then slide onto a serving plate. Whip the cream to form soft peaks and spoon over top of pavlova. Top with the berries.
