Church Appeal

h c r u h C s s o r C ly o H e v a S The Holy Cross building is a fine example of an 18th Century town church being built of Northamptonshire ironstone in 1758 and it has a most attractive interior which is unique in its decoration outside of Westminster Abbey. However a survey earlier this year identified that £330,000 needs to be spent on vital repairs. Upon this news English Heritage placed the building on their “at risk” register and offered a grant of almost £200,000 with the condition that the church and local community raise the remaining £129,000 by the end of this year.

If the repairs are not undertaken within the next two years, it is likely that danger notices will have to be placed upon the church and the surrounding churchyard fenced off and closed to the public, which would be an awful prospect for the whole town.

A taste of autumn Embrace the very best that autumn has to offer! For centuries we have been reaping the benefits of our gardens, allotments and hedgerows, creating an inexhaustible bank of delicious recipes that generations have enjoyed and passed down to their children. The following recipes were drawn from ‘Living off Nature’ by Judy Urquhart, Jane Newdick, and a Broadwell resident whose daughter now lives in the Grandborough parish. Thought to have been written in the 1920’s and containing recipes dating back hundreds of years, the drinks, chutneys, wines and dishes are just as healthy and delicious today as they were when our ancestors first created them.

Dandelion Coffee Dig the roots in early autumn and wash well in running water. Spread the roots in the open, preferably in the sun, and leave until bone dry. Roast slightly to improve colour and flavour. Grind coarsely and use in the way you would coffee.

Why not use up those surplus vegetables or fruit and try out a few recipes for yourself?

Fruit Wines Wines made from fruit require very little water and often no yeast, as enough wild yeast cling to their skin to induce fermentation. Autumn fruits that make the best wines are blackberries, plums, redcurrants, raspberries, pears and elderberries. Pour boiling water over the fruit and leave to stand for about three days, mashing and stirring the fruit each day. Strain onto sugar and heat until dissolved. Cool to blood heat and add activated yeast if required. Put in a jar, plug or insert and airlock and leave it in a warm place until fermentation has ceased. Bottle and leave for at least six months to mature before using.

Traditional Recipes

Sloe Gin You will need: 2lb sloes, 2 pints gin and 8oz white sugar. Prick each sloe several times with a needle or a sloe thorn. Put the fruit in a wide necked preserving jar and add sugar then pour gin over to fill the jar. Seal the top and leave in a dark place for at least 4 months, turning and shaking occasionally. Strain liquid off fruit and bottle. Taste for sweetness and add more sugar if you choose. Keep until the following winter.

Blackberry or Raspberry Vinegar You will need: 2lb fruit, 2 pints good white wine vinegar, 2lb granulated sugar. Make your own natural remedy for coughs, colds and sore throats. Crush fruit well in a basin. Pour over vinegar and leave for 4 days. Strain into a saucepan and add sugar. Heat gently until the sugar has dissolved, then boil rapidly and remove scum. Leave to cool then funnel into bottles and cork well.

Marrow Cream You will need: 4lb of marrow (as yellow as possible), 31/2lb sugar, juice and rind of 4 lemons and 1/2lb butter or margarine. Steam the marrow and then beat with a fork until smooth. Add the sugar, lemon juice and rind and butter or margarine. Boil for 30 minutes, stirring all the time, then put into jars and cover when cold.

Marrow Pickle or Chutney You will need: 4lb marrow, 1oz ginger, 1oz mustard, 1/4oz turmeric, 6 chillies, 11/2lb onions, 1/4lb and 3 pints vinegar. Cut marrow into squares, sprinkle with salt and stand all night. Add all other ingredients and boil until tender.

Marrow Jam Pare, cut and take out inside of good sized marrow cut into pieces about 1ins by 2ins. Weigh these and for each lb marrow allow 1lb lump sugar. Put 1/4lb ginger (broken up) in muslin and lay in with marrow in deep basin with sugar on top. Leave for 24 hours. Boil slowly until clear and tender. • 01788 298 050
