Traditions Continue at Askew’s If you thought that butchery was a lost art, you would probably be right. Today, most supermarkets receive boxes of pre-cut meat from wholesalers and industrial farms, sometimes from places as far away as Mexico or Japan. Not here. At Askew’s the old-fashioned craft of meat cutting remains, simply enhanced by improved technology. The knowledge and knife skills required to break down an entire animal carcass are the same today as they were decades ago when becoming a butcher was a common career choice. The difference today is that butchers now have to cater to our growing need for sustainable food choices. Askew’s began as a meat-only store back in 1929 and even though they have long since expanded to a full-service grocery store, the meat departments remain an integral part of each location. Qualified journeyman meat cutters and ongoing training programs enhance the quality of the finished product, and allow the meat department staff to help customers make informed decisions about the product they are buying. Askew’s prides itself on using local growers, farmers, and suppliers whenever possible. For example, their federally-inspected poultry is from a local farm, and local cheese is cut and packaged in store. Being a “small-town” market gives Askew’s the flexibility of being able to provide many specialty cuts and products for their customers on a regular basis. Steaks, roasts, and fresh turkey can be ordered for special events. Hard-to-find items such as sliced side pork, pigs feet, hocks, corned beef and suet

are readily available, as is the fresh bison meat sold in store Thursday through Saturday each week. Beef and pork are ground fresh daily, and home-style sausage meat is made in-store. For years, Askew’s has produced their own smoked beef bacon, back bacon, smoked pork chops, slab bacon, hocks and jowls, all infused with real smokehouse flavour. Looking to fill up your freezer? At Askew’s, you can order custom cut hinds and sides of beef, as well as sides of pork, cut and wrapped to your specifications. Nothing goes to waste – anything not sold in the meat case for human consumption gets made and sold as raw pet food. Recently, Askew’s partnered with the Vancouver Aquarium to introduce the “Ocean Wise” products to their lineup. The Ocean Wise program identifies and promotes seafood products that are recognized as having been caught or farmed in such a way as to ensure long-term sustainability of the species and supports environmentally friendly fishing practices. The traditions of the oldfashioned butcher shop are alive and well at Askew’s, but those traditions are combined now with a heightened awareness about the origins of our food along with a willingness to offer things not easily found elsewhere.
